Dairy products from grazing ruminant have numerous positive effects on human health thanks to their higher content essential fatty acids, vitamins, and polyphenols. Compared to livestock fed a conventional maize silage- and/or grain-based diet, grass-fed livestock produce milk with higher levels of n-3 fatty acids, vitamins A, E, carotenoids, and phenols. The effect is even more pronounced if animals are grazing on legume/forbs-rich grasslands. This review argues, based on the available literature, about the effect of grazing ruminant on milk and cheese quality, including the hedonistic aspects, pointing out the link between territory and dairy products quality (Protected Designation Origin; Protected Geografic Origin; namely PDO and PGI labels). Moreover, it points out the main plant biomarkers which can be used to discriminate grazing sourced from stall-fed sourced milk and dairy products. Overall milk and cheese sourced from grazing animals (cows, sheep and goat) showed higher levels (compared to stall system) of FA, vitamins, phenols, putatively beneficial for consumers’ health. FA and plant secondary metabolites can also affect flavor and some nutritional and technological features of dairy products such as their antioxidant protection degree. This would favour a fair pricing of dairy products sourced from grazing systems and the persistence of viable and sustainable extensive production systems.

The potential health benefits associated with the intake of unsaturated fatty acids for the reduction of bad LDL cholesterol has been scientifically proven. Concentration of unsaturated fatty acids in milk and dairy products can be increased by many ways, however, many of the modification strategies do not have any significant impact on the reduction of cholesterol from milk and milk prodcuts. The concentration of unsaturated fatty acids in milk fat can also be decreased by dry fraction, interesterification, transeterification etc. Milk products with higher magnitude of unsaturated fatty acids may have significant influence on the reduction of serum cholesterol.

The lipid fraction of milk is one of the most complex matrixes in foodstuffs due to the presence of a high number of moieties with different physical and chemical properties. Glycerolipids include glycerol and two fatty acids esterified in positions sn-1 and sn-2 with higher concentration of unsaturated fatty acids than in the triglyceride fraction of milk. Sphingolipids consist of a sphingoid base linked to a fatty acid across an amide bond. Their amphiphilic nature makes them suitable to be added into a variety of foods and recent investigations show that phospholipids, mainly phosphatidylserine and sphingomyelin, can exert antimicrobial, antiviral, and anticancer activities as well as positive effects in Alzheimer’s disease, stress, and memory decline. Polar lipids can be found as natural constituents in the membranes of all living organisms with soybean and eggs as the principal industrial sources, yet they have low contents in phosphatidylserine and sphingomyelin. Animal products are rich sources of these compounds but since there are legal restrictions to avoid transmission of prions, milk and dairy products are gaining interest as alternative sources. This review summarizes the analysis of polar lipids in dairy products including sample preparation (extraction and fractionation/isolation) and analysis by GC or HPLC and the latest research works using ELSD, CAD, and MS detectors.

Food is not just a pleasure in life, it is also an important factor for our health. Human nutrition is a mixture of nutrients, which are the only source of energy needed for survival. Energy-poor diet endangers many life functions, and above all the working ability. In the world, the meaning of the diet is very serious, and hence the demands for a –rational, healthy and safe diet are growing. Human nutrition contains saturated and unsaturated fatty acids. Essential fatty acids (EFAs) must be ingested in everyday diet because the body does not produce it. They are very important for human health. They are present in each cell of the human body and are an important factor for the normal growth, development and functioning of cells, muscles, nerves and organs. They are also used in the production of certain hormones - such as prostaglandins, which are crucial for the performance of certain important processes. The deficit from EFAs is due to a number of health problems, including more serious diseases.

The species Astrocaryum aculeatum (Arecaceae) is known in the Brazilian Amazon as tucumã, whose fruit is much appreciated by the population of the region, where its pulp, oleaginous, is the most consumed. Thus, the aim of this work was to perform a profile of fatty acids by GC-FID and minerals by ICP-OES of the oil of the pulp of the tucumã (A. aculeatum), as well as their physicochemical properties by 1H NMR. The fruits were collected in Alto Alegre city, Roraima, Brazil. These were taken to the laboratory, sanitized and removing your pulp, submitted to the oven with air circulation at 50 °C for 72 h, the dried pulps were milled and sieved between 20-40 mesh. The pulp oil extraction was realized in Soxhlet with hexane for 6 hours (yield of 54.7%). Were identified a total of 10 fatty acids, of these 23.8% are saturated fatty acids and 76.2% are unsaturated fatty acids: palmitic acid (10.4%), stearic acid (4.9%), oleic acid (64.2%), linoleic acid (11%) and linolenic acid (1%). The physicochemical properties have a pulp oil acid index of 0.31 mg KOH g-1, saponification of 190.39 mg KOH g-1, iodine index of 85.97 mg g-1. Minerals such as in their available forms K (70.05 mg L-1) Na (30.30 mg L-1), Ca (20.13 mg L-1) and P (20.07 mg L-1) were observed in high concentrations. The Amazon tucumã is an oleaginous that deserves our attention because it is composed of essential fatty acids that are beneficial to the human health.

Background: Supplementation of fat, especially those having unsaturated fatty acids has been proposed to carry positive effects on the reproductive organ, beside providing dietary energy to the animals. This experiment was designed to examine the effects of dietary ω-3 or ω-6 fatty acid (FA) rich oil supplementation on blood FA, metabolite and hormone concentrations; ovarian follicular growth and corpus luteum (CL) size in Sahiwal breed heifers.Methods: Eighteen heifers of 18.33±1.14 months of age and 194±4.16 kg of mean body weight were randomly assigned to 3 diets and individually fed as per ICAR (2013) diets. The diets include chopped wheat straw, green fodder and concentrate mixture containing either (i) no added PUFA rich oil but palm oil @ 3.5% (PO; n=6); (ii) 3.5% added soybean oil as ω-6 FA source (SO; n=6); or (iii) 3.5% added linseed oil as ω-3 FA source (LO; n=6).Result: SO increased (P less than 0.05) the plasma concentration of ω-6 FA while LO increased (P less than 0.05) the plasma ω-3 FA. Plasma glucose, triglyceride and non-esterified fatty acid (NEFA) concentrations was not affected due to different diets. Plasma total cholesterol and HDL-cholesterol were significantly higher (P less than 0.05) in SO and LO in comparison to PO. However, LDL-cholesterol was at par among all the treatments. Growth Hormone (GH) was not influenced due to different types of oil in heifers’ concentrate mixture. Insulin concentration increased (P less than 0.05) in LO compared to others. IGF-1 was statistically higher (P less than 0.05) in SO and LO as compared to CON, which among themselves also varied significantly. Plasma progesterone concentration at day 12 post estrous was higher (P less than 0.05) in LO. PUFA rich oil supplementation in the concentrate mixture of heifers (SO and LO) increased (P less than 0.05) the size of the ovulatory follicles as well as size of CL. It was inferred that feeding PUFA rich oil to pre-pubertal Sahiwal heifer’s results in advantageous changes in the blood metabolites, plasma hormones and ovarian functions.

AbstractMany invertebrates have an unexpected nutraceutical potential and are of nutritional or ethnomedicinal significance to many tribals throughout the world. The giant pill-millipedes of the genus Arthrosphaera are traditionally used as natural medicines by tribals in the Western Ghats of India. In this study, two species of pill-millipedes (Arthrosphaera fumosa and A. magna) were subjected to proximate and biochemical analysis to ascertain their nutritional potential. Bodies of A. fumosa and A. magna (after removal of their intestines) had a low protein content (8-15%) and high quantity of carbohydrates (40-41%). They were rich in many essential elements, especially in calcium. The essential amino acids of pillmillipedes were in high quantities. The level of glycine was the highest, followed by lysine and serine. The fatty acid methyl esters (FAMEs) of males and females consist of high quantities of unsaturated fatty acids. The mono-unsaturated fatty acids were more abundant than poly-unsaturated fatty acids. Palmitic and oleic acids were dominant saturated and unsaturated fatty acids, respectively. The study has revealed for the first time that pill-millipedes of the Western Ghats of India constitute a good source of essential minerals, essential fatty acids, and essential amino acids. Being valuable contributors of organic manure by processing recalcitrant plant lignocellulosic wastes, pill-millipedes become part and parcel of organic farming as well as future nutraceutical sources.

Catfish (Pangasius hypophthalmus) processing industry produces by products of abdoment fat containing unsaturated fatty acids, polyunsaturated fatty acids (PUFAs) which are the essential fatty acids needs to maintain health. Catfish belly fat can be processed into coarse fish oil through a purification process, with the addition of the adsorbent used, one of which is bentonite. This study was aimed to determine the<br />effect of bentonite application on the characteristics of refined catfish oil. Fish oil was extracted from belly fat then purified by adding bentonite adsorbent at a concentration of 1; 4 and 7%. The design used in this<br />study was a complete factorial of one factor. The parameters of analysis were the number of free fatty acids, peroxide value, anisidine, and totox. The results showed that bentonite had significant effect on free fatty<br />acid, peroxide, anisidine and totox values. The use of 7% bentonite decreased content of free fatty acid, peroxide value, anisidine, peroxide and totox from 1.72 to 0.85%, 5.18 to 0 meq/kg, 27.51 to 2.28 meq/kg,<br />and 37.88 to 2.28 meq/kg respectively.

Modification of dairy products’ fat composition or replacement by other fats are common practices in the industry. Products in which milkfat is partially or wholly substituted by vegetable fats are defined as dairy analogues. This study delivers gap-filling information about sour cream analogues in nutritional aspects, focusing on the fat-related attributes. Analogue sour creams contained 29.6% less saturated fatty acids, 88.4% less cholesterol and 88.7% more mono- and poly-unsaturated fatty acids than the sour creams. Trans fatty acids were present in both products, which could not be linked to artificial hydrogenation in either case. Digestibility of the examined samples might be different, as sour creams had more short and medium chain fatty acids than the analogues. Overall, sour cream analogues, besides serving as an alternative to sour cream, have particular advantages based on their nutritional values.

Rayeb milk (bio-stirred yogurt) samples were prepared from cow milk sesame milk or cow and sesame milk mixture (1:1) with or without adding sucrose (5%), honey (5%), fructose (2.5%) and sorbitol (1.5%) and using ABT-5 culture. Results showed levels of saturated fatty acids (SFA), short chain fatty acids (SCFA) and medium chain fatty acids (MCFA were lower whereas values of unsaturated fatty acids (USFA), monounsaturated fatty acids (MUSFA), polyunsaturated fatty acids (PUSFA) and long chain fatty acids (LCFA) were higher in sesame milk Rayeb than that of Rayeb manufactured from cow milk. Rayeb made from cow and sesame mixture had higher levels of antioxidant activity than Rayeb prepared from cow milk or sesame milk. The acidity, total solids and total volatile fatty acids values of Rayeb milk treatments contained sweeteners were higher than that of control. The addition of sweeteners decreased SFA, SCFA and MCFA and increased USFA, MUSFA, PUSFA, LCFA and antioxidant activity values of Rayeb milk. Essential fatty acids, linoleic acid (omega-6), α-linolenic acid (omega-3) and oleic acid (omega-9) greatly increased in Rayeb made from cow and sesame milk mixture. Adding sweeteners had the same effect. Fortification of Rayeb milk with sweeteners highly improved the smell, taste, mouth feel, texture and body evaluation scores.
