EFFECTS OF DIETARY ROUGHAGE LEVEL ON THE FEEDLOT PERFORMANCE AND CARCASS CHARACTERISTICS OF BULLS AND STEERS

An experiment is described comparing bulls and implanted steers fed diets containing three roughage levels (20, 50 and 80% alfalfa–brome hay) with two pens of four cattle in each ’sex’ × dietary roughage level subgroup. Cattle were about 12 mo old and 230 kg at the start of the trial. Each animal was slaughtered when it reached 500 kg. No significant castration × roughage level interactions were found for any of the feedlot or carcass traits studied. Increasing the level of roughage in the diet resulted in a significant decrease in average daily gain (P < 0.01) and an increase in average daily feed (P < 0.01) and feed per kilogram gained (P < 0.01) to 500 kg. Differences in daily digestible energy (DE) consumption and DE and feed cost per kilogram gained were not significant. Increasing the roughage level reduced all measures of carcass fatness (P < 0.05) but had no significant effect on the muscle content. Castration significantly reduced growth rate (P < 0.01) and increased feed requirement per unit of gain (P < 0.05). Steer carcasses were lighter (P < 0.01) and fatter (P < 0.01) than those of bulls and had lighter sample muscle weights (P < 0.01) and smaller sample muscle:bone ratios (P < 0.01).

Abstract The objectives of the study were to determine the effect of steroidal implants on growth performance, carcass characteristics, and estradiol-17β (E2) concentrations in the blood and longissimus muscle of Holstein steers fed a grain-based diet. Seventy Holstein steers (average initial BW = 275 ± 6.4 kg, 10 to 12 mo of age) were assigned to treatments: (i) implanted with 80 mg of trenbolone acetate (TBA) and 16 mg of E2 (Component TE-IS with Tylan; Elanco Animal Health, Greenfield, IN) at the start of the trial (day 0), and reimplanted with 120 mg of TBA and 24 mg of E2 (Component TE-S with Tylan; Elanco Animal Health) on day 84 of the experiment; or (ii) no implant. Implanted Holstein steers were heavier (P ≤ 0.01) than nonimplanted Holstein steers in the middle (day 84) and at the end of the experiment (day 186). Implanting Holstein steers increased (P &lt; 0.01) average daily gain (ADG) and dry matter intake (DMI) without affecting gain-to-feed ratio compared with nonimplanted animals. Carcasses from implanted Holstein steers had greater (P &lt; 0.01) hot carcass weight (HCW) and longissimus muscle (LM) area than carcasses from nonimplanted steers. Implanting did not affect (P ≥ 0.21) other carcass characteristics. There was an increase (P = 0.03) of 1.3 pg of E2/g of muscle in implanted Holstein steers compared with that from nonimplanted Holstein steers. There was an implant × day interaction (P &lt; 0.01) in serum E2 concentrations. Serum E2 concentrations were not altered in nonimplanted Holstein steers, whereas E2 concentration increased (P &lt; 0.01) after steers were implanted, regardless of implant characteristics. Serum E2 peaked at 28 days after the first implant and then rapidly declined after day 56. In summary, steroidal implants administered on days 0 and 84 increased DMI, ADG, HCW, and LM area in Holstein steers compared with nonimplanted steers due to increased serum E2 concentrations. However, these changes did not improve feed efficiency or other carcass characteristics.

The effects of supplementing feedlot diets with ionophores and breed type were assessed on growth rate and carcass characteristics in hair lambs. Twenty four intact males, 12 Pelibuey × Dorper (PDo) and 12 Pelibuey × Damara (PDa) lambs, 17.9 ± 3.7 kg initial weight, were housed in individual pens for a 60-d feeding trial. The lambs were assigned randomly into four diets: control without additives (C); 25 µg/g monensin (M); 28 µg/g salinomycin (S); 28 µg/g S for 20 d, and 25 µg/g M for the next 40 d (SM). Each diet was supplied to six lambs. Data were analyzed as a randomized complete block design in a 4 × 2 factorial arrangement, with four diets and two breed types of hair lambs (PDo and PDa). All diets were formulated to contain 14% CP and 2.6 Mcal ME/kg dry matter. At the end of the feeding trial carcass images were recorded in the last intercostal space (12th and 13th ribs) using ultrasound equipment to measure the Longissimus dorsi muscle area and subcutaneous fat (SF). The average daily gain (ADG), daily dry matter intake, feed:gain ratio, subcutaneous fat and Longissimus dorsi area were not affected by ionophore supplementation.. The Pelibuey × Dorper group tended to show better average daily gain than Pelibuey × Damara (262 g/d and 235 g/d, respectively). Daily dry matter intake, feed:gain ratio and subcutaneous fat were not affected by breed type. The Pelibuey × Dorper lambs had greater Longissimus dorsi area (16.74 cm²) than the Pelibuey × Damara (14.29 cm²) lambs. The growth rate was not influenced by the inclusion of ionophores. Pelibuey × Dorper lambs showed better average daily gain and carcass characteristics than Pelibuey × Damara lambs.

Abstract To increase profitably, dairy farms across the United States have rapidly adopted breeding a portion of their cows to beef sires, generating crossbred progeny. The resulting progeny have, in some cases, increased the value of the calf to the dairy, due to their perceived potential for improved growth, feed efficiency, and carcass characteristics for beef production. U.S. research is behind our European counterparts in recommending the appropriate beef sires for dairy matings, and U.S. semen trends show Angus sales over many other breeds. However, Kempster et al. (1982) reported that calves sired by British breed bulls were actually at a disadvantage in growth performance compared to even purebred Holstein calves. Finnish researchers agreed, reporting that the resulting crossbreds from Aberdeen Angus and Hereford bulls were extremely variable, making them undesirable for beef production. However, resulting crossbred calves from late maturing breed types (Charolais, Limousine, and Simmental) had better average daily gain and carcass characteristics than their counterparts from early maturing breeds (Huuskonen et al., 2013). A comprehensive review of early crossbred systems similarly suggested that calves sired by Continental breeds, like Charolais, had an advantage in the feedlot and the packing house (Shank, 2003). Going a bit further, another European study examined the used of 3 beef breeds (Belgian Blue, Limousine, and Galacian Blonde) known for heavy muscling, but not common in the United States, for use as crossbreeding sires (Fouz et al., 2012). Holstein cows bred to Belgian Blue sires had the greatest difficulty calving; however, calving difficulties were reduced with increasing dam age (Fouz et al., 2012). Unfortunately, that trial did not go on to evaluate feedlot performance. Thus, there remains a dearth of scientific references for crossbred mating decisions as well as subsequent growth performance and carcass outcomes.

Thirty-two cull cows aged from 1 to 13 yr were allocated to five age groups and fed individually for 82 days, then slaughtered. Half of the cows within each group were implanted with 36 mg of zeranol. Zeranol had no significant effect on average daily gain, feed efficiency or backfat thickness, but caused a decrease in radio-ulna mass (P = 0.10) and length (P = 0.03). Rate of bone growth at the distal end of the radio-ulna decreased with increasing age to 0 at 4–5 yr. Key words: Cattle, bone growth, zeranol, cull cows, feedlot performance, carcass traits

Thirty-five Yankasa rams about 11/2 years old and of average weight 27kg were randomly assigned to five experimental diets which were (l) a control with 60% concentrate, diets 2 and 3 and 4 and 5 had the corn replaced by 20% and 40°/o brewers' dried grain (BDG) and palm kernel meal (PKM) respectively. All animals were individually fed the diets for the 70 days of the study. Average daily gain (ADC) was significantly (P 0.05) depressed only at the 40% BDC, level when compared with that of the control. Dressing percentage and percentage yield of wholesale cuts were not affected by the treatments. Nitrogen digestibility was significantly (P 0.05) depressed at the 40% BDG level. Based on the total performance and cost considerations, it was economical to use 20% BDG and up to 40% PKM in ram fattening diets.

This study evaluated the performance, carcass characteristics, and centesimal composition of the meat of intact and castrated lambs of the Santa Inês breed and of the crossbred animals: one-half Santa Inês × one-half Texel. Thirty-four lambs were used, nine intact and nine castrated males of the Santa Inês breed, and seven intact and nine castrated crossbred males, all aged between 6 and 7 mo and with an average live weight of 18.2 kg. The design was completely randomized in a 2 × 2 factorial (two crossing and two sexual conditions), with statistical analyses performed in the STAT version 9.4 program. There was a significant difference the Santa Inês and the Texel and Santa Inês crossbred animals in feed conversion and average daily gain, with superiority of the latter group. Castration of animals aged <12 mo had no significant effect on the performance and on the carcass traits of the Texel and Santa Inês crossbred animals, whereas the genotype had a great influence on weight gain and on subjective and quantitative carcass characteristics, demonstrating that crosses in sheep are needed to explore the complementarity of breeds, and heterosis is needed to achieve better performances and carcass characteristics.

The lambs production system in the South-European countries is characterised by producing light carcasses (< 13 kg) of young animals, less than 90 days old, and fed with the ewe milk and supplemented with concentrates. However, there is an increasing concern on the study of forage production system in growing lambs as a consequence of the interest in diversifying products and producing healthy and safe meat. When forage is included in the fattening diet a reduction of average daily gain is observed and carcasses have a lower degree of fatness, in comparison to the drylot system. The modification in the traditional type of carcass must be evaluated in order to assure that the final product meets the consumer demands. The objective of this experiment was to evaluate the effect of the lambs fattening system on the carcass characteristics and meat quality especially on the instrumental analysis traits as colour and texture.

Abstract Growth-promoting technologies such as implants, ionophores, and β-agonists improve feedlot performance, efficiency, and carcass characteristics of cattle. The objective of this experiment was to determine the effects of dose and duration of ractopamine hydrochloride (RH) on feedlot performance and carcass characteristics when fed to Holstein steers. A randomized complete block design was used with a 3 × 3 factorial arrangement of treatments with 3 RH doses (0, 300, or 400 mg∙steer−1∙d−1) fed for 3 durations (28, 35, or 42 d). Holstein steers (n = 855; initial body weight [BW] = 448 ± 37 kg) were blocked by BW and randomly allocated to 1 of 9 pens (15 blocks; 9 dose × duration treatment combinations) approximately 72 d before harvest. Weekly pen weights, chute temperament scores, and animal mobility were determined during the RH feeding period. At harvest, carcass data were collected on all steers, and tenderness was measured on steaks from 3 or 4 randomly selected steers from each pen and slice shear force (SSF) was determined on one steak selected from each side of the carcass after aging for 14 or 21 d. For feedlot performance, carcass characteristics, and SSF, no dose × duration interactions were observed (P ≥ 0.11). With increasing RH dose, average daily gain (ADG) and gain-to-feed ratio (G:F) increased linearly (P ≤ 0.01), whereas BW gain increased linearly with RH dose and duration (P ≤ 0.01). Hot carcass weight (P = 0.02) and longissimus muscle (LM) area (P ≤ 0.01) increased linearly with increasing RH dose. The percentage of carcasses in the USDA Yield Grade 2 category increased linearly (P ≤ 0.01) and percentage of carcasses in the USDA Yield Grade 4 category tended (P = 0.08) to decrease linearly as RH dose increased. In the 14-d aged steaks, the percentage of steaks with SSF ≤ 15.3 kg decreased linearly (P ≤ 0.01), whereas the percentage of steaks with ≥20.0 kg SSF increased linearly (P ≤ 0.01) with increasing RH dose. After 21-d aging, there was a tendency (P = 0.06) for a greater percentage of steaks from steers fed RH to have SSF ≥ 20.0 kg (2% of total steaks), but no difference (P ≥ 0.12) in the percentage of steaks with SSF ≤ 19.9 kg. Final chute temperament (P ≥ 0.45) and animal mobility (P ≥ 0.67) scores were not affected by feeding RH. Increasing the dose of RH (300 or 400 mg∙steer−1∙d−1) fed for 28 to 42 d before harvest increased ADG, G:F, hot carcass weight, and LM area when fed to Holstein steers with no negative effects on behavior or mobility. The percentage of steaks classified as not tender improved when steaks were aged for 21 d from steers treated with RH.

Dietary ractopamine increases lean tissue deposition and responses increase as dose is increased provided sufficient dietary lysine is supplied. In Australia, diets supplemented with ractopamine (RAC) are formulated with 0.56 g available lysine per MJ digestible energy. The present study was conducted to investigate the interactions between dietary RAC and lysine on growth and carcass characteristics in ad libitum fed (13.8 MJ/kg) boars and gilts. The study involved 108 individually penned pigs at 17 weeks of age (64.1 ± 0.57 kg) in a 2 by 2 by 3 factorial design, with the respective factors being sex (gilt or boar), dietary lysine (low and high, i.e. 0.56 or 0.65 g available lysine/MJ digestible energy, respectively) and dietary RAC (0, 5 or 20 mg/kg) for 28 days. Over the 28-day study duration, both lysine diets containing dietary RAC were sufficient to elicit a response in average daily gain (ADG) (+5.8%, P = 0.026) and carcass weight (3%, P = 0.045), but not in feed efficiency (FE) (P = 0.555). However, over the period of the first 7 days, there were interactions between the effects of RAC and lysine for FE (P = 0.025) and ADG (P = 0.023), with both traits being responsive only to dietary RAC containing the high lysine, which increased FE (+9.1%, P = 0.002) and ADG (+7.2%, P = 0.068). Dietary RAC improved FE in the latter stages of the study, namely Days 15–21 (+5.7%, P = 0.031) and Days 22–28 (+4.9%, P = 0.040). The high RAC diet reduced carcass P2 backfat (–16.5%, P < 0.001) and fat tissue deposition (–6.2%, P = 0.074) and high lysine tended to reduce fat tissue deposition (–13.3%, P = 0.072). A sex by lysine interaction (P = 0.043) was observed for lean tissue deposition at 28 days, such that only the high-lysine diet increased lean deposition in boars (+11%, P < 0.05) but not in gilts. Dietary RAC tended to increase lean deposition (+14.0%, P = 0.067) in the first 14 days; however, only the high RAC diet increased lean deposition (+9.6%, P < 0.05) over 28 days. In conclusion, the current recommended supplementation levels of lysine for commercial gilts and boars fed RAC may limit the response to dietary RAC if the feeding regime is for short durations and boars will not maximise their lean tissue deposition rates.

The effect of six genotypes (Zebu = Z, European Brown Swiss = EBS, Holstein = H, Z × EBS, Zebu × American Brown Swiss = ABS, Z × ABS, Z × H) on carcass and meat characteristics of young bullocks finished under feedlot conditions was tested. The Z × ABS bullocks had the highest (P = 0.001) average daily gain. The highest (P = 0.017) final liveweight was observed with Z × ABS > EBS > H genotypes. The ribeye area was larger (P = 0.012) for EBS bullocks. Both H and EBS bullocks had lowest (P = 0.001) physiological maturity; although the H bullocks had higher (P = 0.006) pelvis and heart fat values. The best (P = 0.014) conformation was obtained with the Z × ABS and Z × EBS genotypes. The greatest amount of marbling (P = 0.001) was obtained with the H genotype. In general, the crossbred genotypes showed better feedlot performance and carcass characteristics, and it seems that Holstein breed could have a an advantage from the marbling score point of view.
