Fruits of different sour cherry varieties cultivated, in 2008 and 2009, under organic farming and integrated cultivation conditions were analysed for their quality attributes, antioxidant activity and subjected to sensory evaluation.. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined in freshly harvested fruits. The obtained results indicated that, the principal component analysis can separate and distinguish the seasons of fruit production. The farming system seemed to have slight effect on quality the fruit as compared to varietal factors (genotypes). However, the total polyphenol content was uniformly less in 2009. Total polyphenols and free radical scavenging activity were significantly higher in Bosnian type sour cherries, and outstanding in Amarelle type cultivar ‘Pipacs’. There was no statistically significant difference between the sensory properties of cultivars tested by panels, except the case of ‘Pipacs’. The organolaptic investigation showed marked preference to the fruits of Eva and Petri cultivars.

Prima’, ‘Gala’, ‘Remo’, ‘Topáz’, ‘Idared’, ‘Releika’, ‘Resi’, ‘Rubinola’, ‘Rajka’, ‘Rewena’ and ‘Florina’ apple cultivars, both from organic and integrated farming, from Pallag and Újfehértó, were compared. Average size, weight, soluble solids, titratable acidity, total polyphenols, free radical scavenging capacity expressed as Trolox equivalent (TEAC), copper and zinc were determined at harvest and after cool storage. Organic apples were more acidic, while integrated fruits had mostly higher copper and zinc content. Total polyphenols and TEAC values did not show a significant difference as a function of farming technology. A principal component analysis shows the separation of provenances as well as stored and fresh apples. Results are considered as preliminary.

All parts of N. nucifera are used as oriental medicine for various medicinal purposes. The aimed of this study was to determine phenolic compound and antioxidant activity of different parts of three lotus (N. nucifera including of Roseum Plenum (RP), Album Plenum (AP), and Hindu Lotus (HL)). Total phenolic content using Folin-Ciocalteu reagent method and free radical scavenging activities using DPPH assay were determined. Three deferent parts of lotus (leaves, stem, and flower) were determined. The result indicated that Roseum Plenum leaf showed the highest total phenolic contents and Roseum Plenum flower showed the highest antioxidant activities. Total phenolic content of different part of different of N. nucifera showed a significant difference (p < 0.05). It also was not uniform when compare between different of N. Nucifera. The results found that the total phenolic content was the opposite of antioxidant activity. This result may be attributed to antioxidant activity may not be from phenolic content. Therefore, it is important to research and develop the potential of lotus extraction in the future.

The assessment of quality of old apple varieties was made in order to preserve and use these germplasm in the area of Bosnia and Herzegovina. The characterization was done for ten old varieties of apples selected on the basis of good characteristics of sensory analysis. The following parameters were considered: fruit weight, fruit length and width, stalk length and width, fruit flesh firmness; soluble solids content and total dry matter content of the fruit juice; pH, titratable acidity (TA), vitamin C, total phenolics, total flavonoids and antioxidant potential evaluated by DPPH radical scavenging assay. Statistical analysis was performed separately for sensory, pomological and biochemical characterization (in two consecutive years) by analysis of variance. Only traits such as weight, width and height of the fruit were the biggest in ‘Vinjugara’ which had a low content of titratable acidity whereby it could be singled out as an acceptable variety for consumers. ‘Đedovača’ had the highest content of phenols (1711.8 mg GAE/100 g of fruit weight), which is in complete relationship with good free radical scavenging activity (11.1 mg of fresh fruit/ml). ‘Kolačara’ and ‘Gospoinjača’ were distinguished as particularly interesting for good nutritional characteristics, primarily the content of phenols, flavonoids and free radical scavenging ability, but also for suitable storage characteristics, °Brix content and firmness. Due to favourable pomological and biochemical characteristics these varieties were recommended to be included in the breeding program that will result in the enrichment of germplasm of the apples from these areas.
