The purpose of the work was to study and identify the main factors aff ecting the quantity and quality of beef produced and sold in the Southern Federal district. A comparative assessment of the growth, development, formation of meat productivity and quality of beef of young animals of beef, dual and dairy breeds with stall-pasture technology and intensive rearing in the industrial complex. Experimental studies have been carried out in farms in the Rostov region. The object of research was cows with calves of Kalmyk, Hereford, Aberdeen-Angus, Russian komolaya, Kazakh White-headed breeds, as well as young animals of the same breeds, in addition, Black-and-White and Swiss breeds. Removable live weight in Hereford steers at 18 months of age was 658,0 kg, and Aberdeen-Angus – 655,2 kg. Domestic steers of Kalmyk were 41–44 kg lower in live weight than their herdmates of two imported breeds. However, with intensive rearing at 18 months of age, steers of Kalmyk breed had a removable live weight of more than 613,7 kg and a carcass weight of 326 kg. The yield of hot carcass was 55,4 %, and the slaughter yield was 58,89 %, which was only 1–2 % lower than the world’s leading beef breeds. It has been found when analyzing the results of boning the half-carcasses of experimental steers that the biggest weight of half-carcasses and the content of muscle and fat tissue in them in absolute terms were in Hereford steers. Steers of Kalmyk breed took the third place in terms of weight of large-sized semi–fi nished products and signifi cantly lost to Aberdeen-Angus herdmates by 7,3 kg or 6,5 %, and Hereford steers by 9,2 kg or 8,3 %. The results obtained prove the expediency of using stallpasture technology in the dry-steppe zone of the Southern Federal district when rearing young animals for beef up to 350–400 kg live weight at 15 months of age and its subsequent intensive rearing under industrial technology, in order to obtain the live weight of more than 570 kg and produce cost-eff ective beef.

In the last few decades the improvement of domestic dairy cattle was due to the widespread use of the gene pool of the best world breed such as Holstein. As a result of crossbreeding the breeding stock of the domestic Black-and-White breed with the sires of Holstein breed in different regions of the country a population of crossbreds has been created. The purpose of the work was to study the age dynamics of the live weight of replacement heifers depending on the paternal origin and the correlation between the indicators for the growth periods. The daughters of different sires have a difference in their live weight at the first insemination. The live weight of more than 400 kg was obtained from replacement heifers obtained from the sires Saber, Decaro and Baquero. The daughters of the sires Gatedenser, Bentley and Alta Ciara in live weight were inferior to their herdmates by 2,7–9,3 kg or by 0,7–2,8 % (P ≥ 0,05). The bulk of the replacement heifers are inseminated at the age of 13 months and only the daughters of the sire Alta Ciara are inseminated at the age of 14,1 months with a live weight of 396,7 kg. Despite the almost identical live weight of heifers at birth they differed from each other in the process of rearing. It has been established that the live weight at birth is not an indicator for assessing the further growth of replacement young animals. At 6 months of age the correlation of live weight at the age of 6 months and at the first insemination was positive and ranges from 0,01 (daughters of the sire Baquero) to 0,55 (daughters of the sire Decaro). Selection of heifers at the age of 6 months by their live weight allows us to choose the best and provide the opportunity to inseminate them at the age of 12–13 months with the organization of intensive rearing.

The article highlights the main achievements, problems and directions of the further development of the landing stock of Ukraine, the prospects of scientific research of Institute of Animal breeding and Genetics nd. a. M.V.Zubets of the NAAS in the areas of breeding, genetics, biotechnology of reproduction and preservation of the gene pool of farm animals. Institute is the initiator of four dairy herds (Ukrainian Red-and-White, Black-and-White, Red and Brown dairy bread) and four meat (Ukrainian, Volyn, Polissya and Southern meat) breeds of cattle. Its employees carry out scientific support of regional livestock development programs, development of systems for the creation and management of commercial herds of dairy and beef cattle, which contributes to solving the global food problem, and to ensure the nutrition security of Ukrainian population. The newly created Ukrainian Black-and-White, Red-and-White and Red dairy breeds for the predominantly intra-species breeding improvement and limited access to the gene pool of the Holstein breeding breed should remain the main areas of the breeding improvement of domestic dairy cattle breeding. The existing breeding system in cattle in Ukraine does not meet international standards and practically does not work in a complex way, and it threatens the final destruction of domestic breeding livestock, a significant dependence of the country on the import of breeding resources. To solve the problem, a new structure of the breeding service with a clear definition of the organizational basis for the management of tribal affairs and functional responsibilities of the subjects of its implementation was proposed, the formation of a centralized national information base for the identification, registration, origin and performance of animals, the keeping of state books of breeding animals as the basis estimation of their genetic value, and its realization is entrusted to the state enterprise created at the institute on Main scientific-production informational-elective center in livestock. Promising areas for farm animal breeding research are grouped into gene identification and the degree of development of quantitative attributes (QTL), early prediction and evaluation of breeding value of animals using markers (MAS). Research on molecular genetics is aimed at improving genetic analysis methods at individual and population levels, monitoring herds of cattle according to different types of genetic markers. Genetic systems for testing animals in 9 loci quantitative attributes, which are involved in the formation of qualitative indicators of dairy and meat productivity. A work is under way to test animals for the polymorphism of the BoLA-DRB3 gene of the major histocompatibility complex in animal populations for resistance to or susceptibility to mastitis. Biotechnology research focuses on reproductive biology methods, first of all, manipulations with gametes of farm animals, in vitro fertilization of pre-matured oocytes of cows and pigs, and others. The technology of obtaining oocyte cumulus complexes from ovaries of animals, the conditions of their storage, cultivation and fertilization out of the organism, which allows receiving a much larger number of embryos for both scientific and practical purposes, is developed. A separate direction is the work to improve the biotechnological methods of reproduction of farm animals using nanomaterials. It is based on the application in cryopreservation and sperm production of sperm and ovules of various variants of biologically active substances that are applied to highly dispersed silica molecules (albumin of blood serum of cattle, N-acetylneuramic acid – UFS / BSA / NANA). In order to monitor and preserve the diversity of genetic resources of agricultural animals in Ukraine, a complex of works under NAAS scientific program "System of work in populations and preservation of biological diversity of genetic resources of farm animals" ("Preservation of gene pool of breeds") with a coordination center on the basis of Institute of Animal breeding and Genetics nd. a. M.V.Zubets of NAAS. The research resulted in the development of the Program for the preservation of the gene pool of local and endangered breeds of farm animals in Ukraine for 2017–2025, in which the methodological bases for preservation of the gene pool were generalized, animal breeds were classified according to the criteria of risk, the minimum sizes of herds (real and virtual) of faulting species were substantiated, the minimum the size of subsidies for the proper functioning of small-numbered breeds, general methodological approaches to assessing the specificity of genetic resources are specified.

It has been highlighted the data of researches as for the influence of natural and climatic zones of Ukraine on display of economically useful signs of the most numerous cattle in the country like Ukrainian black-spotted dairy breed. It was the grounds to assert the efficiency of resources use in those conditions to which they are most adapted and have genetically determined potential. It was found that cowsof lactation breeding herds in the Forest-steppe zone produced 7344 kg of milk, which is 242 kg and 1125 kg more than in the Steppe and Polissya regions due to significant variation of the characteristic within each climatic zone (Cv = 11.6– 27,5%). The Polissya zone, where the animals' yieldwere 5764 kg, while in other climates 6982–6992 kg, does not contribute to the high productivity of the first lactation cows. It is proved that the duration of the service period in cows of three natural and climatic zones of Ukraine varied from 106 days in Polissya to 126 days – Forest-steppe, but it did not agree with the output of calves per 100 cows, which in 81 Polissya amounted to 82 and Forest-steppe – 79. The heifers of the Steppe zone are inseminated with live weight of 391 kg at the age of 477 days, and the Forest-steppe and Polissya with slightly less 385 kg and 387 kg, respectively, at the age of 493 days and 517 days. There is no significant difference in live weight at the ages of 6, 12 and 18 months between heifers of different natural and climatic zones of Ukraine, but the degree of development of the trait after 6 months was slightly better in cattle of the Steppe zone. A positive correlation was found between milk yield of first lactation cows of all natural climatic zones and their live weight at 6, 12 and 18 months of age, as well as negative calf age at first insemination (-0.587 ... -0.810) with significant correlation from the cattle of the Steppe zone. A high correlation coefficient (+0.703) was found in cows between live weight of heifers at first insemination and first lactation in the Polissya region. The methods of molecular genetic analysis are widely used to assess the genetic structure and to study the dynamics of population-genetic processes in populations of domestic animals. I n particular, these are the highly polymorphic genetic markers – the microsatellites that are the most common molecular markers in genetic and genomic research. The aim of the research was to develop the genealogical structure of the Belarusian black-and-white breed based on the microsatellite analysis of the lines bred at a gene pool enterprise. The research was carried out with the animals bred at the JSC “SGC “Zarechye”. For the microsatellite analysis of boars of the Belarusian black-and-white breed, the DNA testing was carried out at 9 STR-loci (SО155, SО355, SО386, SО005, SW72, SW951, SО101, SW240, and SW857). In all studied lines, the largest number of effective alleles was at the SО005 locus – 4.00–5.14. The lines of animals with heterozygosity can be used in various breeding schemes, both in purebred breeding (in pedigree pig breeding) and in crossing (in industrial pig breeding). Polymorphism determines the degree of genetic variation in populations. The locus is classified as polymorphic when the frequency of the most common allele of this locus does not exceed 95% (р ≤ 95). The revealed polymorphism of loci in the lines Maket, Tik, and Veseliy indicates the presence of genetic variability in them, which allows using them in breeding and breed-forming processes. Based on the studies made, the genealogical structure of the Belarusian black-and-white breed, consisting of one subcluster and two branches, has been developed, which makes it possible to assess the state and degree of relation of structural units (lines), and reflects the prospect of their further use.

Genetic distances were studied among Czech Red cattle, German Red, Czech Pied, Polish Red, Czech Black and White, and German Black and White cattle. DA genetic distances were calculated, and trees were constructed using the neighbour-joining method. Evaluating the genetic distances by microsatellites, the lowest value was between Czech and German Black and White breeds. A surprisingly high value was found between Czech and German Red breeds, and the highest values between German Red breed and both German and Czech Black and White populations came up to expectations. In the phylogenetic tree made using microsatellites, the German and Polish Red breeds clustered, but Czech Red breed was not joined with them. The other cluster was obtained for Czech Black and White and German Black and White. The tree made of protein markers differed slightly. Because the populations of Czech and German Red breeds are small and also because of organizational issues, the common protection of Central-European red populations and breeding them as a gene pool are recommended.

During the last decade the world Gene pool of the best cattle breeds is intensively used in Ukraine with the aim to improve productive qualities of animals. In particular, the improvement of dairy cattle includes intensive usage of gene pool of Holstein breed, as its level of milk productivity is the best in the world. The creation of new genotype caused permanent control on the exterior peculiarities of animals and the nature of their connection with productive features. On this basis the aim of our researches was to learn formation of the exterior of Ukrainian Black-and-White dairy breed under the absorptive crossover. The researches were conducted at agricultural LCC “Lyshche” of Lutsk region of Volyn oblast on heifers (n = 1164) and full-grown cows (n = 596) of different genotype of Ukrainian Black-and-White dairy breed. There were formed 5 groups of animals: I – cows with Holstein share heredity of 75% and lower, II – with Holstein share heredity 75.1–81.25%, III – with Holstein share heredity 81.26–87.50%, IV – with Holstein share heredity 87.51–93.75% and V – with Holstein share heredity over 93.75%. The assessment of exterior was conducted on the measurements of body parts of heifers and full-grown cows on the retrospective analysis. The following measurements were taking into account: height at the withers, breast depth, breast width, chest area behind the shoulder blades, hips width, oblique corpus length and girth of the metacarpus which were used to measure indices of body constitution. It is well-known that the exterior of heifers is the criteria of selection of cows into a herd and the assessment if bulls by the type of daughter’s body constitution. It is established that the heifers and cows of the Ukrainian Black-and-White dairy breed under control were quite high (height at the withers – 132.3 and 138.9 cm) with well-developed thorax (breast depth – 72.2 and 81.6, breast width – 46.4 and 54.2, chest area behind the shoulder blades – 191.0 and 201.9 cm). The average length of their corpus was 156.2 and 163.7, hips width – 51.7 and 58.8 and girth of the metacarpus – 18.1 and 19.1 cm. The connection between the exterior forms of body constitution and the indices of productivity of animal is especially opening with the use of index estimation of exterior. The usage of body constitution indices gives the opportunity objectively identify development of some parts, their changeability with age, productive and type differences, identify their connection with direction and the level of animals’ productivity in some household environment. The analysis of body constitution indices shows that heifers and full grown cows by the exterior peculiarities belongs to dairy type, were quite harmonious by the body constitution. The identifying of measurements of body parts of animals allows to compare their both individual and group peculiarities and to select the best dairy cows. That is why there is the necessity to learn changes of exterior and milk productivity of cows of Ukrainian Black-and-White dairy breed of different genotype. With the increase of Holstein heredity share in the genotype of animals of Ukrainian Black-and-White increased the investigated body measurements (except – breast width and girth metacarpus). The heifers had significant (P < 0.05–0.001) decrease in boniness indices, extension, thoracic, hips and chest, chest width and increase of indices of blockiness, sex and conventional corpus girth after the saturation of their Holstein genotype (I). There is a similar tendency of change of body structure indices was also observed in cows, but these changes were mainly unreliable. The strength of impact of genotype on the measurements and indices of body structure of both heifers and grown cows was negligible. The heifers’ conditional share of Holstein heredity had the most significant impact on measurements at withers (6.0%) and breast depth (3.6%), and cows – on measurements of oblique corpus length (5.8%), breast girth behind shoulder blades (4.9%) and height at the withers (4.2%) at 0.001 in all cases. The genotype had the most significant influence on bone indices (5.8%), sex (4.0%), breast (3.8%) and hips and breast (3.6%) in heifers’ case, and in full-grown cows’ case – on indexes of conditional volume (II) (5.6%), bones (4.3%) and conditional corpus (I) (3.2%).

Today in Ukraine, according to the State Register of Breeding Subjects, 13 dairy cattle breeds have been registered in animal husbandry. Conventionally, they can be divided into transboundary ones, such as Ayrshire, Angler, Holstein, Simmental, Brown Swiss and Red Polish, and domestic – Ukrainian Whiteheaded, Lebedyn, Red Steppe, Ukrainian Brown Dairy, Red, Black-and-White and Red-and-White Dairy cattle. The breeding part of the dairy cattle population is 299908 breeding animals, including 129557 cows, which are concentrated in 321 breeding subjects. The share of domestic breeds is at the level of 67.9%. A tendency towards an increase in the number of animals in the population of transboundary breeds by 56724 animals was noted, with a simultaneous reduction in domestic breeds by 221980 animals. The main part of the transboundary breeds is Holstein (83%) and Simmental (11%), and in the domestic breed population, it is Ukrainian Black-and-White (71.5%) and Red-and-White (19.8%) dairy cattle. Local domestic breeds (Lebedyn, Red Steppe, Ukrainian Brown Dairy) occupy 2.8%. The level of milk yield of the studied cows of the breeding part of the population of domestic and transboundary breeds is quite high and is in the range of 7242 ... 4309 kg. During the study period, there is a gradual increase from 2002 to 2019 for the milking, fat content and the amount of milk fat in cows of a population of transboundary and domestic breeds, which is respectively 3382.1 kg 0.16%; 140.7 kg and 3052 kg 0.06%; 118.1 kg. In 2019, the highest milk yield in the population of transboundary breeds was noted among Holstein cows (8679 kg) and Brown Swiss (8789) breeds, and in domestic – Ukrainian Black-and-White (7514 kg) and Red-and-White (7005 kg) dairy breads. The fat content in milk is more than 4% in cows of local breeds of Ukraine. An analysis of the level of milk yield of cows for the studied periods showed a decrease in the number of farms with a yield of 5 thousand kg or less. So, in 2002, the share of farms breeding transboundary breeds was 70%, then in 2019 only 13%, and in domestic from 83% to 16%. The average milk yield of cows of more than 10000 kg was recorded in 17 breeding farms.
