Sardinella (lemuru) is a genus of fish that is widespread in the East Java Sea region, especially in Muncar, Banyuwangi in East Java Province, Indonesia. Marine fishes are rich in essential fatty acids, including omega-3. This study aims to improve the quality of lemuru fish oil through the use of adsorbent materials such as bentonite and activated carbon. The sample was analyzed to determine its free fatty acid (FFA) content and peroxide value (PV) using the titrimetric method. The clarity of the oil was determined using the spectrophotometric method (λ 440 nm). The omega 3 content from the fish oil sample was then enriched through enzymatic reactions using lipase. Enzymatic reactions were carried out for 5, 10, 15, 20, 35, and 47 hours with a lipase concentration of 500, 1000, 1500, and 2000 units respectively. The omega-3 content of the fish oil products was analyzed using the GC-FID method. The results show that the addition of 3% activated carbon and bentonite in the fish oil reduced the FFA and PV results. Moreover, the absorbance value at λ 440 nm was also reduced from 0.883 to 0.559. The highest content of omega-3 was obtained through hydrolysis with lipase at a concentration of 1000 units for 35 hours with alpha-methyl linolenate (ALA), methyl all-cis-5,8,11,14,17-eicosapentanoate (EPA) and cis-4,7,10,13,16,19-docosa-hexaenoic acid methyl ester (DHA) at 0.78, 1.06, and 0.29% respectively.

Pengabdian kepada masyarakat yang berjudul “Penyuluhan Potensi Omega-3 untuk Meningkatkan Sistem Imun (Terutama Dalam Masa Pandemi Covid19) Secara Virtual” memiliki sasaran khalayak umum khususnya para orang tua yang menyiapkan gizi terbaik untuk anak-anaknya dalam meningkatkan imunitas tubuh. Ikan memiliki kandungan asam lemak omega 3 tertinggi dibandingkan dengan protein lain, seperti berturut-turut tiram, udang, lobster, sapi, ayam dan kambing. Asam lemak omega-3 dapat menurunkan kadar trigliserida dan total kolesterol dalam darah serta dapat meningkatkan metabolisme lemak. Asam lemak yang berhubungan dengan kesehatan adalah EPA (Eicosa Pentaenoic Acid). Sedangkan asam lemak yang berhubungan dengan kecerdasan dikenal dengan DHA (Docosa Hexaenoic acid). Oleh karena itu, pengabdian masyarakat untuk mengenalkan potensi omega 3 pada ikan untuk meningkatkan imunitas tubuh perlu dilakukan. Pengabdian ini bertujuan untuk mensosialisasikan pentingnya omega 3 ikan dalam meningkatkan imunitas tubuh dan sebagai agen anti inflamasi. Penyuluhan secara virtual ini diikuti oleh 85 peserta. Hasil kuisioner menunjukkan bahwa sebelum penyuluhan 41,7% peserta belum mengetahui mengenai potensi omega 3 pada ikan untuk meningkatkan sistem imun, 33,3% sedikit mengetahui, dan 25% sudah mengetahui. Setelah penyuluhan, presentase kepuasan mencapai 80.28%. Hal ini menunjukan bahwa penyuluhan mengenai potensi omega 3 pada ikan untuk meningkatkan sistem imun telah berhasil sesuai tujuan.

SummaryThe effects of catechins were studied in both unstimulated platelets and platelets submitted to a mild oxidative stress induced by docosa-hexaenoic acid (DHA). Human unstimulated platelets were incubated in the presence of catechin or epicatechin (1, 10 or 100 μM) for 2 h at 37° C. Treatment by 1 μM epicatechin was sufficient to induce a significant inhibition (-30%) of basal thromboxane B2 formation. This result is consistent with the observed inhibitory effects of flavonoids on platelet aggregation. DHA treatment of platelets decreased the amount of a-tocopherol and increased the malondialdehyde (MDA) formation. The presence of epicatechin or catechin prevented the oxidative stress induced by DHA. Indeed, the platelet a-tocopherol level was significantly increased when compared to that of platelets treated by DHA alone, to reach the control level, whereas MDA was depressed to a level even lower than the control one. Our results indicate that catechin and especially epicatechin protect platelets from a peroxidative stress.
