Particular attention is paid to biodegradable materials from the environmental point of view and antimicrobial materials that ensure the microbiological safety of packaged products. The aim of the work was to study the properties of the composition, based on biodegradable polybutylene adipate terephthalate (PBAT) and the antimicrobial additive—birch bark extract (BBE). Test samples of materials were obtained on the laboratory extruder by extrusion with ultrasonic treatment of the melt. The concentration of the antimicrobial additive in the polymer matrix was 1 wt %. A complex research was carried out to study the structural, physico–mechanical characteristics, antimicrobial properties and biodegradability of the modified PBAT. Comparative assessment of the physico–mechanical characteristics of samples based on PBAT showed that the strength and elongation at break indices slightly decrease when the ultrasonic treatment of the melt is introduced. It was found out, that the antimicrobial additive in the composition of the polymer matrix at the concentration of 1 wt % has a static effect on the development of microorganisms on the surface of the studied modified films. Studies of the biodegradability of modified PBAT by composting for 4 months have shown that the decomposition period of modified materials increased, compared to pure PBAT. The developed modified polymer material can be recommended as an alternative replacement for materials based on polyethylene for food packaging.

Ensuring the microbiological safety of food products is a problem of current interest. The use of antimicrobial packaging materials is a way of solving the problem. When developing packaging materials, it is advisable to use a modern approach based on the creation of biodegradable materials. The difficulty in the selection of the polymer compositions’ components lies in solving the dilemma of the joint introduction and processing of antimicrobial and biodegradable agents. The studies of the ultrasound treatment on the melts of polymer mixtures showed an increase in the dispersion process of the components of the mixture. In this regard, this work aimed to study the effect of the ultrasonic treatment on the melts of polymer compositions containing thermoplastic starch and birch bark extract (BBE). In the work, the properties of PE-based packaging materials with various BBE concentrations obtained with ultrasonic treatment of melts on a laboratory extruder were studied. Biodegradable polymer compositions containing thermoplastic starch and BBE, obtained with the use of the ultrasonic treatment during extrusion, were investigated. The methods for studying rheological, physic-mechanical, antimicrobial properties and sanitary chemical indicators of materials were used in the article. It was found that ultrasonic treatment increases the melt flow and contributes to the production of materials with the uniform distribution of additives. The BBE content from 1.0% and higher in the contents of the material provides antimicrobial properties. When studying the permeability of oxygen and water vapor of the polymer compositions based on PE and BBE, it was found that the introduction of a filler increases vapor permeability by about 8–12% compared with control samples. The optimal concentration of BBE in polyethylene compositions containing thermoplastic starch was determined. The extension of the shelf life of the food product during storage in the developed material was established.

Birch bark contains important pentacyclic triterpens that determine an anticancer, anti-inflammatory and antiviral activity. The compounds can be extracted by simple procedures with organic solvents. The major problem of this type of triterpens is their low water solubility which can be increased by physical procedures like cyclodextrin complexation. The aim of present study was to analyse the products between birch bark extract and hydroxypropyl-g -cyclodextrin. Hydroxypropyl-g -cyclodextrin (HPGCD) was used as a host to improve its solubility in water, via inclusion complex formation. In order to obtain the inclusion complexes, 1:2 molar ratio and two preparation methods (physical mixing, kneading) were used. The inclusion complexes were analyzed by in vitro dissolution tests, thermal analysis and X-ray diffraction.

The physical, thermal, mechanical, optical, microstructural, and barrier properties of low-density polyethylene films (LDPE) containing ferula asafoetida leaf and gum extracts were investigated. Results showed a reduction in elasticity and tensile strength with increasing extract concentration in the polymer matrix. The melting temperature and enthalpy increased with increasing concentration of extracts. The films containing extracts had lower L∗ and a∗ and higher b∗ indices. The films containing leaf extract had more barrier potential to UV than the gum extracts. The oxygen permeability in films containing 5% of leaf and gum extracts increased by 2.3 and 2.1 times, respectively. The morphology of the active films was similar to bubble swollen islands, which was more pronounced at higher concentrations of gum and leaf extracts. FTIR results confirmed some chemical interactions of ferula extracts with the polymer matrix. At the end of day 14th, the growth rate of Aspergillus niger and Saccharomyces cerevisea in the presence of the PE-Gum-5 reduced more than PE-Leaf-5 (3.7 and 2.4 logarithmic cycles, respectively) compared to the first day. Our findings showed that active LDPE films have desire thermo-mechanical and barrier properties for food packaging.

Porous scaffolds made of biocompatible and environmental-friendly polymer fibers with diameters in the nano/micro range can find applications in a wide variety of sectors, spanning from the biomedical field to textiles and so on. Their development has received a boost in the last decades thanks to advances in the production methods, such as the electrospinning technique. Conferring antimicrobial properties to these fibrous structures is a primary requirement for many of their applications, but the addition of antimicrobial agents by wet methods can present a series of drawbacks. In this work, strong antibacterial action is successfully provided to electrospun polycaprolactone (PCL) scaffolds by silver (Ag) addition through a simple and flexible way, namely the sputtering deposition of silver onto the PCL fibers. SEM-EDS analyses demonstrate that the polymer fibers get coated by Ag nanoparticles without undergoing any alteration of their morphological integrity upon the deposition process. The influence on wettability is evaluated with polar (water) and non-polar (diiodomethane) liquids, evidencing that this coating method allows preserving the hydrophobic character of the PCL polymer. Excellent antibacterial action (reduction > 99.995% in 4 h) is demonstrated against Escherichia coli. The easy fabrication of these PCL-Ag mats can be applicable to the production of biomedical devices, bioremediation and antifouling systems in filtration, personal protective equipment (PPE), food packaging materials, etc.

The essential oil (EO) from basil—Ocimum basilicum—was characterized, microencapsulated by vibration technology, and used to prepare a new type of packaging system designed to extend the food shelf life. The basil essential oil (BEO) chemical composition and antimicrobial activity were analyzed, as well as the morphological and biological properties of the derived BEO microcapsules (BEOMC). Analysis of BEO by gas chromatography demonstrated that the main component was linalool, whereas the study of its antimicrobial activity showed a significant inhibitory effect against all the microorganisms tested, mostly Gram-positive bacteria. Moreover, the prepared BEOMC showed a spheroidal shape and retained the EO antimicrobial activity. Finally, chitosan-based edible films were produced, grafted with BEOMC, and characterized for their physicochemical and biological properties. Since their effective antimicrobial activity was demonstrated, these films were tested as packaging system by wrapping cooked ham samples during 10 days of storage, with the aim of their possible use to extend the shelf life of the product. It was demonstrated that the obtained active film can both control the bacterial growth of the cooked ham and markedly inhibit the pH increase of the packaged food.

(1) Background: The demand for healthy and nutritious food is growing worldwide. Fermented dairy products are highly valued by consumers for their health benefits. Kefir is a fermented dairy product that brings many benefits to the consumer due to its antioxidant, anticancer, antidiabetic, antihypertensive and antimicrobial properties. Extracts from various plants in the form of volatile oils have a beneficial efct on consumer health. their antioxidant and antimicrobial activities were demonstrated. (2) Methods: In the present study, the main purpose was to obtain a fermented dairy product with a high nutritional value; therefore, kefir, enriched with three types of volatile oils, namely, volatile mint oil, volatile fennel oil and volatile lavender oil, was made. The kefir samples obtained were sensory and texturally analyzed. The beneficial effect on health must also be studied in terms of the acceptability of these products by consumers from a sensory point of view. A non-numerical method based on several multi-personal approval criteria was used to interpret the results obtained in the sensory analysis. In the textural analysis, the consistency, cohesiveness and firmness of the kefir samples were analyzed. (3) Results: The samples enriched with volatile oils obtained superior results compared to the control sample in both conducted examinations. Kefir samples with volatile oils retained their sensory and textural characteristics for a longer time during storage. (4) Conclusions: The volatile oils added to kefir positively influenced the sensory and textural characteristics of the finished product.

Food edible coatings are an important milestone in food production and one of the innovations in food packaging development. This article presents materials on the development of the formulation and technology for the manufacture of a novel composite coating based on sodium alginate, chitosan and protein hydrolysate obtained by the electrochemical method of double extraction from cod processing waste to obtain edible coatings for semi-finished fish products. Furthermore, the physicochemical, physical, mechanical and microbiological properties of this material are described.

The present study describes the coordination properties of a reduced Schiff base, N-(2-hydroxybenzyl)alanine, towards cobalt(II) using potentiometric as well as spectroscopic (UV-Vis and ESI-MS) methods. The results indicate the formation of six mononuclear complexes showing high stability in aqueous solution. Coordination occurs in the {O−phenolic,N,O−carboxyl} and {N,O−carboxyl} chelation modes, depending on the degree of ligand deprotonation. Examination of the complexation equilibria at pH ca 7, which is important from a biological point of view, allowed to identify two species: [CoL] and [CoL2H]−. The kinetic analysis showed a structural change of those cobalt(II) complexes from octahedral to tetrahedral in accordance with a first-order time relationship. The antimicrobial properties of N-(2-hydroxybenzyl)alanine, cobalt(II) nitrate and of the Co(II) – ligand complexes were determined against Gram-positive bacteria (Enterococcus faecalis, Staphylococcus aureus, Staphylococcus epidermidis), Gram-negative bacteria (Pseudomonas aeruginosa, Escherichia coli, Helicobacter pylori) and a fungal strain (Candida). The results indicate that the complexes are more active for more strains than the ligand alone. Nevertheless, the complexes induce a higher decrease in the metabolic activity of cells but without damage to nuclei. Tetrahedral structures show stronger anti-cellular toxicity than octahedral complexes, which is most likely due to the higher accessibility of the cobalt(II) center.
