DIGESTIBILITY OF PEA PROTEINS BY PRE-RUMINANT CALVES

Two milk replacers, formulated to provide one-half the dietary protein from either pea protein concentrate (PPC) or pea protein isolate (PPI), were compared with a milk replacer based on reconstituted skim milk (SM). The milk replacers were fed to pre-ruminant Holstein-Friesian calves aged 3–23 days and dry matter and protein digestibilities were determined. The mean protein digestibilities of the SM (control) and PPI milk replacer were 84.0 and 75.4%, respectively (the difference was not statistically significant), and were greatly superior to that of the PPC milk replacer (47.5%). The PPC contained, on dry matter basis, 61.2% protein, 5.5% starch and 9.8% total sugars. The sugars detected were sucrose (3.7%), raffinose (1.5%), stachyose (3.3%) and verbascose (2.5%). The PPI contained 92.8% protein and less than 1.0% starch or total sugars; the only sugar detected was sucrose (0.7%). Lactose was the only sugar present in SM. Although other factors cannot be ruled out, it was concluded that starch and oligosaccharides were mainly responsible for the poor digestibility of the pea proteins in the PPC milk replacer.

Three fish protein sources and milk by-products were used in milk replacers. Thirty Holstein heifer calves were fed five different milk replacers as follows: all-milk nitrogen control, and four with 65% of the nitrogen supplied by steam-dried herring meal and the remaining nitrogen from milk as: (a) skim milk powder, (b) skim milk and acid whey powders; and (c) acid whey powder partially neutralized with NaOH or (d) Ca(OH)2. Body weight gains were greater for calves fed the control milk replacer; from birth to 26 wk of age, calves weaned from this milk replacer gained 822 g/day, compared with 662, 731, 741 and 699 g/day, respectively, on diets a to d noted above (P < 0.05). A digestion and nitrogen balance trial with four bull calves fed the four herring meal milk replacers in a 4 × 4 latin square showed relatively poor utilization of the herring meal, especially for calves at 2–4 wk of age. The apparent dry matter digestibility was 75% when the acid whey in the diet was neutralized with Ca(OH)2, compared with 81% when it was neutralized with NaOH. Three milk replacers containing 62% of the total nitrogen from herring meal, isopropanol-extracted fish protein concentrate (FPC), or predigested FPC were compared using six Holstein bull calves in two 3 × 3 latin squares. Apparent digestion of dry matter and energy by the calves was similar for the three diets. Nitrogen digestibility was 82% in the herring meal and 86% in the predigested FPC diet (P < 0.05). At the end of the digestion trial, the calves were continued on the same diet to 91 kg body weight. Body weight gains by all calves averaged 1 kg/day. Loin roasts from the calves fed the herring meal diet were tougher and had an objectionable odor compared with those from calves fed the two FPC diets or whole milk. It was concluded that FPC could be a useful ingredient in calf milk replacers, and that herring meal was not well utilized by calves at 2–4 wk of age.

In an experiment involving enzymatically hydrolyzed pea flour (HPF) and pea protein concentrate (PPC) to provide half the dietary protein in milk replacers, the pea protein was found to be about 25% digestible by calves under 2 wk of age and 65 to 70% digestible by calves 3 wk of age. The younger calves digested 42 to 53% of the pea starch; older calves digested 63 to 84%. The digestibility of dry matter, protein, energy and ether extract increased with calf age (P < 0.01). In the second trial, involving PPC at 7.7, 15.4 and 23.1% of the dry matter in milk replacers, and providing 19, 33 and 46% of the dietary protein, the digestibility coefficients for dry matter, disregarding calf age, declined from 90 to 86% as PPC increased from 15.4 to 23.1%, but the low and intermediate PPC diets were equally well digested. The reduction was due mainly to the corresponding reduction in protein digestibility. Digestibility coefficients for dry matter, protein, energy, ether extract and nitrogen-free extract for milk replacer diets containing 23.1% PPC exceeded 81% with calves over 14 days old. The third experiment involved feeding the control milk replacer until the calves were 2 wk old, then commencing the feeding of PPC and HPF replacers, using formulas similar to those of the first experiment. The digestibility coefficients were similar to those of the first experiment, indicating that the observed improvement in older calves was primarily a function of calf age and not markedly influenced by the formula of the diet. These studies indicate that PPC and HPF are not satisfactory ingredients in milk replacers to be fed to calves under 2 wk of age, but, though less digestible than milk, are effectively digested thereafter.

Full-fat soybean flour (FFSF) was prepared from dehulled soybeans by extraction with water and NaHCO3, colloid milling, cooking and spray-drying. The apparent destruction of soybean trypsin inhibitor (SBTI) prior to cooking was variable. A rat bioassay for SBTI was conducted with diets containing 1.6% nitrogen from cooked and uncooked FFSF. Cooking the FFSF for 1 h markedly improved rat growth (4.0 vs. 2.6 g/day, P < 0.01) and weight gain/protein intake (3.3 vs. 2.5, P < 0.01). The cooked FFSF was also used in three lamb experiments to supply 0, 30, 50 or 60% of the nitrogen in milk replacers. Apparent digestion coefficients for energy were 88, 92 and 92% (P < 0.05), and for nitrogen were 94, 95 and 92% for lambs fed milk replacers containing 0, 30 or 60% of the nitrogen from FFSF. The percent of total nitrogen intake retained was 61, 63 and 55, respectively. The lower energy digestion by lambs on the zero FFSF diet was attributed to the fat being supplied only by tallow. In another experiment, when unrefined soybean oil, equal to that supplied by FFSF, was used in place of the tallow in an all-milk protein milk replacer, energy digestion by lambs was greater than with a milk replacer containing FFSF. Milk replacers containing a mixture of spray-dried skim milk and whey powders resulted in higher nitrogen digestion and retention by lambs than did a mixture of roller-dried buttermilk and whey powders, when 50% of the nitrogen was supplied by FFSF. It was concluded that milk replacers containing up to 60% of the total dietary nitrogen from FFSF were utilized satisfactorily by milk-fed lambs.

Two growth trials were conducted to determine an optimum level of fat in milk replacer and an optimum level of protein in creep feed for artificially reared lambs. In experiment 1, milk replacers containing 31 or 36% fat (dry matter, DM, basis) were fed ad libitum to 58 lambs at 1 day of age. The protein was supplied by low-heat spray-dried skim milk powder and Na caseinate and the fat from a mixture of 10% coconut oil and 90% tallow. A finely ground unpelleted creep feed with 20% protein, on a DM basis, was fed ad libitum. The lambs consumed more of the 31% fat milk replacer and gained more live weight (288 vs. 254 g/day; P < 0.025) to weaning at 25–30 days of age than did lambs fed the 36% fat formula. Weight gains to 10 wk of age were 190 and 170 g/day, respectively (P < 0.10). In experiment 2, 84 lambs were fed a 26% fat milk replacer ad libitum, and creep feeds with 15, 20 or 25% protein (DM basis). The supplementary protein was supplied by herring meal and soybean meal. Weight gains of lambs to weaning at 24 days of age were similar on the three creep feeds. However, gains to 10 wk of age averaged 218, 235 and 244 g/day (P < 0.05) on the 15, 20 and 25% protein diets, respectively. One and 2 kg of DM were consumed/kg lamb body weight gain to weaning and to 10 wk of age, respectively. It was concluded that the milk replacer should contain 26–31% fat, and the creep feed 20% protein or more for maximal performance of artificially reared lambs.

The effects of added nutrient sources on curd firmness of reconstituted skim milk powder (10% total solids) were studied. Defatted rapeseed flour (4%) had little effect whereas whey powder (4%) and fish protein concentrate (2%) decreased gel strength of the reconstituted skim milk by approximately 30%. Soybean meal (4%) and soy protein isolate (2%) markedly reduced curd firmness; addition of CaCl2 restored coagulability and curd firmness. However, addition of CaCl2 did not restore gel firmness in reconstituted, severely heated skim milk powder to that of a low-temperature product. Addition of 0.1% CaCl2 slightly increased firmness of reconstituted low- and high-heat powder at pH 6.1; further addition to 0.4% CaCl2 decreased firmness slightly. It appears that when there is sufficient available Ca, further additions have no effect on curd firmness. The results indicate that milk replacers which coagulate with rennet (containing chymosin or rennin as active principle) can probably be produced even when some of the skim milk protein is replaced by other less expensive proteins. Addition of citrate (14 mM), followed by adjustment of the pH, prevented coagulation at pH 6.1 and markedly reduced firmness at pH 5.6 and 5.2. Addition of citrate at 5.7 mM did not prevent coagulation at those pH values. Addition of phosphate had little effect on curd firmness at these pH values. Addition of fat to skim milk containing 15 or 20% total solids, followed by homogenization, had little effect on curd firmness at pH 6.1. Fat additions, however, decreased curd firmness of skim milk containing 10% total solids and nearly prevented coagulation in skim milk containing 5% total solids.

Three spray-dried powders were prepared after heating skim milk for 30 min at 60 C (LT), 73.9 C (MT) or 85 C (HT). Each was reconstituted to two concentrations of dietary fat and fed to five or six calves for 26 days after purchase at approximately 1 wk of age. Calves receiving the HT skim milk had significantly (P < 0.05) higher incidence of diarrhea and slower rate of gain over 19 days on test as compared with those fed the MT and LT skim milks. Subsequently growth rate was unaffected by the skim milk source and there were interactions of fat level with skim milk source. The high fat level (22.2% of dietary dry matter) resulted in a higher incidence of alopecia than in calves receiving the low fat level (16.2% of dietary dry matter). Nutrient digestibilities and nitrogen balance, measured from day 20 to day 26, were unaffected by skim milk treatments or fat concentrations. This experiment indicated that young calves, less than 3 wk of age, require a diet based on skim milk that has not been severely heat-treated and the curd formation is a suitable index of quality for such milk replacer diets. Where control diets for milk-replacer studies are designated "all milk protein," it is important for correct interpretation to define their curd-forming characteristics. For older calves, coagulation appears not to be a requirement.

The purpose of this experiment was to formulate and evaluate milk replacer on the production performance of twin lambs from before weaning to one month after weaning. Three pairs of twin lambs aged two weeks with a body weight of 3.83 ± 0.4 kg were divided into two groups, each consisting of three lambs. The treatments applied were PSI = lamb given mother's milk and PMR = lamb given milk replacer. Pre-weaning dry matter consumption data were analyzed descriptively and other data were analyzed using the T-test. The results showed that the dry matter consumption lambs that were given milk replacers in pre-weaning was 164.18 ± 31.25 g/head/day with the largest proportion coming from milk replacers (61.4%). PSI group lambs had dry matter and energy consumption after weaning, daily gain before and after weaning, and body weight when weaned were significantly higher (P <0.05) than the PMR group lambs. However, the ratio of feed conversion and body weight at 90 days in the two groups of lamb were not significantly different. All lambs were healthy and no one died. It is concluded that formulated milk replacer provides production performance in lambs that are equivalent to lambs fed with mother's milk.

Forty male Holstein calves were divided into four groups; one group was offered whole milk and each of the others was given a different milk replacer. All calves were fed at 12% of body weight for 6 wk and a starter ration was fed free choice for the last 3 wk of the trial. Growth rate was 0.58, 0.32, 0.30, and 0.25 kg/day for whole milk and milk replacers B, C, and D, respectively, while the respective intake of calf starter was 0.23, 0.36, 0.34, and 0.38 kg/day of dry matter per calf per day. Feed conversions during the last 3 wk of the experiment were 1.15, 1.66, 1.45, and 1.65 kg of dry matter per kg of gain for whole milk and replacers B, C, and D, respectively. Blood hematocrit was higher for calves fed milk replacer B than for the other three treatments. Blood glucose levels were 123, 96, 107 and 101 mg percent for whole milk and milk replacers B, C, and D, respectively. The relationships between plasma glucose and blood urea nitrogen with growth rate and intake of calf starter were evaluated.

Alkali treatment to disperse a soybean protein concentrate (SPC) was studied in two milk replacer experiments, in which the SPC supplied 50% of the total nitrogen. In experiment 1, six lambs were used in a double 3 × 3 latin square digestion and nitrogen balance trial. The three treatments of the SPC in the milk replacer were: control (no alkali), alkali 1 (0.05 N NaOH at 40 C, neutralized with HCl after 15 min), and alkali 2 (same as 1, but neutralized after 18 hr at 5 C). The remainder of the diet ingredients were homogenized with a Polytron. Alkali treatment increased digestibility of dry matter (91, 93, and 95%, P < 0.01, on the three treatments, respectively), nitrogen, and energy, but tended to reduce the percent of absorbed nitrogen that was retained (63, 61, and 60%, P < 0.20). The control (complete diet prepared with the Polytron) and alkali 1 treatments were compared in a growth and metabolism trial in experiment 2. Growth of a total of 19 lambs from about 4 days to weaning from milk replacer at 26 days of age tended to be lower on the alkali-treated than the control SPC milk replacer (179 vs. 215 g/day, P < 0.20); however, growth to 10 weeks of age was similar for both groups and averaged 250 g/day.

The operation of the Willems Polytron® to prepare batches of high-fat (27–35%, air dry basis) milk replacers is described. Most milk replacers were mixed at 40% solids to minimize foaming, and were diluted prior to feeding. The Polytron homogenized fat in liquid mixtures at 55 or 65 C, and partially dispersed insoluble ingredients in soybean, rape-seed, and fish flours. The inclusion of 25% or more of partially delactosed acid whey powder increased the viscosity of the mixtures, and held insoluble ingredients in suspension for several hours. Homogenization of a milk replacer containing 73% skim milk powder and 27% bleachable fancy tallow (3% soybean lecithin added) markedly improved growth (425 vs. 190 g/day), dry matter, nitrogen, and energy digestion (92 vs. 73% for energy) and nitrogen retention (44 vs. 24%) by calves. Calf responses were similar when the liquid diet was homogenized at either 55 or 65 C. Homogenization with 3% soybean lecithin in the tallow increased digestion of dry matter, nitrogen, and energy by chives by 5–6% units (P < 0.2), and Ca by 16% units (P < 0.05) compared with no lecithin. Bleachable fancy or crude tallow and 3% soybean lecithin or 0.2% glyceryl monostearate in the fat gave similar calf responses.
