In this article I explore the solidarity, resistance and agency of a group of women involved in an urban community food garden project in collaboration with the Pietermaritzburg Agency for Community Social Action (PACSA). I explore this initiative through the lenses of African Women’s Theology (AWT) and Oikos Theology and suggest that urban community food gardens represent a cooperation with nature and a resistance to social structures and systems that perpetuate marginalization, inequality, and subjugation of women. AWT provides a means to theorize and theologize women’s suffering and agency, and Oikos Theology recognizes the connection between economy and ecology. I tease out how ecological and indigenous wisdom applied in urban community food gardens results in a mutually sustaining relationship between local communities and the earth. I also show how the development of an ecological consciousness not only serves to mitigate food insecurity but empowers women to resist systems and structures of oppression and to embrace affirming and life-giving traditions.

The lack of academic attention that home food gardening has received in Canada and the United States is surprising, given the many demonstrated benefits of community gardening programs, including increased community cohesion and resilience. The aim of the exploratory study is to explore the current surge in home food gardening and its relationship to the COVID-19 pandemic. A national survey was conducted, consisting of 43 main questions, asking respondents about their home life and food provisioning during COVID-19, the physical characteristics of their food gardens, and their attitudes and beliefs concerning home food production. Survey results show that 51% of respondents grow at least one type of fruit or vegetable in a home garden. Of those, 17.4% started growing food at home in 2020 during COVID-19 pandemic. To gain more insight into just how significant a cause the pandemic lockdown was on home food gardening, follow-up surveys and policy recommendations are suggested.

In our society, childhood obesity has become a pressing health issue. Childhood obesity occurs when children are considerably overweight for their age and height. Body mass index (BMI) is used to measure the percentage of body fat; therefore, the higher the BMI, the more body fat an individual has accompanied by the likelihood that the individual is obese. This research aims to address the factors that cause childhood obesity. A total of 116 journal articles were used for the development of this paper; the articles were analyzed and selected based on the occurrence of the following keywords and phrases: (1) childhood obesity, (2) social cognition theory, (3) telemedicine, and (4) nutrition education. The literature review showed a relationship between childhood obesity and body mass index (reduction, the use of telemedicine, and school food gardens). Using telemedicine video conferencing software and adding food gardens to public school curricula may be a strategy educators and policymakers can use to reduce the rate of childhood obesity.

Food insecurity is a challenge in the developing world, where many are finding healthy food inaccessible due to poverty. A pre-test, post-test design was applied to determine the impact of a vegetable gardening intervention in 25 experimental and 25 control households in Lesotho. Information about sociodemographic conditions and indicators of food security was collected by trained fieldworkers. As evidenced by the Living Poverty Index of 2.5, the sample was characterized by high levels of poverty. Although almost no households were scored very low or low using the Months of Adequate Household Food Provisioning (MAHFP) tool, less than half of households were categorized as food-secure. Household Dietary Diversity (HDD) showed infrequent intake of vegetables and fruits and regular intake of fats and sugar. After intervention, the percentage of households with a low HDD score improved significantly in the intervention group (12%) compared to the control group (40%) (95% CI (2.5%; 50.7%)). Despite this, the percentage of households that consumed vegetables during the previous day was still below 30%. Food gardens have the potential to improve availability of food and frequency of vegetable consumption, but harsh environmental conditions need to be considered.

Gardens in Vanuatu, an archipelago in the SW Pacific, materialize the multiple relationships between land, humans, and the more-than-human world that facilitate self-reliance, and wellbeing. This paper analyzes a collaborative project (2016-18) undertaken on the Island of Tanna in Vanuatu. A project for and with youth and their communities, it aimed to train young people to do basic research on customary food gardens and to document Indigenous customary knowledge, practices, and customary stories about food and gardens. The project started after a catastrophic cyclone destroyed gardens and infrastructure, rendering the self-sufficient islanders dependent on food aid at a time of rising rates of non-communicable diseases (NCDs). There is also concern about the declining interest in traditional knowledge among youth. With about 60% of the population under 30 years of age, this paper argues that youth are critical actors in ensuring the continuity of customary knowledge and practices that are essential for food sovereignty, the maintenance of social relations and wellbeing, all of which are embedded in relational ecologies of care.

Pacific Islanders have paid dearly for abandoning traditional diets, with diabetes and other non-communicable diseases (NCD) widespread. Starchy root crops like sweet potato, taro, and cassava are difficult to grow on the potassium-deficient soils of atolls, and high energy, low nutrient imported foods and drinks are popular. Nutritious, leafy food plants adapted to alkaline, salty, coral soils could form part of a food system strategy to reduce NCD rates. This project targeted four atolls south of Tarawa, Kiribati, and was later extended to Tuvalu. Mineral levels in diverse, local leafy food plants were compared to reveal genotype–environment interactions. Food plants varied in ability to accumulate minerals in leaves and in tolerance of mineral-deficient soils. Awareness activities which included agriculture, health, and education officers targeted atoll communities. Agriculture staff grew planting material in nurseries and provided it to farmers. Rejuvenation of abandoned giant swamp taro pits to form diversified nutritious food gardens was encouraged. Factsheets promoted the most suitable species from 24 analyzed, with multiple samples of each. These included Cnidoscolus aconitifolius (chaya), Pseuderanthemum whartonianum (ofenga), Polyscias scutellaria (hedge panax), and Portulaca oleracea (purslane). The promoted plants have been shown in other studies to have anti-NCD effects. Inclusion of the findings in school curricula and practical application in the form of demonstration school food gardens, as well as increased uptake by farmers, are needed. Further research is needed on bioavailability of minerals in plants containing phytates and tannins.
