The present study aims to investigate the effect of dietary supplementation based on a blend of microencapsulated organic acids (sorbic and citric) and essential oils (thymol and vanillin) on chicken meat quality. A total of 420 male Ross 308 chicks were randomly assigned to two dietary treatments: the control group was fed with conventional diet (CON), while the other group received the control diet supplemented with 0.5% of a microencapsulated blend of organic acids and essential oils (AVI). In breast meat samples, intramuscular fat content and saturated/polyunsaturated fatty acids ratio were reduced by AVI supplementation (p < 0.05). Moreover, atherogenic (p < 0.01) and thrombogenic (p < 0.05) indices were lower in AVI than CON treatment. AVI raw meat showed a lower density of psychrotrophic bacteria (p < 0.05) at an initial time, and higher loads of enterococci after 4 days of refrigerated storage (p < 0.05). No contamination of Listeria spp., Campylobacter spp., and Clostridium spp. was found. TBARS values of the cooked meat were lower in the AVI treatment compared to CON (p < 0.01). Among colour parameters, a*, b* and C* values increased between 4 and 7 days of storage in AVI cooked meat (p < 0.05). Overall, organic acids and essential oils could improve the quality and shelf-life of poultry meat.

An increase in the consumption of poultry meat has been observed due to its availability, nutritional value, and delicate flavor. These characteristics make it possible to prepare, with the use of spices and other additives, many different dishes and products for increasingly demanding consumers. The sous-vide technique is increasingly being used to give new sensory attributes to dishes in gastronomy. The study aimed to assess the impact of the heat treatment method, i.e., the sous-vide method, as compared to traditional cooking, on the sensory quality of poultry meat, as well as the efficiency of the process with regard to technological quality. The cooking yield with the sous-vide method of processing poultry meat was higher than with the traditional method of cooking in water (88.5% vs. 71.0%, respectively). The meat was also found to be redder (a* = 254 vs. 074) and less yellow (b* = 1512 vs. 1649), as well as more tender. The sensory quality of chicken breast meat obtained by the sous-vide method was higher in terms of attributes such as color tone, tenderness, juiciness, and overall quality. At the same time, it was lower in terms of the odor of cooked meat and the flavor of cooked meat as compared to meat subjected to traditional cooking.

The objective of the study was to test the effect of diets supplemented with β-alanine, L-histidine, and carnosine on the histidine dipeptide content and the antioxidative status of chicken breast muscles and blood. One-day-old Hubbard Flex male chickens were assigned to five treatments: control diet (C) and control diet supplemented with 0.18% L-histidine (ExpH), 0.3% β-alanine (ExpA), a mix of L-histidine\β-alanine (ExpH+A), and 0.27% carnosine (ExpCar). After 28 days, chicken breast muscles and blood samples were analyzed for the antioxidant enzyme activity (catalase (CAT), glutathione peroxidase (GPx), superoxide dismutase (SOD)), carnosine and anserine content, amino acid profile, and anti-radical activity (ABTS, DPPH, ferric reducing antioxidant power (FRAP)). The results of the study showed that carnosine supplementation effectively increased body weight and breast muscle share in chicken carcasses. Carnosine and L-histidine supplementation with or without β-alanine increased carnosine content in chicken breast muscles up to 20% (p = 0.003), but the boost seems to be too low to affect the potential antioxidant capacity and amino acid content. The β-alanine-enriched diet lowered dipeptide concentration in chicken blood serum (p = 0.002) and activated catalase in chicken breast muscles in relation to the control group (p = 0.003). It can be concluded that histidine or dipeptide supplementation of chicken diets differently affected the total antioxidant potential: in breast muscles, it increased dipeptide content, while in blood cell sediment (rich in erythrocytes), increased SOD and GPx activities were observed.

This study aimed at investigating the effect of a functional synergistic feed additive blend, containing organic acids and ß-1,4 mannobiose, on cecal Salmonella counts and growth performance of broiler chickens. A meta-analysis combining 13 individual studies, executed in Salmonella-challenged broilers comparing a control diet with and without the synergistic blend, was performed. Cecal Salmonella colonies and overall growth performance were measured. Raw data from all studies were combined and analyzed using PROC MIXED in SAS, taking the within and between-study variation into account. In the first 14 days post-inoculation (DPI), cecal Salmonella was reduced by 0.429 log CFU/g (p = 0.011, n = 10 comparisons from five studies) when feeding the synergistic blend compared to the control group. During 15–34 DPI, the overall means were not different between treatments (0.069 log CFU/g; p = 0.519, n = 12 comparisons from eight studies). The feed conversion ratio was improved when feeding the synergistic blend compared to the control diet (1.474 vs. 1.482, respectively; p = 0.002). In conclusion, feeding a synergistic blend, containing organic acids and ß-1,4 mannobiose amongst other ingredients, reduced cecal Salmonella counts during the first 14 DPI and improved growth performance of Salmonella challenged broilers compared to a control diet.

The objective of this study was to evaluate the use of commercial blends of organic and inorganic acids combined with essential oils for piglets in the nursery phase. The formulations were administered as microcapsules or as acid salts. Ninety-six, Pen Ar Lan, barrow and female piglets, weaned at a body weight of 600 kg ± 12 kg and age of 23 days were subjected to four treatments. The animals were distributed in randomized blocks of three animals per pen and 8 replicates per treatment. The treatments consisted of four different diets: control (free of organic acids); acid and essential oil blends (fumaric acid 10,5%, malic acid 8.0%, essential oils; in microencapsulated form); microencapsulated acid blend (phosphoric acid 10%, citric acid 10%, malic acid 10%, fumaric acid 20%; in microencapsulated form); and acid salt blend (formic acid 40.5%, phosphoric acid 13.6%, propionic acid 4.9% and salts (23.2% calcium and 4.4% phosphorus available). The performance parameters, digestive transit time, weights of organs of the digestive tract, bacterial count of feces (Lactobacillus, E coli and Salmonella ssp and Clostridium), pH of the stomach and duodenal content did not differ between treatment groups (P &gt; 005). All treatments containing organic acids exhibited positive effects on diarrhea control (P &lt; 005). The cecal contents of volatile fatty acids (VFA) were higher in piglets fed diets containing acids than in animals that received the control diet (P &lt; 005), and blends containing essential oils improved the jejunum villus height compared with the control group. The use of diets containing acids improved diarrhea control and VFA production in the cecum, and specifically the diets containing microencapsulated acid blends required the lowest doses to be effective.

Currently, soybean meal constitutes the main protein source for poultry production. However, the environmental and social issues related to soybean production are calling for more sustainable protein sources that can offset soybean requirements in animal production. Hermetia illucens larvae and the microalga spirulina (Arthrospira platensis) have proven to be effective alternatives to soybean meal for poultry production. In this study, the effect of 100% replacement of soy with partially defatted Hermetia illucens larvae and spirulina on the contents of selected endogenous bioactive (anserine, creatine and carnosine) and flavour-related (inosine and inosine-5´-monophosphate, IMP) compounds in chicken breast meat was evaluated. The results showed that the spirulina-based diet lowered the levels of anserine, carnosine and creatine compared to the control diet (3.3 vs. 4.1 mg/g, 0.15 vs. 0.72 mg/g and 1.49 vs. 2.49 mg/g, respectively) while IMP levels tended to be higher in spirulina-fed samples. Compared to the control group, Hermetia illucens-fed samples showed a lower content of bioactive peptides (anserine: 3.6 vs. 4.1 mg/g; carnosine: 0.39 vs. 0.72 mg/g; creatine: 2.03 vs. 2.49 mg/g), albeit to a lesser extent than the spirulina treatment group.

AbstractThe primary aim of this study was to investigate the impact of three dietary levels of lactose (LAC) originating from conventional dried whey (DW) and the duration of these treatments (from 8 to 21 or to 42 days of age) on growth performance, basic post-slaughter traits and excreta quality of broiler chickens kept in cages. A secondary purpose was to investigate the effect of LAC level on some parameters of the caecal micro-environment and gross morphology in these birds. A total of 560 Ross 308 chickens (sex ratio 1:1) were assigned to 7 dietary combinations with 10 replicate cages of 8 birds per cage. The control group was fed basal diets consisting of maize, wheat and soybean meal. The other 6 groups received the same basal diets with DW added in amounts equivalent to a LAC dietary levels of 1, 2 or 3%. Only continuous feeding (day 8 to 42) with 1% and 2% levels of LAC was found to yield the overall body weight gain (BWG) during the whole 42-day rearing period, which was significantly higher than that on the control diet, with a larger share of breast meat in carcass at a 2% LAC. However, these effects were associated with greater faecal score values indicating more watery excreta compared with the control. Increasing levels of LAC augmented the relative caecal weight and length. A reduction in the caecal pH was confirmed at day 21 for birds fed 1% and 2% of dietary LAC. The lower pH values were correlated to an increased sum of total volatile fatty acids (VFA), causing large increases in the concentration of undissociated forms of individual VFA. The decline in plate counts of coliform bacteria was observed with 2% and 3% LAC, whereas the counts of lactic acid-producing bacteria (LAB) were higher at these two LAC levels. The present findings lead to the conclusion that the dietary level of 2% LAC originated from DW is the most effective in enhancing the productivity of broilers, with moderate occurrence of undesirable side effects.

The influence of feed additive "Ormik" consisting of organic acids (formic acid, lactic acid, orthophosphoric acid, acetic acid), as a filler of diatomite crumb, introduced into concentrated fodders, on the biochemical parameters of blood serum of pigs and on productivity is considered in the article. The studied feed additive was added to the feed daily in the form of loose powder, mixing thoroughly. The initial dosage of the feed additive in the 1st week was 1 g/kg of feed, 2nd week and the following – 3 g/kg of feed. The average daily gain in the live weight of pigs in the experimental group was 11,0% higher than the control group. The animals of the experimental group were less sick and the safety of this group was 100%, in the control group it was 90%.

Изучено влияние на репродуктивную функцию коров белково-витаминно-минеральных концентратов (БВМК) с кормовой добавкой «AMG-COMPLEX», состоящей из эфирных масел и растительных экстрактов. Для проведения опыта были сформированы контрольная и опытная группы по 70 голов с учетом количества дней до отела из коров второй и третьей стельности. Животным контрольной группы скармливали основной рацион. Для коров опытной группы были составлены рационы с БВМК, которыми заменяли пропорциональное количество концентрированных кормов и часть витаминно-минерального премикса. Они получали БВМК для сухостойных коров в количестве 300 г на 1 голову в сутки с 60-го по 20-й день до отела и по 200 г на 1 голову в сутки с 20-го дня до отела. После отела 60 дней им скармливали БВМК для раздоя в количестве 1200 г на 1 голову в сутки. Использование БВМК в рационах коров опытной группы способствовало улучшению у них репродуктивной функции и снижению частоты гинекологических заболеваний после отела в 4,5 раза. Индекс осеменения в опытной группе составил 1,73 (P≤0,05), что на 0,76 ниже, чем у животных контрольной группы. Средняя продолжительность сервис-периода в опытной группе составила 87,71 дня (P≤0,01) и была короче, чем в контроле, на 14,72 дня. The effect on the reproductive function of cows of the protein-vitamin-mineral concentrate with the feed additive ʺAMG-COMPLEXʺ, consisting of essential oils and plant extracts, was studied. To experiment, taking into account the number of days before calving, control and experimental group of 70 heads each were formed from cows of the second and third pregnancy. In the scientific and economic experiment, the cows of the control group consumed the feed of the main rations. For the cows of the experimental group rations were made with PVMC, which replaced the proportional amount of concentrated feed and a part of the vitamin-mineral premix. They received PVMC deadwood in the amount of 300 g per 1 head per day from 60th to 20th day before calving and 200 g per 1 head per day 20 days before calving. 60 days after calving they received PVMC lactation in the amount of 1200 g per head per day. Feeding PVMC to cows of the experimental group contributed to the improvement of reproductive function and a decrease in the frequency of gynaecological diseases after calving by 4.5 times. The insemination index in the experimental group was 1.73 (P≤0.05), which is 0.76 lower than in the animals in the control group. The average duration of the service period in the experimental group was 87.71 days (P≤0.01) and was shorter than in the control by 14.72 days.

This paper presents a study of the effect of the feed additive «Abiotonic» on the indicators of egg and meat productivity when applied to laying hens. It was found that with the additional introduction of this additive into the standard diet of poultry, the content of nonessential amino acids in their meat is 10% higher compared to the same parameters in the meat of chickens of the control group, the content of partially nonessential amino acids is by 8,5%, and of irreplaceable amino acids is by 6,7%. In addition, in the meat of laying hens, which used the feed additive «Abiotonic», the content of selenium (Se) is 29,4% higher than in the meat of birds of the control group, and iron (Fe) – by 20%. The average daily gain in live weight of the birds in the experimental group was 3,6 g more than in the control hens. Microbiological research made it possible to establish that poultry meat, regardless of the introduction of the feed additive «Abiotonik», meets the established requirements and is safe for human consumption. «Abiotonic», in addition, significantly improves the egg production of birds. It was found that the weight of eggs with the introduction of this feed additive in the diet in addition to the compound feed increased by an average of 1,2 g, and the egg production increased by 23 eggs in 7 days.

Salmonella is the leading cause of bacterial foodborne zoonoses in humans. Thus, the development of strategies to control bacterial pathogens in poultry is essential. Peanut skins, a considerable waste by-product of the peanut industry is discarded and of little economic value. However, peanut skins contain polyphenolic compounds identified that have antimicrobial properties. Hence, we aim to investigate the use of peanut skins as an antibacterial feed additive in the diets of broilers to prevent the proliferation of Salmonella Enteritidis (SE). One hundred sixty male hatchlings (Ross 308) were randomly assigned to, (1) PS: peanut skin diet without SE inoculation (2) PSSE: peanut skin diet and SE inoculation 3) CON: control diet without SE inoculation (4) CONSE: control diet with SE inoculation. Feed intake and body weights were determined at week 0 and 5. On days 10 and 24 post hatch, 3 birds/pen (24 total) from each treatment group were euthanized and the liver, spleen, small intestine, and ceca were collected. The weights of the liver, spleen and ceca were recorded. Organ invasion was determined by counting SE colonies. Each pen served as an experimental unit and was analyzed using a t-test. Performance data was analyzed in a completely randomized design using a general linear mixed model to evaluate differences. There were no significant differences ( P &gt; 0.05) in weekly average pen body weight, total feed consumption, bird weight gain and feed conversion ratio between the treatment groups. There were no significant differences in SE CFU/g for fecal, litter or feed between treatment groups CONSE and PSSE. However, for both fecal and litter, the PSSE treatment group tended (P ≤0.1) to have a lower Salmonella CFU/g compared to the CONSE treatment group. The results indicate that peanut skins may have potential application as an antimicrobial feed additive to reduce the transmission or proliferation of SE in poultry environments or flocks.
