Technologies of healthfull products - bioyogurts with unique characteristics have been developed. The new products are characterized by a high content of naturally occurring biologically active substances - phytocomponents of fruits and vegetables (carrots, lemons with zest, apples, Jerusalem artichoke), in particular, β-carotene, phenolic compounds, tannins, ascorbic acid, ie substances having antioxidants. Besides, they have a high content of prebiotic substances - soluble pectic substances, cellulose, inulin and proteins. Recent biogurts play the role of natural thickeners and structure-forming agents. This makes it possible to eliminate the need for the use in the production of bio yoghurt food additives and synthetic additives. Technologies for making bio yoghurts are based on the use of nanosized cryo-additives from nanosize with the record content of biologically active substances (BAS), whose mass fraction in cryo-additives is 2.5 - 5.0 times greater than the original fresh cheese. Obtaining the latter is based on the complex action on the raw materials of cryogenic "shock" freezing with the use of liquid and gaseous nitrogen and cryodestruction with fine grinding. When making bioyoghurts, cryoadditives act as natural enrichment agents, structure-forming agents, texture stabilizers and dyes. In addition, phytoextracts from natural spices and medicinal herbs (echinacea, coriander, burkun, oregano) are included in the formulations for the enrichment of the BAS and for longer shelf life of new bio yoghurts. Whey was used as the basis for the production of bio yoghurts. New types of bio yoghurts in terms of the content of BAS exceed the known analogues and have 2 times longer shelf life (than control samples). Technological modes of production of bioyoghurts on bench semi-industrial equipment have been worked out. New yoghurts are recommended for introduction into production at large food enterprises, in establishments of restaurant business, for individual food.

Abstract. The paper considers applications of foamed glassy phosphate materials as carriers of biologically active substances. The atomic layer deposition method allowed chemically synthesizing surface-modified composite materials based on graphite and carbon fibers, which maximally preserved the activity of enzymes and biologically active substances. The synthesis process of a mono-layer titanium-containing coating on the surface of graphite and carbon fibers by processing them with TiCl4 vapors is considered. The main characteristics of the graphite surface before and after modification and characteristics of the porous structure and surface of carbon fibers are obtained. Biologically active substances by adsorption from a solution to the surface of both the original and modified carriers were applied. biological activity and temperature stability of the obtained composite materials were studied. It is shown that the activity of a biologically active substance depends on the chemical composition and state of the surface of carbon-based carriers.

Abstract Background One year into the coronavirus diseases 2019 (COVID-19) pandemic we analyzed the blood coagulopathy in severe and non-severe COVID-19 patients and linked to those of influenza patients for a comparative study. Methods We reported 461 COVID-19 patients and 409 seasonal influenza patients admitted at separated medical centers. With their demographic data and medical history, hematological profiles with coagulation characters were emphasized, and compared between two cohorts before and after treatment. Results For 870 patients included in this study, their median age was (64.0, 51.0–76.0), and among them 511 (58.7%) were male. Hypertension, diabetes, cardiovascular diseases, and bronchitis constituted the leading comorbidities. Upon hospital admission blood test results differentiated COVID-19 patients from influenza cases, and for COVID-19 patients, leukocytosis, neutrophilia, lymphocytopenia, and thrombocytopenia were associated with disease severity and mortality. In addition, COVID-19 cohort demonstrated a prolonged prothrombin time (PT) and activated partial thromboplastin time (aPTT), increased INR, shortened thrombin time and decreased fibrinogen, compared to those in influenza cohort, leaving D-dimer levels indistinguishably high between both cohorts. Platelet hyperreactivity in COVID-19 is more evident, associated with worse hyper-inflammatory response and more refractory coagulopathy. For severe COVID-19 patients administered with anticoagulants, bleeding incidence was substantially higher than others with no anticoagulant medications. Conclusions Comparison of coagulation characteristics between COVID-19 and influenza infections provides an insightful view on SARS-CoV-2 pathogenesis and its coagulopathic mechanism, proposing for therapeutic improvement.

Abstract Drone brood homogenate and compositions based on it are gaining popularity as functional food products and biologically active food additives. It has antioxidant, androgenic, anabolic, sedative, antidepressant, immunotropic, cosmetic and other properties. Royal jelly and drone brood have a pronounced biological activity, as they contain a large amount of decenoic acids, sulfhydryl groups, proteins, peptides and other biologically active substances. The possibility of expanding the spectrum of biological activity determines the relevance of developing a product containing a composition of drone brood and royal jelly. A significant superiority of the safety of biologically active substances in adsorbed drone brood and royal jelly in comparison with lyophilized ones was shown, which indicates the preferred method of stabilizing the combined product. The purpose of the work was to compare two technological methods for preparing a combined product. The first method consisted in the joint adsorption of royal jelly and drone brood, and the second - in separate adsorption and drying, followed by joint dry granulation of the components. It is shown that the differences in the physicochemical characteristics of products obtained by different methods are insignificant. The composition has intermediate values of physicochemical indicators between drone brood and royal jelly.

Food additives are materials added to food to affect the nature or shape of the food. These condiments can cause adverse effects on health if being consumed every day more than the amount in mg/Kg body weight. In addition, there are food additives that are prohibited, such as boric acid, formalin, salicylic acid, and others. The lack of understanding of junior high school (SMP) students regarding food additives that are allowed and prohibited cause students to be more likely exposed to foods that contain harmful substances that will accumulate or cause negative effects in the long term. This Community Service Activity aims to improve the understanding of School Health Unit (UKS) cadre students regarding food additives and balanced nutrition. This activity was attended by students from SMPN 1 Singosari, SMP 4 Muhammadiyah Singosari, and SMP Islam Bani Hasyim Singosari. Before and after the counseling material regarding food additives and balanced nutrition, the level of understanding was measured using pre and post-tests. The test results were then analyzed using independent T-test statistics with a confidence level of 95. The results of this activity indicate that there is an increase in participants' knowledge (40%) about food additives and balanced nutrition. Counseling is one of the ways to increase students' understanding of food additives as food safety and balanced nutrition is important to support growth and development.

Safe and healthy nutrition has a beneficial effect on human well-being. Various foods, such as berries, are known to inhibit cancer-promoting pre-proliferative signals. Among European fruit and berry crops, raspberries demonstrate one with the widest ranges of biologically active substances. Extraction remains a reliable method of obtaining biologically active substances from plant materials. The research objective was to obtain a semi-finished raspberry product by using microwave and ultrasonic processing and to study its antioxidant, anti-carcinogenic, sensory, physico-chemical, and microbiological properties. The raspberry extracts were obtained by maceration, ultrasound treatment, and microwave processing. After that, the samples underwent a comparative analysis of their antioxidant properties. The ultrasonic method gave the best results. A set of experiments made it possible to define the optimal technological modes for the extraction process: ethanol = 50%, ultrasonic radiation = 35 kHz, temperature = 40 ± 5°C, time = 120 min, water ratio = 1:10. A set of experiments on cell cultures demonstrated that the raspberry extract was able to reduce the expression of the anti-inflammatory COX-2, iNOS, and IL-8 genes. Hense, we recommend further studies of the effect of the raspberry extract on the induced expression of COX-2, iNOS, and IL-8. In addition, its anticarcinogenic properties have to be studied in vivo.

During the wood delignification a multicomponent spent liquor (black liquor) is formed. Depending on the type of wood, black liquor is enriched with valuable extractives. The isolation of extractives from processing liquors and their conversion into biologically active substances, tall products is according to development trend of pulp and paper industry. It includes the introduction of scientific based technologies in manufacturing processes with reference to modern environmental protection requirements. Now the extraction efficiency of sulphate soap does not exceed 75–80% whereby the quality of obtained soap is low. Sulphate soap, especially extracted after hardwood cooking, contains a large amount of impurities. This complicates the process of soap treatment into valuable biologically active substances (beta-sitosterol, etc.).  In the present work the addition of demulsifying and coagulating substances into the black liquor is proposed to intensify the hardwood sulphate soap extraction. The chemical colloidal characteristics of the obtained sulphate soap were investigated. Two critical micelle concentration (CMC) were found on the surface tension isotherms. The second critical micelle concentration (CMC2) in the concentration range of 0.9–1.0% CMC2 indicates the restructuring of micelles into a spherocylindrical shape. A comparative qualitative and quantitative analysis of the composition of sulfate soap obtained in industrial conditions and in the presence of selected additives in laboratory was carried out. Surfactants promote the extraction of phytosterol from black liquor obtained from hardwood species cooking. The influence of surfactant addition on the main physical and colloidal chemical characteristics of black liquor before and after isolation of sulphate soap is investigated. A decrease in viscosity and a de foaming of a black liquor solution is observed as a result of the addition of surfactant additives.
