Custard apple, a tropical fruit, is underutilized because of its poor storability. Researchers have worked on various aspects for improving the storage life of fruits; still its storage life is limited to few days. So to counteract this, an experiment was conducted to study the effect of modified atmosphere packaging using three different kinds of films along with low temperature storage at 8, 12 and 15 °C and observations were recorded at weekly interval. The study indicated an increasing trend in the respiration rate and ethylene production rate as well, and the rate increased with increase in storage temperature and duration. The physiological loss in weight in packed fruits showed a drastic reduction. Titratable acidity increased as storage duration while ascorbic acid shown exact reverse trend. There was significant increase in reducing sugar and total sugar as duration increased but rate was low in 8° C fruits.

The commercial use of modified atmosphere packaging (MAP) technology provides a means to slow the processes of ripening and senescence during storage, transport, and marketing of many fresh fruit and vegetables. The benefits of MAP and controlled atmosphere (CA) technologies for extending postharvest life of many fruit and vegetables have been recognized for many years. Although both technologies have been and continue to be extensively researched, more examples of the impacts of CA on produce quality are available in the literature and many of these reports were used in development of this review. Storage using MAP, similar to the use of CA storage, impacts most aspects of produce quality although the extent to which each quality attribute responds to CA or modified atmosphere (MA) conditions varies among commodities. Impacts of MAP and CA on flavor and aroma are dependent on the composition of the storage atmosphere, avoidance of anaerobic conditions, storage duration, and the use of fresh-cut technologies before storage.

Modified atmosphere packaging, Transpiration, Weight loss, Apple Abstract. In the article the modified atmosphere packaging (MAP) of post-harvest apples are developed and evaluated. Firstly, the comparison package box with MAP and without package is developed and applied to make comparison experiments of post-harvest apples during storage of 30 days, 60 days and 90 days. Secondly, the influence of MAP on the transpiration of post-harvest apples is evaluated by comparison experimental studies, the respiration model and the change of water loss for post-harvest apples is analyzed. These results show that, within the initial storage of 20 days the change of water loss of apples with MAP or without package is approximate and almost linear. After 20 days of storage duration, the two cases of water loss have obvious difference, the water loss by transpiration for apples without package still shows linearity and maintain constant transpiration rate, yet the transpiration rate of apples with MAP would gradually decrease. In addition the transpiration of post-harvest apples with MAP can be effectively retarded at high relative humidity, and the post-harvest may maintain better quality and 90 days shelf life at storage condition of constant temperature 5°C and relative humidity 60%.

The objective of this study was to determine if chlorophyll fluorescence could be used as an indicator of anaerobic respiration in broccoli (Brassica oleracea L., Italica group) during modified-atmosphere packaging (MAP). Two types of packages were used, PD-941 bags, which provided optimum MAP conditions for broccoli (≈3 kPa O2 plus 5 kPa CO2), and PD-961EZ bags, which allowed the CO2 to accumulate (≈11 kPa CO2). After 28 days in MAP at 1 °C, the broccoli from both types of bag had similar appearances and weight losses. However, broccoli held in the PD-961EZ bags had developed slight to moderate alcoholic off-odors and had higher ethanol, acetaldehyde, and ethyl acetate content, as compared with broccoli in PD-941 bags. Chlorophyll fluorescence parameters (Fv/Fm, T1/2, Fmd, and ΦPSII) were lower for broccoli held in the PD-961EZ bags than in PD-941 bags, and these differences increased with storage duration. These results indicate that chlorophyll fluorescence is a reliable, rapid, nondestructive indicator of broccoli quality during MAP, and that it could be used to determine if broccoli has developed off-odors without opening the bag and disrupting the package atmosphere.

The present study was conducted with the aim of increasing storage duration of cucumber fruits by using eco-friendly edible biomaterials and nanotechnology. Hence, the effects of postharvest-applied lemongrass oil (LO) and propolis extract (PEx), alone or in combination with modified atmosphere packaging (MAP), on the weight loss, fruit firmness, sensory index, chilling injury (CI), decay incidence (DI), and soluble solid concentration (SSC) of cucumber fruits were tested. Two different doses (0.2% and 0.5%) of both LO and PEx were tested in present study. Application of LO and PEx was performed by dipping the fruits into the solutions at 21 ± 1 °C for 3 minutes; after drying for 30 minutes, fruits were transferred to a cold room and kept at 4.5 ± 0.5 °C and 95% relative humidity (RH). Studies were continued for 24 days, and quality parameters were measured at 4-day intervals. Two-day shelf-life simulation was also applied to fruits after each interval, and the same quality parameters were observed. Results suggest that the combination of MAP bags with LO or PEx treatment provides better conditions for postharvest storage of cucumbers and that storage duration might be extended to 20 days. Fruits treated with LO or PEx and stored in MAP bags maintained weight and SSC, were firmer, showed lower DI, and expressed lower CI (P < 0.05) throughout storage.

The present article investigates the effect of sodium lactate on microbiological, physico-chemical and sensory characteristics of lightly salted Pacific herring ( Clupea pallasii ) and Baltic herring ( Clupea harengus membras ) during refrigerated storage 5 ± 0.3°C. There have been analyzed different processing methods of lightly salted samples of Pacific and Baltic herring: control (without sodium lactate), and experiment (3% sodium lactate), both in vacuum packaging and modified atmosphere packaging (MAP - 40% CO2/60% N2). For vacuum and MAP there were used bags with low oxygen permeability (3 cm3/m2/day). It was found that 3% sodium lactate keeps firmness of the texture of salted fish muscle and reduces the release of water into the package during storage. Adding 3% sodium lactate reduces the value of the water activity in lightly salted Pacific and Baltic herring by 0.01-0,012 units. The lowest pH (0.02 units) was registered in samples without sodium lactate packed in MAP. Organoleptic signs of spoilage in fish without sodium lactate appeared much earlier, and using 3% sodium lactate both in vacuum and in MAP helped protect and improve organoleptic characteristics of the product during storage. Total biological semination of experimental samples packed in MAP kept at the very low level during the whole storage period, i.e. combined effect of using 3% sodium lactate and MAP inhibited microbial growth. This combination allows to reduce twice the rate of accumulation nitrogen in terminal amino-groups and to increase 1.5-2 times storage life of lightly salted Pacific and Baltic herring, compared to their storage life in vacuum packaging without sodium lactate. The results obtained allow us to recommend using sodium lactate in production of lightly salted fish in oxygen-free packaging, especially in modified atmosphere packaging (40% CO2/60% N2).
