Compounds in which olefinic linkages are accessible to aqueous reagents reduce the chloropalladite ion [PdCl4]2-, to metallic palladium. This reaction is used in a histochemical method whereby hydrophilic unsaturated lipids are stained dark brown or black. The specificity of the new method has been confirmed by means of solvent-extraction and chemical blocking procedures and by comparison with other histochemical techniques. Yellow staining of collagen, keratin and cytoplasm is probably due to attachment of the chloropalladite anion to proteins. The yellow background can be largely decolorized by treating the sections with aqueous pyridine, which forms colorless complexes with divalent palladium. A standard technique for staining with palladium is presented and the method is discussed in relation to other histochemical procedures that demonstrate unsaturated lipids.

The photocycloaddition of olefins with carbonyls is of fundamental interest and practical importance in C=C bond location in unsaturated lipids. However, the traditional UV light activated [2+2] photocycloaddition reaction suffers side reactions and potential health damage. Here, we reported the first example of visible-light activated [2+2] photocycloaddition of anthraquinone with unsaturated lipids. This reaction showed great capability for locating the C=C bonds in various kinds of monounsaturated and polyunsaturated lipids by combining with tandem mass spectrometry (MS), such as fatty acids, phospholipids and glycerides. Based on this developed reaction, a workflow with liquid chromatography tandem MS method was developed for the global identification of unsaturated lipids in human serum, and 86 of monounsaturated and complicated polyunsaturated lipids were identified with definitive positions of C=C bonds. This approach provides new insights both on the photocycloaddition reactions and the structural lipidomics.


3β-hydroxysteroid dehydrogenase (GSDG) in different parts of the hypothalamus was studied by histochemical method. It was shown that GSDG-positive reaction was present in neurons of the periventricular gray matter, ventromedial, ventrolateral, and arcuate nuclei of the hypothalamus. In the paraventricular nucleus, GSDG-positive neurons were «small-cell» neurons located primarily in the peripheral part of this nucleus.

Seafood products are highly perishable, owing to their high water activity, close to neutral pH, and high content of unsaturated lipids and non-protein nitrogenous compounds. Thus, such products require immediate processing and/or packaging to retain their safety and quality. At the same time, consumers prefer fresh, minimally processed seafood products that maintain their initial quality properties. The present article aims to review the literature over the past decade on: (i) innovative, individual packaging technologies applied to extend the shelf life of fish and fishery products, (ii) the most common combinations of the above technologies applied as multiple hurdles to maximize the shelf life of seafood products, and (iii) the respective food packaging legislation. Packaging technologies covered include: Modified atmosphere packaging; vacuum packaging; vacuum skin packaging; active food packaging, including oxygen scavengers; carbon dioxide emitters; moisture regulators; antioxidant and antimicrobial packaging; intelligent packaging, including freshness indicators; time–temperature indicators and leakage indicators; retort pouch processing and edible films; coatings/biodegradable packaging, used individually or in combination for maximum preservation potential.

The interaction of human serum albumin (HSA) with liposomes made of saturated and unsaturated phosphocholines has been studied using circular dichroism (CD), steady state and time resolved fluorescence spectroscopic techniques.
