Pre-treated mealworm larvae and silkworm pupae as a novel protein ingredient in emulsion sausages

This study aimed to evaluate the effect of feeding rabbits with silkworm pupae and mealworm larvae meals on their performance indicators. Ninety (90) rabbits were divided into three groups. Control group (C) was fed with 10% soybean meal (SBM), SPM group received the diet including 5 % SBM and 4 % of silkworm pupae meal, and MLM group received the diet including 5 % SBM and 4 % of mealworm larvae meal. The body weight of rabbits and average daily gains were determined. Feed conversion ratio (FCR) was calculated. At the end of fattening period, the animals were euthanized, skinned and eviscerated to determine their carcasses characteristic. Hind leg and loin muscles were collected for analyses of the chemical composition. At the end of fattening period, rabbits from groups SPM and MLM were heavier than C rabbits (2,606.5 and 2,584.8 vs 2,404.0 g), which also improved their overall carcass characteristic while FCR was similar between groups. However, feeding rabbits with the addition of insect's meals increased the amount of ether extract in their muscles. Based on the results obtained, it may be concluded that SBM may be partially replaced by silkworm pupae and mealworm larvae meals in rabbit diets.

A comparative characterization of proteins from three edible insects—Tenebrio molitor (mealworm) larvae, Gryllus bimaculatus (cricket), and Bombyx mori (silkworm) pupae—was performed in this study. Proteins were extracted from edible insects and their hydrolysates were prepared through enzymatic hydrolysis with commercial enzymes (Flavourzyme: 12%; Alcalase: 3%). Solubility was significantly higher following enzymatic hydrolysis, while foamability was lower compared to those of the protein control. Angiotensin-converting enzyme was significantly inhibited after enzymatic hydrolysis, especially following Alcalase treatment, with IC50 values of 0.047, 0.066, and 0.065 mg/mL for G. bimaculatus, T. molitor larvae, and B. mori pupae, respectively. Moreover, the Alcalase-treated group of B. mori pupae and the T. molitor larvae group treated with a mixture of enzymes showed the effective inhibition of α-glucosidase activity. The anti-inflammatory activity of the insect hydrolysates was assessed via nitric oxide production from macrophages, and B. mori pupae samples exhibited significant activity regardless of the method of hydrolysis. These results indicate the functional properties of protein and hydrolysates from three species of edible insects, which may be useful in their future exploitation.

There has been a dramatic increase in duck meat consumption. As a result, ducks are an interesting alternative type of livestock. Animal-based proteins such as fishmeal and animal by-products are valuable nutrients with high digestibility, but they are associated with cost fluctuations, pathogen contamination, and environmental impacts. Therefore, plant-based proteins are used, but they have the disadvantages of inappropriate amino acid profiles, anti-nutritional factors, and mycotoxin contamination. Insect meal contains favorable nutrients and low production costs and is environmentally friendly; however, there is a large number of insect species. Therefore, the purpose of this investigation is to screen insects for their potential use as a protein source in the duck diet. Insect meal with a high proportion of low-digestible components was shown to have low digestibility. Yellow mealworm larvae, giant mealworm larvae, lesser wax moth larvae, house fly larvae, mulberry silkworm pupae, and American cockroach nymph have the potential to be alternative protein sources for ducks. Insect meal has been widely studied and is used in animal nutrition to replace common protein sources that have several disadvantages and to promote sustainability in animal production. Two-step in vitro digestibility using crude enzyme extracts from digestive tracts of meat-type ducks (Cherry Valley) was performed on general protein sources and insect meals to compare the in vitro digestibility of organic matter (OMd) and crude protein (CPd). Variation in chemical components between different types of insect meal was found. A positive correlation was found between OMd and the ether extract composition in insect meal, whereas a negative correlation was shown between crude fiber and acid detergent fiber. Contrasting relationships were found between CPd and crude fiber and acid detergent fiber in insect meal. In conclusion, the yellow mealworm larvae (Tenebrio molitor), giant mealworm larvae (Zophobas morio), lesser wax moth larvae (Achroia grisella), house fly larvae (Musca domestica), mulberry silkworm pupae (Bombyx mori), and American cockroach nymph (Periplaneta americana) are potential protein sources for ducks based on OMd and CPd digestibility after screening with an in vitro digestibility technique.

AbstractThe aim of this study was to determine the effect of feeding rabbits with diets containing dried silkworm pupae and mealworm larvae meals on their slaughter value and meat quality. A total of 60 New Zealand White rabbits at 35 days of age were divided into 3 equivalent groups. Control group (C) and two experimental diets included either 4% silkworm pupae meal (diet A) or 4% mealworm larvae meal (diet B). The experiment lasted for 55 days and growth performance as well chemical and amino acid meat composition and the profile of fatty acids were evaluated during the study. The results showed that dietary supplementation of insect meals caused increases in final body weight and carcass meat content in rabbits from the experimental groups. The experimental diets had no effect on the sum of essential amino acids in the studied muscles, but created differences in the level of some amino acids: phenylalanine, lysine, tryptophan, threonine, isoleucine and methionine. The concentration of saturated (SFA) and monounsaturated fatty acids (MUFA) in the muscles was comparable in all the groups. In the tissues of rabbits fed the silkworm meal diet, PUFA-3 concentration increased and cholesterol level decreased. It is concluded that dried silkworm pupae and mealworm larvae meals can be used as feed material in rabbit diets at 4% inclusion level without any adverse effect on growth performance, as well as quality and dietetic value of rabbit meat.
