The arracacha is an alternative of fresh-cut product; however it can be easily degraded after the processing techniques. The objective of this work was to evaluate the useful life of fresh-cut arracacha submitted to two types of cuts and storage, as well as to evaluate the activity of antioxidant enzymes. The roots were selected, sanitized and submitted to two cut types: cubed and grated. Then they were evaluated at 3 times: 0, 3 and 7 days. The cutting in cubes provided higher quality and lower SOD, CAT and APX activity. However, the grated product presented higher PG activity and lower PPO activity. The microbiological safety and the nutritional value were maintained in both cuts during the whole storage period. The useful life, regarding the physicochemical, nutritional and microbiological aspects, can be established at 7 days under refrigeration for fresh-cut arracacha.

Interest in digital image processing techniques dates back to the early 1920's, when digitized pictures of world news events were first transmitted by submarine cable between New York and London. Applications of digital image processing concepts, however, did not become widespread until the middle 1960's, when third-generation digital computers began to offer the speed and storage capabilities required for practical implementation of image processing algorithms. Since then, this area has experienced vigorous growth, having been a subject of interdisciplinary research in fields ranging from engineering and computer science to biology, chemistry, and medicine.

Purple rice has become an interesting source of nutritional value among healthy cereal grains. The appropriate cultivation together with post-harvest management would directly benefit farmers and consumers. This study aimed (i) to determine the yield, grain nutritional quality, and antioxidant capacity of purple rice varieties grown at lowland and highland elevations, and (ii) to evaluate the effects of storage conditions on the stability of the rice nutritional value during six months of storage. The high anthocyanin PES variety grown in the lowlands had a higher grain yield than the plants grown in the highlands, but grain anthocyanin concentration had the opposite pattern. In the high antioxidant capacity KAK variety, grain yield and DPPH activity were not significantly different between plants grown at the two elevations. The storage of brown rice and vacuum-sealed packages were both found to preserve greater anthocyanin concentrations in PES, but there was no effect on the DPPH activity of KAK. The grain properties were not significantly different between storage at 4 °C and room temperature. This study suggests that the optimal cultivation practices and storage conditions would result in the higher yield and grain quality of purple rice varieties.

The effects of wet feeding and a multi-enzyme preparation on the nutritional value of wheat screenings (WS) for broiler chicks were investigated. In total, 540 1-day-old Ross-308 broiler chicks were fed a corn–soybean meal-based diet up to 29 days of age. At that time, the birds were randomly assigned to nine diets in a completely randomised design with a 3 × 3 factorial arrangement, including three levels of WS (0%, 25% and 50%, WS0, WS25 and WS50 respectively) and three processing methods (no processing, enzyme supplementation and wet feeding). The enzyme mixture contained endo-1, 4-β-xylanase (200 FXU/g), endo-1, 4-β-glucanase (50 FBG/g), endo-1, 8-β-glucanase (21 FBG/g), hemicellulase (3000 VHCU/g), α-galactosidase (3 GALU/g) and protease (260 U/g) and was supplemented at a level of 6 g/kg of diet. The inclusion of water in wet diets was in the extent of 1.2 kg/kg of diet. During the period from 29 to 49 days of age, feed intake was not affected (P > 0.05) by the inclusion of WS in the diet, whereas chicks fed the WS25 diet had a higher (P < 0.05) bodyweight gain than did those on WS0 diet. The feed conversion ratio (FCR) was improved (P < 0.05) by the inclusion of WS in the diet throughout the study. The feed intake was increased (P < 0.05) by enzyme supplementation to WS50 diet, while bodyweight gain was increased (P < 0.05) by wet feeding. Enzyme supplementation did not affect (P > 0.05) FCR, whereas wet feeding resulted in lower (P < 0.05) FCR over the entire study. The plasma concentration of glucose was increased (P < 0.05) by the inclusion of WS in the diet. The viscosity of the ileal digesta was higher (P < 0.05) in chicks receiving the WS50 diet than that in chicks receiving the other diets. The jejunal villus height was increased (P < 0.05) and the jejunal crypt depth was decreased (P < 0.05) by the inclusion of WS in diet. The jejunal crypt depth was greater (P < 0.05) in chicks receiving the wet diets than in chicks receiving the enzyme-supplemented diets (P > 0.05). In conclusion, the results from the present study indicated that broiler growth performance was improved by the inclusion of WS in the diet and also by wet feeding. These effects were largely compatible with the changes that occurred in the small intestine morphology, but not with those observed for ileal digesta viscosity.

Avocado cv. Hass consumption has expanded worldwide given its nutritional, sensory, and functional attributes. In this work, avocado fruit from two harvests was subjected to hydrothermal treatment (38 °C for 1 h) or left untreated (control) and then stored for 30 and 50 days in a controlled atmosphere (4 kPa O2 and 6 kPa CO2 at 7 °C) (HTCA and CA, respectively) with subsequent ripening at ~20 °C. The fruit was evaluated for primary and secondary metabolites at harvest, after storage, and after reaching edible ripeness. A decrease from harvest to edible ripeness in mannoheptulose and perseitol was observed while β-sitosterol, hydrophilic and lipophilic antioxidant activity (H-AOX, L-AOX), abscisic acid, and total phenolics (composed of p-coumaric and caffeic acids such as aglycones or their derivatives) increased. HTCA fruit at edible ripeness displayed higher contents of mannoheptulose, perseitol, β-sitosterol, L-AOX, caffeic acid, and p-coumaric acid derivatives, while CA fruit presented higher contents of α-tocopherol, H-AOX, and syringic acid glycoside for both harvests and storage times. The results indicate that a hydrothermal treatment prior to CA enables fruit of high nutritional value characterized by enhanced content of phenolic compounds at edible ripeness to reach distant markets.

Image processing techniques are getting developed at rapidly and at the same time easy to use image tampering soft-wares are also getting readily available. If tampered images are misused, big troubles having deep moral, ethical and lawful allegations may arise. Due to high potential of visual media and the ease in their capture, distribution and storage, we rarely find a field where digital visual data is not used. The value of image as evidence of event must be carefully assessed and it is a call for from different fields of applications. Therefore, in this age of fantasy, image authentication has become an issue of utmost importance.

Abstract An experiment was conducted to investigate the effect of rice bran (RB) and Ronozyme® WX on apparent and true ileal amino acid (AA) digestibility coefficients in broiler chicks using a regression approach. Two hundred and forty 21-day-old Abor Acre plus chicks were randomly allotted to six diets with varying levels of RB (100, 200 and 300 g/kg) without (0g/kg) or with Ronozyme® WX (25g/kg) supplementation in a 2x3 factorial arrangement using a randomized complete block design. Each treatment had 5 replicates with 8 birds each. The birds were fed for 5 days (d 22–26). On d 26, digesta was sampled from distal ileum. Data were analyzed using general linear model at α0.05. Lysine had the highest concentration among the essential amino acids (AAs) while the lowest concentration was observed for threonine. Rice bran at 10% for the essential amino acids with enzyme was significantly higher but compared with concentrations of RB at 10% and 20% without enzyme. There were no significant differences among the true ileal amino acid digestibility coefficients except lysine (10% RB) without enzyme (0.91) which was significantly higher than 20% RB with enzyme (0.84) but similar to other treatments. Rice bran with enzyme had a significant (P &lt; 0.05) interactive effect on the apparent ileal digestibility coefficients of arginine, histidine, isoleucine methionine and phenylalanine. When RB was supplemented with enzyme, a significant (P &lt; 0.05) interactive effect on true ileal digestibility coefficients of arginine and methionine was observed. Rice bran-enzyme interaction had no significant effect on the non-essential AAs. The slopes of the regression lines ranged from 0.77 (arginine) to 0.98 (phenylalanine). In conclusion, enzyme supplementation did not significantly influence the digestibility coefficients of AA in rice bran. However, the inclusion of 10% and 20% RB supplemented with Ronozyme® can help to improve the methionine content in rice bran.
