In recent years, it has been demonstrated that the application of elicitors such as methyl-jasmonate (MeJ) and benzothiadiazole (BTH) to wine grapes can increase their phenolic and aromatic compounds if they are treated at the beginning of ripening (veraison). However, the veraison period is short, and it is not always possible to apply the treatments in a few days. Therefore, it would be of great interest to optimize the moment of elicitor application or extend the treatment period. The aim of this paper was to analyze during two consecutive years (2016–2017) the foliar application of MeJ, BTH, and a combination of both, during two different ripening periods of Monastrell grapes (veraison and mid-ripening), and determine the more appropriate moment to increase the concentration of anthocyanins. To carry out this aim, analysis of anthocyanins by HPLC in grapes and wines was mainly performed. The most suitable period for the application of MeJ, BTH, and MeJ + BTH was at mid-ripening, since the grapes showed a greater accumulation of anthocyanins at harvest. However, the MeJ + BTH treatment applied during veraison also obtained similar results, which would allow extending the application period if necessary. However, the increase in the anthocyanin content of grapes was not reflected in all the wines, which may have been due to reinforcement of the skin cell wall as a result of the application of elicitors. Further analysis is needed to improve the maceration process of the Monastrell grapes and the extraction of the anthocyanins that were increased by the treatments applied in the vineyard.

The black elder (Sambucus nigra L.) is a native plant in Hungary represented by extended and very variable populations. Cultivation of elderberry started during the late 90-ies because of the growing interests of the processing industry. High anthocyanin content, nutritive value of the berries and aromatic compounds of the flowers have been the esteemed constituents. At the moment, there are about 3000 hectares elder plantations in Hungary, which is more than of any of the other European countries. Unfortunately, the cultures are planted to the Austrian selections of Haschberg, in spite of the fact that about 10-15 other selections of other foreign countries have been registered and planted elsewhere. In addition to that, the wild population of Hungary may offer a precious opportunity of further selection. Since 1970, Aladár Porpáczy at Fertőd and the Department of Fruit Growing of the former University of Horticulture in the 1980-ies started the selection in Hungary too. The present study deals with 7 genotypes, their morphology of berries and inflorescences. Results are concentrated on four genotypes: Szcs1, Szcs-2, Szcs-3 and Szcs-5, which are all earlier ripening than the Haschberg varieties, and are superior in characters of fruit and inflorescence.

The in vitro cell cultures derived from the grapevine (Vitis vinifera L.) have been used for the production of stilbenes treated with different biotic and abiotic elicitors. The red-grape cultivar Váh has been elicited by natural cellulose from Trichoderma viride, the cell wall homogenate from Fusarium oxysporum and synthetic jasmonates. The sodium-orthovanadate, known as an inhibitor of hypersensitive necrotic response in treated plant cells able to enhance production and release of secondary metabolite into the cultivation medium, was used as an abiotic elicitor. Growth of cells and the content of phenolic compounds trans-resveratrol, trans-piceid, δ-viniferin, and ɛ-viniferin, were analyzed in grapevine cells treated by individual elicitors. The highest accumulation of analyzed individual stilbenes, except of trans-piceid has been observed after treatment with the cell wall homogenate from F. oxysporum. Maximum production of trans-resveratrol, δ- and ɛ-viniferins was triggered by treatment with cellulase from T. viride. The accumulation of trans-piceid in cell cultures elicited by this cellulase revealed exactly the opposite effect, with almost three times higher production of trans-resveratrol than that of trans-piceid. This study suggested that both used fungal elicitors can enhance production more effectively than commonly used jasmonates.

The individuals belonging to three different groups of wild grapevines populations Vitis vinifera L. ssp. sylvestris (Gmelin) Hegi harvested along, or near the Danube River, were described by means of usual ampelographic methods. The twenty standardized descriptors used for morphological analysis revealed obvious differentiation among analyzed populations. Out of 65 individuals, a half produced flowers with separate sex and a high proportion of them were males (70%). Pollen measurements on light microscope provided information on differences in pollen size among inside wild grapevine populations of V. sylvestris with the polar length varying between 15.3 and 23 μm and the equatorial length between 15.5 and 24.4μm. The in vitro regenerative potential from meristematic tissue tested with each phenotype showed that the moment of differentiation, the aspect of proliferative structures and the rate of multiplication varied inside these wild grapevine populations, without any correlation with the location of harvesting. Our results provided valuable information about these Vitis vinifera ssp. sylvestris populations, possible to be used as starting plant material for research in general and further breeding of cultivars and grapevine rootstocks.

The color of red potato tubers is due to an accumulation of anthocyanins in periderm and peripheral cortex tissues. The objective of this study was to characterize changes in anthocyanin content and tuber surface color during tuber development. Using the red tuber-producing potato (Solanum tuberosum L.) cultivar Norland, we observed that chroma (intensity of redness) and anthocyanin content per unit of surface area of greenhouse-grown tubers decreased as tuber weight increased. There was no increase in hue (tint) during the same developmental periods. Using high-performance liquid chromatography (HPLC), we determined that pelargonidin and peonidin are the major anthocyanidins (aglycones of anthocyanins) in the tuber periderm. Northern blot analyses indicated that steady-state mRNA levels of dihydroflavonol reductase (DFR), an anthocyanin biosynthetic enzyme, continued throughout tuber development. These results suggest that anthocyanins are synthesized throughout tuber development, and that cell division and/or enlargement contribute to a decline in chroma and anthocyanin concentration.

The physico-chemical and chromatic characteristics of grapes (Vitis vinifera L. cv. Monastrell) harvested at six different degree of ripeness (from August 16 to October 24, 2002) and that of the wines obtained from these grapes have been studied. The grape anthocyanins content (mg/kg of berry fresh weight) was maximum in those grapes harvested on September 11 and 16 (804.1 and 822.6 mg/kg, respectively) and decreased for grapes harvested in October. However, the results showed that the grapes with the highest anthocyanin concentration did not lead to the highest colored wines. The wines elaborated from grapes harvested on October 16 (671.9 mg of anthocyanins per kg of berry fresh weight) had the best chromatic characteristics and better withstood aging in the bottle; the extent of cell wall degradation in overly matured grapes probably facilitated the extraction of phenolic compounds from skins. However, the chromatic quality of wines made from grapes harvested one week later (October 24, the most mature grapes) was lower than that from October 16, with lower color intensity (13%lower in the wine elaborated from grapes harvested in October 24) and a percentage of yellow color 6 % higher in this wine.

[email protected] 1 ABSTRACT Deficit irrigation is used to control grapevine vegetative vigor and the grape composition can be influenced by soil water content. The minerals contained in the grapes are responsible for the physicochemical properties and stability of the wine. Therefore, the aim of this work was to evaluate the effects of irrigation strategies on the properties of ‘Syrah’ wines produced in São Francisco Valley, Brazil. The irrigation treatments used were FI (full irrigation), RDI (regulated deficit irrigation), and DI (deficit irrigation). Winemaking was performed by traditional methods, followed by stabilization and bottling. Density, alcohol content, pH, total and volatile acidity, total and free sulfur dioxide, total polyphenols index, color intensity, and total anthocyanin content were determined, as well as the contents of Ca, Mg, P, K, Na, Mn, Fe, Cu, Zn, Cd, Cr, Ni, and Pb. The properties of wines were influenced by irrigation strategies, except for the content of total anthocyanin, Mg, P, Na, Cu, and Mn. The contents of Cd, Cr, Fe, and Zn were similar in the vines. The wines demonstrated varied properties with different typicalities. Irrigation strategies can be recommended for different products, FI for young and cheap, and DI and RDI for aged and more expensive wines. Keywords: Vitis vinifera L., grape, water availability, tropical wine.

The red color of skin is a much desired property in apple production. For better red fruit coloration the applications of foliar fertilizers on the basis of calcium and phosphorus are used. In the present study ‘Braeburn’ apple trees were sprayed twice with Phostrade Ca (phosphorus), 5 and 3 weeks before harvest. In 7-days intervals fruit color, the content of flavonoids and enzyme activity involved in the synthesis of anthocyanins have been monitored. Foliar application of Phostrade Ca caused a more intense red skin color of apples and higher anthocyanin content. Their level increased during ripening, in treated apples the content of total anthocyanins was 20-fold higher at harvest while in control apples only 9-fold higher compared to the initial values. Cyanidin 3-galactoside was the most abundant anthocyanin (80 to 86% of total anthocyanins), followed by cyanidin 3-arabinoside, cyanidin 3-glucoside, cyanidin 3-xyloside and cyanidin 7-arabinoside. Prostrade Ca increased the levels of all quercetin glycosides, with the exception of quercetin 3-rhamnoside. No significant influence of Phostrade Ca on the content of hydroxycinnamic acids, dihydrochalcones, flavanols and total phenolics has been monitored. The activity of FHT and DFR increased during ripening but Phostrade Ca influenced only higher activity of DFR.
