Recent studies have indicated that legume proteins can be potentially used as an alternative to animal-derived protein ingredients for many food and biomaterial applications, however some modifications may be first required to improve their functionality since they show relatively lower solubility and functional properties compared to commonly used animal-based proteins. A variety of physical, chemical or biological processes can be used to achieve these modifications in structural, physicochemical, and functional properties of legume proteins. The aim of this chapter was to review the most recent studies focusing on modification of structural properties and improvement of functionality of legume proteins. Effects of processing conditions on protein functionality were discussed. Special emphasis was given to the structure–function mechanisms behind these changes. Since the performance of modified legume proteins has been shown to depend on a variety of factors; parameters used in the modification process have to be optimized to achieve the desired level of improvement in legume protein functionality. Each modification method has been indicated to have its own advantages and limitations in terms of performance and applicability in different food matrices. Further studies are required to investigate the interactions of modified legume proteins with other food components during food processing and storage. Furthermore, additional research on the effects of modification treatments on flavor profile and nutritional properties of legume proteins is needed as well.

In the present study we evaluated the composition and antimicrobial activity of various rose oils from Bulgaria, Turkey, Morocco, Iran and China against three Gram-positive, three Gram-negative bacteria and two yeasts. The composition of the studied essential oils was determined by GC and GC/MS. Citronellol was the major compound of all the oil samples: 31.7% (Chinese oil); 32.6% (Iranian oil); 33.6% (Moroccan oil); 34.9% (Bulgarian oil) and 38,7 % (Turkish oil). For the Bulgarian oil we could determine the highest activity against all microorganisms. Bacillus cereus ATCC 11778 was the most sensitive strain to Bulgarian rose oil (MCC 128 μg/mL) and Pseudomonas aeruginosa ATCC 9627 and P. fluorescens were more resistible strains (MCC 4096 μg/mL). Antimicrobial activity of rose oils is mainly due to the action of oxygenated acyclic monoterpenes citronellol, geraniol, nerol and linalool, their acetate derivatives and the phenolic compound eugenol.

Antimicrobial activity of Usnea barbata especially against bacteria involved in pathogenesis of various skin conditions has been well documented in literature. Nevertheless, there are no papers dealing with formulation of its isolates into topical preparations for treatment of skin infections. In present study, alkyl polyglucoside (APG) - based vehicle was developed as carrier of U. barbata CO2-supercritical extract (U-SE) that demonstrated the best antimicrobial potential in preliminary screening. For comparison, chosen extract in the same concentration and using the same procedure was incorporated into a pharmacopoeial vehicle. Comparative evaluation of physicochemical stability, efficiency and safety proved APG-based vehicle to possess certain preferential features as carrier of U-SE compared to the reference one, composing a topical formulation with potential clinical relevance in treatment of skin infections.
