Myriads of sensors have been proposed to signal the spoilage of a piece of meat. It is assumed and taken for granted that biogenic amines, BAs, harmful by-product indicating the last phase of degradation, must be present in the volatilome developed over the decaying meat. This chapter aims to clearly explain BAs’ role in protein food spoilage: undoubtedly produced inside the meat, never present in the headspace, where sensors are displayed. The BAs presence in the headspace represents a sort of myth. It is plenty of evidence that BAs cannot be present in the volatilome over the meat. The BAs’ volatility is pH-dependent. As shown by their protonation constants, the strongly buffered pH of proteinaceous food prevents their vapour phase transition. The chemical analyses made at the same degradation time, on the meat and the headspace above the meat, corroborate the real composition of the volatilome, demonstrating the BAs absence. The sensors here described, designed on volatilome evidence, succeed to follow the entire process, from the SAFE condition to the WARNING and the HAZARD. The final prototype works reliably on real protein foods (i.e. chicken, beef pork and fish), not enriched and stored at the home condition.

The hydration of tricalcium silicate (C3S) with three grain sizes of monoclinic (M) and triclinic (T) modifications and on their thermally activated samples were investigated by exposure to water vapour at 80°C for 60 days. The products were investigated by XRD, TG and N2 adsorption. The smaller the particle size the greater was the hydration for both dried and activated samples from (M). In the activated samples a hydrate with 2θ values of 38.4°, 44.6° and 48.6° could be identified. Hydration increased with particle size for the unactivated (T) samples but after activation the intermediate size exhibited enhanced hydration. Thermal treatment at 950°C of (T) samples increased the surface active centers on the expense of those in the bulk. Changes produced in surface texture upon activation and/or hydration are discussed.

AbstractIn this work we investigate the role of threading dislocations in nitride light emitters with different indium composition. We compare the properties of laser diodes grown on the low defect density GaN substrate with their counterparts grown on sapphire substrate in the same epitaxial process. All structures were produced by metalorganic vapour phase epitaxy and emit light in the range 383–477 nm. We observe that intensity of electroluminescence is strong in the whole spectral region for devices grown on GaN, but decreases rapidly for the devices on sapphire and emitting at wavelength shorter than 420 nm. We interpret this behaviour in terms of increasing importance of dislocation related nonradiative recombination for low indium content structures. Our studies show that edge dislocations are the main source of nonradiative recombination. We observe that long wavelength emitting structures are characterized by higher average light intensity in cathodoluminescence and better thermal stability. These findings indicate that diffusion path of carriers in these samples is shorter, limiting the amount of carriers reaching nonradiative recombination centers. According to TEM images only mixed dislocations open into the V-pits, usually above the multi quantum wells thus not influencing directly the emission.

Water exchange between insects and their environment via the vapour phase includes influx and efflux components. The pressure cycle theory postulates that insects (and some other arthropods) can regulate the relative rates of influx and efflux of water vapour by modulating hydrostatic pressures at a vapour-liquid interface by compressing or expanding a sealed, gas-filled cavity. Some such cavities, like the tracheal system, could be compressed by elevated pressure in all or part of the haemocoele. Others, perhaps including the muscular rectum of flea prepupae, could be compressed by intrinsic muscles. Maddrell Insect Physiol . 8, 199 (1971)) suggested a pressure cycle mechanism of this kind to account for rectal uptake of water vapour in Thermobia but did not find it compatible with quantitative information then available. Newer evidence conforms better with the proposed mechanism. Cyclical pressure changes are of widespread occurrence in insects and have sometimes been shown to depend on water status. Evidence is reviewed for the role of the tracheal system as an avenue for net exchange of water between the insect and its environment. Because water and respiratory gases share common pathways, most published findings fail to distinguish between the conventional view that the tracheal system has evolved as a site for distribution and exchange of respiratory gases and that any water exchange occurring in it is generally incidental and nonadaptive, and the theory proposed here. The pressure cycle theory offers a supplementary explanation not incompatible with evidence so far available. The relative importance of water economy and respiratory exchange in the functioning of compressible cavities such as the tracheal system remains to be explored. Some further implications of the pressure cycle theory are discussed. Consideration is given to the possible involvement of vapour-phase transport in the internal redistribution of water within the body. It is suggested that some insect wings may constitute internal vapour-liquid exchange sites, where water can move from the body fluids to the intratracheal gas. Ambient and body temperature must influence rates of vapour-liquid mass transfer. If elevated body temperature promotes evaporative discharge of the metabolic water burden that has been shown to accumulate during flight in some large insects, their minimum threshold thoracic temperature for sustained flight may relate to the maintenance of water balance. The role of water economy in the early evolution of insect wings is considered. Pressure cycles might help to maintain water balance in surface-breathing insects living in fresh and saline waters, but the turbulence of the surface of the open sea might prevent truly marine forms from using this mechanism.

On the traditional day of the Kazan Institute for Advanced Training of Physicians, I had the great honor to give an act speech in front of its staff. It was based on the results of scientific works of the staff of the department in 1981-1986 mainly on studying the role of biogenic amines and some hormones (prolactin, hormones of adrenal cortex, parathyroid hormone and calcitonin) in the pathogenesis of some neuroendocrine diseases, which occur in obstetric-gynecological practice.

Food spoilage is caused by the development of microorganisms, biogenic amines, and other harmful substances, which, when consumed, can lead to different health problems. Foodborne diseases can be avoided by assessing the safety and freshness of food along the production and supply chains. The routine methods for food analysis usually involve long analysis times and complex instrumentation and are performed in centralized laboratories. In this context, sensors based on screen-printed electrodes (SPEs) have gained increasing importance because of their advantageous characteristics, such as ease of use and portability, which allow fast analysis in point-of-need scenarios. This review provides a comprehensive overview of SPE-based sensors for the evaluation of food safety and freshness, focusing on the determination of bacteria and biogenic amines. After discussing the characteristics of SPEs as transducers, the main bacteria, and biogenic amines responsible for important and common foodborne diseases are described. Then, SPE-based sensors for the analysis of these bacteria and biogenic amines in food samples are discussed, comparing several parameters, such as limit of detection, analysis time, and sample type.

Ni2P, MoP, and NiMoP supported on MAS (10) were successfully prepared using acid and base regulators. The intrinsic role of pH and synergic factors has altered the physicochemical properties of the catalysts, which are responsible for HDO activity.
