ObjectivesTo determine the influence of corn supplementation of beef cows during winter and their impact on offspring beef quality attributes.Materials and MethodsForty-seven multiparous Angus beef cows carrying male calves were assigned randomly to two dietary treatments: corn supplementation at 0.2% BW (SUP; n = 24) vs. non-supplementation (NSUP; n = 23) at d 110 d of gestation for 22 wks. Ad-libitum access to low-quality forage was provided to both groups. At 7 d post-calving, a muscle biopsy was collected from the longissimus dorsi muscle (LD) of each calf for muscle fiber typing. Offspring were managed as a single group from nursing through to the backgrounding phase. Thereafter, the steers were placed in the feedlot and assigned to 4 pens (blocks) based on BW and offered ad-libitum access to a 100% corn silage-based ration (76.97% TDN, 11.07% CP), salt and minerals. When the steers reached a final BW of 615 kg (∼16 mo of age), they were slaughtered in a commercial abattoir. A second LD muscle biopsy sample was obtained at 45 min postmortem (PM) for muscle fiber typing. At 96 h PM, striploins (n = 42) were collected, aged for 14 d and samples obtained for Warner Bratzler shear force (WBSF), proximal composition, myofibril fragmentation index (MFI), collagen analysis and objective color evaluation. Data were analyzed as a randomized block design.ResultsImmunofluorescent analysis for the myosin heavy chain (MHC) isoform on the proportion of the fiber type or fiber dimensions was not influenced by maternal dietary treatment at both ages (P > 0.05). However, regardless of maternal dietary treatment, the proportion of fiber type IIA decreased while type IIAX increased in samples from steers at 16 mo of age compared with samples from steers at 7 d of age. No differences were observed between dietary treatment groups in proximate composition (P = 0.8), MFI (P = 0.29), or collagen content (P 0.98); however, WBSF values tended to be higher in steers from SUP cows than steers from NSUP dams (P = 0.07). Maternal dietary treatment had no influence on objective color evaluation at the retail display (P > 0.05). Objectives traits were not affected by dietary treatment × display time interaction (P = 0.92).ConclusionOur findings indicate that corn supplementation of cows during mid to late gestation has minimal effects on muscle fiber type and beef quality of their offspring. Thus, corn supplementation of low-quality forage offered during mid to late gestation did not have detrimental effects on muscle fibers and meat quality of offspring.

Due to the dietetic properties and remarkable nutritive value of rabbit meat, its industry is increasing rapidly. However, the association between circular RNAs, microRNAs, and proteins and muscle fiber type, and meat quality of rabbit is still unknown. Here, using deep sequencing and iTRAQ proteomics technologies we first identified 3159 circRNAs, 356 miRNAs, and 755 proteins in the longissimus dorsi tissues from Sichuan white (SCWrabs) and Germany great line ZIKA rabbits (ZIKArabs). Next, we identified 267 circRNAs, 3 miRNAs, and 29 proteins differentially expressed in the muscle tissues of SCWrabs and ZIKArabs. Interaction network analysis revealed some key regulation relationships between noncoding RNAs and proteins that might be associated with the muscle fiber type and meat quality of rabbit. Further, miRNA isoforms and gene variants identified in SCWrabs and ZIKArabs revealed some pathways and biological processes related to the muscle development. This is the first study of noncoding RNA and protein profiles for the two rabbit breeds. It provides a valuable resource for future studies in rabbits and will improve our understanding of the molecular regulation mechanisms in the muscle development of livestock. More importantly, the output of our study will benefit the researchers and producers in the rabbit breeding program.

The aim of this study was to estimate the effect of feeding system on the growth rate and carcass quality of crossbred Improved Jezersko-Solčava x Texel (JSRT) lambs and to evaluate the effect of sex on these traits. The trial was conducted in nature according to the traditional rearing systems. The trial included 44 crossbred lambs, which were born and reared until the slaughter in three different flocks. In the age of 10 days suckled lambs were offered with ad libitum corresponding diets according to the feeding system. All lambs were slaughtered in seven consecutive days by the same procedure. The effect of feeding system significantly affected daily gain from birth to slaughter, EUROP carcass conformation and shoulder width. Likewise, the effect of sex significantly affected daily gain from birth to slaughter and internal fatness of carcasses. According to carcass cuts the feeding system significantly affected only the proportion of neck and leg. Considering meat quality traits, feeding system had a significant effect on the pH 45 and CIE a* values. In this study, we could speculate that more than the feeding system the growth and the carcass traits as well as meat traits were affected by the amount of the supplement.

AbstractTo evaluate the relationship between muscle fiber characteristics and the quality of frozen/thawed pork meat, four different muscles, M. longissimus thoracis et lumborum (LTL), M. psoas major (PM), M. semimembranosus (SM), and M. semitendinosus (ST), were analyzed from twenty carcasses. Meat color values (lightness, redness, yellowness, chroma, and hue) changed due to freezing/thawing in LTL, which showed larger IIAX, IIX, and IIXB fibers than found in SM (P < 0.05). SM and ST showed a significant decrease in purge loss and an increase in shear force caused by freezing/thawing (P < 0.05). Compared with LTL, SM contains more type IIXB muscle fibers and ST had larger muscle fibers I and IIA (P < 0.05). PM was the most stable of all muscles, since only its yellowness and chroma were affected by freezing/thawing (P < 0.05). These results suggest that pork muscle fiber characteristics of individual cuts must be considered to avoid quality deterioration during frozen storage.

The influence of 90 h of acute nutritional deprivation (ND; water ad libitum only) on in vitro contractile and fatigue properties, muscle fiber type proportions, and cross-sectional areas (CSA) of the adolescent rat diaphragm was determined. Diaphragm muscle properties in the ND rats were compared with those in control rats (CTL; food and water ad libitum). Acute ND resulted in a 32% reduction in body mass, whereas the body mass of CTL rats increased by 29%. Acute ND resulted in a significant reduction in the mass of the diaphragm (costal, 36%; crural, 43%), soleus (36%), and medial gastrocnemius (45%) muscles. Isometric twitch characteristics of the diaphragm muscle (contraction and half-relaxation times) were prolonged in the ND animals. Peak twitch and maximum tetanic forces were unaffected by ND. Fatigue resistance of the diaphragm muscle was improved in ND animals. Diaphragm muscle fiber type proportions were similar in ND and CTL groups. The CSA of type I and II diaphragm muscle fibers were reduced by 22 and 40%, respectively, in ND animals compared with CTL. We conclude that, whereas an identical protocol of acute ND had no significant effects on diaphragm muscle structure and function in adult rats, adolescent animals exhibit significantly less nutritional reserve. These differences may be due to curtailment of the rapid anabolic rate in growing animals.

Previous research has demonstrated that dietary supplementation with high levels of die antioxidant vitamin E is effective in improving beef quality and shelf-life (Arnold et al., 1993). However, these animals did not have access to fresh forage which contains high levels of endogenous vitamin E and also higher concentrations of readily-oxidisable n-3 unsaturated fatty acids (Marmer et al, 1984). This study investigated the effectiveness of vitamin E in improving meat quality of grass finished cattle compared with those fed concentrates.
