The carcass traits of 486 steers representing four breed types (British purebred, British crossbred, European crossbred, European purebred) were evaluated. Carcasses from European purebreds and crossbreds were heavier and leaner than those from British purebreds and crossbreds. British purebreds had a higher frequency of small marbling than European purebreds and crossbreds, but there was considerable variation in marbling across all breed types. It was concluded that European purebreds and crossbreds would return a higher market value than British purebreds and crossbreds under current marketing conditions. The effects of station of origin, station of test and genotype × environment interactions were evaluated for carcass characteristics of 121 backcross bulls. The results suggest that station of origin, station of test and genotype × environment interactions are not of any major importance in planning of breeding programs, performance tests and transfer of beef cattle with respect to carcass traits. Breed-of-dam and sex-of-calf effects are reported based on observation of 2007 heifer and steer carcasses. The carcasses were derived from Limousin-sired calves born to dams representing 15 F1 and backcross genotypes reared at two locations over a period of 5 yr. The calves represented Hereford × Angus, Charolais × Shorthorn, Simmental × Shorthorn and all backcross combinations involving Charolais or Simmental with Hereford, Angus or Shorthorn. Carcass traits were analyzed on an unadjusted, a constant hot-carcass weight, and a constant rib-fat depth basis. The slaughter criteria dictated that steers were heavier at slaughter than heifers. They also exhibited higher dressing yield, greater longissimus thoracis area, and lower fat depth. Charolais and Simmental breeding was associated with less rib fat depth, greater longissimus thoracis area, a higher proportion of preferred cuts, less dissectible fat, more bone and more lean in the preferred cuts than British beef breeding. Within the European (Charolais and Simmental) and British beef (Hereford, Angus and Shorthorn) breed groups, breed effects were smaller, but for carcass composition traits they were frequently significant. When compared with Simmental, Charolais breeding tended to be associated with less marbling, less rib fat depth, less dissectible fat and more lean in the preferred cuts. Among the British beef breeds, Hereford was associated with the highest proportion of preferred cuts, Shorthorn with the lowest rib fat depth — but the highest dissectible fat — and Angus with the most marbling, the greatest longissimus thoracis area and the lowest bone content. This research has demonstrated that breed effects for carcass composition traits tend to be additive and that a significant effect may be associated with substitution of as little as one-eighth of the breed composition. In 1984–1985 and 1985–1986 groups of 136 and 127 male calves were used to assess the effects of multiple implants (Ralgro and Steeroid), castration time (early and late) and castration method (surgical and chemical) on growth to weaning and feedlot performance and carcass characteristics. Ralgro increased calf rate of gain to weaning (P < 0.05) and adjusted weaning weight (P < 0.01) but did not affect rate of gain during the feedlot period. Although Ralgro increased (P < 0.001) weight at slaughter, it took longer (P < 0.05) for implanted cattle to reach Canada A1 than unimplanted cattle. Steeroid did not affect rate of gain to weaning but did increase (P < 0.05) adjusted weaning weight. Steeroid increased (P < 0.05) rate of gain relative to unimplanted cattle during the growing period in the feedlot and cattle implanted four times from birth to slaughter gained more (P < 0.05) than cattle implanted twice (birth and weaning). For the entire feedlot period, bulls receiving Steeroid gained faster (P < 0.05) than unimplanted bulls with no difference (P > 0.05) between implant groups (two or four implants). Ralgro implants increased (P < 0.05) carcass weight, rib-eye area and cutability while Steeroid increased (P < 0.05) only carcass weight. However, when rib-eye area was adjusted for carcass weight, the effect of Ralgro was not significant (P > 0.05). Bulls had greater (P < 0.05) shipping weight, carcass weight, rib-eye area, dressing percent and cutability than steers. Age at castration (early or late) had no effect on feedlot performance or carcass traits while method of castration (surgical or chemical) had some effects (P < 0.05) on ADG, liveweight, carcass weight and rib-eye area. The effects of estrus suppression (none, oral melengestrol acetate (0.4 mg d−1) or ovariectomy via Willis spay technique) and an anabolic implant (none or Synovex Plus®) on growth performance and carcass characteristics were determined using 90 beef heifers of composite breeding in a 2 × 3 factorial experiment conducted in the last 50 d before slaughter. Spaying caused no morbidity or mortality and resulted in average daily gains (1.37 kg d−1) comparable to heifers fed melengestrol acetate (1.33 kg d−1). Implanting improved (P < 0.05) feed efficiency and increased (P < 0.05) animal gain, ribeye area, carcass weight and yield and reduced (P < 0.05) intramuscular fat deposition but estrus suppression did not. Method of estrus suppression did not influence (P > 0.05) carcass traits. Spaying and implanting represent an effective means of improving returns from heifers, even late in the finishing period. Birth weights of Boer (BO) sired kids were 9% higher than Alpine (AL) sired kids. Weaning, 160 d weight and preweaning average daily gain (ADG) were similar for the AL × AL, AL × SA and BO × AL. Breed of dam was significant (P < 0.02) for birth, weaning, 100-d weight, and preweaning ADG. Abstract The purpose of this study was to draw attention to the number of the lumbar vertebrae in R1 BBA crosses (Bafra x F1 (Bafra x Akkaraman)) lambs (75% Bafra and 25% Akkaraman), and the effect of 7 lumbar vertebrae on some carcass traits. Even though some studies reported that the number of the lumbar vertebrae might be considerably different dependent on the sheep genotype, this has not been reported for Turkish breeds. While a study on the R1 BBA lambs has been performed, seven lumbar vertebrae have been identified in four of the eighteen lambs. The means of the carcass length (80.800±0.583 and 84.375±1.375 cm) (P= 0.036), leg weight (5.942±0.079 and 6.209±0.052 kg) (P= 0.032), loin weight (1.560±0.096 and 1.849±0.060 kg) (P= 0.048), and loin’s lean weight (0.875±0.059 and 1.058±0.032 kg) (P= 0.040) were statistically different between the groups of lambs (6 and 7 lumbar vertebrae, respectively). In conclusion, the number of lumbar vertebrae has economically affected important parts of the carcass.

Studies were undertaken to evaluate bloodless castration (B) based on growth and carcass traits. During the first 28 d, bloodless and surgical (S) castrates showed a 51–53% and 68–73% reduction in average daily gain, respectively, compared with intact bulls (I) (P < 0.05) in two trials. Bulls grew faster than steers overall. Carcass traits and grade were similar for B, S and I (P > 0.05). Key words: Bloodless, surgical, castration, growth, carcass traits

Over a 2-yr period, 44 bulls and 44 implanted steers of Hereford × Shorthorn breeding were fed, from weaning to slaughter, diets of grass silage with 0, 0.45, 0.9 or 1.35 kg barley dry matter (DM)/100 kg liveweight. Each animal was slaughtered when it had 8 mm of fat over the loin as determined by ultrasound measurement. As the level of barley in the diet increased the rate of gain increased (P < 0.01), as did DM intake (P < 0.05) while feed required per kilogram gained and days on feed decreased. Bulls and steers responded in a similar manner to the different diets. Bulls gained faster (P < 0.01) on similar intakes of DM with the result that feed required for kilogram gain was less for bulls (P < 0.05). There was no difference (P > 0.05) in days to market for bulls and steers. There was no consistent effect of diet on carcass characteristics. However, castration resulted in lighter (P < 0.01) slaughter and carcass weights as well as a smaller (P < 0.01) rib eye area. Key words: Cattle, castration, diet, growth, carcass

SummaryThirty Ossimi lambs were used in an experiment to compare those whose tail was docked shortly after birth with controls. After weaning at 4 months of age the groups were further subdivided and two of the four groups closely shorn according to a 2 × 2 factorial design.Male lambs at 20 kg were subjected to intensive finishing until the age of 50 weeks and nine were then slaughtered to determine carcass characteristics.There was a trend for increased live-weight gain in the docked lambs in the preweaning stage (up to 16 weeks).This trend was also present, although not statistically significant, in the final phase of intensive feeding from 20 kg weight to 50 weeks. Shearing significantly improved daily gain in this final period (P < 0·05). These increases in gain were also apparently associated with improvements in efficiency, as judged on a group basis.Docking and shearing also tended to cause increases in body measurements: height, chest girth and abdomen girth in the case of docking (P < 0·05) and chest girth, chest depth and abdomen girth in the case of shearing (P < 0–05).Carcass characteristics, measured on a relatively small sample, indicated several effects of docking and shearing on carcass traits although most of these were consistent with the expected differences stemming from the higher carcass weights acheived at 50 weeks of age by docked and sheared lambs.
