Effective connection between the food industry and consumer demands are specific needs of consumers whitch were monitored in this study by using a preferential mapping method. Preference mapping is based on Principal Component Analysis (PCA), which is performed on preferences ratings given for each product and preferences of each consumer through an online questionnaire. Key features for the consumer choice were colour, odour, consistency, total flavour and overall appearance. We verified the composition and mapped the preferences of 10 hams purchased in Slovakia. In view of the persistence of identified cases of food counterfeiting and meat fraud, intensive monitoring and scrutiny is required through effective and accurate analytical methods, which are crucial for maintaining consumer confidence and ensuring compliance with local legislation and labeling. The reference approach for identifying animal species in food is the PCR method, which is however limited to several animal species, meat types. The use of microarray technology enables the identification of a wider range of animal species and greater user comfort, especially the speed of obtaining the results. It allows 24 animal species to be identified in one analysis in 8 samples at a time. Detection was performed using Chipron LCD Aarray Kit Meat 5.0. In all analyzed samples, components of animal origin were identified in accordance on the packaging of the products. The Meat 5.0 LCD chip, which was used for analysis, has detected the presence of other animal species.

Mobile music listening is widely recognized as an integral part of everyday music use. It is also a rather peculiar experience, since the listeners are surrounded by strangers in public and at the same time engaged in a solitary and private activity. The current study aimed at investigating the functions and experiences of mobile listening with a quantitative online questionnaire, and collected further information about mobile listening situations and listening habits. Among respondents ( n = 203), 89% reported listening to music while being on the move. We found mood-related and cognitive functions to be most prevalent (e.g., enhancing mood, relaxation, prevention of being bored), whereas least important functions relate to social dimensions (e.g., feeling less lonely, feeling less watched). Regarding experiences of mobile music, respondents most commonly adapted their mood to the music and lost touch with the current surroundings. A principal component analysis on ratings of functions and experiences resulted in an underlying structure of five dimensions, representing different levels of involvement: (1) Mood Management comprises functions to satisfy individual needs; (2) Absorption and Aestheticization encompasses deep listening experiences and altered perception of the surroundings; (3) Social Encapsulation and Self-Focus describe the distancing of oneself and changes in attention; (4) Distraction and Passing Time include the prevention of being bored and making time pass faster; and (5) Auditory Background is defined by a non-attentive and rather unaffected music listening. These results highlight the immersiveness of mobile music listening. By creating an individual soundworld, listeners distance themselves from the surroundings aurally and mentally, and modify their attention, perception, moods, and emotions, leading to an improvement of daily life experiences while moving.

Basil is a plant known worldwide for its culinary and health attributes. It counts more than a hundred and fifty species and many more chemo-types due to its easy cross-breeds. Each species and each chemo-type have a typical aroma pattern and selecting the proper one is crucial for the food industry. Twelve basil varieties have been studied over three years (2018–2020), as have four different cuts. To characterize the aroma profile, nine typical basil flavour molecules have been selected using a gas chromatography–mass spectrometry coupled with an olfactometer (GC–MS/O). The concentrations of the nine selected molecules were measured by an ultra-fast CG e-nose and Principal Component Analysis (PCA) was applied to detect possible differences among the samples. The PCA results highlighted differences between harvesting years, mainly for 2018, whereas no observable clusters were found concerning varieties and cuts, probably due to the combined effects of the investigated factors. For this reason, the ANOVA Simultaneous Component Analysis (ASCA) methodology was applied on a balanced a posteriori designed dataset. All the considered factors and interactions were statistically significant (p < 0.05) in explaining differences between the basil aroma profiles, with more relevant effects of variety and year.

The Braga area is one of the cultural heritage tourist destinations in Bandung with the attraction of its colonial architecture. The emergence of new buildings in the region is presented without giving attention to the surrounding colonial buildings. The visitor’s perspective on the Braga area is an important basis in regional growth and development. This study aims to find the perspective of visitors based on the correlation between their attraction and expectations of the Braga region. The method used in this study was mixed methods (qualitative-quantitative), and data collection was carried out using a survey through a freely distributed online questionnaire (snowball non-random sampling). The collected data is then analyzed qualitatively using content analysis and quantitatively using principal component analysis, factor analysis, and multivariate correlation analysis. The results of the study revealed the existence of two perspectives, namely appreciative and recreational. The appreciative perspective sees Braga as having an attractive heritage of historical buildings and hopes that Braga will become a conservation area. While the recreational perspective regards Braga as an entertainment area that is unique and hopes for the commodification of the Braga area.

Objective: To identify dietary patterns in food availability data at the global level using multivariate statistical methodology, to associate the identified dietary patterns with socioeconomic data and to analyze the adequacy of the applied statistical methods in data of food availability. Methods: Principal Component Analysis was applied to food availability data of 172 UN registered countries available at FAOSTAT database in Food Balance Sheets section. The Principal Components were correlated with socioeconomic data available from the World Bank database. Results: Five principal components were identified, each characterizing a dietary pattern. The first one, a westernized dietary pattern, was composed of energy-dense and processed foods, foods of animal origin, alcoholic beverages, but also, albeit less, by vegetables, fruits and nuts, being correlated with income, urbanization and trade liberalization. This westernized pattern was characterized more by western, animal origin and processed foods, yet preserving unprocessed and regional foods. The other dietary patterns were three agricultural patterns characterized more by regional foods, especially starchy staples, and one coastal dietary pattern composed of fish and seafoods, being associated with GINI index, poverty, and female labor force. Conclusions: Principal Component Analysis was adequate to identify dietary patterns in food availability data. A westernized dietary pattern was identified, being associated with income, urbanization and trade liberalization. This association did not occur for the remain of the dietary patterns identified, these being less driven by economic development.

The passion fruit or grenadilla is usually consumed in the form of juice and its pleasant intensive aroma and flavor make it an attractive element for the food industry. The objective of the present work is to determine the effects of membrane technologies such as tangential microfiltration and reverse osmosis on the physicochemical characteristics of passion fruit extracts. The characteristics of the various extracts were determined according to conventional methods. In addition, statistical methods were applied to the data collected in order to determine the effects of membrane technologies. The results showed a yield of 89.33% for the extraction of the microfiltered juice and a volume reduction factor of 16.75 for the concentrate. In addition, the microfiltration-concentration process significantly (p <0.05) influenced the physicochemical parameters of the extracts produced. Thus, tangential microfiltration made it possible to clarify the crude extract by changing from a turbidity of 89.23 ± 1.71 to 0.72 ± 0.02 NTU. It has also resulted in a significant decrease in pH and flavonoids contents. Principal component analysis confirmed the existence of differences between the extracts produced despite the various correlations between their characteristics. It revealed that the JB and CMFT extracts are characterized by their high pH and low density. On the other hand, the COI extract is characterized by its brix degree, viscosity, conductivity and high vitamin C content. In addition, reverse osmosis has the advantage of concentrating the compounds of interest of clarified juice with a concentration factor ranging from 2.15 to 9.39.

With the success of e-books in the last decade, e-book piracy has become increasingly prevalent. This is a significant threat to the publishing industry, publishers and authors alike. Despite efforts to inhibit illegal downloading of e-book files, unauthorized download platforms have not lost much popularity. One of the underlying problems is a limited understanding of the determinants that drive consumers in their choice between legal and illegal download options. This article identifies and critically evaluates the key product attributes in the decision-making process of consumers downloading e-books from legal and illegal sources. By providing consumer insights, the publishing industry and e-book sellers can be guided to meet consumer demand better and design marketing plans to attract consumers towards legal download sources and discourage e-book piracy. The consumer choice between legal and illegal e-book download platforms is analysed using the multi-attribute theory for consumer decision making. 23 attributes were tested using an online questionnaire and analysed by logistic regression. Three attributes were found to be significant in determining the choice of download platforms: A low perception of the importance of copyright compliance, dissatisfaction with the security of download platforms and dissatisfaction with e-book prices in online stores.

Because of the rapid development and spread of antimicrobial resistance it is important that a system be established to monitor antimicrobial resistance in pathogenic zoonotic and commensal bacteria of animal origin. Susceptibility testing of bacteria from carcasses and different samples of animal origin has been carried out in veterinary institutes for a long time but by an inconsistent methodology. The disc diffusion method proposed by the National Committee for Clinical Laboratory Standards (NCCLS) was introduced in all institutes in 1997. In order to obtain a coherent view of the antimicrobial resistance of bacteria a computer system was consulted, consisting of a central computer to store all data and some local computers attached to it through the network. At these local measuring stations computers are connected to a video camera, which displays the picture of Petri dishes on the monitor, and inhibition zone diameters of bacteria can be drawn with the mouse by the inspector. The software measures the diameters, evaluates whether or not the bacteria are sensitive, and stores the data. The evaluation is based upon the data of the NCCLS. The central computer can be connected to as many local computers with measuring stations as we wish, so it is suitable for an integrated system for monitoring trends in antimicrobial resistance of bacteria from animals, food and humans, facilitating comparison of the occurrence of resistance for each circumstance in the chain. It depends on the examiners which antibiotics they want to examine. Thirty-two different antibiotic panels were compiled, taking into consideration the active ingredients of medicinal products permitted for veterinary use in Hungary, natural resistance and cross-resistance, the mechanism of resistance and the animal species, i.e. which drugs were recommended for treatment in the given animal species, and the recommendations of the OIE Expert Group on Antimicrobial Resistance. The members of the panels can be changed any time, even during the measuring process. In addition to the inhibition zone diameters of bacteria the database also includes information about bacterial and animal species, the age of animals and the sample or organ where the bacteria are from. Since January 2001 the antibiotic susceptibility of E. coli, Salmonella, Campylobacter and Enterococcus strains isolated from the colons of slaughter cows, pigs and broiler chickens has also been examined. Each of the 19 counties of Hungary submits to the laboratory three tied colon samples from a herd of the above-mentioned animals every month.

A method based on the polymerase chain reaction (PCR) principle was validated for detecting cow&rsquo;s milk in goat and sheep cheeses. DNA was isolated from the cheeses using the isolation kit Invisorb Spin Food I by Invitek Co., designed for the samples of animal origin. The PCR method applied utilizes the sequence of the mitochondrial gene coding cytochrome b which is specific for mammals. It uses the common forward primer and the reverse primer species-specific. After electrophoresis, cow DNA was characterised by the fragment of the size of 274 bp, goat DNA by the fragment of 157 bp, and sheep DNA by the fragment of 331 bp. The detection limit of the PCR method described (1%) was determined with model samples made from pure goat cheese with a defined addition of cheese made from cow&rsquo;s milk. The method validated was applied in the analysis of 17 goat cheeses and 7 sheep cheeses obtained from retail trade. Products of Czech, Slovak, French, Dutch, and Italian origin were examined. The presence of undeclared cow&rsquo;s milk was detected in three kinds of goat cheese and in one of sheep cheese. &nbsp;

To study the genetic characteristics of DT104 strains of Salmonella Typhimurium and the prevalence of Salmonella Genomic Island (SGI1) in Hungary, 140 recent Salmonella strains of food and animal origin were examined. For the first time in Hungary, the SGI1 was found in 17 out of 59 S . Typhimurium isolates (all proven to be DT104 phage type). These 17 strains were then subtyped by pulsed-field gel electrophoresis (PFGE) into 6 pulsotypes which were less correlated with the geographic origin than with the animal species of origin.

Climate change is a global concern, and the need to address it is urgent. Therefore, climate change education has been developed in recent years. Meaning making, coping strategies, and solution-oriented climate education tasks enable and maintain hope for positive results with regard to climate change. However, there is still uncertainty as to how students’ knowledge of climate change mitigation measures affects their attitudes. In the present study, elementary and secondary students in Finland (n = 950) responded to an online questionnaire. A principal component analysis, a hierarchical regression analysis, a correlation coefficients, a t-test, and a Kruskal-Wallis analysis of variance were used for the analysis to understand what kind of hope students had towards climate change and how their knowledge and optimism regarding climate change affected their hope. The data revealed that the students had a relatively high constructive hope rather than denial hope when it comes to climate change. Additionally, this hope was not built on a minimisation of climate change. The results indicated that the significant predictors for climate change mitigation were gender, climate change knowledge, and constructive hope. A typology of student positions with regard to climate change is introduced as conclusions.
