Lipoxygenases are widespread enzymes that catalyze oxidation of polyunsaturated fatty acids (linoleic, linolenic, and arachidonic acid) to produce hydroperoxides. Lipoxygenase reactions can be desirable, but also lipoxygenases can react in undesirable ways. Most of the products of lipoxygenase reactions are aromatic compounds that can affect food properties, especially during long-term storage. Lipoxygenase action on unsaturated fatty acids could result in off-flavor/off-odor development, causing food spoilage. In addition, lipoxygenases are present in the human body and play an important role in stimulation of inflammatory reactions. Inflammation is linked to many diseases, such as cancer, stroke, and cardiovascular and neurodegenerative diseases. This review summarized recent research on plant families and species that can inhibit lipoxygenase activity.

Abstract Examining fatal poisonings, chronic exposure may be reflected by the concentration in tissues known for long-term storage of drugs. Δ9-tetrahydrocannabinol (THC) persists in adipose tissue (AT), but sparse data on synthetic cannabinoids (SC) are available. Thus, a controlled pig study evaluating antemortem (AM) disposition and postmortem (PM) concentration changes of the SC 4-ethylnaphthalene-1-yl-(1-pentylindole-3-yl)methanone (JWH-210) and 2-(4-methoxyphenyl)-1-(1-pentyl-indole-3-yl)methanone (RCS-4) as well as THC in AT was performed. The drugs were administered pulmonarily (200 µg/kg body weight) to twelve pigs. Subcutaneous (s.c.) AT specimens were collected after 15 and 30 min and then hourly up to 8 h. At the end, pigs were sacrificed and s.c., perirenal, and dorsal AT specimens were collected. The carcasses were stored at room temperature (RT; n = 6) or 4 °C (n = 6) and specimens were collected after 24, 48, and 72 h. After homogenization in acetonitrile and standard addition, LC–MS/MS was performed. Maximum concentrations were reached 0.5–2 h after administration amounting to 21 ± 13 ng/g (JWH-210), 24 ± 13 ng/g (RCS-4), and 22 ± 20 ng/g (THC) and stayed at a plateau level. Regarding the metabolites, very low concentrations of N-hydroxypentyl-RCS-4 (HO-RCS-4) were detected from 0.5 to 8 h. PM concentrations of parent compounds did not change significantly (p > 0.05) over time under both storage conditions. Concentrations of HO-RCS-4 significantly (p < 0.05) increased in perirenal AT during storage at RT. These results suggest a rapid distribution and persistence in s.c. AT. Furthermore, AT might be resistant to PM redistribution of parent compounds. However, significant PM increases of metabolite concentrations might be considered in perirenal AT.

 Lipid contents and the composition of fatty acids of fillets from Chilean salmon (Salmo salar) were determined under different conservation methods: fresh salmon, frozen salmon, water-conserved canned salmon and frozen salmon in long-term storage. Fatty acid contents were determined by gas chromatography. The fillets had high lipid levels, ranging between 9.71 and 12.86%. All samples presented high levels of monounsaturated fatty acids, between 363.69 and 425.30 mg g-1 of total lipids, followed by polyunsaturated fatty acids (294.46 - 342.45 mg g-1 of total lipids) and saturated fatty acids (203.32 - 223.17 mg g-1 of total lipids). Although samples revealed different lipid contents, all proved to be great sources of omega-3 fatty acids, regardless of the manner of conservation.

Background. Chufa is one of the most promising rare oilseed crops. The issues of preserving and obtaining highquality seed material are very important. The development of long-term genebank storage techniques for chufa nodules is a pressing task.Materials and methods. We studied 18 chufa germplasm accessions of various origin. The field study was conducted in 2010–2012 under the environmental conditions of Krasnodar Territory, Russia. Protein and oil content was analyzed according to the guidelines on the methods of quality control and safety of bioactive food additives (R 4.1.1672-03…, 2004); vitamin E according to the guidelines on the methods of analyzing the quality and safety of food products (Skurikhin, Tutelyan, 1987); fatty acid composition in line with IUPAC (1979) and GOST R 512677-2006, using an IIRGCS chromatograph.Results and conclusions. The study of valuable agronomic characters in chufa accessions showed that the height of plants varied from 49 to 69 cm; the number of nodules per plant from 80 to 110 pcs; the weight of nodules per plant from 18 to 49 g; the weight of nodules per plot (1 m2 ) from 101 to 393 g. Their oil content varied from 13.1 to 21.06 g/100 g, and protein content from 6 to 10%. Chufa accessions contained large amount of vitamin E: 19.23 to 35.23 mg/100 g. The content of saturated fatty acids in chufa oil was 17.75 to 20.99%, monounsaturated fatty acids from 68.21 to 71.55%, and polyunsaturated fatty acids from 9.94 to 12.17%. A technique of preparing chufa nodules for long-term storage was developed. The optimal time to assess germination energy is four days, with 11 days for germination percentage. Storage of chufa nodules for three years at a temperature of +20°C causes a decrease in their germination by 15–16%. When stored under low positive (+4°C) or negative temperatures (–18°C and –196°C), their germination percentage remained unchanged.
