Utilisation of Large White × Mong Cai crossbred sows and Duroc and stress negative Piétrain boars for the production of fattening pigs under household conditions in northern Vietnam

The objective of this study was to compare the effects of Duroc (DU) and stress-negative Piétrain (PI) as terminal sires mated to F1(Large White × Mong Cai) sows (F1) on productivity, carcass characteristics, meat quality, and meat chemical composition under household conditions in Hai Duong province, Vietnam. The reproduction performances were based on 74 litters of 42 F1 sows from 12 households and the semen from 11 Duroc and 10 Piétrain boars. Data on production and carcass traits were collected from 76 DU × F1 and 67 PI × F1 crossbred fattening pigs. Longissimus dorsi samples from 55 DU × F1 and 37 PI × F1 were analysed to determine meat quality and meat chemical composition. The results show that household affected production, carcass, and meat quality traits (P < 0.05) as well as reproduction (weights at birth and weaning, P < 0.01). In contrast, boar breed did not influence (P > 0.06) reproduction traits (except individual weight of pigs born alive and weaned pigs, P < 0.01), production traits, meat chemical composition, or meat quality (except pH at 4 days post mortem, P < 0.05). Lean meat percentage of Piétrain-sired pigs was higher than that of Duroc-sired pigs (P < 0.05). The use of Piétrain boars does not affect reproduction performance, growth rate, or meat quality but does improve lean meat percentage compared with Duroc boars. This suggests that the use of stress-negative Piétrain boars as terminal sires would improve lean meat percentage under household conditions in North Vietnam.

SUMMARY1. The growth, feed consumption per unit weight gain, carcass characteristics and some aspects of meat quality were studied in two trials with crosses derived from Landrace (L), Pietrain (P), Hampshire (H) and Large White (LW) breeds.2. In Trial 1, 96 pigs of both pure Landrace and LW(× (L♀ × P♂)♂ origin were studied up to slaughter weights of 64 and 91 kg live weight. In Trial 2, Landrace, LW♀ × (L♀ × P♂)♂ and LW ♂x (P♀x L♂)♂, (H♀ × P♂ × L♂ and (H♀ × P♂)♀ × LW♂ pigs were compared up to 91 kg live weight using 48 pigs of each type.3. All crossbred types showed better economy of production than Landrace when assessed by live-weight gain and feed consumption per unit weight gain. Their carcasses contained greater quantities of lean meat and similar quantities of rind, bone and fat than Landrace at comparable weights, but they exhibited a variable tendency to poorer meat quality. LW × (L × P) and LW × (P × L) carcasses at 91 kg live weight were shorter than Landrace; 4% and 14% of pigs in trials 1 and 2 respectively were less than the currently acceptable length of bacon pigs (775 mm). (H × P) × LW and (H×P)×L carcasses at this weight were much shorter; 34% and 38% respectively were less than 775 mm.

AbstractThe activity of calpains, in particular μ-calpain, is associated with several processes occurring in muscle tissue postmortem and influences meat quality parameters. Therefore, the CAPN1 gene coding for large subunit of μ-calpain is considered as a candidate gene associated with meat quality traits. The aim of our study was to identify new polymorphisms in regulatory regions of the porcine CAPN1 gene and to estimate their impact on CAPN1 transcript abundance. In the present study, 7 polymorphisms in the porcine CAPN1 gene were identified, of which 5 were localized in introns (g.1195_1197insCCT; g.1429G>A; g. [4479A>G; 4526A>T; 4529_4530delAG]), one in 3’ untranslated region (g.25676C>T) and one microsatellite sequence in promoter region (c.-155- AGGG [3_5]). The analysed populations (a total of 451 gilts representing three pure breeds: Pietrain, P lish Landrace, Polish Large White and one conservation breed Pu.awska) were not in Hardy-Weinberg equilibrium according to mutation g.25676C>T in 3’ untranslated region (all breeds), g.1429G>A (Pu.awska pigs) and g. [4479A>G; 4526A>T; 4529_4530delAG] (PLW pigs). Furthermore, the analysed SNPs in the porcine CAPN1 gene were in linkage disequilibrium (P≤0.05). The CAPN1 transcript abundance was also estimated in two important muscles (m. longissimus dorsi, m. semimembranosus). In longissimus dorsi muscle, a significant effect of c.-155- AGGG [3_5] polymorphism in promoter region on CAPN1 expression levels was determined. The c.-155AGGG [3/3] pigs showed a statistically higher (P≤0.05) expression level of the CAPN1 gene when compared to c.-155AGGG [4/4] homozygotes. The results obtained suggested that detected SNPs within regulatory regions of the CAPN1 gene could be related to transcript level and activity of μ-calpain. The selected polymorphisms areproposed to be associated with meat production traits.

Studies were carried out on the main indicators of the chemical composition and physical properties of muskulus longissimus dorsi of pigs of different genotypes during hybridization. The indicators of the chemical composition and physical properties of muskulus longissimus dorsi were determined by conventional methods. The materials of experimental studies were processed using methods of variation statistics. According to the amount of moisture, no significant difference between the control and experimental groups was established. According to the amount of protein in meat, a tendency to a slight decrease, compared with the control group by 1.4 (group III) … 1.9 % (group II) was established. The use of boars of Poltava meat breed led to a decrease in intramuscular fat in descendants by 0.25 % compared with peers of a large white breed (P <0.95), and precocious meat - to a real increase of this indicator by 0.43 % at P> 0 , 95. A tendency towards an increase in the amount of tryptophan (by 0.04 ... 0.05) and oxyproline (by 0.004 ... 0.005) in the muscles of hybrid animals was revealed in comparison with peers of pure breed of large white breed. In terms of the biological usefulness of meat proteins, animals of group III were the best - in terms of the quality of the protein of the longest muscle of the back, their advantage over peers of group II was 0.07, and compared with purebred peers. Group I - 0.12 (p <0.95). It was found that with the same area of the meat spot both in purebred large white breeds of animals and hydrides of different genotypes, there is a tendency to increase the latter compared to the control in a humid place: with a «share» of «blood» ½ pm by 2.2 %, and with a «share» of blood ½ cm - 1.4 %. A tendency has been established to increase the pH value of the longest back muscle in animals with a «share» of blood of specialized meat breeds compared with a large white breed. In hybrid animals with a «share» of blood of Poltava meat and precocious meat breeds, there is a tendency to increase the pH value in comparison with the large white breed by 0.15 (2.8 %) and by 0.17 (3.1 %), i.e. the meat of hybrid pigs, the pH of which has a shift towards alkalinity due to less accumulation of lactic acid, has a worse preservation.

Abstract. Production and reproduetive traits in Danish Landrace (LD) and Large White (LW) swine were analysed by restricted maximum likelihood methods to obtain heritabilities as well as genetic and phenotypic correlations. Production traits were: age, backfat thickness (BT), muscle depth (MD) and the ratio BT/MD, adjusted to Standard bodyweight of 85 kg. Reproduction traits were: number of pigs born (NB) and number of pigs weaned (NW) per sow and parity. Heritabilities for age, BT, MD and BT/MD were 0.60, 0.44, 0.51 and 0.42 for LD and 0.36, 0.44, 0.37 and 0.45 for LW, respectively. Genetic correlations between age and BT were −0.22 in LD and – 0.44 in LW. The genetic correlation between age and MD was close to zero in both breeds. Genetic correlation between BT and MD were −0.36 and −0.25 in LD and LW, respectively. Heritabilities for NB were 0.25 in LD and 0.13 in LW while heritabilities for NW were close to zero in both breeds. Genetic correlation between NB and NW was 0.46 and 0.70 in LD and LW, respectively.

The aim of our study was to assess the dynamics of the characteristics in pig carcasses as affected by the season and year of slaughter. A total of 106 027 carcasses of growing-finishing pigs of commercial production, slaughtered in the same abattoir in 2014 and 2015 were included in the study. The carcasses were classified using UltraFOM 200 device, as the characteristics controlled were back-fat thickness at two locations and the depth of m. Longissimus dorsi. These measurements were used to further determine the lean meat percentage. The results of the study showed significant differences in the dynamics of changes of carcass characteristics during the seasons and the years. The highest lean meat percentage was found in summer (56.48%), followed by spring (56.34%), autumn (56.29%) and winter (56.10%). On the other hand, the pigs slaughtered in winter displayed highest carcass weight and back-fat thickness at both locations.

AbstractThe aim of this study was to analyze the association of polymorphisms in alpha-ketoglutarate-dependent dioxygenase (FTO) and perilipin 2 (PLIN2) genes with carcass and meat quality traits in pigs reared in Poland. The research covered 578 sows that belong to the following breeds: Duroc, Hampshire, Polish Landrace, Pietrain, Puławska and Polish Large White. FTO (FM244720:g.400C>G) and PLIN2 (GU461317:g.98G>A) genes variants were determined by means of PCR-RFLP and ACRS-PCR methods respectively. Association between individual genotypes and analyzed traits was calculated by means of GLM procedure for Polish Landrace, Polish Large White and Puławska breeds separately and for all six breeds together in case of FTO gene. The results showed that FTO variants were associated with weight of loin without backfat and skin (WL), loin eye area (AL) and meat percentage (MP) in Polish Large White (P≤0.05), mean backfat thickness from 5 measurements (BFT) and pH measured 45 min after slaughter in m. longissimus dorsi (pH24 ld) as well as with water holding-capacity (WHC) in Puławska breed (P≤0.01). PLIN2 genotypes, however were correlated with WL and height of the loin eye (HL) in Polish Large White and Puławska (P≤0.05), AL in Polish Large White (P≤0.01) as well as luminosity (L*) in Puławska (P≤0.05) pigs. We observed most consistent relationships of PLIN2 SNP with intramuscular fat content (IMF) and WHC. In 3 analyzed breeds GG genotype was connected with highest values of these traits (P≤0.05).

Abstract. Fattening pigs are commonly kept in intensive housing systems with slatted floor which represent a very barren environment, causing poor animal welfare. To improve such conditions a small amount of straw or hay (100 g per animal per day laid daily in a rack) was used in our study as an environmental enrichment (EE). Two replications, each including 96 fattening pigs of both sexes (3 pens of 16 females and 3 pens of 16 male castrates) from 60 kg to slaughter at average 96 kg live weight, were used to test the effect of EE and sex on behaviour, growth rate, and carcass composition. EE significantly increased the proportion of total activity during the illumination period (between 6 a. m. and 2 p. m.) on account of increased occupation with substrate (P<0.01). EE also significantly reduced time spent biting pen bars and frequency of aggressive encounters (P<0.01). The EE increased total activity in female animals during the observation period, but not in male castrates. None of the EE significantly influenced pigs‘ growth rate and lean meat percentage; however females in enriched environment grew slower and had greater lean meat percentage than the castrated males. Provision of a small amount of straw or hay to pigs in intensive housing systems can enrich barren environment in inexpensive and efficient way. Therefore such enrichment can be widely used also in large commercial pig production systems.

Abstract In 50 fattening pigs representing two Polish native breeds: 24 Złotnicka Spotted, 10 Puławska and 16 F1 ♀ (Polish Large White × Polish Landrace) × F1 ♂ (Duroc × Pietrain) crosses microstructure of muscle, carcass and meat quality were studied. Puławska pigs had the thickest backfat, but the loin eye area was smaller only in comparison to crossbreds. Compared to the Puławska breed, the meat of Złotnicka Spotted pigs was darker, which was associated with a greater percentage of type I fibres and a smaller percentage of type IIB fibres. Puławska pigs distinguished themselves from the other groups under study by the greatest density of fibres per mm2. Smaller diameter of type IIA and IIB fibres and higher total number of fibres were found in Puławska breed pigs compared to Złotnicka Spotted, despite the absence of differences in the loin eye area. Smaller thickness of the fibres favourably affects meat quality, and might be considered an indicator of a delicate structure of meat.

SUMMARYThe carcass characteristics of young adult female pigs (gilts) slaughtered after weaning their first litters have been investigated using three groups of 19 Landrace × (Landrace×Large White) gilts. In two treatment groups gilts were mated at their pubertal oestrus and suckled their piglets for 5 to 11 and 35 to 42 days respectively. These gilts were slaughtered on average 10 days after weaning. A third control group consisted of unmated gilts slaughtered at 118 kg live weight.There was no significant difference in the killing-out percentage for the three groups. The carcasses of the gilts which farrowed contained significantly less fat (P<0·001) than those of the unmated controls. The carcasses of the farrowed gilts had significantly lighter middle sections (P<0·001) and significantly heavier shoulders (P<0·001) than the controls.Despite the variations in tissue yield and distribution, the yield of prime joints for the gilts which had farrowed was only 0·62 percentage units less than that of the controls.No commercially significant variations between groups in meat quality were observed.
