Air-dried and saturated cubes of fully developed wood of Dichrostachys cinerea (Leguminosae) and Salix subserrata (Salicaceae) were charred for 60 minutes at 400°C. An initial increase in moisture content caused few structural alterations in Salix but in Dichrostachys it resulted in considerable ray distension and massive deformation of non-gelatinous fibres. An attempt is made to correlate these observations with the physical and chemical changes known to occur during wood pyrolysis.

Neste sentido, objetivou-se avaliar, com a realização do presente estudo, a qualidade industrial de grãos de dois cultivares de arroz irrigado em função de épocas de supressão da irrigação e graus de umidade à colheita. O experimento foi realizado nas safras 2011/12 e 2012/13 na área didático experimental de várzea da Universidade Federal de Santa Maria, Rio Grande do Sul. Os tratamentos foram compostos de: dois cultivares: o híbrido INOV CL e o cultivar Puitá INTA CL; quatro épocas de supressão da irrigação: 5, 15, 25 e 35 dias após a antese (DAA); e cinco graus de umidade média dos grãos na colheita: 24, 22, 20, 18 e 16%. O delineamento experimental foi de blocos ao acaso com quatro repetições por tratamento. O cultivar Puitá INTA CL apresenta superior qualidade em relação a grãos inteiros, vítreos, gessados e opacos ao híbrido INOV CL. A umidade adequada dos grãos à colheita para ambos cultivares ocorre no intervalo de 24 a 20%. L. 4INDUSTRIAL QUALITY OF RICE GRAINS ARISING FROM THE WITHHOLDING OF IRRIGATION AND HARVEST MOISTURE  2           ABSTRACT Quality of irrigated rice grains is critical for their marketing. In this context, the study aimed to evaluate the industrial quality of two irrigated rice cultivars as a function of two times of irrigation withholding,   and moisture content at harvest.  The experiment was conducted during the 2011/12 and 2012/13 seasons in the experimental floodplain of the Federal University of Santa Maria, Rio Grande do Sul state, Brazil. The treatments consisted of  two cultivars:   hybrid INOV CL and  Puitá INTA CL ; four irrigation withholding times:  5, 15, 25 and 35 days after anthesis (DAA); and five levels of mean grain moisture   at harvest; 24, 22, 20, 18 and 16 %. The experimental design was randomized blocks with four replicates per treatment.   The cv. Puitá INTA CL  presented higher quality concerning milling, translucency, opacity and chalky grains than the cv. hybrid INOV CL.  Suitable moisture content of grains at harvest for both cultivars is at the range of 24 to 20%.  Irrigation withholding did not affect milling quality, translucency, opacity and chalky grains. Keywords: Processing, milling quality, chalky grain, opacity, Oryza sativa.

This work aimed to determine the mechanical properties of rough and dehulled rice grains, for different moisture contents, by obtaining their rupture force, deformation, maximum compression force and proportional deformity modulus under a compression test. Rice grains, with moisture content varying from 0.12 to 0.30 (d.b.), were subject to an uniaxial compression in order to analyze these properties. On reducting moisture content the rupture force increased from 37.2 to 70.6 N for dehulled rice and 48.0 to 79.5 N for rough rice. The average compression force varied from 131 to 171 N for dehulled rice and 203 to 283 N for rough rice. The value range of proportional deformity modulus was from 5.5 x 109 to 7.4 x 109 Pa for dehulled rice and 9.5 x 109 to 12.3 x 109 Pa for rough rice. Rough rice presented more resistance to compression compared to dehulled rice.

Rice (Oryza sativa L.) is a greatly important socio-economic crop. Immediate threshing and drying of wet harvested grains, to reach 18–19% (w.b) moisture content, is a practical method used by individual farmers to slow deterioration and increase selling prices. However, rough rice grain is different from other grains because it has an outer cover shell (palea and lemma) and a bran layer. Thus, the heat and mass transfer processes that take place during grain drying are different from those of other cereal grains, so understanding the effect of different treatments, drying temperature, moisture content and the gradients in rice grains is essential to optimize the drying conditions. In this sense, the current study aims to analyze the moisture removal and its effects on the stress cracking and the number of brown rice grains (BRSMG CONAI variety) at the temperatures of 60 and 80°C.

Abstract In order to obtain re-fabricated rice with properties similar to natural rice, a special cutter and six dies were designed and evaluated. All the dimensional and physical properties of re-fabricated rice were significantly affected by die type. The average values of all the properties studied increased with the increase in moisture content (from 10 to 14%), except length/breadth ratio and porosity which decreased with the increase in moisture content. Based on the dimensional and physical properties, the re-fabricated rice obtained through die IV (8 × 1.5 mm) was in close resemblance to natural rice (PR-116). In general, uncooked and cooked re-fabricated rice grains showed significantly harder and firm texture in comparison to natural rice. Furthermore, significant differences were observed with respect to colour, whiteness and translucence between re-fabricated rice samples and natural rice. Sensory evaluation data revealed significant decrease in oral tenderness and adhesiveness in re-fabricated rice against natural rice. The study demonstrated that appropriate design of extrusion die is determinant factor for developing re-fabricated rice with properties similar to natural rice.
