The present study assessed the effect of pretreating beef as a raw material for sous vide steak preparation. The pretreatment involved maceration of a batch of meat in sour milk with the simultaneous use of ultrasound (250 or 500 W) as well as the addition of Taraxacum officinale. The biological activity profile of the peptides was assessed in terms of their antioxidant activity and inhibiting activity against angiotensin-converting enzyme (ACE). Changes in the biological activity of peptides under the influence of hydrolysis by gastrointestinal enzymes, i.e., pepsin and pancreatin, were also considered. There was no significant effect of T. officinale addition and sonication of beef batches on the protein content (except for lot S6, after sonication at 500 W as acoustic power and with the addition of dandelion). It was observed that the interaction of maceration in sour milk with simultaneous ultrasound treatment as the initial production step of sous vide beef steak generates the formation of peptides with antioxidant properties. Moreover, peptide formation can be further enhanced by adding dandelion (based on the results of antiradical and chelating activity tests). In addition, the progression of hydrolysis under the influence of gastrointestinal enzymes promotes the release of peptides with antioxidant and anti-ACE activity.

The need to expand the raw material base for obtaining flavonoids is due to the wide spectrum of their biological activity. The purpose of this work is to study the biological activity of a complex of bioflavonoids, quercetin and rutin on specific enzyme biotest systems in vitro. The objects of the study were: a complex of bioflavonoids from fat-free sea buckthorn meal Hippophae rhamnoides L. and individual flavonoids rutin and quercetin isolated from it. The study was carried out by methods of detecting the biological activity of substances using specific enzyme biotest systems in vitro. It was revealed that rutin and a complex of bioflavonoids have antioxidant properties – the rate of glutathione reductase reaction increased by 64 and 51% of control, respectively, and catalase – by 15%. Quercetin exhibits antimicrobial activity and also reduces the rate of the enzymatic iNOS reaction by 24% of the control, which indicates the anti-inflammatory properties of this sample. Rutin and a complex of bioflavonoids from sea buckthorn meal increased the iNOS reaction rate by 14 and 28%, respectively, which indicates the immunostimulating properties of these samples. In the course of a microbiological study, it was found that all samples have weak bacteriostatic activity against gram-positive and gram-negative bacteria Staphylococcus aureus ATCC 6538 (209-P) and Pseudomonas aeruginosa ATCC 9027. Fungistatic activity was confirmed against the yeast-like fungi Candida albicans ATCC 10231 of quercetin and the complex. The results obtained make it possible to consider a complex of bioflavonoids, quercetin and rutin as promising active substances in antioxidant, antimicrobial, fungistatic and anti-inflammatory drugs.

Background: Genus Stachys is one of the largest of the Lamiaceae family, having around 300 different plant species inhabiting areas with temperate and warm climates. The Stachys species in Turkey are represented with 81 taxa; 51 of them being endemic. Plants of the Stachys genus have been known for their biological activity and their use in ethnomedicine. Methods: The dominant components of S. cretica ssp. anatolica aqueous and methanol extracts were studied with the LC-MS/MS technique. Results: Chlorogenic acid, apigenin-7-glucoside and verbascoside present as the dominant polyphenols found in studied extracts. The prominent biological activity of the studied S. cretica ssp. anatolica methanol and aqueous extracts showed strong antioxidant activity and inhibition of enzymes tyrosinase and α-amylase, involved in skin disorders and diabetes mellitus type II. Conclusions: This study has proven that the aqueous and methanol extracts of S. cretica ssp. anatolica have prominent antioxidant activity, due to a high abundance of polyphenols. The strong antioxidant properties of S. cretica ssp. anatolica extracts show promising application for the pharmaceutical, food, and cosmetics industries.

The high incidence of infectious diseases and the emergence of resistance to modern drugs are current public health concerns. This situation leads to the search for alternatives via medicinal plants. The objective of this study was to assess the properties of Vernonia conferta. We performed an experimental study. The plant material consisted of the leaves and trunk bark of V. conferta. The extraction was carried out by maceration using aqueous and hydro-ethanolic solvents, followed by phytochemical screening of the extracts. An evaluation of the antibacterial potential was carried out by the micro-dilution method and was followed by the evaluation of the antioxidant properties (DPPH and FRAP test) and cytotoxicity (resazurin staining) of the extracts. The E2 and E4 extracts exhibited better extraction yields. The phytochemical screening noted the presence of families of compounds in common (polyphenols, tannins and quinones) and those which are different. The hydro-ethanolic extracts exhibited antibacterial activity on the strains of interest with MICs varying from 2 to 32 mg / mL with a possibility of synergistic action between the compounds. The evaluation of the antioxidant properties showed that the extracts E1, E3 and E4 showed better properties with IC50 = 25.1 ± 0.410; 2.456 ± 0.002; 2.363 ± 0.015 µg / mL respectively according to the tested method. The extracts showed their non-cytotoxicity with CC50> 1000 µg / mL. The activities of hydro-ethanolic extracts of V. conferta suggest that the latter would be a potential raw material for the production of improved traditional medicines.

Polyhydroxylated, water soluble, fullerenol C60(OH)24 nano particles (FNP) in vitro and in vivo models, showed an expressive biological activity. The goal of this work was to investigate the potential protective effects of orally applied FNP on rats after a single dose of doxorubicin (DOX) (8 mg/kg (i.p.)) 6 h after the last application of FNP. After the last drug administration, the rats were sacrificed, and the blood and tissues were taken for the analysis. Biochemical and pathological results obtained in this study indicate that fullerenol (FNP), in H2O:DMSO (80:20, w/w) solution given orally in final doses of 10, 14.4, and 21.2 mg/kg three days successively, has the protective (hepatoprotective and nephroprotective) effect against doxorubicin-induced cytotoxicity via its antioxidant properties.

The antioxidant activity of teas depends on the type and quality of the ingredients used in the process of tea production, location of the crops, and manner of the raw material processing. Our study is the first to compare the antioxidant and antiglycation properties of seventeen fruit teas obtained from one manufacturer. We evaluated three different brewing times (3, 5, and 10 min) and two brewing temperatures (70 and 100 °C). We demonstrated that infusions with the longest brewing time reveal the highest antiradical activity, while increased brewing temperature does not significantly affect the assessed parameters. The best antioxidant properties were obtained for the teas made from lemon balm with pear, forest fruits, cranberry with pomegranate, raspberry, and raspberry with linden. Fruit teas owe their high antioxidant activity to the presence of polyphenolic compounds in infusions. Extracts from fruit teas also diminish the oxidation and glycation of albumin in vitro, observed as a decrease in the fluorescence of aromatic amino acids and advanced glycation (AGE) and oxidation (AOPP) protein products levels. In conclusion, in order to prepare fruit teas with the best antioxidant properties, a longer extraction time is needed. The health-promoting properties of dried fruit infusions can be modified by changing the qualitative and quantitative composition of the ingredients.

The flower (inflorescence, basket-type inflorescence) of marigold (Calendulae officinalis flos) is a well-known plant raw material in traditional phytomedicine. Noteworthy is its rich chemical composition, which is dominated by flavonoids and terpenoids. Terpenoids are mainly represented by specific for this species oleanolic acid derivatives: triterpenoid saponins – calendulosides A-H and triterpenoid glycosides, so-called calendulaglycosides A and B. The biological activity profiles of the raw material, such as anti-inflammatory, antimicrobial, immunostimulatory and antioxidant properties, determine its use especially in the treatment of dermatological diseases. Interestingly, recent scientific studies proved, in addition to spasmolitic, hypolipemic and antidiabetic properties, such heath promoting activity as cardioprotective, hepatoregenerative, pancreas regenerating, neuroprotective and even anticancer activities. Moreover, C. officinalis is used in cosmetology and food industry.

Green and red tea due to the strong antioxidant, anti-inflammatory, anti-microbial, anti-tumor features are an intensive object of research. This article explores the chemical composition and biological activity of green and red tea of different fermentation. The preparation of aqueous extracts was implemented in household conditions, and the extraction time of release of active compounds from raw material was evaluated. The antibacterial activity was evaluated by the method in vitro. The research has shown that green tea is rich in catechins and caffeine. Red tea provides rutin and gallic acid. Green tea extracts inhibited the growth of S. aureus ir B. cereus. On the basis of the research results on the antioxidant activity, teas can be arranged in the following sequence: green > white > Oolong > red.

Cordyceps spp. mushrooms have a long tradition of use as a natural raw material in Asian ethnomedicine because of their adaptogenic, tonic effects and their ability to reduce fatigue and stimulate the immune system in humans. This review aims to present the chemical composition and medicinal properties of Cordyceps militaris fruiting bodies and mycelium, as well as mycelium from in vitro cultures. The analytical results of the composition of C. militaris grown in culture media show the bioactive components such as cordycepin, polysaccharides, γ-aminobutyric acid (GABA), ergothioneine and others described in the review. To summarize, based on the presence of several bioactive compounds that contribute to biological activity, C. militaris mushrooms definitely deserve to be considered as functional foods and also have great potential for medicinal use. Recent scientific reports indicate the potential of cordycepin in antiviral activity, particularly against COVID-19.

Background: Aromatic plants are quite popular for daily use worldwide. However, little is known about the appropriate preparation of beverages in “house conditions” in order to preserve their beneficial characteristics after processing. Taraxacum officinale Weber ex Wigg contains a variety of compounds, with well-documented effects against oxidative stress. This study aims to investigate the optimum preparation conditions of a Taraxacum beverage in the household setting, with respect to its antioxidant characteristics. Methods: Dried, commercial T. officinale was used to prepare beverages boiling for 1, 3 or 5 min. The beverages were extracted using organic solvents of increasing polarity, and the solid residues of each extraction were examined by in vitro analysis on: the evaluation of total phenolic content (Folin Ciocalteau), the evaluation of antioxidant activity (DPPH and ABTS radicals scavenging), the evaluation of the ability of the tested extracts to compete with DMSO for OH radicals, the ability to inhibit lipid peroxidation of linoleic acid and soybean lipoxygenase inhibition assay. Results: All preparations had an overall good antioxidant profile. Regarding the chosen solvents, mid polarity solvents were more likely to give better results in all tests conducted, which can be indicative of the compounds extracted in each fraction. Samples prepared under 3 min boiling presented significant interaction with DPPH and strong lipoxygenase and lipid peroxidation inhibition. Conclusion: As previously observed in the literature, food processing can greatly affect its biochemical characteristics. In the case of Taraxacum, boiling for 3 min resulted in the best overall profile of the beverage with respect to its antioxidant properties. However, due to a variety of components present in each plant, further investigation and stratification, along with in vivo experiments are needed.

Plants produce a huge array of secondary metabolites that play a key role in defense mechanisms against detrimental microorganisms and herbivores, and represent a suitable alternative to synthetic fungicides in sustainable agriculture. In this work, twelve crude hydroethanolic extracts derived from leaves of different potato cultivars were chemically characterized by LC/MS and their antioxidant properties were investigated in vitro. Furthermore, the biological activity against the fungal pathogen Rhizoctonia solani was evaluated both in vitro and in vivo. Extracts showed the ability to inhibit R. solani growth in vitro and significantly reduced damping-off incidence in in vivo experiments. Furthermore, R. solani mycelia exposed to the extracts showed an altered morphology (low translucency, irregular silhouette, and cytoplasmatic content coagulation) compared to the untreated control in light microscopy examination. Principal component analysis conducted on identified chemical compounds highlighted significant metabolic variations across the different extracts. In particular, those that inhibited most of the growth of the pathogen were found to be enriched in α-chaconine or α-solanine content, indicating that their biological activity is affected by the abundance of these metabolites. These results clearly indicated that plant-derived compounds represent a suitable alternative to chemicals and could lead to the development of new formulates for sustainable control of plant diseases.
