Data for a total of approximately 1100 lambs tested in 12 trials from 1992 to 1995 in commercial lamb test stations in Quebec were used to determine the effect of sex, sire breed and genetic type on growth performance and carcass characteristics. Lambs were housed two to a pen and fed commercial diets. Maximum test length was 112 d. Lambs were slaughtered when their liveweight was approximately 47 ± 5 kg for the males and 43 ± 4 kg for the females. Feed intake and growth rate were measured during the test, and carcass measurements were taken at slaughter and at 24 h following slaughter. Feed intake was the average for the pen, while the growth and carcass measurements were taken individually. Males ate more per day, had better gain and were younger at slaughter than females. Females had more body fat and better carcass conformation scores than males. However, males did not have a greater loin muscle thickness compared to females. Lambs sired by Hampshire or Suffolk rams had superior growth performance and leaner carcasses than lambs sired by Dorset rams. However, Hampshire and Suffolk-sired lambs did not have a greater loin muscle thickness compared to Dorset-sired lambs. Analysis of different genetic types did not demonstrate a pronounced effect on lamb performance. No specific genetic composition was clearly superior to the others for the various variables studied. Genetic quality within a breed of sheep bought or kept for reproduction is as important as the choice of breed or the combination of breeds. Key words: Lamb, growth performance, carcass composition

This research investigates the effects of adding vitamin E, vitamin C, vitamin E+C, and alpha lipoic acid to feed rations for Japanese quails (Coturnix coturnix japonica) exposed to heat stress. The aspects studied were growth performance, carcass composition and breast meat characteristics. Five groups of quails, containing 50 birds each (250 Japanese quails: 150 female and 100 male) were used. The 21-days-old birds were fed for a period of 21 days, and they were kept in a controlled environment with a temperature of 34˚C between 08:00 and 17:00 and a temperature of 24˚C for the remaining part of the day. The five groups under study included: a control group without any additive (BS), a group fed diets with vitamin E (BSE), with vitamin C (BSC), with vitamin E+C (BSEC) and with lipoic acid (BSLA). The supplement additions to the diets did not affect the growth performance and carcass composition of the birds. The TBA (malonaldehyde) value of the BS group was significantly higher (P < 0.001) than in the other groups. L*, a*, and b* values in muscle samples, superficialis pectoralis muscle (SPM) and deep pectoralis muscle (DPM), were determined. In the samples from the SPM, the L* value of the BS group was higher than in the BSC group; the a* value of the BSE group was higher than in the BS group; and the b* value of the BSC group was higher than in the BS group (P < 0.05). In the samples from the DPM, the L* value of the BS group was higher than in the BSEC group (P < 0.05); the a* values of the BSE and BSEC groups were higher than in the BS group (P < 0.05); and the b* values of the BSC, BSEC and BSLA groups were higher than in the BS group (P < 0.01). In the microbiological analysis of meat, total aerobic mesophilic bacterial counts of the BS and BSE groups were higher than the counts in the BSC, BSEC, and BSLA groups (P < 0.01); coliform bacterial counts were higher in the BSE group than in the BSC group (P < 0.05); and lactic acid was higher in the BSE and BSEC groups than in the BSC and BSLA groups (P < 0.01). In conclusion, the supplemented antioxidants did not exhibit any significant effect on growth performance, but they significantly decreased lipid oxidation in the meat.

The objective of this work was to study the lamb’s growth, the carcass yield and composition and the importance of main organs of Berber lambs slaughtered at 4 or 6 months. The study concerned 40 lambs reared under motherhood. Lambs of the first group were slaughtered at the age of 4 months (4M) and the second at 6 months (6M). Slaughter body weights (BW), hot and cold carcass weights and organs were recorded. The carcass was cut out and dissected. The average BW at birth was 4.14 + 0.506 kg while the BW at slaughter was 22.86 kg + 3.40 and 31.51 + 3.50 kg for 4M and 6M groups, respectively. The average daily gain were 172 and 164g for 4M and 6M groups, respectively. Therefore, during 2months the lambs of 6M group gained 8.67 kg in BW. The carcasses were heavier for 6M than 4M. The carcass commercial yields were 42% and 45% for 4M and 6M groups, respectively, resulting in 4.1 kg gain of meat during 2 months. The tissular (muscle, fat and bone) and the regional (leg, shoulder …) carcass composition did not differ among groups. All organs were heavier for 6M than 4M; however, their proportion in the empty body weight were variables. The BWand carcass gain at six months are encouraging to prolong the lamb’s slaughter age without carcass composition difference given the similar fat proportion in the carcass of both groups.
