IDENTIFIKASI UJI FORMALIN PADA MIE BASAH MENGUNAKAN EKSTRAK UBI JALAR UNGU (Ipomoea batatas L.) DI PASAR TRADISIONAL DESA NIRU MUARA ENIM

The use of chemical additives, especially formaldehyde in food, needs to be watched out for together, both by producers and consumers. The use of formaldehyde in food is not allowed because it can cause poisoning in the human body. The purpose of this study was to describe the use of anthocyanin extract of purple sweet potato (Ipomoea batatas L.) as a natural indicator for formalin detection. The method used is experimental design. The results of this study can be seen that purple sweet potato contains anthocyanins which can be an indicator material for formalin which is acidic, this can be seen from the change in the color of the anthocyanin extract which changes when reacted with formalin, and seen from the purple sweet potato extract it turns reddish blue.

Optimasi Kombinasi Asam Sitrat dan Asam Tartrat sebagai Zat Pengasam pada Tablet Effervescent Ekstrak Ubi Jalar Ungu (Ipomoea batatas L)

Purple sweet potato has the content of anthocyanin compounds that are efficacious as antioxidants. To deliver these efficacious compounds, formulations of effervescent tablets are required as antioxidants with a combination of citric acid and tartrate acid to accelerate the solubility of the drug. The research aims to optimize the combination of citric acid and tartrate acid as a sourgent on effervescent tablets of purple sweet potato extract using the simplex lattice design method. The manufacture of tablets using a direct pumping method with effervescent powder evaluation includes flow rate test, silent angle, compressibility, and powder moisture. Evaluation of tablets includes organoleptic tests, uniformity of tablet weight, hardness, fragility, and soluble time of tablets—data analysis using simplex lattice design software design expert version 10. The results of effervescent powder evaluation include a test of flow rate, quiet angle, compressibility, and moisture of powder in each formula that already meets the requirements. The physical evaluation results on the effervescent tablet weight uniformity test on F3, F4, and F5 have met the requirements. The evaluation of tablet hardness F1 and F2 also meet the requirements. The results of the evaluation of fragility and time dissolve tablets have met the requirements of all formulas. The simplex lattice design analysis results obtained F5 as the most optimal formula with a concentration of citric acid 103.25 mg and tartrate acid 44.25 mg. The combination of citric acid and tartaric acid affects the evaluation of hardness, fragility, and time-soluble effervescent tablets of purple sweet potato extract. The optimal concentration based on simplex lattice design analysis was obtained in F5 with a citric acid concentration of 103.25 mg and tartrate acid of 44.25 mg.

Screening utilization of different natural prebiotic extracts by probiotic Lactobacillus sp. for development of synbiotic for aquaculture uses

The study is aimed to develop a relevant synbiotic to promote growth performance of the whiteleg shrimp, Litopenaeus vannamei. For this, four common natural fiber extracts from Arcera banana, Siamese banana, yellow sweet potato, and white sweet potato were screened for supporting the growth of Lactobacillus sp. which was isolated from whiteleg shrimp intestines with probiotic activity, prebiotic score, and ability to induce bacterial enzyme activities of protease, leu-aminopeptidase, and a-amylase. Results showed that Lactobacillus sp. was able to utilize all extracts from banana and sweet potato as the sole carbon sources. At 24 hours of culture, the growth of Lactobacillus sp. was highest after adding the extract from white sweet potato as the sole carbon source. Considering pathogenic bacteria, including Vibrio parahaemolyticus, white sweet potato extract had the highest prebiotic score with a mean of 0.25 as compared with those of V. harveyi with a mean of 0.16. White sweet potato extract induced the highest activities of protease. These results indicated that white sweet potato extract was more suitable for combining with Lactobacillus sp. as a synbiotic for shrimp culture.

PEMANFAATAN EKSTRAK UBI JALAR UNGU (Ipomea batatas L.) SEBAGAI SUMBER PREBIOTIK PAKAN KOMERSIL PADA BUDIDAYA IKAN MAS (Cyprinus carpio)

Goldfish is one of the freshwater cultured fish that is favored by the community both for consumption and as ornamental fish. Sweet potato (Ipomea batatas L.) is a plant that can be used as a prebiotic in fish feed. Sweet potato (I. batatas L.) is an annual plant that grows in the tropics. Sweet potatoes contain lots of carbohydrates, provitamin A, B vitamins, vitamin C, minerals, and a little fat and protein. This research is an experimental study using Completely Randomized Design (CRD) with 4 treatments and 3 replications each, so the number of experimental units is 12 units. P1 : commercial feed (control), P2: purple sweet potato extract 4 ml / 100 g feed, P3: purple sweet potato extract 8 ml / 100 g feed, P4: purple sweet potato extract 12 ml / 100 g feed. The data obtained were tested using Analysis of Variance (ANOVA) at a 95% confidence level through the SPSS program to determine the effect of each treatment.
