he objective of the paper was determining biogeochemical peculiarities of ac- cumulation of chemical elements (Mn, Ni, Сo, V, Cr, Zr, Cu, Pb, Zn, Ba, P) by wild-grow- ing shrubs (stems and leaves) – bog bilberry (Vaccіnium uliginоsum), European blueberry (Vaccinium myrtillus L.), alpine juniper (J. communis subsp. alpina); perennial herbaceous plants (flowers and leaves) – common tormentil (Potentіlla erecta (L.) Hampe), willow gentian (Gentiana asclepiadea), true sedges (Carex); and trees (needles) of European silver fir (Abies alba) on nine plots in the Svy- dovets Massif of the Ukrainian Carpathians. The results we obtained based on field surveys (selection of samples of soil and vegeta- tion) and interpretation of their analysis allowed us to determine the total regional background of chemical elements in soils and ash of plants using emission spectral analysis. We assessed the total concentration of chemical elements in soils of the plots (least to highest): the Apshynets Ridge – the Herashaska Polonyna – Drahobratske Lake – the Svydovets stream – Apshynets Lake – Herashaske Lake – the Zhuravlyne Bog – Vorozheske Lake (group of small lakes) – Vorozheske Lake (large) and determined the dependence on type of soil and pH. We determined that for wild-growing herbaceous plants the biogeochemical activity of species increases in the following sequence: true sedges - willow gentian - common tormentil; for wild-growing shrubs (bog bilberry, European blueberry, alpine juniper) such a sequence is impossible to determine due to the great difference between the values on different plots. We determined the role of each plant as medicinal for treating microelement deficiency in Cu, Zn, Co. We determined that in the plot of the Herashaska Polonyna, the needles of alpine juniper contain a maximum amount of Zn and Co, the needles and leaves of bog bilberry – Cu, Zn, Co; the flowers and leaves of common tormentil by Apshynets Lake and European silver fir near the area of the Svydovets stream – Cu. We calculated the daily dose of each element according to species of plants to overcome microelementosis. The results of biogeochemical surveys may be the basis for determining and recommending plants as medicinal, and also of geochemical and biogeochemical monitoring studies.

The article presents one of the most interesting results of an archaeobotanical analysis of material from the early medieval settlement complex in Radom. These results provided data on useful plants and the paleoenvironment of the site. In the case of two species, it was possible to designate specific sites of their origin. The most interesting species mentioned above are Origanum vulgare and Vaccinium uliginosum. The first one could only grow at one site, slightly away from the settlement. Regarding the second species, the closest sites of occurrence of V. uliginosum can presently be found 40 km from the excavated site. This is quite a long distance from the point of view of early medieval man. It is worth emphasising that the finds of bog bilberry are the oldest remains of V. uliginosum that have been discovered at a Polish archaeological site.

This study investigated the impact of Lactobacillus acidophilus NCFM, Oenococcus oeni Viniflora® Oenos and Lactobacillus brevis CICC 6239 on bog bilberry juice with a considerably low pH and rich in anthocyanins content. Moreover, the effects of the strains on the composition of phenolic compounds, amino acids, ammonium ion, biogenic amines, reduced sugars, organic acids, and color parameters of the juice were studied. All three bacteria consumed sugars and amino acids but exhibited different growth patterns. Lactic acid was detected only in L. acidophilus inoculated juice. The content of the phenolic compounds, especially anthocyanins, decreased in juice after inoculation. The CIELa*b* analysis indicated that the juice inoculated with L. acidophilus and O. oeni showed a decrease on a* and b* (less red and yellow) but an increase on L (more lightness), whereas the color attributes of L. brevis inoculated juice did not significantly change. Based on this study, L. brevis showed the most optimal performance in the juice due to its better adaptability and fewer effects on the appearance of juice. This study provided a useful reference on the metabolism of lactic acid bacteria in low pH juice and the evolution of primary and secondary nutrients in juice after inoculated with lactic acid bacteria.

To explore the optimum conditions for the extraction of anthocyanins and flavonols from bog bilberry (Vaccinium uliginosum L.) marc on a single-factor experimental basis, a response surface methodology was adopted for this intensive study. The extraction procedure was carried out in a Waring blender and followed an ultrasonic bath, and the natural antioxidant carnosic acid was added to inhibit oxidation. The optimum extraction conditions were as follows: a volume fraction of ethanol of 70%, an antioxidant content of 0.02% (the mass of sample) carnosic acid, a liquid–solid ratio of 16 mL/g, a homogenization time of 3 min, a reaction temperature of 55 °C, an ultrasound irradiation frequency of 80 kHz, an ultrasound irradiation power of 200 W, and an ultrasound irradiation time of 40 min. Satisfactory yields of anthocyanins (13.95 ± 0.37 mg/g) and flavonols (3.51 ± 0.16 mg/g) were obtained. The experimental results showed that the carnosic acid played an effective antioxidant role in the extraction process of anthocyanins and flavonols with a green and safety guarantee.
