In Sri Lankan traditional cooking, coconut and spices are incorporated to enhance the taste, flavor, and aroma. However, little attention has been given to assess the effect of these ingredients on the nutritional and chemical composition of the consumed food. The objective of this study was to ascertain the effect of traditional cooking methods on the chemical composition of vegetables, cereals and cereal-based foods, legumes, and selected nonvegetarian food varieties consumed in the daily diet. The results indicate that the addition of coconut milk (CM), coconut scraps, and coconut oil (CO) had a significant impact on the fat content of the prepared foods ( p < 0.05 ). Cooking facilitated the incorporation of fat into food. According to the results, more percentage increases of fat content were observed in tempered string beans (97.51%) and cauliflower milk curry (96.6%). Data revealed that boiling helped to reduce the fat content in cereals and legumes. The cooked foods prepared using traditional recipes with CM, CO, or scraps have higher nutritional content than raw foods and have a significant nourishing potential that meets the daily energy requirements ( p < 0.05 ). It can be concluded that the chemical composition of cooked food serves as a more realistic guideline in recommending dietary interventions in disease and weight management.

CHEMICAL COMPOSITION AND ORGANOLEPTIC CHARACTERISTICS OF PROCESSING BAT (Pteropus alecto) FRESH MEAT. Study was done to evaluate chemical composition and preference degree of the consumers on the processing bat meat compared with beef, chicken and cakalang fish using steam cooking method, flavor cooking and spicy cooking method. Chemical composition was analyzed by proximate analysis using procedures of the Association of Official Analytical Chemists. The organoleptic test was done by hedonic test. Data of the hedonic test were analyzed using Kruskal-Wallis method. To evaluate data distribution of the panelist respons on the sample test, the data were using plot graphic box. The hedonic scales were using 1 to 7. The variables used were including color, taste, flavor, tenderness and general acceptance. Results of proximate analyses of bat meat based on fresh meat indicated that water content was 67.21 percents and protein was 20.48 percents. Based on dry matter, the protein contents of bat meat, pork, chicken, and cakalang fish were 48.97 percents, 69.08 percents, 67.14 percents, and 69.41 percents, respectively. The water contents were 5.76 percents, 9.92 percents, 8.27 percents, and 9.90 percents, repsectively; the calcium (Ca) contents were also 10.62 percents, 1.09 percents, 1.36 percents, 1.38 percents, respectively; while Phosphor (P) contents were 1.46 percents, 0.69 percents, 0.66 percents, and 0.72 percents, respectively. Variance analysis for organoleptic test showed that meat type with different processing affected significantly on taste, color, flavor, tenderness and general preference of bat meat, beef meat, chicken meat and cakalang fish by steam cooking, chicken flavor, and spicy cooking methods. Conclusion, bat meat contained protein relatively lower than that in pork meat, chicken meat, and cakalang fish, but mineral contents were relative higher. Results of organoleptic test showed that preference degree of processing meat were higher on using spicy flavor. The specific test on taste, color, flavor, tenderness and general responsed showed relatively the same responses by the panelists.   Key word: Chemical composition, organoleptic test, processing bat meat

В исследовании участвовали 20 спортсменов-юниоров (мастера спорта и кандидаты в мастера спорта) в возрасте 17-18 лет и 10 добровольцев соответствующего возраста и интенсивности физической нагрузки. В результате исследований установлено, что суммарная калорийность потребленных за сутки продуктов в основном соответствовала энерготратам спортсменов обследованных групп. Соотношение белки/жиры/углеводы в суточном рационе спортсменов свидетельствует о недостаточной квоте углеводов в соответствии с формулой оптимального питания для юных спортсменов. При этом потребление добавленного сахара у спортсменов всех категорий превышало рекомендуемый уровень (10% от калорийности суточного рациона). The study involved 20 junior athletes (masters of sports and candidates for masters of sports) aged 17-18 and 10 volunteers of the corresponding age and intensity of physical activity. As a result of the research, it was found that the total calorie content of products consumed per day basically corresponded to the energy consumption of athletes in the surveyed groups. The ratio of protein / fat / carbohydrates in the daily diet of athletes indicates an insufficient carbohydrate quota in accordance with the optimal nutrition formula for young athletes. At the same time, the consumption of added sugar in athletes of all categories exceeded the recommended level (10% of the caloric content of the daily diet).

This study evaluated the chemical composition and ruminal degradability of dry matter (DM), neutral detergent fiber corrected for ash and protein (NDFap) and crude protein (CP) in byproducts of African oil palm (palm cake, kernel or fiber), macaúba (pulp cake and kernel cake), acai (acai fruit), babassu (kernel cake) and pineapple (peel, crown and bagasse silage). Nineteen rumen-fistulated sheep were kept in individual stalls, receiving a daily diet composed of elephant grass silage and corn and soybean concentrate. After preparation in nylon bags, the byproduct samples were incubated for 0, 3, 6, 12, 16, 18, 24, 48, 72, 96, 120 and 144 hours, with three replicates of each ingredient per incubation time. The divergence between the protein nutritional value and energy nutritional value, based on discriminatory variables between groups, was estimated by cluster analysis. The effective degradability of DM, NDFap and CP for the different byproducts was, respectively, 35.9, 26.9 and 59.0% for palm cake; 48.3, 34.3 and 76.4% for palm kernel; 21.1, 6.6 and 50.3% for palm fiber; 34.3, 15.0 and 52.8% for macaúba pulp cake; 58.1; 63.0 and 51.6% for macaúba kernel cake; 49.7, 49.6 and 41.8% for babassu cake; 53.4, 40.5 and 79.8% for pineapple bagasse silage; and 21.3, 17.0 and 38.9% for acai fruit. Based on their NDFap and CP characteristics, the feeds were clustered in up to four different groups.

This study aims to determine the difference of characteristic and starch digestibility of germinated and ungerminated flour. This study used randomized complete design (RCD) three repeated. The corn germinated for 36 hours. Corn germinated flour and ungerminated flour were evaluated directly of the chemical composition of the flour content, moisture content, ash content, protein, fat, carbohydrates, fiber, starch content and starch digestibility. The results showed the corn germinated flour has increased of moisture content from 9.66% into 10.38%, increased of protein into 7.22% into 8.45%, increased of fiber content from 2.28% into 2.79% and increased of starch digestibility from 57.04% into 62.43%. While were the decreased fat content from 5.17% into 4.76%, decreased of carbohydrate from 75.41% into 73.89% and decreased of starch content from 76.10% into 69.40%. The treatmented has no effect for the flour content decreased from 41.40% into 40.36% and ash content decreased from 2.52% into 2.51%. Germinated increased starch digestibility and changed the character of corn flour.

1The relationship between diet and health is now a major factor in the development of production and marketing strategies for the British meat industry, following Government recommendations that people should be encouraged to eat less fat. It has emphasised the need for accurate information on the body composition of national livestock populations and the fat content of the meat and meat products derived from them. This paper collates the information available for cattle, sheep and pigs, and provides base-line (1984) estimates of national lean and fat production. Changes that have taken place over the past ten years are also examined.2The basic framework for making estimates was the distribution of carcasses between fatness ranges in the national carcass classification schemes operated by the Meat and Livestock Commission (MLC). The distribution for cattle was obtained from a random 1 in 3 sample of beef carcasses classified (0.25 of all clean beef carcasses were classified).3A computer spread-sheet was constructed relating the midpoint means of the fatness ranges to carcass tissue proportions and chemical composition. Regressions for predicting carcass lean and fat content were calculated from accumulated data from surveys of commercial carcasses and breed evaluations for cattle (Kempster, 1986), for sheep (Kempster, Jones and Wolf, 1986a) and for pigs (Diestre and Kempster, 1985). Key regressions are given in Table 1. Carcass lean and fat are defined as in the standard MLC tissue separation procedure. Regressions for estimating carcass lipid content: were obtained using data from several studies. The principal study involved carcasses from breed comparison trials (MAFF/MLC, 1982). Details of the other data sets are given by Kempster, Cook and Grantley-Smith (1986b). Key relationships are given in Table 2.4Estimates of the composition of carcasses in different classification fatness ranges are given in Table 3. These are for 'clean' cattle, sheep and pigs, but estimates were also made for cull cows and cull ewes.5National estimates of carcass composition and the weights of lean and fat produced in 1975/77 and 1984 are given in Table 4. The carcass composition of beef was the same in 1974/76 and 1984 but the average carcass weight has increased by 20kg. The implication of this is that changes in breed and production system have created the potential for leaner carcasses but that the beef industry has preferred to exploit this potential by increasing carcass weights. An increase of 20kg is equivalent to about 15gAg separable fat in carcass on the basis of typical regressions within breed and system.The carcasses of clean sheep in 1984 were estimated to be slightly lighter and leaner than those in 1977. Information on marketing patterns suggests that there has been little change in production methods (as far as they affect composition) and that lambs are now being slaughtered early, possibly stimulated by the pattern of Guide Prices in the EEC Sheep Meat Regime.In marked contrast to cattle and sheep, the separable fat content of the average pig carcass has fallen from 274g/kg in 1975 to 228g/kg in 1985, with a small increase in carcass weight. It is estimated that the increase in the use of entire males has contributed 5g/kg to the overall change.6The estimates in the paper are considered to be the best available with current information but because of the limitations of the data may be subject to error. Possible sources of error are discussed by Kempster et al (1986b). The authors would be pleased to know of data relating physical and chemical composition that could be used to refine the estimates.

There have been few analyses of the fat, protein and carbohydrate fractions in zooplankton, and owing to the difficulty of sorting large numbers of single species, the majority of the earlier determinations were necessarily carried out on mixed zooplankton hauls (Brandt, 1898; Brandt & Raben, 1919; Moberg, 1926; Wimpenny, 1929; Drummond & Gunther, 1934; Vinogradov, 1953). Most of these analyses suggested a relatively high protein and fat content, and this was confirmed by Orr (1934 a), who investigated the chemical composition of a single species, Calanus finmarchicus. Orr's result gave fat, protein and chitin as 20–40,35–50 and 3%, respectively of dry weight. Similar high values were also reported by Orr (1934 b) for Euchaeta norvegica. The carbohydrate content was not, however, estimated in either of Orr's investigations since large numbers of animals would have been required. Brandt (1898), after analysing mixed plankton hauls which were predominantly copepods, suggested a carbohydrate content of ca. 20%.

Numerous studies have identified the various fat mass and obesity-associated (FTO) genetic variants associated with obesity and its metabolic consequences; however, the impact of dietary factors on these associations remains unclear. The aim of this study was to evaluate the association between FTO single nucleotide polymorphisms (SNPs), daily macronutrient intake, and obesity and its metabolic consequences. From 1549 Caucasian subjects of Polish origin, genotyped for the FTO SNPs (rs3751812, rs8044769, rs8050136, and rs9939609), 819 subjects were selected for gene–diet interaction analysis. Anthropometric measurements were performed and total body fat content and distribution, blood glucose and insulin concentration during oral glucose tolerance test (OGTT), and lipid profile were determined. Macronutrient intake was analyzed based on three-day food records, and daily physical activity levels were evaluated using the International Physical Activity Questionnaire Long Form (IPAQ-LF). Our study shows that carriers of the GG genotype of rs3751812 presented lower body weight, body mass index (BMI), total body fat content, and hip and waist circumference and presented lower obesity-related markers if more than 48% of daily energy intake was derived from carbohydrates and lower subcutaneous and visceral fat content when energy intake derived from dietary fat did not exceed 30%. Similar results were observed for rs8050136 CC genotype carriers. We did not notice any significant differences in obesity markers between genotypes of rs8044769, but we did observe a significant impact of diet-gene associations. Body weight and BMI were significantly higher in TT and CT genotype carriers if daily energy intake derived from carbohydrates was less than 48%. Moreover, in TT genotype carriers, we observed higher blood glucose concentration while fasting and during the OGTT test if more than 18% of total energy intake was derived from proteins. In conclusion, our results indicate that daily macronutrient intake may modulate the impact of FTO genetic SNPs on obesity and obesity-related metabolic consequences.
