Sea foods hold one of the greatest potentials to meet current and future demands of proteins to feed the world’s ever-burgeoning population. Fresh seafood is an excellent source of proteins, a good source of minerals, and some vitamins, and it is low in fats, cholesterol, and sodium. Fishery products which are of great importance for human nutrition worldwide and provide clear health benefits. Food borne pathogens are the leading causes of illness and death in less developed countries killing approximately 1.8 million people annually. Bacteria are the most important cause of seafood spoilage. Percentage prevalence of bacterial population in fish samples collected from Ukkadam fish market, Coimbatore was significantly higher during the study period. About 7 fish intestinal samples were then enriched in nutrient broth and cultured. Biochemical test were performed to determine their phenotypic characteristics. The antibiotic resistance pattern and MAR index showed an increased antibiotic resistant bacterium in fish which may severe food borneillness in human. Thehemolytic activity and extracellular protein reveals the frequency of virulence and strong pathogenecity. On this basis, we came to the conclusion that all the isolates are highly pathogenic and cause various food poisoning in humans.

Background: S. enterica subsp. houtenae has been rarely documented, and very limited genomic information is available. This report describes a rare case of primary extraintestinal salmonellosis in a young roe deer, associated with Salmonella enterica subsp. houtenae. Methods: A traditional cultural-based analysis was carried out from the contents of a neck abscess; biochemical identification and PCR assay were performed to isolate and identify the pathogen. Through whole-genome sequencing (WGS), multilocus sequence typing (MLST), core genome MLST (cgMLST), and the Salmonella pathogenicity islands (SPIs) survey, resistome and virulome genes were investigated to gain insight into the virulence and antimicrobial resistance of S. houtenae. Results: Biochemical identification and PCR confirmed the presence of Salmonella spp. in the swelling. The WGS analysis identified Salmonella enterica subspecies houtenae serovar 43:z4,z23:- and ST 958. The virulence study predicted a multidrug resistance pattern with resistance shown against aminoglycosides, tetracycline, beta-lactamase, fluoroquinolones, fosfomycin, nitroimidazole, aminocoumarin, and peptide. Fifty-three antibiotic-resistant genes were identified. No plasmids were detected. Conclusion: This study demonstrates the importance of continuous surveillance of pathogenic salmonellae. Biomolecular analyses combined with epidemiological data can provide important information about poorly described Salmonella strains and can help to improve animal welfare.

Objective: The multiple antibiotic resistance (MAR) indexing and finding Multidrug resistant (MDR) bacteria will help to indicate the origin from high risk of contamination where the antibiotics are often used. Hence this study was carried out to give the MAR index of non-fermenting Gram negative bacilli in a tertiary care hospital which would help our infection control team also.Methods: Drug resistance was tested by Kirby bauer’s disc diffusion method. MAR index was calculated using the formula, a/b (were a= number of antibiotics to which the organism was resistant and b= total number of antibiotics to which the organism was tested).Results: Out of 240 Gram negative non-fermenters isolated, 117 (49%) strains were greater than 0.2 of MAR index, 95(81%) was from in-patient department. 73(62%) were hospitalized for more than 3 days, 44 (38%) was from surgery department. 49(42%) was wound specimen. Out of 117 multiple antibiotic resistant isolates 99 (85%) were MDR isolates.Conclusion: 51% prevalence of isolates >0.2 MAR index shows that the source of contamination can still be brought up down by proper surveillance and management with proper usage of  surface and skin disinfectants especially in surgery ward where the MAR index has indicated more usage of antibiotics

Foodborne bacteria, with a high degree of antibiotic resistance, play an important role in the morbidity and mortality of gastrointestinal diseases worldwide. Among 250 disease-causing bacteria, Staphylococcus aureus is one of the major causes of food poisoning, and its resistance to multiple antimicrobials remains of crucial concern. Cheese is often contaminated when proper sanitary procedures are not followed during its production and marketing. This work aimed to evaluate the microbiological quality of pasteurized white cheese commercialized in Panama City. Cheese from five different brands sold in local supermarkets were selected to determine the presence of S. aureus as well as its antibiotic resistance profile. The results showed significant contamination of S. aureus with a geometric median sample of 104–107 CFU/g. Four out of five (4/5) cheese brands analyzed presented risk of food poisoning by exceeding the allowed range of consumption with a geometric median sample of 1,8 × 106–1,4 × 107 CFU/g. Fourteen different resistance phenotypes were found. Fifty-five percent (55%) of the analyzed strains were resistant to erythromycin. The data confirm a relatively high prevalence and high levels of S. aureus, most likely originated during handling in Panama City retail markets. Further studies are needed to reduce bacterial contamination and to decrease the risk of food poisoning in the consumption of pasteurized cheese.

<div> <p>Solar simulated heterogeneous photocatalysis (SSHP) with suspended TiO<sub>2</sub> was investigated in the inactivation of tetracycline resistant/sensitive <em>Enterococcus</em> (TRE/TSE) strains in the effluent of an urban wastewater treatment plant (UWTP). The effect of solar simulated disinfection (SSD) on the inactivation of the same <em>Enterococcus</em> strains was investigated as control. SSHP process (0.05 g l<sup>-1</sup> of TiO<sub>2</sub>) was found to be effective in the inactivation of both <em>Enterococcus</em> strains with total inactivation (~7 log unit) observed after 60 min of irradiation. On the contrary, SSD process did not show any significant inactivation after 90 min of irradiation. The effect of both processes on the antibiotic resistance phenotypes of the surviving enterococci was also evaluated. TRE cells surviving the SSHP treatment showed that disinfection process did not affect the antibiotic resistance pattern after 45 min irradiation. The same was observed for the TSE strain. Accordingly, antibiotic resistance can spread into the receiving water body when antibiotic resistant strains survive to disinfection process.</p> </div> <p>&nbsp;</p>

Over the years, cereals have been the major food consumed by humans and have also been used in animal diet and therefore highly commendable for playing a major role in the preservation of human race. Studies have shown that half of the total percentage of calories consumed in the world is from cereals while it is also the most traded agricultural crop at the international market. This motivates the need to assess its utilisation in the past, present and future. This review shows that much driven by the use of cereals are factors like consumption and dietary pattern of a person or country, technological advancement in adding value to it, income status, market forces of demand and supply, level of affluence and policy. The trend in global cereals utilisation since its domestication has indicated an upward one with bulk of it being consumed as food in developing countries while majority of it goes into feeding livestock in developed countries. Evidence from this study also shows that the per capita utilisation of cereals directly for food is exceedingly great in developing countries than developed countries which is an indicator of malnutrition when not balance with other nutrients as it was observed in Bangladesh where calorie intake of an adult is about 90% from cereals. While there is a steady increase in global cereals utilisation due to its discovered industrial use as fuel, increased population and other factors, it will be expedient to focus on its sustainability and environmental issues that are likely to come up as a limitation to meet future demands.

AbstractThe wastewater treatment plants effluent has been implicated in the spread of antibiotic resistant bacteria (ARB) as these environment contains multiple selective pressures that may increase mutation rates, pathogen survivability, and induce gene transfer between bacteria. In lieu of this, the present study explored the dynamics of earthworm-microorganisms interactions on the treatment efficacy of clinical laboratory wastewater treatment by vermifiltration and the effect of earthworms in the fate of removal of pathogens and ARB. The results of the study showed that earthworms and VF associated microbial community had a significant effect on BOD and COD reduction (78-85%), pathogen removal (>99.9 %) and caused a significant shift in the prevalence pattern of ARB. Additionally, molecular profiling of ESBL (blaSHV, blaTEM and blaCTX-M), MRSA (mec-A) and Colistin (mcr-1) gene confirmed the probable mechanisms behind the resistance pattern. The microbial community diversity assists in the formation of biofilm, which helps in the removal of pathogens and results in a paradigm shift in the resistance profile of ARB and ARG, specifically most effective against drugs, targeting cell wall and protein synthesis inhibition like Ampicillin, Ticarcillin, Gentamicin and Chloramphenicol. These findings prove vermifiltration technology as a sustainable and natural treatment technology for clinical laboratory wastewater.

ABSTRACT Food-borne pathogens are responsible for most cases of food poisoning in developed countries and are often associated with poultry products, including chicken. Little is known about the role of β-defensins in the chicken digestive tract and their efficacy. In this study, the expression of chicken β-defensin gallinacin-6 (Gal-6) and its antimicrobial activity against food-borne pathogens were investigated. Reverse transcription-PCR analysis showed high expression of Gal-6 mRNA in the esophagus and crop, moderate expression in the glandular stomach, and low expression throughout the intestinal tract. Putative transcription factor binding sites for nuclear factor kappa beta, activator protein 1, and nuclear factor interleukin-6 were found in the Gal-6 gene upstream region, which suggests a possible inducible nature of the Gal-6 gene. In colony-counting assays, strong bactericidal and fungicidal activity was observed, including bactericidal activity against food-borne pathogens Campylobacter jejuni, Salmonella enterica serovar Typhimurium, Clostridium perfringens, and Escherichia coli. Treatment with 16 μg/ml synthetic Gal-6 resulted in a 3 log unit reduction in Clostridium perfringens survival within 60 min, indicating fast killing kinetics. Transmission electron microscopy examination of synthetic-Gal-6-treated Clostridium perfringens cells showed dose-dependent changes in morphology after 30 min, including intracellular granulation, cytoplasm retraction, irregular septum formation in dividing cells, and cell lysis. The high expression in the proximal digestive tract and broad antimicrobial activity suggest that chicken β-defensin gallinacin-6 plays an important role in chicken innate host defense.

Bacillus cereus is a spoilage bacterium and is recognized as an agent of food poisoning. Two food-borne illnesses are caused by B. cereus: a diarrheal disease, associated with cytotoxin K, hemolysin BL, non-hemolytic enterotoxin and enterotoxin FM, and an emetic syndrome, associated with the cereulide toxin. Owing to the heat resistance of B. cereus and its ability to grow in milk, this organism should be considered potentially hazardous in dairy products. The present study assessed the risk of B. cereus poisoning due to the consumption of water buffalo mozzarella cheese. A total of 340 samples were analyzed to determine B. cereus counts (ISO 7932:2005); isolates underwent molecular characterization to detect the presence of genes encoding toxins. Eighty-nine (26.1%) samples harbored B. cereus strains, with values ranging from 2.2 × 102 to 2.6 × 106 CFU/g. Isolates showed eight different molecular profiles, and some displayed virulence characteristics. Bacterial counts and the toxin profiles of isolates were evaluated both separately and jointly to assess the risk of enteritis due to B. cereus following the consumption of buffalo mozzarella cheese. In conclusion, the results of the present study showed that the risk of poisoning by B. cereus following the consumption of this cheese was moderate.

Abstract Objectives To estimate the prevalence rate of cases of gastroenteritis caused by food poisoning reported to University College Hospital. Methods This was a retrospective observational study of patients who attended the clinic from 2010–2016. Patient's folders were surveyed for patients who had reported at the hospital with diarrhoeal cases. Relevant information such as types of food eating, causes and duration of diarrhea etc were retrieved from the folders. Results Data from past records of patients who had attended clinic from 2010–2016 at University College Hospital (UCH) for gastroenteritis as a result of food borne poisoning showed a total of 72 diarrhoeal cases of which 25 (76.9%) were caused by food poisoning. In Medical out-patient ward (MOP), there was only 24 cases of food poisoning out of the 34 cases of diarrhoea reported. MOP had the highest cases of diarrhoea (34) recorded while Surgical out-patient ward (SOP) had the lowest number of cases, just 3 cases. Children out-patient ward (CHOP) and SOP had no reported case of food poisoning while Ante-natal clinic ward (ANC) had only one case of reported food poisoning. The following foods were indicated in food poisoning such as rice, pop corn, kilichi and fried potatoes. Fish roll was indicated as the only source of food poisoning for all diarrhoeal cases reported at ANC. Augmentin, Metronidazole, Ciprofloxacin, Ceftriaxone, Loperamide, Normal saline and Coatem were the only drugs used in treatment. Conclusions The study indicated a relationship between the types of wards and drug used. Also, ciprofloxacin was the drug of choice used by all wards. Funding Sources Self-sponsored.

Ultraviolet disinfection could effectively inactivate the antibiotic resistant bacterium vancomycin resistant Enterococcus faecalis, but had a limited removal efficiency for the antibiotic resistance gene–vanB gene.
