The study tends to study the postharvest technological evaluation of different tomato storage environments/media for domestic preservation of fresh and fleshy tomato quality to improve its shelf life with emphasis on charcoal cooler storage bin (CCB). It involved the preliminary investigation of farmers’ knowledge and skill with regard to tomato preservation and storage with different tomato storage environments, adoption of developed CCB: design capacity was 40kg/batch storage for 7days in Nsukka. These were conducted between April to September, 2019. The field studies were carried out through structured questionnaire to know the adaptive knowledge and skill of farmers with regard to tomato preservation and storage. Comparative study of the developed CCB with other environmental storage conditions namely: open-air (ambient) storage (OAS), refrigerator (RF), freezer (FR), (room) laboratory storage (LS), and thatched house storage (THS) were carried out. The four varieties of fresh and fleshy harvested tomato fruits: Copra, Nindo F1, Yolings, and UTC locally cultivated were set into the 6 treatments (media), each treatment was replicated twice. The study showed that the quality attributes such as cracking, yellowing, weight loss, rottening, hardness, and brix value were determined. Based on the physicomechanical parameters of the tomatoes under seven days investigation, FR (0 °C,95%) and RF (10 °C, 85%) had better quality and prolonged shelf life, followed closely by the tomato CCB storage (12 °C,85%) and THS(12 °C,78%) then LS(25 °C,78%) and OAS(30 °C,78%). FR storage inhibited/delayed (cold stress) ripening with minimum weight loss, as compared to the other treatments in terms of stability in all parameters. Similarly, CCB was close to RF storage and performed significantly better than ambient OAS and LS. OAS and LS exhibited higher weight loss, and rapid ripening to deterioration due to tropical temperature and relative humidity fluctuation. Therefore, CCB is recommended for rural small scale farmers.

Ber, a climacteric fruit crop, is liable to spoilage during storage. This study aims to evaluate the effect of coatings on shelf life and quality retention in ber under ambient storage conditions. Coated and uncoated ber fruits were stored at ambient storage temperatures (±25ºC) for 10 days and accessed every 2 days for analysis. Ber fruits reported minimum weight loss (2.68g), PLW (14.35%) and TSS (9.52%) with the application of petroleum jelly coating. Minimum total sugars (8.98%), minimum reducing sugar content (3.96%), maximum non-reducing sugars (5.69%) and maximum antioxidant activity (63.83%) was recorded in fruits with petroleum jelly coating. This study highlights the importance of coating of fruits for enhanced shelf life and quality retention under ambient storage conditions.

Abstract At present, the preservation of the consumer properties of berry products is an urgent problem. Use of fresh garden strawberries is limited by a short storage period and seasonality. Under optimal storage conditions in a normal atmosphere, the average shelf life of strawberries is from 2 to 9 days depending on the variety. To meet the needs of the population in garden strawberries and meet the physiological needs in a unique complex of biologically active substances, strawberries are subjected to different processing methods. Drying being a type of fruit and berry products processing has the following advantages: a significant increase in the shelf life of products, a decrease in the mass and storage volumes of dried berries, preservation of minerals, carbohydrates, dietary fiber, antioxidants, bioflavonoids and many biologically active compounds in berries. Modern drying technologies allow preserving the content of essential vitamins to its full extent. Comparison of two technologies for drying garden strawberries has established that vitamins and other biologically active substances are well preserved in berries. Berries dried by convective vacuum-impulse method (CVI) are recommended to be used for food enrichment.

Purpose This paper aims to discuss the limitations surrounding the yoghurt industry and challenges to producing a bio-yoghurt tablet. The paper looks into challenge facing the yoghurt industry, such as manufacturing and distribution, its short shelf life, heat-sensitivity and relatively heavy weight. It further looks into the selection of strains, excipients and storage conditions with special consideration towards maintaining the viability of the probiotics inside bio-yoghurt tablets. The paper also discusses yoghurt standards and definitions across various countries and suggests a more uniform standard be embraced across countries for ease of categorization and production. Design/methodology/approach The paper is divided into a few major sections; each exploring various aspects of the yoghurt industry. Topics discussed include challenges in yoghurt production and storage; processes involved in bio-yoghurt tablet production, e.g. maximising viability, choice of excipients and more; market trends of yoghurt consumption and potential; and various food standards in countries around the world with a focus on yoghurt. Findings The review finds that yoghurt is a segment of the food industry with big growth potential. Most of the problems associated with yoghurt, i.e. poor shelf life, and heavy weight, can be circumvented by transforming it into a bio-yoghurt tablet. The paper further identifies food standard variations among different countries around the world which could impede yoghurt manufacture and acceptance. Originality/value This paper looks the various challenges surrounding the increased uptake of yoghurt, specifically in the Asian markets and suggests a viable option to overcome this problem, i.e. the use of a bio-yoghurt tablet. Should the worldwide bodies come together and agree to a universal standard involving yoghurt, the industry may see an even bigger expansion.

An experiment was conducted to study the effect of chlorine, packaging and storage conditions on quality and shelf life of tomato. Tomato treated with chlorine; packed in perforated (0.25%) polyethylene bag and kept at ambient (Temperature 20-25°C & relative humidity 70-90%) condition resulted in substantial reduction in losses caused by decay and weight loss. This treatment combination also considerably delayed compositional changes in TSS, total sugar, reducing sugar, vitamin-C, B-carotene, etc. Under this condition, shelf life of tomato had extended upto 17 days as compared to non-treated and kept in ambient condition without packaging or packed in gunny bag for 7 days only. Barhi Dates are an important food and often consumed and sold in the market during the stage Khalal, when the colour is yellow and their taste is sweet with the disappearance of their astringent taste. During the Khalal stage, these dates become physiologically mature with gives the sweet taste. For this reason, they are sold and consumed in a short period of time before these fruits turn into Rutab, a stage at which they lose that distinguishing characteristic. The high moisture, rapid ripening, and delays in transportation or improper storage conditions quickly result in Rutab stage. Thus The Khalal stage lasts for a short time until the fruits get ripe. In the present study, Barhi Khalals were packaged in air (control) and by two types of modified atmosphere packaging: MAP A (5% O2+ 20% CO2 and 75% N2) and MAP B (40% O2+ 20% CO2 and 40% N2). Afterwards, all samples were stored at 5°C for 30 days. On days zero, 10, 20 and 30 of storage, the fruits were evaluated in terms of the changes in the quality indices of weight loss, colour, Total Soluble Solids (TSS), and firmness of the fruits and sensory features. The results showed that the minimum weight loss was 0.45% in modified atmosphere packaging, especially with MAP A and the minimum increase in the TSS was 37.35 Brix° after 30 days of the storage. On the other hand, the results for firmness, colour, and sensory evaluation were better with control packaging.

To investigate quality changes of garlic associated with cultivars and storage conditions, northern type `Seosan' and sub-tropical type `Daeseo' garlics were stored at controlled atmosphere (O2 3%, CO2 5%, -1 ± 1°C) condition, low temperature (-1 ± 1°C), and room temperature (20 ± 5°C). The rate of sprouting, weight loss, enzymatic pyruvic acid content, and degree of greening in crushed garlic were determined during storage. The rate of sprouting was higher in `Daeseo' than in `Seosan' garlic in all storage conditions. Sprouting was effectively suppressed in low temperature and controlled atmosphere storage. Weight loss in `Daeseo' garlic was higher than in `Seosan' garlic. Enzymatic pyruvic acid (EP) contents increased for 3 months storage period, and then decreased gradually as the storage period was prolonged at room or low temperatures. However, EP content decreased dramatically during storage under CA condition in both cultivars. When garlic bulbs were crushed, greening appeared in the garlic stored at low temperature for more than one month. However, greening did not occur in the crushed garlic bulbs stored in CA condition.
