The current study assessed antioxidants contents (total phenolics and total flavanoids, β-carotene and lycopene) present in Chlorella vulgaris (C. vulgaris) cultivated in low cost media and their free radical scavenging activities. Microalgae was cultured using Bold basal medium (BBM) as a control, 5% banana stem compost (BCM) and aquaculture wastewater supplemented with 1.0 g/L NPK (ANM). The free radical scavenging ability was analysed using 1,1-diphenyl -2-picrylhydrazyl assay. Cells grown on BCM resulted in higher (13.73 ± 0.121%) extraction yield than in other media. The phenolic (8.53 ± 0.10 mg/g GAE) and lycopene (0.29 ± 0.008 mg/g) content were highest in cells grown on BCM and BBM, respectively. Microalgae cultured in ANM displayed higher (547.023 ± 34.703 mg/g RE) flavanoid and β-carotene (2.887 ± 0.121 mg/g) content than in other media. Furthermore, cells cultivated in BCM showed highest (97.87 ± 0.088%) scavenging activity than in BBM. These results indicated that the BCM and ANM can be used as alternative to expensive synthetic media for antioxidant production in C. vulgaris.

Background: Kefir is a well known fermented dairy milk product which is functional for gut health. However kefir can also be made from vegetable milk such as soy or mungbean milk. Objective: To study the chemical  and functional property of Mungbean milk (MBM) Kefir Methods:Mungbean milk was fermented into MBM Kefir using Lactobacillus bulgaricus and Candida kefir. Three levels of cultures and glucose concentration were tested and a complete randomized design experiment was employed. The resulting MBM Kefir were tested for β-carotene level, total polyphenol content, and free radical scavenging activity. Beta carotene level, total polyphenols and free radicals scavenging activity were determined by spectrophotometry, Folin-Ciocalteu method, and DPPH radical scavenging assay respectively. The data were analyzed by ANOVA and when the result of ANOVA was significant, Tukey’s multiple comparison was conducted. Results: Culture concentration increased  β-carotene level (p = 0.049), total polyphenol (p = 0.015) and free radical scavenging activity (p = 0,000) of MBM kefir. Glucose concentration increased total polyphenol (p = 0.002), but had no effect on free radical scavenging activity and β-carotene level. However, there were no interaction among treatments at 0.05 significance level. Total acid level ranged from 1.57 to 2.54%, with the highest and level at 15% cultures concentration and 15% glucose concentration. Alcohol level ranged from 0.26 to 0.90% which was in accordance with the maximum standard for kefir (1%). Conclusion: An optimal product of mungbean milk kefir with highest free radical scavenging activity can be obtained using 15% cultures (Lactobacillus bulgaricus and Candida kefir) and 10% glucose concentration.

Aryl polyenes and heterocyclic polyenes with the same central C20 unit of β,β-carotene but different terminal groups were synthesised. Their free radical scavenging activity was measured by a 1,1-diphenyl-2-picrylhydrazinyl spectrophotometric method. The results indicated that all the new compounds have free radical scavenging activity.

From the dichloromethane extract of Nepeta sorgerae, the isolation and structure elucidation are now reported of a new isopimarane diterpenoid, named sorgerolone, and two known triterpenoids, oleanolic acid and ursolic acid. Antioxidant activity of the extracts and the isolated terpenoids was determined by the DPPH free radical scavenging and lipid peroxidation inhibition (β-carotene bleaching) methods. Anticholinesterase activity of the extracts and isolates was investigated by Ellman's method against AChE and BChE enzymes. Although the antioxidant activity results were low, the AChE enzyme inhibition of the extracts and terpenoids was very promising.

This study aimed to provide information on the extraction yields, total phenols, total flavonoids, antioxidant activity, and qualitative-quantitative chemical composition of the extracts obtained from the dried fruit of Sambucus racemosa L. with conventional solvents (methanol, acetone, chloroform) and deep eutectic solvents (choline chloride urea and choline chloride glycerol). Solid-liquid extraction, Folin- Ciocalteu method, DPPH free radical scavenging, HPLC-UV/VIS were the methods used in this study. The highest extraction yield (18%) was obtained with ChCl:G as an extragent. The highest amount of total flavonoids was the content of this extract (12.3 mg QE/g d.e.). Extracts obtained with acetone and ChCl:U possess the highest amount of total phenol content (125.26 and 104.38 mg GAE/g d.e. respectively). All tested extracts showed free radical scavenging activity. Identified components of extracts are gallic acid, rutin, caftaric acid, caffeic acid, hyperoside, vitexin, and quercetin. Fruit extracts of S. racemosa are a rich source of phenols and flavonoids. The extracts obtained with DESs are more active in free radical scavenging than those obtained with conventional solvents, and possess qualitatively and quantitatively more components, apart from vitexin that was detected only in the methanol extract.
