Background: Chia seed (Salvia hispanica L.) is becoming one of the most popular plantbased foods that contain the greatest amount of nutrients particularly omega-3 fatty acid, α-linolenic acid. It is therefore considered a functional food with pronounced health benefits. Objective: The purpose of this study was to determine the proximate composition, minerals, fatty acid profiles and phytochemical contents of chia seeds grown in East Africa (Kenya and Uganda). Methods: Official methods of analysis, 2005 were adopted, minerals determined by Atomic absorption spectrophotometer, phytochemicals were determined by standard methods and fatty acid profiles were analyzed by Gas chromatography. Results: Proximate composition indicated high contents of protein, fat and fiber. The fatty acid profiles revealed great amounts of α-linolenic acid (45.29-56.99%) followed by linoleic acid (15.9- 20.28%) and oleic acid (6.88-11.58%). However, the difference in the content of α-linolenic acid between samples was not significant (p = 0.7391). Mineral determination (mg/100g) showed high contents of potassium (492.96-862.98), phosphorous (486.45-569.45), calcium (297.47-429.09) and magnesium (192.22-202.97) while considerable amount was observed for iron, zinc, manganese, and copper. There was a significant difference (p = 0.0001) in mineral content between black chia Molo and white chia Bukembo with the exception of phosphorus. Conclusion: Both black and white chia seeds grown in East Africa, observed to have high amounts of α-linolenic acid, proteins, fats, fiber, and minerals. These findings support the evidence that chia is rich in nutrients that are beneficial to human health. Therefore, we suggest its incorporation in diets as a healthy food ingredient.

This paper reports changes in the fatty acid profiles of the hemp seed oil of two breeding populations, Kolaj and Fibrol, after five and seven years of selection for high oil content. While the original variety Kompolti had a 3:1 ratio of linoleic acid to linolenic acid, which has been claimed to be optimal for human nutrition, the selected population of Kolaj (improved Kompolti) shows a ratio close to 4:1.The highest ratio of increase (r.i.) was 1.45, determined for γ-linolenic acid in Fibrol (improved Fibrimon 21-63). Another significant change was the 0.49% (r.i. 1.21) increase in stearic acid in this variety, along with a 3.16% (r.i. 1.1) increase in total oil content. In Kolaj the 5.87% (r.i. 1.2) increase in oil content was accompanied by a 1.76 % (r.i. −1.28) decrease in palmitic acid and by decreases of 2.98% and 0.18% (r.i. −1.15 and −1.16), respectively, in the α- and γ-linolenic acid contents.

To improve oxidative stability of soybean oil and reduce off-flavours, we previously developed low linolenic acid, lipoxygenase-free (LLA.3lx) soybean germplasm. The objectives of this study were to characterize the patterns of inheritance and determine the relationships between the low linolenic acid (LLA) trait derived from the lines RG10 and PI 361088B and seed lipoxygenase nulls (3lx) from a triple null line OX948 that were used to create the new LLA.3lx germplasm. Reciprocal crosses between RG10 and OX948 and between PI 361088B and OX948 were made and populations derived from them were evaluated for their fatty acid profiles and seed lipoxygenases (LX) at the F2, F5 and F6 generations. Both RG10 and PI 361088B contain a single gene that controls linolenic acid (LA) content with alleles acting in an additive manner. No significant cytoplasmic effects were observed on LA content. The LLA trait was highly heritable in both RG10 × OX948 (RO) and PI 361088B × OX948 (PO) crosses and stable in different environments (Belize and Ontario, Canada). The three seed LX were each controlled by single genes, but lipoxygenase 1 (Lx1) and lipoxygenase 2 (Lx2) were tightly linked. No significant correlations were observed between LA content and seed LX. The simple and independent inheritance of LA and seed LX in these crosses should simplify breeding for soybean cultivars that are resistant to oxidative degradation.
