Hypertension is one of the major risk factors for arteriosclerosis. Anti-hypertensive peptides derived from animal proteins, such as milk, eggs and fish, are well studied. Anti-hypertensive peptides have also been identified from plant proteins such as soybeans. Rice bran, a byproduct of white rice polishing, is rich in protein and its high protein efficiency ratio is well known. This review discusses the anti-hypertensive peptides identified from rice bran protein and their mechanisms. In addition, we describe protease-digested rice bran from which functional peptides have not been isolated.

<p class="BodyAbstract"><span lang="IN">The high protein content in rice bran potential to be developed into food. The purpose of this study was to isolate the protein in rice bran using NaOH solution with various concentration of 0.05; 0.1; 0.15; 0.2 M and characterization of functional properties. The results showed the concentration of 0.2 M NaOH produced the best results. The protein content obtained was 82%, stability of  emulsion of 42% and 47% stabilty of foam.</span></p><p class="BodyAbstract"> </p><p class="BodyAbstract"><em><strong><span lang="IN">Keywords</span></strong><strong>:</strong> NaOH, protein, rice bran</em></p>

Diets containing two levels of protein (10 and 15%) and two levels of fat (10 and 20%) were tested in all possible combinations in a 4-week rat growth assay. Protein was supplied by casein or a mixture of plant proteins. The protein efficiency ratio (P.E.R.) for casein found with a diet containing 10% protein and 10% fat was slightly greater than that found with a diet containing 15% protein and 20% fat, approximating the levels found in the "average" Canadian diet. The value for plant protein was similar under both conditions. Efficiency of carcass protein synthesis was much greater in animals fed casein than in those fed plant protein. With both sources of protein, the efficiency of carcass protein synthesis was similar with diets containing 10% protein and 10% fat to those with 15% protein and 20% fat.In additional studies, no effect of Chlortetracycline or source of carbohydrate on P.E.R. of casein was observed.It was concluded that P.E.R. determinations carried out on a 10% protein diet furnish a valid estimate of the nutritive value of protein and have several practical advantages.

Abstract In this study, rice bran protein was prepared by ultrasound-assisted extraction, and its physicochemical and emulsifying properties were also evaluated. Results demonstrated that a significant increase in protein yield was observed when ultrasound-assisted method was employed for extracting protein. Noticeably, obtained rice bran protein possessed excellent physicochemical properties, such as oil absorption capacity, protein solubility and foaming property. More hydrophobic groups were exposed in the process of ultrasound-assisted extraction, which led to the increase of surface hydrophobicity. More importantly, the ultrasound-assisted extraction could improve emulsifying properties of rice bran protein, and the emulsions prepared using protein samples exhibited the great stability. Besides, it was also found that emulsifying properties of protein samples presented a decrease trend with increasing ultrasound power and time. All in all, ultrasound-assisted extraction is a suitable alternative process for preparing rice bran protein.

An experiment was conducted to determine the dietary effect of different levels of ground black pepper (Piper nigrum) on growth performance and apparent nutrient digestibility of broiler chickens. There were five dietary treatments each containing 0, 0.25, 0.50, 0.75 and 1.00 % black pepper (BP) fed at both starter and finisher phases. One hundred and fifty (150) day old chicks of Arbor-acre strain were divided into five dietary groups having three replication with 10 in each. The five dietary treatments were randomly assigned into five groups. The birds were fed and watered ad libitum. At the starter phase 0.25 and 0.5 % BP improved live weight significantly (p<0.05). Feed intake was significantly (p<0.05) reduced at 1.00% BP. There were no significant differences (P>0.05) in daily gain, feed: gain ratio and protein efficiency ratio. At the finisher phase, final live weight was improved by 0.25% (p<0.05). Final live weight, feed intake, weight gain, feed: gain ratio and protein efficiency ratio were negatively affected by 0.75 and 1.0%BP. Fecal moisture was significantly (P<0.05) reduced by 0.25% while dry matter, protein and ether extract digestibility were improved by all the levels of BP. None of the BP levels improved crude fibre digestibility (p>0.05) over the control. NFE and energy utilization were improved by 0.25 and 0.5%, but significantly (p<0.05) reduced by 1.00% BP.Bang. J. An eight weeks feeding trial was conducted to assess the effect of feeding graded level of soaked pigeon pea meal (SPPM) in wood ash extract or solution on the growth performance, haematological and serum biochemical indices of broiler chickens. A total of 144 day-old chicks (Anak 2000) were randomly allotted to four treatment diets (1, 2, 3 and 4) in a completely randomized design. Each treatment group was replicated three times with twelve birds per replicate, thus, having thirty-six chicks per treatment group. Diet 1 contained 0% SPPM in wood ash extract for 72hours as the control diet, while diets 2, 3 and 4 were formulated to contain 25, 50 and 75% inclusions of SPPM in place of soybean meal. Results showed that the average live weight, daily weight gain and feed intake as well as protein efficiency ratio were significantly (P<0.05) influenced by the dietary treatments at the finisher phase. Broiler chickens fed 25% SPPM based diet had a higher (P<0.05) and comparable value of live weight, weight gain and protein efficiency ratio to that recorded in the control diet at the finisher phase. The haematological and serum biochemical indices revealed that albumin and total cholesterol were significantly (P<0.05) influenced by the treatment diets. The albumin value (2.2g/dl) was highest in birds fed 50% SPPM, whereas, the cholesterol value decreased (P<0.05) with increasing levels of inclusion of SPPM from 0 to 75%. It therefore implies that SPPM can be partially included in broiler diets up to 25% level with optimum growth performance and without any detrimental effect on the blood profile of broiler chickens.
