The aim of this study was to compare the rheological and physicochemical parameters, as well as the organoleptic properties, of soft rennet cheese made from whole and skimmed milk in different seasons on a traditional family farm. We analyzed milk from twenty Polish Holstein–Friesian cows for basic composition, number of somatic cells, acidity, and color in terms of the Comission Internationale de l’Eclairage (CIE) lightness*redness*yellowness (L*a*b*) system, and 24 cheeses in terms of texture, acidity, color in terms of the CIE L*a*b* system, and organoleptic parameters in summer and winter. We determined the effects of the season and the fat content of milk on the pH, titratable acidity, color, firmness, and stickiness of the cheese. Cheeses from summer milk showed greater acidification than those from winter milk (p ≤ 0.05). Skimmed milk cheeses from both seasons showed increased firmness and stickiness, and worse organoleptic characteristics, particularly in taste and consistency, than whole milk cheeses (p ≤ 0.05). The highest level of yellow (b*) was found in whole milk summer cheeses; those produced in winter were 16% less yellow. Milk from traditional family farms is a valuable raw ingredient for the production of soft, unripe rennet cheese. However, the variability of organoleptic characteristics related to the season should be taken into account in cheese production. Skimmed cheese can serve as an alternative to full-fat cheese, especially for people looking for low-fat products, regardless of the time of year.

AbstractThe aim of this study was to analyze the relationship between the concentration of hormones in the seminal plasma, the bull maintenance system in the insemination station, and the regularity of sperm donation and the response to the phantom (libido level). An additional goal was to determine whether there is a relationship between the hormonal profile in the blood, the sperm plasma, the oxidative and antioxidant profile in the blood of bulls and the biometry of their testicles and scrotum, as well as the quality of their sperm in both different seasons and intensities of reproductive use. For the study, 220 healthy and sexually mature Polish Holstein–Friesian bulls were used. They all had normal libido and were fed equally. The animals were grouped according to the scheme: young (16–20 month/n = 60) and old (26–30 month/n = 60) including: individually housed (n = 30) and group housed (n = 30) young, old individually housed (n = 30) and group housed (n = 30) (n total animals = 120); young animals donating semen once a week (every Thursday) (n = 25) and sporadically (once every two months on a random day of the week) (n = 25), old animals donating semen once a week (every Thursday) (n = 25 ) and sporadic donors (once every two months on a random day of the week) (n = 25) (n total animals = 100). When analyzing the results of this study, it should be stated that regular use has a positive effect on the secretion of sex hormones in bulls. Higher levels of testosterone and lower levels of estradiol and prostaglandins resulted in higher sexual performance, expressed by a stronger response to the phantom. The differences in favor of regular use were independent of the bull's age. The results of our research illustrate that the quality of semen and its freezing potential may depend on the season and frequency of its collection, as well as on the age of the males.

Brucellosis causes a great economic loss to the livestock industries through abortion, infertility,birth of weak and dead offspring, increased calving interval and reduction of milk yield and it is endemic in Bangladesh. In this study we collected milk and blood samples simultaneously from533 cows of Central Cattle Breeding and Dairy Farm, Savar, Dhaka and different Upazilas of Gaibandha and Mymensingh District. Five hundred thirty three samples were examined for antibodies to Brucella using the Milk Ring Test (MRT) and Rose Bengal Test (RBT). Overall 2.62 % of milk samples were positive according to MRT, while2.06 % of the serum samples were positive to the RBT. Only 6 (1.13 %) of the samples were positive for both test (MRT and RBT). Out of 312 samples only 10 (3.20 %) were positive to MRT while 8(2.06%) were positive to RBT in Holstein Friesian cross (p>0.05) on the other hand out of 221 samples only 4 (1.80%) were positive to MRT while 3(1.35%) were positive to RBT in Sahiwal cross. The prevalence of brucellosis was significantly higher in the age group of > 5 years than other age groups (p?0.01) on both test (MRT 2.75%and RBT 2.25%).Based on parity, significantly higher prevalence (MRT 2.93% and RBT 2.44%) of MRT and RBT were obtainedin parity 3-5in comparison to other parity group (p?0.01). It is, however, obvious that although the MRT is 1st-line screening tests for brucellosis in cows in some countries, their lack of specificity is of concern. Therefore, the requirement for other confirmatory tests that are more specific should be used for the diagnosis of the disease, especially in Bangladesh.DOI: http://dx.doi.org/10.3329/bjvm.v12i2.21280 Bangl. The aim of this research was to observe the effect of heat stress on milk yield and milk compositions of Holstein Friesian crossbred (HF) dairy cows. To fulfill the objectives, a total of 9 Holstein Friesian crossbred cows were selected for this study. Green grasses (German, Para) were supplied adlibitum and concentrate feeds (mixture of wheat bran, rice polish, mustard oil cake, di-calcium phosphate and salt) were supplied at the rate of 2.0 kg/day/cow. Management practices for all the cows were similar following the BAU Dairy farm practices. Data were collected on milk yield (l/h/d), relative humidity (%) and barn temperature (0C). The obtained temperature humidity index (THI) of July, August, September and October were 84.95, 81.99, 81.40 and 79.57, respectively. The highest THI was found in July which indicated higher heat stress during this month. A significant difference (p<0.05) in milk yield of cows was found among different months of July to October. The highest milk yield (6.10±0.50 l/h/d) was found in October among observed months. The compositions of milk such as total solids (TS), solids-not-fat (SNF), fat, protein, lactose, and ash also differed significantly (p<0.01). The highest values (%) of TS, SNF, fat, protein, lactose and ash content of milk were found in October as 12.63, 8.80, 3.83, 3.69, 4.39 and 0.72, respectively and lowest values (%) were in July as 12.20, 8.50, 3.71, 3.50, 4.30 and 0.69, respectively due to the high THI value. From these results, it is concluded that heat stress has strong effect on milk yield and milk composition of HF cows in Bangladesh. Objective of this study was to analyze the effect of the dairy farm on milk traits of cows in Vojvodina. The research was carried out on small farms with 10 to 20 cows, medium farms with 20 to 50 cows, and large farms with over 50 dairy cows. The study included registered animals of Simmental (SM) and Holstein-Friesian breed (HF; including Red Holstein) in the first lactation for traits of milk yield and yield and content of milk fat. Total of 1323 first lactations were analyzed. The average milk yield (both breeds) in the first lactation of 305 days was 6295 kg of milk with 234,3 kg of milk fat and average milk fat content of 3,74%. Milk performance of cows varied significantly (CV=22,9% and SD=1447,8), as well as milk fat yield (CV=21,6% and SD=50,8). Large farms produced in average 6534 kg of milk, medium farms 6347kg and small farms 4717kg. Size of the farm exhibited significantly high effect on all observed traits, and the tendency was that farms with higher number of animals realize also higher average of production. Farm management and various breeding-zootechnical conditions present on farms had significant effect on milk performance of cows.

Hancornia speciosa is a fruit tree, popularly known as mangabeiras. The mangaba, fruits of this tree, are quite appreciated for their organoleptic characteristics. Because it is a climacteric fruit, this fruit has very high perishability. The use of products that extend the useful life is necessary. Calcium chloride (CaCl2) has been shown to be an alternative in post-harvest because it promotes few changes in fruit quality and increases the storage period. Thus, the objective of this work was to evaluate quality attributes of mangaba fruits in two stages of maturation, 'Immature' and 'Mature', submitted to CaCl2 application, in four storage times (0, 2, 4 and 6 days) under ambient atmosphere. During the experiment, the loss of fresh weight, color, pH, titratable acidity, soluble solids and SS/TA ratio were evaluated. It was verified that the 'mature' fruits showed a higher acidity and soluble solids content, even with the application of CaCl2, the difference that the loss with the application of CaCl2 was smaller. Unlike '‘Immature’ and ‘Immature’ fruits with CaCl2 in which these characteristics were acquired as the experiment was conducted, in addition to presenting lower values for weight loss, pH and color.

ABSTRACT: Condemnations in the broilers abattoirs can represent an overview farms health and effectiveness of welfare programs, as well as predisposition between hybrids. The aim of this study was to investigate the prevalence of condemnation among four commercial broiler hybrids and the oscillation of condemnations in different seasons in a poultry abattoir. Data from condemnations of the Federal Inspection Service of a slaughterhouse were analyzed during one year, in which a total of 12.81% of partial condemnations were observed and total condemnations represented 0.41% of slaughtered broiler. There was a difference in total and partial condemnation among the hybrids evaluated, with Hubbard hybrid being the one with the highest number of condemnations (0.67% - 17.71%), followed by Ross 95 (0.42% - 14.21%), Cobb (0.30% - 10.03%); and Cobb Fast (0.26% - 9.29%). The analysis between the seasons showed a higher conviction rate in winter and a lower rate in autumn for both total and partial condemnation. Hubbard had the highest rates and Cobb Fast the lowest for most causes of condemnation. We concluded that the metabolic cause led to higher losses by total condemnation, while contamination or technopathies represented the highest rates in partial losses. The broiler hybrid and the time of year may influence the causes of condemnation in the abattoir. This information should be considered by the abattoir and the farms in sanitary planning, considering the financial impact due to losses by condemnations of carcasses.

The article presents the research results of studying the influence of various groups of microorganisms — coliform bacteria, lactic acid microorganisms, yeast, and spore bacteria — on the quality and storage capacity of cream used as a raw material for buttermaking. The objects of study were the following: cream as a raw material before and after pasteurization, as well as pasteurized cream seeded with testing cultures of various types of spoilage microorganisms. The samples were stored at temperature conditions of 30 ± 1 °C, 10 ± 1 °C, and 4 ± 2 °C. To evaluate the quality and storage capacity of cream used as a raw material, its microbiological and physicochemical indicators were determined by standardized methods: bacterial number, titratable acidity, indicators of oxidative spoilage of the fat phase. Organoleptic characteristics were evaluated in terms of taste, consistency and appearance. Research results have shown that the greatest microbiological risks during storage of cream used as a raw material are associated with lactococci, coliform bacteria and yeast. Microbiological risks caused by seeding of cream with thermophilic streptococcus, spore bacteria of the genus Bacillus and spore anaerobic microorganisms of the genus Clostridium are less significant, which is associated with the lack of development and metabolism of these groups of microorganisms at storage temperatures of 10 ± 1 °C and 4 ± 2 °C. At the same time, the reason for the rejection of cream contaminated with these testing cultures, at a storage temperature of 4 ± 2 °C, is primarily a decrease in organoleptic indicators, and at a temperature of 10 ± 1 °C — an excess in bacterial number.

The results of feeding experiments, involving a total of 117 Holstein-Friesian calves, were reported. No whole milk nor fresh skimmilk was fed to the calves after their second day of age. Milk substitutes containing 40 to 50 per cent dried skimmilk, 5 to 10 per cent emulsified, stabilized lard and at least 30 p.p.m. of Aureomycin (chlortetracycline) or Terramycin (oxytetracycline) in the dry matter permitted weight gains equal to, or exceeding, the Beltsville standards during the milk feeding period. Supplementary lecithin had no effect on performance of the calves. Weaning calves from milk substitutes at weights of 145 to 150 lb. was considered preferable to weaning at specified ages because of apparent differences in physiological development that exist among calves for the first few months of life.

With the purpose of generating a list of foods for a food-frequency questionnaire, data from 24h dietary recalls on a typical day from a probabilistic sample of 1,724 adults of Niterói, Rio de Janeiro, Brazil, were analyzed. The frequency of food intake, the total intake of energy and macronutrients and the relative contribution of each food item to total energy and macronutrient intake were calculated. The most frequently reported food items (> 50% of adults) were rice, coffee, beans, refined canesugar, and bread. Whole milk was consumed more frequently then skimmed milk or semi-skimmed milk. Beef was consumed by more adults than chicken, pork or fish. Approximately 90% of energy and macronutrients intake was explained by 65 food items. The list of food items generated in the present analysis is similar to those found in other samples of adults from urban areas in Brazil. It may be possible to generate a core list of common foods with addition of regional foods to be used nationally in urban areas of the country.
