This study aimed to evaluate the effect of the inclusion of protected or unprotected fats in the diet of feedlot lambs on feeding behavior, productive characteristics, carcass traits, and meat quality. Forty male Dorper × Santa Inês lambs (22.27 ± 2.79 kg) were randomly assigned to treatments in a completely randomized design. The experimental treatments consisted of five diets: no added fat (NAF), whole soybeans (WSB), calcium salts of fatty acids (CSFA), soybean oil (SO), and corn germ (CG). The total intake of dry matter (DMI) (p < 0.001) and neutral detergent fiber (NDFI) (p = 0.010) were higher in the CSFA and NAF diets. Feeding behavior, morphometric measurements, physicochemical characteristics, and centesimal composition of the Longissimus lumborum muscle were similar between treatments (p > 0.05). The CSFA diet provided higher production (p < 0.05) and better-quality carcasses. The inclusion of fat sources increased the concentration of polyunsaturated fatty acids (p < 0.05). The use of calcium salts of fatty acids in feedlot lambs’ diets provides better quantitative and qualitative characteristics of the meat and carcass.

The objective of this study was to evaluate the effects of the association of cottonseed processing method with chitosan on carcass traits and meat quality of lambs finished in feedlot. Eighty lambs with an average body weight of 20.6 kg, with 04 months of age, were distributed in a completely randomized design, in a 2 x 2 factorial arrangement. The factors were represented by two cottonseed processing method (whole or ground) and two levels of chitosan (0 and 136 mg/kg BW). The association of cottonseed processing method with chitosan in the lamb diet did not affect (P>0.05) carcasses traits. The pH, color, cooking losses, shear force, and proximate composition of meat were also not affected (P>0.05) by the processing method of cottonseed or its association with chitosan in the lamb diets. There was an increase in palmitoleic (c9-C16:1; P = 0.01) and conjugated linoleic (P = 0.02) fatty acids when ground cottonseed was associated with chitosan. Ground cottonseed associated with chitosan increases the concentration of unsaturated fatty acids in the meat of feedlot lambs.

Abstract Soybean molasses is a byproduct (SBM) of the manufacture of soy protein concentrate and has high energy value. This byproduct has high potential for use in the nutrition of ruminant animals, mainly in the replacement of other energy feeds such as corn grain. The objective of this study was to evaluate the inclusion of soybean molasses to replace corn grain up to 30% DM in total diet on growth performance, feeding behavior, carcass characteristics and meat quality of feedlot lambs (½ Santa Inês × ½ Dorper). Forty intact male lambs with initial average body weight of 20.6 ± 2.5 kg and approximate age of 120 days were used. The animals were distributed in four treatments (0, 10, 20 and 30% SBM), divided into 5 randomized blocks according to the initial weight and adapted for 16 days, with diets containing increasing concentrations of concentrate and SBM. Feeding behavior was analyzed at the beginning, middle and final of the finishing period, and when animals reached 42 days on the finishing diet they were slaughtered. Data were evaluated using SAS software (version 9.4), by polynomial orthogonal contrasts, where the growth performance, carcass characteristics and meat quality values were analyzed as randomized blocks, and the feeding behavior data as randomized blocks with repeated measure over time. Significant differences were detected for the contrast 0 vs SBM treatments, which the inclusion of soybean molasses caused an increase (p ≤ 0.05) in ash intake but decreased the ether extract intake. The intake of DM in % body weight was higher for SBM treatments than 0% treatment (p ≤ 0.05). Feeding behavior, ruminating while lying down and drinking water presented a decreasing linear effect (p ≤ 0.05), and for feeding efficiency increased with addition of SBM (p ≤ 0.05). Fatty acids C14:0, C17:0, C17:1, C18:2n6c, C20:2 and C20:3n6 showed lower values ​​with the inclusion of SBM (p ≤ 0.05), while fatty acids C22:0 and C22:6n3 increased. The values ​​of n6 polyunsaturated fatty acids and n-6/n-3 ratio were lower (p ≤ 0.05) for SBM treatments. The values ​​of total polyunsaturated fatty acids showed decreasing linear effect (p ≤ 0.05) with the inclusion of SBM. The use of up to 30% SBM in DM did not impair animal growth performance and feeding behavior did not cause damages to carcass parameters and still made the meat healthier, improving the n-6/n-3 ratio, therefore can be used to feed finishing lambs.

Abstract This study evaluated the effect of roughage:concentrate (R:C) ratio associated with a variable particle size of physically effective neutral detergent fibre (peNDF8) in the forage (Tifton-85 hay) on the performance, carcass traits and meat quality of lambs. Seventy-two 4-month-old, non-castrated Santa Ines male lambs (23.5 ± 2.32 kg BW) were distributed in a completely randomized design, in a 2 × 2 factorial arrangement [two peNDF8 hay particle sizes (13 and 6 mm) and two R:C ratios (700:300 and 500:500 g/kg DM total)]. DMI, DM, NFC and TDN digestibility's, N-intake and N-faecal excretion were affected by the R:C ratio (P < 0.05). However, the N-retained was not affected by the studied variables (P > 0.05). It was observed an interaction (P < 0.05) between the peNDF8 and R:C ratios for final BW, average daily gain (ADG), colour parameters and pH 24 h. The lower roughage ratio provided greater (P < 0.05) concentrations of C14:1, C16:1–cis9, C18:1–cis9, ΣMUFA, Σn–6:Σn–3 and hypocholesterolemic/hypercholesterolemic index, enzymatic activity Δ9desaturase-C16 and -C18. Lambs fed a lower roughage diet had improved performance and feed efficiency, however, presented reduced polyunsaturated fatty acids (PUFA) concentrations in the meat, especially Σn–3 family. Higher roughage diet and larger peNDF8 particle size improved the concentrations of PUFA while decreased Σn–6:Σn–3 ratio in meat. Larger peNDF8 particle size associated with higher roughage proportion, have reduced animal performance however, it increased protein concentration, a* and C* colour parameter without affecting fatty acids profile of Longissimus lumborum muscle.

The study was conducted on 32 hybrids of (Polish Large White &times; Danish Landrace) &times; Duroc breeds fed similar energy content feed, however differing in fat diet supplements. The animals were divided into four groups in which the following fat supplements were added to the feed: A &ndash; rapeseed and linseed oils, B &ndash; rapeseed and fish oils + swine fat, C &ndash; linseed and fish oils, D &ndash; rapeseed and linseed oils + lard. The carcass slaughter value was estimated and physicochemical and sensory traits of longissimus lumborum (LL) and triceps brachii (TB) muscles were determined. The content of fatty acids in the subcutaneous fat of the loin as well as in the raw LL and TB muscles was estimated as well. It was shown that there were no significant differences in the range of slaughter value traits and meat quality between the groups. However, it was found that different kinds of supplemented fat had a different effect on the content of the polyunsaturated fatty acids in the backfat and in the raw LL muscle. The lowest level of fatty acids characterized the group of pigs fed with supplements consisting of rapeseed and fish oils + lard. The highest values were detected among fatteners supplemented with linseed. The kind of supplemented fat affected the changes in the level of PUFA n-3 fatty acids, especially the linolenic acid C18:3 in backfat. The n-6/n-3 ratio in pigs fed with a greater share of linseed (C and D groups) was better (about 3) than in pigs which obtained a greater portion of rapeseed and fish oils (about 5.5). In both the muscles and fat of fatteners from groups B and C the DHA content was 2&ndash;3 times higher than in A and D groups. Higher EPA content was found in the TB muscle. &nbsp;

Abstract Calcium salts of fatty acids (CSFAs) frequently are fed to ruminants, but their fate in the equine digestive system is unknown. The purpose of this study was to compare Enertia s/f, a proprietary CSFAs, and soybean (SB) oil with respect to impact on apparent total tract nutrient digestion and cecal fermentation parameters in horses. Eight cecally cannulated Quarter Horses were used in a crossover design in which horses consumed a diet for 32 d consisting of 1.5% body weight (BW) (as-fed) smooth bromegrass hay and 0.5% BW (as-fed) pelleted concentrate containing 4.9% CSFAs or 4.1% SB oil. Fecal samples were collected every 4 h from day 30 to 32 of each period and analyzed for apparent total tract digestibilities of dry matter (DM), neutral detergent fiber (NDF), acid detergent fiber (ADF), crude protein (CP), crude fat (CF), and gross energy (GE) using acid detergent insoluble ash as an internal marker. Cecal digesta was obtained at 0, 2, 4, 6, 8, 10, and 12 h following the morning meal on day 29 of each period and analyzed for pH and concentrations of volatile fatty acid (VFA) and long-chain fatty acids (LCFAs). Serum was collected on day 33 of each period following a 16-h fast and analyzed for triglycerides and cholesterol. Apparent total tract digestibilities of DM, NDF, ADF, CP, CF, and GE were unaffected by lipid source (P &gt; 0.10). Serum triglycerides tended to be greater in horses consuming CSFAs compared to SB (P = 0.10); however, serum cholesterol was not different (P = 0.45). In horses consuming SB, cecal pH decreased below baseline (hour 0) at hours 2, 4, and 6 (P &lt; 0.01), whereas cecal pH in horses consuming CSFAs was below baseline at hours 4 and 6 (P &lt; 0.01). There were no treatment or time effects on cecal pH (P &gt; 0.10). Cecal concentrations of total VFAs were greater in horses consuming SB compared to CSFAs at hour 2 (P = 0.01). Cecal concentrations of acetate, propionate, acetate:propionate (A:P), and butyrate were affected by time (P &lt; 0.01). Propionate was less at hour 2 in horses fed CSFAs compared to horses fed SB (P = 0.04). A treatment × time interaction was detected for total cecal LCFAs concentration (P &lt; 0.01); LCFAs concentration was greater at hour 2 for horses consuming CSFAs compared to horses fed SB (P = 0.02). SB oil and CSFAs have similar effects on the digestion of DM, NDF, ADF, GE, CF, and CP.

<p>The aim of this trial was to study the effect of an alternative housing system on the oxidative status and meat quality of fattening rabbits. From May to June 2014, 60 rabbits of 35 d of age were reared in Mobile Arks (MA) placed on alfalfa grass and frequently moved for 40 d. To assess the health status of animals, blood samples were collected at slaughter in MA and in conventional cages (C). Meat quality parameters were also evaluated. Concerning the <em>in vivo </em>oxidative status, ark-reared rabbits showed higher thiobarbituric reactive substances values than C ones, probably for the higher motor activity due to the larger living area. The lipid percentage of <em>Longissimus lumborum </em>muscle was lower (1.22 <em>vs. </em>1.48%) in the ark group. There were no significant differences in the muscle pH, colour, water holding capacity and cooking loss. Given the higher intake of grass, rich in vitamins, carotenes, polyphenols and polyunsaturated fatty acids, the antioxidant content of meat was higher in ark-reared rabbits (7.42 <em>vs. </em>6.82 µg/g of retinol, 719.2 <em>vs. </em>683.3 ng/g of α-tocopherol, respectively). Even the fatty acid profile of MA rabbits reflected the higher intake of essential fatty acids from grass and the n-3 long chain polyunsaturated fatty acids (arachidonic acid, eicosapentaenoic acid and docosahexaenoic acid) were almost doubled. Our study suggested that the fattening of rabbits in ark system could be a possible alternative system to improve the meat quality of rabbits.</p><p><strong><br /></strong></p>
