AbstractIn the present study, we evaluated the effect of process-induced common bean hardness on structural properties ofin vivogenerated boluses and the consequences forin vitrostarch digestion. Initially, the impact of human mastication on the particle size distribution (PSD) of oral boluses from common beans with different process-induced hardness levels was investigated through a mastication study. Then the effect of structural properties of selected boluses onin vitrostarch digestion kinetics was assessed. For a particular process-induced hardness level, oral boluses had similar PSD despite differences in masticatory parameters between participants of the mastication study. At different hardness levels, a clear effect of processing (P<0·0001) was observed. However, the effect of mastication behaviour (P=0·1141) was not significant. Two distinctive fractions were present in all boluses. The first one was a cotyledon-rich fraction consisting of majorly small particles (40–125 µm), which could be described as individual cells based on microscopic observations. This fraction increased with a decrease in process-induced hardness. The second fraction (>2000 µm) mostly contained seed coat material and did not change based on hardness levels. Thein vitrostarch digestion kinetics of common bean boluses was only affected by process-induced hardness. After kinetic modelling, significant differences were observed between the reaction rate constant of boluses generated from the hardest beans and those obtained from softer ones. Overall this work demonstrated that thein vitronutritional functionality of common beans is affected to a greater extent by structural properties induced by processing than by mechanical degradation in the mouth.

During processing of cereal-based food products, starch undergoes dramatic changes. The objective of this work was to evaluate the impact of food processing on the starch digestibility profile of cereal-based foods using advanced imaging techniques, and to determine the effect of preserving starch in its native, slowly digestible form on its in vivo metabolic fate. Four different food products using different processing technologies were evaluated: extruded products, rusks, soft-baked cakes, and rotary-molded biscuits. Imaging techniques (X-ray diffraction, micro-X-ray microtomography, and electronic microscopy) were used to investigate changes in slowly digestible starch (SDS) structure that occurred during these different food processing technologies. For in vivo evaluation, International Standards for glycemic index (GI) methodology were applied on 12 healthy subjects. Rotary molding preserved starch in its intact form and resulted in the highest SDS content (28 g/100 g) and a significantly lower glycemic and insulinemic response, while the three other technologies resulted in SDS contents below 3 g/100 g. These low SDS values were due to greater disruption of the starch structure, which translated to a shift from a crystalline structure to an amorphous one. Modulation of postprandial glycemia, through starch digestibility modulation, is a meaningful target for the prevention of metabolic diseases.

Dimensional measurements were recorded to observe the durability of press-formed paperboard trays used for food processing via heating and cooling of the paperboard trays containing oatmeal. A set of the studied press-formed paperboard trays were dried before being heated, and a set of the paperboard trays were heat-sealed before being cooled to compare the effects of drying and sealing on the durability of the tray. In addition, empty trays were heated to observe the impact of food processing conditions on its durability via leak tests with a colouring solution as well as optical analysis of the material coating on the surface of the trays. The drying process of the trays was observed to improve the dimensional stability of the trays while being heated, and heat-sealing the trays yielded a major positive impact on the dimensional stability of the trays while being cooled. The leak tests and optical analysis results on the heated empty trays showed a negative durability impact from the food processing conditions. It was concluded that adjusting the heat-sealing parameters and food processing conditions is necessary in order to achieve improved durability of the press-formed paperboard trays for food processing purposes.

Abstract Anaerobic digestion (AD) is a proven technology for energy production from the stabilization and reduction of sewage waste. The AD and impact of ultrasonic pretreatment of four waste activated sludges (WASs) from conventional and three non-conventional municipal wastewater treatment plants were investigated. WAS from a conventional activated sludge (CAS) system, a rotating biological contactor (RBC), a lagoon, and a nitrifying moving-bed biofilm reactor (MBBR) were pretreated with ultrasonic energies of 800–6,550 kJ/kg total solids to illustrate the impact of sludge type and ultrasonic pretreatment on biogas production (BGP), solubilization, and digestion kinetics. The greatest increase in BGP over the control of pretreated sludge did not coincide consistently with greater sonication energy but occurred within a solubilization range of 2.9–7.4% degree of disintegration and are as follows: 5% ± 3 biogas increase for CAS, 12% ± 9 for lagoon, 15% ± 2 for nitrifying MBBR, and 20% ± 2 for RBC. The effect of sonication on digestion kinetics was inconclusive with the application of modified Gompertz, reaction curve, and first-order models to biogas production. These results illustrate the unique response of differing sludges to the same levels of sonication energies. SUMMARYThe aim of the current study was to determine how cooling and supplemental recombinant bovine somatotropin (rbST) affect body function with respect to digestion kinetics, digestibility and other variables relevant to milk production in cross-bred Holstein cattle. Ten primiparous cross-bred dairy cattle (0·875 Holstein Friesian×0·125 Red Shindi) were used and divided into two groups of five animals each that were housed in a normal shaded barn (NS barn; non-cooled cows) and in a shaded barn with mist-fan cooling (MF; cooled cows). The cows in each group were supplemented with rbST in early, mid and late stages of lactation with three consecutive subcutaneous injections of 500 mg rbST every 14 days. All cows were fed the same total mixed ration twice daily at approximately 1·1 of assumed ad libitum intake and water was offered ad libitum. During the experimental periods, values of ambient temperatures and temperature humidity index (THI) in the NS barn were significantly higher than in the MF barn, whereas the relative humidity in the MF barn was significantly higher than in the NS barn (P<0·01). The respiration rate and rectal temperature were significantly higher for non-cooled cows than for cooled cows during the daytime whether there was or was not rbST supplementation. Supplementation of rbST for either cooled or non-cooled cows significantly increased dry matter intake (DMI), the efficiency of feed utilization and milk yields (P<0·05). Digesta kinetics using chromic oxide as an external marker showed a high digesta passage rate constant and low mean retention time of digesta in cows either by cooling or supplementation of rbST, whereas no changes were seen for the digestibility of dry matter (DM), organic matter (OM), crude protein (CP), neutral detergent fibre (NDF) and acid detergent fibre (ADF). The half-time of Cr2O3 in the whole digestive tract of cooled cows was lower than those of non-cooled cows and significantly decreased (P<0·05) during rbST supplementation in both groups in all stages of lactation. The magnitude of responses for the digesta passage rate and efficiency of feed utilization were larger in animals supplemented with rbST than in animals under MF cooling only.The main effect of cooling and supplemental rbST was to improve digestion by an increase in the rate of passage of digesta and in turn an increase in feed intake. Digestibility was not influenced by changes in passage rate of digesta either by cooling or rbST supplementation. Milk production in response to rbST supplementation is probably enhanced with cooling. The increased milk production induced by rbST supplementation was mediated by increased efficiency of feed utilization without changes in diet digestibility.
