The carcass characteristics of Holstein–Friesian males (bulls, unimplanted steers, and steers implanted with zearanol) as affected by castration and forms of shelled corn diet (dry, whole acid-treated high moisture, and rolled acid-treated high moisture) and their 2 × 2 interactions were studied. The animals averaged 84 kg body weight at the start of the experiment and were slaughtered at a pen average backfat thickness of 0.76 cm measured ultrasonically between the 11th and 12th ribs. Interaction effects were significant in the percent trimmed loin, flank, hindquarter, shank and total cuts. All carcasses had acceptable lean color, texture, firmness and marbling. The different forms of corn were similar in their effects. Similarly, implantation of steers with zearanol did not produce significant differences. The carcasses of all treatment groups in this study averaged Canada A grade and were essentially of the same quality characteristics. Compared to the steers, however, the bulls required slightly longer on feed but yielded significantly more carcass weight, a greater percent lean, a greater percent trimmed chuck and forequarter cuts, less carcass fat and had a higher lean:fat ratio. The steers yielded a higher percent trimmed loin and also more tender meat as determined by shear tests, but this latter case was not supported by the taste panel. No other differences were observed.

Any evaluation of breeds or production systems for beef must consider effects on production, carcass and meat quality characteristics. Holstein-Friesian (HF) cattle are bred for dairy traits only, while Norwegian dairy cattle (NOR) have been selected with some emphasis on beef characteristics. A comparison of production data from bulls of these two breeds has been presented previously (Kirkland et al., 2005). The objective of the present study was to evaluate specific carcass and meat quality parameters of HF and NOR bulls.

The aim of our study was to assess the dynamics of the characteristics in pig carcasses as affected by the season and year of slaughter. A total of 106 027 carcasses of growing-finishing pigs of commercial production, slaughtered in the same abattoir in 2014 and 2015 were included in the study. The carcasses were classified using UltraFOM 200 device, as the characteristics controlled were back-fat thickness at two locations and the depth of m. Longissimus dorsi. These measurements were used to further determine the lean meat percentage. The results of the study showed significant differences in the dynamics of changes of carcass characteristics during the seasons and the years. The highest lean meat percentage was found in summer (56.48%), followed by spring (56.34%), autumn (56.29%) and winter (56.10%). On the other hand, the pigs slaughtered in winter displayed highest carcass weight and back-fat thickness at both locations.

The effects of salbutamol administration to pregnant sows on post-natal growth and carcass characteristics of the progeny were investigated. Salbutamol (4 mg/kg diet) was fed to sows during the first (0 to 38 days, TI), second (39 to 78 days, T2) or third (79 days to term, T3) trimester of pregnancy. At birth, maternal administration of salbutamol had no effect on body weight, dressing percentage or weights of liver, heart, semimembranosus and semitendinosus muscle in proportion to body weight in the progeny. No significant effects of maternal treatment with salbutamol on body weight, dressing percentage, semitendinosus muscle weight in proportion to body weight and loin eye area were observed in the progeny at 21 days. P2 fat depth at 21 days was greater (P < 0-05) in TI than in controls. The percentage of type I fibres in the deep portion of semitendinosus muscle was higher (P < 0.05) in treatment groups as compared with controls: 27.4, 42.8, 36.9 and 36.0% in control, TI, T2 and T3 respectively. At slaughter (90 kg), carcass and meat parameters including length, P2 fat depth, meat colour and drip loss were not affected by maternal administration of salbutamol. However, loin eye areas were larger in T1 than in controls. Larger loin eye areas, coupled with numerically (but not statistically) significant heavier carcasses and lower backfats, resulted in greater estimates of carcass protein mass in TI pigs as compared with controls (P = 0.06).

The objective was to evaluate the effect of the substitution (0, 33, 66 and 100%) of corn by cassava wastewater dregs on carcass characteristics and non-carcass components of crossbred Santa Inês lambs. Forty male sheep, uncastrated with an average initial body weight of 20 ± 1.87 kg and five months of age, were used. These were housed in individual pens in a randomized block design with four treatments and ten repetitions and slaughtered after 70 days of confinement. Quadratic effect (P &lt; 0.05) was observed for the empty body weight (EBW), hot carcass weight (HCW) and cold carcass weight (CCW) and carcass compactness index (CCI), with maximum points of 36.14, 19.45, 20.20 and 0.31 kg cm-1 for the replacement level of corn for cassava wastewater dregs, 50.0, 53.84, 54.04 and 45.45% respectively. There was also an effect (P &lt; 0.05) on the weights of the rumen and “Buchada”, with maximum points of 0.909 and 6.25 kg per replacement level, 49.11 and 51.29% respectively. As for retail cuts, only the efficiency of the leg was altered (P &lt; 0.05), having a linear increase while the other variables were not affected. Cassava wastewater dregs can be used in full as an alternative food in the diet of feedlot lambs without harming the main carcass characteristics and non-carcass components.

The purpose of the current study was to determine the best method of delivery for glucocorticoid receptor agonist (GRA) treatment. A total of 167 Pig Improvement Company (PIC) piglets (body weight (BW) 7.35 ± 1.24 kg) were weaned at 25.0 ± 0.81 days of age and randomly assigned to 14 treatment groups based on a 2 × 7 factorial arrangement with sex (gilts vs. barrows), in-feed antibiotic (ANT; 110 mg/kg in-feed tylosin), repeated intramuscular (I.M.) injection of GRA (two injections, 0.2 mg/kg BW dexamethasone (DEX)), low dose in-feed GRA (LF, 2.5 mg/kg diet DEX ), high dose in-feed GRA (HF, 5 mg/kg diet DEX), low dose in-water GRA (LW, 0.8 mg/L DEX ), high dose in-water GRA (HW, 1.6 mg/L DEX ), and no treatment control (CON) as the main factors. Body weight and feed intake were measured daily from days 0 to 7 and weekly from days 7 to 28 post-weaning. The interaction effect for average daily gain (ADG) was significant with gilts performing better in the I.M., ANT, and LF groups (p = 0.05). All treatment groups, with the exception of the HW group, had a higher ADG than the CON group. Gilts in the I.M., LF, and HF groups had the highest ADG compared to other treatment groups (p ≤ 0.05). Sex and the interaction between sex and treatments had no effect on the gain-to-feed ratio (G:F; p ≥ 0.21). All treatment groups had a higher G:F than the CON group (p ≥ 0.04). These results suggest that the low-dose, in-feed GRA treatment is the best GRA delivery method and is a suitable alternative to in-feed sub-therapeutic antibiotics.

Abstract The objective of this study was to determinate the effects of narasin on carcass characteristics of lambs fed a diet containing different levels. Forty-four lambs were allotted in a randomized complete block design, defined by initial body weight (BW), in a 2x2 factorial arrangement. The first factor was forage (coastcross hay) inclusion (10 or 20%, DM basis) and the second factor was narasin (0 or 13 ppm). The experimental diets were isonitrogenous (17.4%, DM basis). The experiment lasted 112 days. At the end of the experiment, the lambs were slaughtered to evaluate the carcass characteristics and meat composition. Data were analyzed using the MIXED procedure of SAS and the LSMEANS option was used to obtain the means. The effects were considered significant when P &lt; 0.05. There was no interaction between forage levels and narasin inclusion. The experimental diets did not affect the slaughter BW (54.8 ± 1.6 kg), hot carcass weight (29.3 ± 0.96 kg), dressing percentage (53.5 ± 0.67%) and LM area (18.8 ± 0.89 cm2). The inclusion of narasin increased 12th-rib fat (2.10 vs 2.75 mm; P &lt; 0.01) and BW thickness (16.9 vs 20.2 mm; P &lt; 0.01). The inclusion of 20% of hay decreased BW thickness (19.21 vs 17.9 mm; P = 0.03). The experimental diets did not affect the moisture (74.2 ± 0.53%) and ash content in meat (1.27 ± 0.04%). Narasin inclusion increased the fat (2.81 vs 3.62%; P &lt; 0.01) and decreased the CP (21.3 vs 20.7%; P = 0.02) in meat composition. The inclusion of 10% of hay increased the fat in meat (3.5 vs 2.9%; P = 0.03), however, did not affect the CP content. In conclusion, the narasin inclusion and levels of hay improve the carcass characteristics and change the meat composition.

ABSTRACT Background Prebiotics selectively stimulate the growth of beneficial bacteria within the gastrointestinal tract, and have been investigated in human and animal studies for their capacity to improve intestinal health. Objective We investigated the prebiotics fructo-oligosaccharide (FOS), galacto-oligosaccharide (GOS), and mannan-oligosaccharide (MOS) for their potential to alleviate intestinal damage in rats. Methods Female Dark Agouti rats (6–8 wk old, 110–150 g) were allocated to 1 of the following treatment groups (n = 8/group): saline/water, saline/FOS, saline/GOS, saline/MOS, 5-fluorouracil (5FU)/water, 5FU/FOS, 5FU/GOS, and 5FU/MOS. Rats were pretreated with either 5% GOS, MOS, or FOS or vehicle (water) from day −12 to day 0. On day 0, rats received a single intraperitoneal injection of saline or 5FU. Metabolic data were recorded daily and all rats were killed on day 3. Histopathology was quantified in hematoxylin and eosin–stained sections. Intestinal sucrase and myeloperoxidase activity were quantified by biochemical assay. Fecal SCFAs—acetic, propionic, and butyric acid—were also measured. Statistical analysis was by repeated-measures, 2-factor ANOVA or Kruskal–Wallis and Mann–Whitney U test; P < 0.05 was considered statistically significant. Results Body weight was significantly decreased in all treatment groups after 5FU injection, with no change in body weight observed in any prebiotic treatment group. Total food intake was lower by ≥7% in the GOS treatment group pre-5FU than in all other groups (P < 0.05). Ileal villus height was 18% higher in GOS-treated rats pre-5FU than in respective water controls (P < 0.05). Jejunal and ileal villus height and crypt depth were significantly decreased in all treatment groups after 5FU injection, with no prebiotic effect observed. SCFAs were differentially increased in prebiotic treatment groups compared with water-only controls (P < 0.05). Conclusions FOS, GOS, and MOS have differential effects in modifying small intestinal pathology and SCFA profiles in rats with healthy and damaged small intestinal mucosa.

Slaughtering cattle at lighter weights to produce leaner meat might be expected to improve efficiency of production. An earlier experiment with Hereford x Friesian steers (Thomas, Kay, Hamilton and Fisher, 1987) showed no significant effect on feed efficiency when cattle were slaughtered at three different EC fat classes. An experiment was subsequently carried out to examine the effect on performance, carcass characteristics and meat quality of two breeds of cattle slaughtered at three different levels of fatness. In this experiment backfat depth was used as the criterion for slaughter.Thirty Hereford x Friesian/Holstein steers (initial weight 326 kg) and 30 Limousin x Holstein/Friesian steers (initial weight 340 kg) were used in the experiment.

Measurements were made of the effects of Revalor on the seasonal growth, carcass weight and fatness of Zebu crossbred steers in central Queensland. Ninety-three steers were grazed on improved pastures for 15 months prior to slaughter. Half the animals were implanted with Revalor (140 mg trenbolone acetate plus 28 mg oestradiol-17B mixed with cholesterol) for the first 25 weeks (September-March) and the balance left as controls. During this period, treated steers gained weight significantly (P<0.001) faster than untreated steers (0.57 v. 0.42 kg/day). In March, the 2 groups were further divided into 2 subgroups and 1 subgroup from each group was either implanted for the first time or reimplanted with Revalor. The animals implanted in March were reimplanted again 4 months later. The other subgroups were not implanted. After implantation in March, steers implanted for the first time gained weight significantly (P<0.001) faster (1.27 kg/day) than all other treatment groups. Steers implanted at the beginning of the experiment in September, but not reimplanted in March, continued to gain significantly (P<0.05) faster in the period March-May than steers which had never been implanted (1.01 v. 0.85 kg/day). This suggests that the implant was still having an anabolic action at least 6 months after implantation. The experiment ended with the slaughter of the steers in December. Animals treated with Revalor at some time during the experiment were significantly (P<0.05) heavier at slaughter (about 22 kg) and had significantly (P<0.001) heavier carcasses (about 13 kg) than those left untreated. Steers implanted throughout the experiment and those implanted for the 9 months before slaughter had significantly (P<0.001) less subcutaneous fat at the P8 rump site than those either not treated or implanted earlier than 9 months prior to slaughter.

The objective of this study was to evaluate the effect of sex class (castrated; non-castrated) and level of food restriction (0%, 30% and 60% of ad libitum consumption) on the quantitative composition of carcass and non-carcass components of Santa Ines lambs. A completely randomized 3x2 design (restriction level x sex class) was used to evaluate thirty lambs approximately two months of age with an average initial body weight of 13 ± 1.49 kg. When the average body weight of the animals in one of the treatment groups reached 28 kg, all animals were slaughtered. Sex class had effect on body weight at slaughter, empty body weight, hot carcass weight and cold carcass weight. The weight of the leg was greater in non-castrated animals. There was linear decreased effect according to increasing levels of restriction for the carcass cuts, except for leg and rear loin yield. There was statistic difference between sex class for the weights of kidneys, paw, and large intestine of non-castrated animals (P < 0.05). There was a negative linear association between level of food restriction and mass of blood, head, leather, paw, rumen, reticulum, abomasum, small intestine, large intestine; perirenal, omental, mesenteric and heart fat. The quantitative composition of carcass and non-carcass components of Santa Ines lambs is influenced by sex class and food restriction level.
