Celery is one of the major nutraceutical vegetable species due to the high dietary and medicinal properties of all of its plant parts. Yield, growth and produce quality of six celery genotypes belonging to leafy (Elixir and Samurai), stalk (Atlant and Primus) or root (Egor and Dobrynya) types, as well as the distribution of biomass, sugars, mineral elements and antioxidants among the different plant parts, were assessed. Within the celery root type, cultivar Dobrynya resulted in higher yield than Egor, whereas the genotype did not significantly affect the marketable plant part production of leafy and stalk types. Leaf/petiole ratios relevant to biomass, total dissolved solids, sugars, ascorbic acid, flavonoids, antioxidant activity and ash, K, Zn, Fe, Mn, Cu and Se content were significantly affected by the celery type examined. Ash content was highest in the leaves and lowest in the roots. Celery antioxidant system was characterized by highly significant relationships between ascorbic acid, polyphenols, flavonoids, antioxidant activity and Zn. Among the celery types analyzed, the highest values of chlorophyll, Fe and Mn content as well as antioxidant activity were recorded in leaves from root genotypes, which suggests interesting nutraceutical prospects of the aforementioned plant parts for human utilization.

Abstract— Drying is known as a food preservation method which increases the food’s storage time by water reduction. Traditional drying consisted of open sun-drying, but different industrial dryers have been widely used in recent times. The new dryers consist of convective, infrared, ultrasound, freeze fluidized bed and freeze dryers. All of these dryers reduce the water content but under different mechanisms which leads to the end products with different qualities. In this study we aim to compare the difference in quality of kiwi fruit slices dried by three different dryers: 1. Convective tray dryer, 2. Microwave dryer and 3. Freeze dryer. The tray dryer experiments were conducted in two air temperatures of 60 and 80oC in the constant air velocity of 0.8 m/s. The microwave dryer operated in 3 output powers of 180, 270 and 360 W. The condenser temperature and pressure in the freeze dryer reduced to -50oC and 0.1 mbar, respectively. The operating conditions and time were regulated so that the moisture content of all dried samples reduced to nearly 10% in the wet basis. The three parameters of color change, ascorbic acid and antioxidant reduction were selected as the measuring criteria for the comparison of the product qualities. The experiments show that the freeze drying caused the minimum color change while the microwave drying in the maximum power of 360W caused the maximum amount of color change. The concentration of ascorbic acid was measured in the fresh fruits and dried samples by standard methods. The measurements proved that the ascorbic acid content of the freeze dried samples was 80% of the fresh fruits. The ascorbic acid content of other samples was much lower. The antioxidant activity of the dried samples and the fresh fruits was also measured by standard methods and the experimental data also showed that the freeze drying causes the minimum reduction in the antioxidant activity.

Substances inhibiting or preventing oxidative damage in the target molecule are called antioxidants. It has been shown that antioxidants are substances that contribute to the prevention of a number of serious human diseases, and antioxidant activity is one of the important parameters for the quality of food products and ingredients. Phenolic compounds are of greatest importance for this review. It is now established that whole grain cereals contain a large number of bound polyphenols. It is known that cereals have high nutritional value, contain unsaturated fatty acids, basic mineral elements, proteins and β-glucans, and are also characterized by the presence of various chemical substances with antioxidant properties. In recent years, work has begun in some Western countries to study the content of antioxidants in various grains. In Russia, only a small amount of work has been devoted to the study of these important chemical compounds in grain crops. It should be noted that, although these species are considered to be one of the main components of human nutrition, research in the field of determining their antioxidant activity has not been sufficiently carried out. In order to attract the attention of plant growers, plant breeders, plant physiologists, geneticists and biotechnologists, we offer a review of current literature.

Only a few species of the largeAstragalusgenus, widely used for medicinal purposes, have been thoroughly studied for phytochemical composition. The aim of our research was to investigate the rarely studied speciesA. glycyphyllosL. andA. cicerL. for the distribution of mineral elements and phytochemicals in whole plants at two growth stages and in morphological fractions. We also investigated the capacity of the plant extracts to scavenge 2,2-diphenyl-1-picrylhydrazyl (DPPH) radicals and to chelate ferrous ions. Chemical composition and antioxidant properties depended on species, maturity, and plant part. Herbal material ofA. glycyphylloswas richer in Fe, total phenolics, and flavonoids, whereas extracts ofA. cicershowed a higher antioxidant activity. Young plants had more isoflavones, showed greater quenching of DPPH radicals, and exhibited better mineral profiles than flowering plants. Among plant parts, leaves were the most valuable plant material according to most characteristics investigated. Isoflavone concentration in flowers was lower than in leaves and stems. None of theAstragalussamples contained detectable amounts of the alkaloid swainsonine. The study demonstrates the potential of plant material from twoAstragalusspecies as a valuable source of iron, phenolic substances including isoflavones, free-radical scavengers, and Fe2+chelators for pharmaceutical use.

ABSTRACT Non-conventional vegetables are those with limited distribution, restricted to certain regions. As a globalization and food industrialization result, its cultivation and consumption has decreased. The taioba [Xanthosoma sagittifolium (L.) Schott] is an example of this vegetable category. The drying process increases the food stability, but it can negatively alter the nutritional value and the final quality of the product. Ethanol pretreatment reduces the drying time and can assist in the preservation of the nutritional characteristics. The aim of this work was to evaluate the effect of vacuum drying and ethanol pretreatment on the drying behavior, mathematical modeling, and final quality of taioba leaves. Higher temperatures and ethanol pretreatment lead to a shorter drying time. Thin-layer equations were evaluated for their ability to predict the drying kinetics, of which the Logarithmic and Midilli & Kuçuk equations performed best. A significant difference (p ≤ 0.05) was observed in the ascorbic acid content, antioxidant activity and total phenolic compounds in the different treatments. There was preservation in ascorbic acid content in treatments in which ethanol was applied; moreover, lower total phenolic compounds and antioxidant activity were observed when ethanol was used. There was no significant difference (p > 0.05) in pH values and titratable acidity.

<p>Dietary recommendations include the consumption of fresh apples and processed apple based products mainly for the antioxidant properties associated to the polyphenols, and vitamin C content. Thermal treatment, generally used to extend shelf life of fruit based foodstuff, can affect the quality. 5-hydroxymethylfurfural (5-HMF), reducing sugars, ascorbic acid, and the total antioxidant activity in bio available fraction after <em>in vitro</em> digestion, have been evaluated in 16 apple-based nectars (fruit content: 30-60%), 15 apple-based juices (fruit content 100%) and 5 apple-based puree. Observed data indicate a 5-HMF values ranging from 0.06 mg/L in juices to 28.61 mg/L in nectars. The reducing sugar amount did not vary significantly between the three analysed typology of apple derivatives, while the ascorbic acid content was quite high compared to reported literature data. The antioxidant activity after an <em>in vitro</em> digestion showed values ranging from 0.21 to 7.68 mmol of Trolox in juices, and puree, respectively.</p>

This study was conducted to investigate the effects of ultrasound treatment on the physiological quality of cherry juice. Cherry fruits purchased from a local market were sonicated at 20 kHz and 100% amplitude for 2,3,5, and 10 minutes and then stored at 4 oC for 14 days. Quality attributes such as color, total antioxidants, total phenolic and ascorbic acid contents of the cherry juices were compared. The results showed that the ultrasonic treatment had significant effects on the physiological quality of the cherry juices When the treatment time was increased from 2 to 10 min higher levels of total phenolic content, antioxidant activity, and ascorbic acid were observed. A 10 min treated cherry juices showed higher lightness (L) values compared to the fresh cherry juice during a two-week period. Ultrasonic treatment showed potential as a method to maintain and improve the overall quality of cherry juice during cold storage.

Figs consumption date back to the beginnings of civilization. Currently, consumers have become more demanding about quality of fruits, and figs are then highly indicated, since it is rich in nutrients, making them a great addition to a healthy diet. Although there is only one commercial fig cultivar that is commonly grown in Brazil, different cultivars should be considered for the diversification of fig production with regards to their yield and fruit quality. This research aimed at evaluating growth, yield, physicochemical characteristics and bioactive compounds of figs grown in Brazil. Then, four cultivars (Roxo de Valinhos, White Genova, PI-189 and Troyano) were studied to determine canopy volume, productive efficiency, soluble solids - SS, pH, titratable acidity - TA, SS/TA ratio, sugars, ascorbic acid, phenolic compounds, pigments and antioxidant activity. The cv. White Genova presented the highest canopy volume, while ‘Roxo de Valinhos’, ‘PI-189’ and ‘Troyano’ performed the greatest productive efficiency. The cvs. Roxo de Valinhos, White Genova and Troyano produced fruits with higher content of SS, reducing sugars and SS/TA ratio, while the fruits of ‘PI-189’ and ‘Roxo de Valinhos’ contained the highest levels of antioxidant activity. PCA enabled to differentiate the studied cultivars, which evidenced that PI-189 was the most different of all.

Coloured potatoes <I>Solanum tuberosum</I> L.) were evaluated as important source of natural antioxidants. Eight varieties of these potatoes (Salad Blue, Shetland Black, Blue Congo, Blaue St. Galler, Highland Burgundy Red, Violette, Valfi, Vitelotte) grown in four different locations in the Czech Republic (Přerov nad Labem, Suchdol, Valečov and Stachy) were analysed. Content of majority antioxidants (anthocyanins, chlorogenic acid and ascorbic acid) was determined and the obtained results were correlated with antioxidant activity. Total anthocyanin content and antioxidant activity were determined spectrophotometrically and phenolic acids by HPLC-DAD. The best positive correlation was observed between total anthocyanin content and antioxidant activity (<I>R</I><sup>2</sup> = 0.64). Good correlation was found between chlorogenic acid content and antioxidant activity (<I>R</I><sup>2</sup> = 0.55); however, no correlation between ascorbic acid content and antioxidant activity (<I>R</I><sup>2</sup> = 0.08) was found.

Blackberries (Rubus spp.) have significant nutraceutical properties, providing phenolic compounds for the consumers. These compounds are useful to human health due to their high antioxidant activity. However, most blackberries destined for fresh markets become unmarketable in 2 to 3 days due to decay and leakage, because they have thin and fragile skin. The present study was aimed to investigate the effect of salicylic acid (SA) and calcium chloride (CaCl2) on extending the postharvest quality and bioactive compounds of blackberry during refrigerated storage. Blackberry fruits cv. ‘Jumbo’ were dipped in 2% CaCl2, or in 2.0 mM salicylic acid (SA) for 10 min. Total soluble solids contents, titratable acidity, pH, ascorbic acid contents, total phenolics contents, and total antioxidant activity were investigated initially on 4th, 7th, or 10th day (d) of storage. Changes in fresh weight, titratable acidity, ascorbic acid and total phenol contents were markedly delayed by both treatments. Berries treated with 2 mM SA or 2% CaCl2 exhibited markedly better visual quality during the storage period. Considering the overall findings, this study revealed that postharvest SA or CaCl2 applications maintained the storage-life and conserved the valuable marketing features of blackberries over 10 d in cold storage, presumably due to their inhibitory effects on fruit senescence.

In this study, phytochemical screening, antioxidant activity as well as phenolic content in the leaves,twigs and barks of Brucea javanica (L.) were determined using standard phytochemical screeningmethod, DPPH radical scavenging assay and Folin-Ciocalteu reagent method, respectively. Methanolicextracts of these different plant parts were prepared by maceration method. Phytochemical screeningrevealed the presence of flavonoids, terpenoids and tannins in all plant parts. This test also revealed thepresence of alkaloids and saponins in all plant parts except they were absent in the twigs and barks parts,respectively. On the other hand, steroids was absent in all plant parts. DPPH method was used toevaluate the antioxidant properties of the plant parts by measuring the absorbance at 517 nm. Theantioxidant activity was then compared with standard ascorbic acid. Among all parts, methanolic extractof leaves of Brucea javanica (L.) exhibited the highest antioxidant activity at the concentration of 100ppm with 86.19 ± 0.20% inhibition which was comparable with standard ascorbic acid with 97.62 ±0.13% inhibition at the same concentration. The IC50 value of the methanolic extract of leaves was 54.52± 0.16 ppm while the other parts were more than 100 ppm. All plant parts showed IC50 value higher thanthe standard ascorbic acid which recorded IC50 of 9.04 ± 0.09 ppm. The methanolic extract of the leavesalso exhibited the highest total phenolic content which was 105.58 ± 0.21 mg GAE/g extract compared tothe other parts. This result correlated well with the higher antioxidant activity exhibited by themethanolic extract of the leaves. Thus, the leaves part of methanolic extract of Brucea javanica (L.)exhibited the highest antioxidant activity compared to the other plant parts.
