Liveweight and carcass traits of 3-way Africander (A) x Simmental (S) x Hereford (H) crossbreds and purebred Herefords were monitored predominately on native pastures at Dirranbandi, Queensland, for 2 calf crops over 6 years. The relative breed compositions of the crossbreds were A4S2H2, A4S 1 H3 and A4H4. The mean liveweight of the A4S2H2 cattle ranked highest from about 250 days post-weaning to slaughter (520 days post-weaning) for steers, and at first joining for heifers (560 days post-weaning). Differences in liveweight were not significant at all times. The A4S2H2 and A4SlH3 steers had the highest (P<0.05) post-weaning average daily gains. Differences in weaning weight between crossbreds were carried through to slaughter for steers and to joining for heifers. The A4S2H2 steers had the highest (P<0.05) mean final liveweight (433 kg) and mean carcass weight (232 kg). There was no difference in carcass weight between the other crossbreds and Herefords. Fat depth at the P8 rump site of A4H4 crossbreds (8.5 mm) was higher (P<0.05) than that of Herefords (5.5 mm) and other crossbreds. Dressing percentages were similar for all breed types. The A4S2H2 maiden heifers had higher (P<0.05) liveweights at first joining (369 kg) than the A4S1H3 (353 kg) and A4H4 (337 kg) heifers. These data show that beef producers in southwestern Queensland can increase carcass weights with A4S2H2 crossbreds and produce carcasses that primarily meet the Korean-EC market and the requirements of domestic supermarket outlets.

In 1984–1985 and 1985–1986 groups of 136 and 127 male calves were used to assess the effects of multiple implants (Ralgro and Steeroid), castration time (early and late) and castration method (surgical and chemical) on growth to weaning and feedlot performance and carcass characteristics. Ralgro increased calf rate of gain to weaning (P < 0.05) and adjusted weaning weight (P < 0.01) but did not affect rate of gain during the feedlot period. Although Ralgro increased (P < 0.001) weight at slaughter, it took longer (P < 0.05) for implanted cattle to reach Canada A1 than unimplanted cattle. Steeroid did not affect rate of gain to weaning but did increase (P < 0.05) adjusted weaning weight. Steeroid increased (P < 0.05) rate of gain relative to unimplanted cattle during the growing period in the feedlot and cattle implanted four times from birth to slaughter gained more (P < 0.05) than cattle implanted twice (birth and weaning). For the entire feedlot period, bulls receiving Steeroid gained faster (P < 0.05) than unimplanted bulls with no difference (P > 0.05) between implant groups (two or four implants). Ralgro implants increased (P < 0.05) carcass weight, rib-eye area and cutability while Steeroid increased (P < 0.05) only carcass weight. However, when rib-eye area was adjusted for carcass weight, the effect of Ralgro was not significant (P > 0.05). Bulls had greater (P < 0.05) shipping weight, carcass weight, rib-eye area, dressing percent and cutability than steers. Age at castration (early or late) had no effect on feedlot performance or carcass traits while method of castration (surgical or chemical) had some effects (P < 0.05) on ADG, liveweight, carcass weight and rib-eye area. The influence of breed of sire on carcass traits was examined by studying data collected on 134 steers produced by mating Shorthorn cows with Shorthorn, Angus, Hereford, and Charolais bulls. The steers were fed out in two groups: one group was slaughtered at 18 to 23 months as they reached a live weight of 900–1000 lb and the other group at approximately 30 months of age. In each group the steers sired by Charolais bulls gained more rapidly, possessed more bone, produced heavier carcass weight, and showed largest eye muscle measurements. There were no appreciable differences among the crosses within the sire groups represented by the British breeds except that Hereford × Shorthorn surpassed Angus × Shorthorn and Shorthorn in growth rate significantly and for a slight superiority in marbling for the Angus compared with the Shorthorn.

The aim of our study was to assess the dynamics of the characteristics in pig carcasses as affected by the season and year of slaughter. A total of 106 027 carcasses of growing-finishing pigs of commercial production, slaughtered in the same abattoir in 2014 and 2015 were included in the study. The carcasses were classified using UltraFOM 200 device, as the characteristics controlled were back-fat thickness at two locations and the depth of m. Longissimus dorsi. These measurements were used to further determine the lean meat percentage. The results of the study showed significant differences in the dynamics of changes of carcass characteristics during the seasons and the years. The highest lean meat percentage was found in summer (56.48%), followed by spring (56.34%), autumn (56.29%) and winter (56.10%). On the other hand, the pigs slaughtered in winter displayed highest carcass weight and back-fat thickness at both locations.

Objective and subjective tests for quality were performed on the meat from 40 cryptorchid second-cross lambs fed lucerne only (L; n = 8), lucerne plus an oat grain supplement ad libitum (LO; n = lo), lucerne plus wilted lucerne silage ad libitum (LS; n = 11), or an oat-lupin grain (3:1) supplement at 90% of ad libitum while grazing dry summer annual pasture (OL; n = 11). All carcasses complied with the Elite lamb specification of weight >22 kg and GR measurement 6-15 mm. There was no significant difference between groups for hot carcass weight, the mean (� s.e) values being 25.1 0.43, 25.2 � 0.36,25.2 � 0.38, and 25.3 � 0.36 kg for L, LS, LO, and OL groups, respectively. When the GR and fat depth over the eye muscle at the 12th rib were adjusted to a common carcass weight of 25.2 kg there was no significant difference between groups. There was no significant difference between groups for pH, or the colour values a*, b*, and L* of the M. longissimus thoracis et lumborum (a* is relative redness, b* relative yellowness, and L* relative lightness). The shear force values for the loin muscle were significantly (P<0.05) greater for lambs from group OL than for those from group LO. Cooking loss for the loin muscle was significantly (P<0.05) greater for OL lambs than all other groups. A comparison of the mean values for aroma and flavour showed the lambs from group OL produced meat that was considered significantly (P<0.05) less desirable for these characteristics, with other groups being similar. Meat from OL-fed lambs was considered oilier and less meaty than meat from lambs fed the other diets. There was a significant (P<0.05) difference in absolute scores between panellists, but their ranking was not affected and there was no panellist x sample interaction. Because many producers use grain supplements such as oats and lupins for finishing lambs on dry forages, further study is recommended that focuses on the interaction between supplement and the base forage.

The growth and carcass characteristics of first-cross Border Leicester x Merino ram, cryptorchid and wether lambs were compared over a range of slaughter weights (35-55 kg). Lambs were offered feed ad libitum after weaning. The growth rate of wether lambs (221 g/day) was less (P< 0.01) than that of rams and cryptorchids (308 and 280 g/day respectively, P = 0.076). The dressed carcasses of the wether lambs were approximately 2 percentage units heavier than those of the ram and cryptorchids, but this difference was partly due to the weight of the testes. Across all sex groups, dressing percentage increased by 0.46 percentage units per kg increase in carcass weight. The carcasses of rams and cryptorchid lambs tended to be leaner than those of wethers. Fat score distributions, based on export standards, were such that wethers scored higher (fatter) than rams and cryptorchids (P< 0.05). There was a significant sexx carcass weight interaction with GR tissue depths. Above 17 kg carcass weight, tissue depth of wether lambs was greater than those of the other sex types. Of 12 families assessing consumer acceptability (taste, smell, size, fatness and tenderness) of leg roasts, the majority showed no preference for any of the sexes.

Abstract The objective of this study was to evaluate the optimal time to reimplant following an initial implant on performance and carcass characteristics when steers were fed for 180 d. Crossbred steers (n = 800; initial BW = 330 ± 25 kg) were utilized in a generalized randomized block design and assigned randomly to pen, and pen assigned randomly to one of five treatments. Treatments included 5 different days on terminal (DOT) implant (160, 120, 100, 80 or 40 DOT). All steers were given an initial implant (80 mg trenbolone acetate (TBA) + 16 mg estradiol; Revalor-IS) on d 1. Terminal implant consisted of 200 mg TBA + 20 mg estradiol (Revalor-200). Dry matter intake was the least for 40 DOT (P ≤ 0.04), with no differences between the other treatments (P ≥ 0.11). Carcass-adjusted final BW responded quadratically (P = 0.03) with 100 DOT having the greatest final BW but was not different from 120 DOT (P = 0.82). Carcass-adjusted ADG and G:F responded quadratically (P = 0.02 and P < 0.01, respectively). When solved for the first derivative, carcass-adjusted ADG and G:F were maximized at 99 and 87 DOT, respectively. However, there was less than a 2% difference in carcass-adjusted ADG and G:F between 80 and 120 DOT. Hot carcass weight responded quadratically (P = 0.03), with the greatest HCW at 100 DOT. Solving for the first derivative, HCW was optimized at 104 DOT. There were no differences in back fat, marbling, or yield grade (P ≥ 0.27). Overall, administering an initial implant followed by a terminal implant 85 to 105 d prior to harvest increased gain, efficiency, and HCW in steers when fed for 180 d. Minimal changes in performance and carcass characteristics when steers are reimplanted 80 to 120 d prior to harvest suggests flexibility in reimplanting windows.

Phenotypically dehorned (genetically horned) and polled bulls were similar for birth, weaning weight, pre- and post-weaning ADG, carcass weight, grade fat, marbling, rib-eye area, cutability and carcass grade. Polled bulls had higher (P < 0.02) fat over the rib-eye compared with dehorned. The similarity in growth and a majority of carcass traits between polled and horned, would suggest that breeding for polledness may be recommended to eliminate horns. In two experiments, we examined the effects on liveweight, carcass traits and muscle properties of (a) sending cattle to the abattoir either direct from a farm or via a saleyard, and (b) different curfew and sale procedures at a saleyard. During the 12 h curfew and 10 h sale periods, cattle were held with or without water, but always denied feed. In experiment 1, after a journey of 1320 km, 252 bullocks (mean liveweight 558 kg) were subjected to one of seven treatments. The groups transported direct to the abattoir were (1) denied water between arrival and slaughter (26 h), (2) offered water for 26 h, or (3) offered water and feed for 50 h and then water alone for 24 h. Those sent to the saleyard were given access to water (4) at all times, (5) only during the curfew and sale periods, (6) only before the curfew began, or (7) were denied water until after the sale, when all groups were offered water for 36 h until slaughter. Among the bullocks sent direct to the abattoir, the group with water for 26 h until slaughter had heavier (P< 0.0 1 ) carcasses than those denied water (331 kg vs 312 kg) and also a greater (P < 0.0 1) muscle water content, while the carcasses of the group slaughtered 2 d later were intermediate for both. Whether dressing percentages were calculated on liveweights at the start or end of the simulated sale for the four saleyard groups, the differences in mean dressing percentages between groups offered water (0.7 and 0.3 percentage units) were less than the differences between the means of the groups denied water (3.7 and 3.5 units). The increases in dressing percentage during the sale for groups with water (0.7 and 0.3 units) were less than those for the groups denied water (1.5 and 1.7 units). Differences in mean liveweights and mean muscle water contents between groups followed the same trends. Mean carcass weights did not differ significantly between saleyard groups (318-323 kg). In experiment 2, after a journey of 90 km, 152 cows (mean liveweight 323 kg) were subjected to one of four treatments. The group going direct to the abattoir was offered water for 4.5 h, fasted for 16 h and then slaughtered. For the other three groups, the saleyard treatments 4,6, or 7 of experiment 1were imposed, followed by 21 h on water and a 16 h pre-slaughter fast. Trends in dressing percentage and liveweight were similar to those recorded in experiment 1. Mean carcass weight varied (P<0. 05) between groups and tended to increase with muscle water content. Method of sale was important because it affected the time from mustering to slaughter, and thus, carcass weight. At saleyards, the practice of giving cattle continuous access to water reduced significantly the variation in liveweight, dressing percentage and muscle water content between groups with similar initial liveweights. This practice at abattoirs avoided dehydration of carcass tissues at slaughter

A total of one hundred and twelve day-old broiler chicks (Amo strains) were used to evaluate carcass traits fed with diets containing graded levels of treated sesame waste and its appropriate level of inclusion in the diet. The experimental birds were randomly allocated to four dietary treatments of 28 birds per treatment and each treatment was replicated four times with seven birds per pen. Results obtained showed that there were significant (P<0.05) differences in terms of weight (g), pluck weight (g), carcass weight (g), intestinal weight (g) and liver weight (%). Non-significant (P<0.05) difference were observed in terms of intestinal length (cm), wing weight (g), thigh weight (g), head & legs (%), gizzard (%), lungs (%), heart (%) liver (%), kidney (%) and spleen (%).

Measurements were made of the effects of Revalor on the seasonal growth, carcass weight and fatness of Zebu crossbred steers in central Queensland. Ninety-three steers were grazed on improved pastures for 15 months prior to slaughter. Half the animals were implanted with Revalor (140 mg trenbolone acetate plus 28 mg oestradiol-17B mixed with cholesterol) for the first 25 weeks (September-March) and the balance left as controls. During this period, treated steers gained weight significantly (P<0.001) faster than untreated steers (0.57 v. 0.42 kg/day). In March, the 2 groups were further divided into 2 subgroups and 1 subgroup from each group was either implanted for the first time or reimplanted with Revalor. The animals implanted in March were reimplanted again 4 months later. The other subgroups were not implanted. After implantation in March, steers implanted for the first time gained weight significantly (P<0.001) faster (1.27 kg/day) than all other treatment groups. Steers implanted at the beginning of the experiment in September, but not reimplanted in March, continued to gain significantly (P<0.05) faster in the period March-May than steers which had never been implanted (1.01 v. 0.85 kg/day). This suggests that the implant was still having an anabolic action at least 6 months after implantation. The experiment ended with the slaughter of the steers in December. Animals treated with Revalor at some time during the experiment were significantly (P<0.05) heavier at slaughter (about 22 kg) and had significantly (P<0.001) heavier carcasses (about 13 kg) than those left untreated. Steers implanted throughout the experiment and those implanted for the 9 months before slaughter had significantly (P<0.001) less subcutaneous fat at the P8 rump site than those either not treated or implanted earlier than 9 months prior to slaughter.
