Waste can contain many reusable substances of high value depending on the adequate technology by this residual matter can be converted into commercial products. The lemons are extremely effective to treat the disease, which are caused by a vitamin C deficiency. The health benefits of lemons and lemon juice are well known but the lemon peels contain about 2.5 times more vitamins than lemon juice. It is also an excellent source of fiber, potassium, magnesium, calcium, folate, and beta carotene. The purpose of this paper is to describe the latest advances on the potential of lemon peel as a source of functional food products. For that purpose two trainings were organized by KVK on food safety and preparation of value added products among SHG beneficiary with practical interventions on lemon products making (Lemon Squash, lemon peel pickle and candy). These trainings were conducted in four parts, Part: 1.Knowledge on use of lemon: Health promotion by use of lemon, Part: 2. Uses of Lemon juice for the production of products: Squash and sharbat, Part: 3. Value addition of Lemon waste: Peal as a food products making: Pickle candy, Part: 4. Knowledge on preparation of oil less pickles at low cost. This knowledge is very useful for food safety as well as to establish SHG enterprise.

Bamboo shoots being low in fat, high in dietary fiber and rich in mineral contents have been consumed traditionally by the people world over. Besides nutrients it also contains some anti-nutrients e.g. cyanogens. Due to seasonal availability of bamboo shoots, processing for reducing anti-nutrients in raw shoots while keeping nutrients intact and enhancement of shelf life of the value added products assume great significance for its utilization. This paper focuses on post harvest processing and value addition of bamboo shoots for its utilization as food products. Juvenile bamboo shoots of Bambusa bambos, B. tulda, Dendrocalamus asper and D. strictus were collected and processed, by boiling in brine solution, to remove the anti-nutrients (cyanogen). A simple, efficient and cost effective processing method for bamboo shoots was developed. This method significantly reduces the amount of cyanogens and retains considerable amount of nutrients and thus may be utilized for processing of bamboo shoots. Different value added edible products viz. chunks or bari (by adding pulses), pickle, sauce and papad (by adding potato) were prepared. All products were good in taste and texture. Nutritional analysis was done to determine the shelf life of the products. The nutrient content of processed products (chunks, sauce, pickle and papad) showed a gradual decrease and need to be consumed within 6 months from the date of making. However, in case of papad the carbohydrate content did not decrease much but the taste was not acceptable after 8 months. Whereas, in case of pickles, even nutrient content decreased but the product was acceptable even after two years after preparation as it was good in taste and texture. Thus, processing and value addition practices can be considered as key to the future of sustainable management of bamboo resources because they not only provide quality edible products but also enable harvesters/collectors to get better income opportunities.

Artocarpus chama Buch. Syn. A. chaplasha Linn.( Moraceae), an indigenous fruit of North Eastern (NE) region of India. Samkathal pulp is eaten afresh and possesses high nutritional value. It has also has been reported to contain antioxidant properties. The seeds are also rich source of carbohydrates and proteins and average source of fibre. In spite of these fruits provide enormous health benefits, it is under utilized in our country due to its seasonal availability and very short shelf life. Therefore, it is necessary to preserve and prepare fruit products for better utilization of the fruits by overcoming the problem of wastage. In the present study this fruit was processed to produce many value added products and to train rural communities on value addition. These products have good consumer demand because of its nutritional and medicinal value. It has more demand for development of diversified value added products from the fruits. It provides the employment opportunity for rural mass, increases export demand of value added products and helps in increase the economy of the country.

This study analyzed the profitability of ginger value addition in Abia State, Nigeria. This study identified the ginger value-added products common in the area, the cost implications of the value addition process, and the socio-economic and farm-specific factors affecting ginger value addition. A stratified random sampling technique was used to select 60 (sixty) respondents and a well-structured questionnaire was used to collect the necessary data. The results revealed that the value ginger products were dried ginger, salted ginger, ginger flakes, ginger oil, and ginger paste. The factors affecting the profitability of ginger value addition from the linear regression model shows that education, income, capital, and collateral were significant. It is, therefore, recommended that youth and entrepreneurs should invest in ginger value addition as it is profitable and it is a sure way to economic empowerment and fight against hunger.

Fruits and vegetables have the highest wastage rates of 45% of any food. One of the recent research areas is food waste valorization as a potential alternative to the disposal of a wide range of organic waste using microorganisms as one of the strategies known as microbial valorization. Bacterial cellulose is best known microbial valorization product because of its low cost, environmentally friendly nature, renewability, nanoscale dimensions, biocompatibility and extremely high hydrophilicity. Therefore, present study focuses on the isolation, characterization and identification of cellulose producing bacteria from decaying apple waste. Cellulose producers were isolated from decaying apple waste. The bacterial isolates obtained were identified through the morphological biochemical, physiological and molecular identification. The bacterial isolates exhibited potential remediation options to biovalorize decaying fruit waste by producing value added products as well as in safe disposal of waste.

Palmyrah palm has great economic potential and every part of the palm is useful in one way or the other.The palm is found growing widely in southern states of India. The palmyrah products like tender fruit endosperm (nungu), neera, jaggery and tuber flour are not commercialised as the value addition in palmyrah is not standardised. Even though palmyrah is an economically important palm, it has not received proper attention from the agricultural research workers, probably on account of the fact that it is very slow growing palm found mostly in the wild state. In this context knowing of physico chemical properties and development of value added products and popularizing the same is essential.

Abstract Objectives The main aim of this study is to determine the physiochemical properties and nutritional composition of by-product of Bengal gram and to develop value added products, incorporating by-products of cereals and pulses in combination. Further in this study popularization of such acceptable product and transfer of the technology regarding their preparation and utilization is also regarded to be beneficial. Methods For the nutritional evaluation of raw ingredients, physio-chemical property and nutrient composition were checked by AOAC methods. Standardization and development of some basic value added products were also done. Functional properties and nutritional composition of developed value added products were equally checked by shelf life evaluation to choose the most acceptable consumable food products. New products were made using fermentation, supplementation and combination. Results We found that most of the by-products are rich in protein, calcium, iron and fiber. We observed that Bengal gram husk contain highest amount of crude fiber i.e., 40%. However, it also contains ash (4.2%), dietary fiber (82 g/100 gm), insoluble dietary fiber (76 g/100 gm) and total calcium (984 mg/100gm). In case of broken rice we have observed low amount of trypsin inhibitor activity (16.35 TIU/mg) and high amount of starch (75 g/100gm). In addition, we have observed anti-nutritional factors significantly in higher amounts in case of broken rice. Additionally, wheat bran was found to contain high amount of total phosphorus (988 mg/100gm), soluble dietary fiber (10 g/100gm) , total calcium ( 71 mg/100 mg) and Trypsin inhibitor activity ( 55 TIU/mg) . Combining these by-products various products were prepared using various processing techniques like fermentation, supplementation and combination. We found that newly prepared value added products have high amount of proteins, dietary fiber, available minerals, in vitro protein digestibility and higher antioxidant activity. Conclusions We suggest that novel formulated food products can be utilized as an unconventional source of nutrients and therapeutic weapon to combat diseases such as diabetes and hypertension. Utilization of such agro wastes as food products will also be useful to combat hunger, food demand and malnourished state leading to maintenance of food security. Fringescalesardinella or TambanSisik bones have been discovered can be utilized as sunscreen agent in cosmeceuticals. Its flesh is the main ingredient in keropoklekor or fish crackers in Malaysia and the bones contained very high hydroxyapatite (HAp), (Ca10(PO4)6(OH)2) compound which exhibit as UV light absorber. The percentage yields obtained from the hydrothermal extraction consist of 41.2 ± 0.66 % (w/w) of HApwhich was almost half of the dry weight of 100 g samples.The additional of manganeseand ferum,initiated the novel sunscreen materials from hydroxyapatite-Fe and hydroxyapatite-Mn doped (modified bones). The unmodified HAp recorded with SPF 20 and modified HAp-Mn measured with SPF 40. Modified HAp-Fe emulsions were recorded with SPF 50 as the highest SPF value. Therefore, the bones have been characterized using Fourier Transform Infrared Radiation (FTIR)spectroscopy and x-Ray diffraction (XRD).The results obtained clearly indicated that the HAp existence in waste of Fringescalesardinella bones with addition of FeCl2which exhibits high potential as sunscreen compared to manganese and unmodified bones. Thus, the utilization of waste from the fish bones not only produce value-added products from low-cost resources, but also help in reducing pollution to the environment and preserved the global sustainability.

Industrial biotechnology processes have recently been exploited for an economic utilization of wastes to produce value added products. Of which, fish waste is one of the rich sources of proteins that can be utilized as low cost substrates for microbial enzyme production. Fish heads, tails, fins, viscera and the chitinous materials make up the wastes from fish industries. Processing these wastes for the production of commercial value added products could result in a decrease in the cost of production. In addition, we can eliminate the pollution of the environment and health issues due to the improper disposal of these fish wastes. This review highlights the potential use of fish waste as a cheaper substrate for the production of economically important protease enzyme.

It is important to establish new approaches to create value-added products, such as craftwork or artistic goods, that are different from traditional methods of realizing high-quality and low-cost products. Such a production technology is commonly called “dexterous machining.” This study addresses the creation of artistic products by using soft materials with complicated shapes by employing an aqueous solution of sodium acetate to fix a workpiece and to suppress the deformation. Experimental results show that the use of an aqueous solution of sodium acetate has the potential to realize the “dexterous machining” of soft objects.
