Production of highly soluble date sugar powder from the nutritive date fruits will be a suitable and superior alternative to commercial refined sugar, providing sustainability in date palm cultivation. A good understanding of the nutritional and phytochemical composition of date fruits is imperative for this purpose. In this work, 11 different date fruit species commonly cultivated in the United Arab Emirates were studied for their chemical composition, physical properties, amino acids, minerals, and anti-nutritional contents. The results revealed that the date fruits contain moisture, protein, lipid, and ash content in the ranges of 14.8%–20.5%, 2.19%–3.12%, 0.25%–0.51%, and 1.37%–1.97%, respectively. Potassium was identified as the major microelement in all the date varieties. Amino acid assay depicted that the date fruits mainly contained glutamine and aspartic acids, along with other essential acids. Monosaccharides (glucose and fructose) were more prevalent in the date fruits than polysaccharides (sucrose), exhibiting the potential of date fruit for non-diabetic sugar production. Phytoconstituents present in date samples, such as flavonoids, oxalates, tannins, saponins, alkaloids, and cyanides, were also evaluated and reported. Results showed that although all date fruit varieties were nutritious, they contain significant variation in their nutritional, physical, elemental, and phytochemical properties.

Date palm is widely cultivated, distributed and consumed by various individuals. Most of the date palm fruits sold in Nigeria are either damaged or has insufficient quality for human consumption. This study was carried out to determine the bacterial load of date fruits in Katsina metropolis. Enumeration of bacteria was determined using pour plate technique. Serial dilution was carried out, where 10g of date fruits was homogenized in 90ml of diluents and used as stock solution. The bacterial counts were determined using colony forming unit per gram of the date fruit samples (cfu/g). The results obtained revealed high bacterial load in all the samples analyzed, which indicates the fruits contamination with bacteria. This may be due to unhygienic handling of the fruits from the local sellers and the nutritional contents of the fruit that may serve as good source of nutrients to bacteria. AbstractThe fruit of date palm trees are an important part of the diet for a large portion of the Middle East and North Africa. The fruit is consumed both fresh and dry and can be stored dry for extended periods of time. Date fruits vary significantly across hundreds of cultivars identified in the main regions of cultivation. Most dried date fruit are low in sucrose but high in glucose and fructose. However, high sucrose content is a distinctive feature of some date fruit and affects flavor as well as texture and water retention. To identify the genes controlling high sucrose content we analyzed date fruit metabolomics for association with genotype data from 121 date fruits. We found significant association of dried date sucrose content and a genomic region that contains 3 tandem copies of the beta-fructofuranosidase (invertase) gene in the reference Khalas genome, a low sucrose fruit. High sucrose cultivars including the popular Deglet Noor had a homozygous deletion of two of the 3 copies of the invertase gene. We show the deletion allele is derived when compared to the ancestral allele that retains the all copies of the gene in 3 other species of Phoenix. The fact that 2 of the 3 tandem invertase copies are associated with dry fruit sucrose content will assist in better understanding the distinct roles of multiple date palm invertases in plant physiology. Identification of the recessive alleles associated with end-point sucrose content in date fruit may be used in selective breeding in the future.

The date palm (Phoenix dactylifera L.) is one of mankind’s oldest cultivated plants. The fruit of the date palm is an important crop of the hot arid and semi-arid regions of the world. It has always played a genuine economic and social part in the lives of the people of these areas. The present objective in examining the amino acid content of different varieties of date palm fruits from Middle-East region; is to determine whether its protein could effectively supplement the nutritional value and it is also aimed in finding which variety is rich in number of amino acids. The phytochemical screening revealed the presence of eight essential amino acids and five non-essential amino acids in the date fruits. Among all the date fruit varieties taken as samples for the study, Dabbas cultivar of United Arab Emirates found to exhibit eight types of amino acids which includes five as non-essential ones. Total of thirteen amino acids were detected in the seven date cultivars. Determination of amino acid can serve as a guide to the possible nutritional value.

Adaptability to salinity varies between different varieties of date palm trees. This research aims to explore the long-term impact of different salinity irrigation levels on the mineral content of 13 date palm varieties grown in the United Arab Emirates (UAE). Date varieties were grown using three irrigation water salinity levels of 5, 10 and 15 dS m−1. The mineral composition (B, Ca, Cu, Fe, K, Mg, Na, P and Zn) of date palm fruits was determined using Inductively Coupled Plasma-Optical Emission Spectrometry (ICP-OES). High salinity levels showed no effect on the mineral content of Ajwat AlMadinah, Naghal, Barhi, Shagri, Abu Maan, Jabri, Sukkari and Rothan varieties. All date varieties remained good sources of dietary potassium, magnesium, manganese and boron even at high salinity levels. Increased salinity had no effect on the percent Daily Value (%DV) categories of most of the analyzed minerals. While no genotypes showed a general adaptation to different saline environments, Barhi, Ajwat Al Madinah, Khinizi, Maktoumi and Shagri varieties were more stable towards salinity variation. In the UAE, the genotype x saline-environment interaction was found to be high which makes it impossible to attribute the variation in mineral content to a single varietal or salinity effect.

Red Sayer is one of the date varieties from the United Arab Emirates. This variety is one type of dates that is imported into Indonesia and used as processed date palm juice producing waste, namely date seeds. Date seeds can be made into some coffee that is rich in antioxidants and does not contain caffeine. The purpose of this study is to determine the chemical characteristics, antioxidant activity, total phenol, and caffeine contents in coffee of the Red Sayer variety date seeds. Coffee of date seeds is made into powder and then analyzed for its contents of water, ash, protein, fat, carbohydrates and total sugar, besides its antioxidant activity, total phenol, and caffeine levels. The results of the analysis obtained are, as follows: 4.42±0.01% water, 1.17±0.04% ash, 8.55±0.64% protein, 7.34±0.07% fat, 78.52±0.76% carbohydrate, 16.39±0.01% total sugar, 23.81±0.22 µg/mL antioxidant activity (IC50) and 340.65±1.53 mg GAE / 100g total phenol, while caffeine is not detected. Red Sayer date seed coffee, therefore, can be a source of carbohydrates and natural antioxidants that does not contain caffeine.

Poultry meat is a major source of high biological value protein. The incorporation of fiber in meat helps to enhance its nutritive value with added health benefits that demonstrates a relationship between a diet containing an excess of energy- dense food rich in fats and sugar and the emergence of a range of chronic disease and several others. While studying the effect of fiber incorporation on the functional parameters it was observed that cooking yield (%) and emulsion stability (%) significantly decreased and the values were 91.94 % and 91.13 % in control and 87.28 % and 87.01 % in case of T7 (18% KnolKhol powder). The physico chemical analysis revealed that with addition of Knolkhol powder (3%) level, the pH decreased from 6.31 to 6.26, TBARS from 0.39 to 0.33 (mg malonaldehyde /Kg), ash content from 2.60 to 2.52 % crude protein 17.15 to 17.10 %, whereas moisture increased from 66.06 to 67.11 %, crude fiber from 0.58 to 0.65 %. Coliform were not evident in the stored samples up to 30 days of storage, however psychrophyll count was found after 30 days of storage. The total psychrophillic count in control samples was 0.36 (log cfu/g) which increased to 0.81 (log cfu/g) with addition of 25% Sweet Corn paste.
