Pressed juices and water extracts from untreated, microwave pretreated, and thermally treated red beet were obtained. The highest total betalain content – 606.34 mg/100 g dry matter (DM) was found in pressed juice obtained after microwave pretreatment. The individual betalains in the pressed juice from untreated red beet were tentatively determined by HPLC. The most abundant betalain pigments were betanin (312.47 mg/100 g DM), vulgaxanthin I (104.08 mg/100 g DM), and isobetanin (71.28 mg/100 g DM). The antioxidant activity of the pressed juices and extracts was determined. The highest antioxidant activity – 10832.4 µmol ТЕ/l was found in the pressed juice obtained from microwave pretreated red beet. The possibility of obtaining mixed fruit-vegetable juices on the basis of red beet juice was investigated. Different variants of mixed beverages using chokeberry, blackberry, blueberry, and black currant were obtained in which the concentration of the red beet pressed juice was 25, 50, and 75%. Their polyphenol contents and antioxidant activity were determined. The highest antioxidant activity revealed mixed pressed juice from red beet and chokeberry.

Подобраны оптимальные параметры для экстракции плодов и ягод черной смородины, малины, вишни, черноплодной рябины при ультразвуковом излучении 35 кГц с целью получения плодово-ягодных экстрактов с высокой антиоксидантной активностью. На основании экспериментальных данных выбраны технологические режимы процесса: экстрагирование сырья 75%-м этиловым спиртом при соотношении сырье : растворитель 1 : 10, температуре (40 ± 5)°C в течение 90 мин. Экстракты концентрируют под вакуумом до содержания сухих веществ 65%. Дана технологическая схема получения плодово-ягодных экстрактов. Полученные экстракты обладают высокой антиоксидантной активностью, содержат большое количество фенольных веществ, флавоноидов и антоцианов; по органолептическим, физико-химическим и микробиологическим показателям соответствуют нормативной документации. The optimal parameters for extraction of fruits and berries of fruits and berries of black currant, raspberry, cherry, chokeberry with ultrasonic radiation of 35 kHz in order to obtain fruit and berry extracts with high antioxidant activity are selected. Based on the experimental data, the technological modes of the process are selected: extraction of raw materials with 75% ethyl alcohol at a ratio of raw materials: solvent 1: 10, temperature (40 ± 5)°C for 90 min. The extracts are concentrated under vacuum to a dry matter content of 65%. Technological scheme of fruit and berry extracts is given. The obtained extracts have a high antioxidant activity, contain a large amount of phenolic substances, flavonoids and anthocyanins; organoleptic, physical and chemical and microbiological parameters correspond to the normative documentation.

Knowledge of the mineral nutrition requirements of mangabeira (Hancornia speciosa Gomes) is relatively scarce and rudimentary because there is a lack of consistent data concerning its nutritional demands at different developmental stages. The aim of this research was to characterize the visual symptoms of macronutrient deficiencies and to evaluate the effects of these deficiencies on the growth, the production of dry matter, and the leaf content of mangabeira. To achieve this goal, a greenhouse experiment was conducted at the Goiano Federal Institute (Instituto Federal Goiano) in Rio Verde - GO, from January to June 2011 in which mangabeira plants were arranged in a random block design and grown in nutrient solutions. This experiment was replicated four times. The plants were treated with either a complete nutrient solution or a nutrient solution from which the individual macronutrient of interest (nitrogen (N), phosphorous (P), potassium (K), magnesium (Mg), calcium (Ca), or sulfur (S) had been omitted. The omission of a macronutrient from the nutrient solution resulted in morphological alterations that were characteristic symptoms of the particular nutritional deficiency and caused decreases in growth and dry matter mass production. The accumulation of macronutrients displayed the following order in mangabeira leaves: N>K>Ca>P>S>Mg.

Ganoderma lucidum (Leyss.:Fr.) Karst is one of the medicinal mushrooms, which possesses enviable antioxidant properties. Objective of this investigation was to evaluate antioxidant activity, reducing power, scavenging abilities on 1.1-diphenyl-2-picrylhydrazyl (DPPH) radicals and chelating effects on ferrous ions of hot water extracts obtained from carpophore and spores of this mushroom. Hot water extract from carpophore (Gl-I) showed high antioxidant activity of 85.7 ? 0.7%, at 10 mg/ml, while antioxidant activity of hot water extract from spores (Gl-Is) was 9.2 ? 0.3% at 10 mg/ml. Reducing power of Gl-I reached a plateau of 3.4 ? 0.1 at 20 mg/ml, and 0.3 ? 0.0 at 20 mg/ml for Gl-Is. At 10 mg/ml, scavenging ability on DPPH radicals of Gl-I increased to 96.8 ? 2.5%, whereas Gl-Is scavenged DPPH radicals by 69.6 ? 2.5% at 10 mg/ml. Gl-I chelated 81.6 ? 3.6 % of ferrous ions at 20 mg/ml, while the chelating effect of Gl-Is was 73.8 ? 1.7%. The antioxidative activities of hot water extracts from carpophore and spores of the mushroom G. lucidum were concentration dependent and increased with an increase in the concentration.

The component profiles of apricot, grape, and black currant pomace extracts have been analyzed using HPLC coupled to diode-array detection and tandem mass spectrometry (HPLC-DAD-MS). The predominant components in grape, apricot, and black currant pomace extracts were phenolic acids and flavonols. The redox behavior of apricot, black currant, and grape pomace water extracts was evaluated by means of cyclic voltammetry. Also, individual substances mainly present in the extracts were analyzed. The results of electrochemical testing were compared to traditional chemical techniques of potassium ferricyanide reduction (FRAP) and phosphomolybdenum assay, and fair agreement was established. The 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging assay and 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging assays were applied in order to estimate antioxidant activity. The reducing power of the grape extract was found to be higher than that of the apricot and black currant extracts in both potassium ferricyanide reduction (FRAP) and phosphomolybdenum methods.

The article presents the results of biochemical studies of the total antioxidant activity of the hepatoprotective collection of plant origin and its individual components, which show that it consists of birch leaves (Betulae folia), tansy flowers (Tanaceti flores), phytohepatol No. 2 (choleretic collection No. 2) and individual its components have pronounced antioxidant activity. More antioxidant activity founded in tansy and true hepatoprotective collection. Comparative tests of the flowers of meadowsweet, with the highest antioxidant activity, showed the promise of their use in the collections of medicinal plants as effective natural metabolic regulators. The total antioxidant activity of the water extract collection at 13.56% rel. exceeded the calculated value obtained by summing the activities of the individual components of the collection, which indicates the presence of synergism in their action, which may be of value for use in the treatment and prevention of liver diseases. When all components of the drug collection are finished, the indicator increases by 11-24 % rel., which indicates the thermal stability of the antioxidant substances that make up their composition. In the oxidation of aqueous extracts of the components of hepatoprotective collection with hydrogen peroxide, the most stable were antioxidants of birch leaves. It was found that collection only at a ratio of 7.7 g per liter of water shows synergism (15 % rel.), and the rest of all the samples we tested are antagonistic. The detected increase in the antioxidant activity of the new collection compared with the effects of its individual components allows us to consider it as a promising dosage form for use in the treatment and prevention of liver diseases.

The purpose of the present work was to evaluate the vegetative growth of Mentha piperita L. cultivated under different water availability, as well its influence in content, chemical composition and in vitro antioxidant activity of its essential oil. Plants were propagated by mother plants microcutting and scions were transplanted to 5 L pots with soil and cattle manure. Afterward, were kept at field capacity for 30 days and under treatment for 40 days. It was treated with different levels of water deficit treatments: (T1): 100 of field capacity (FC); (T2): 80 of FC; (T3): 60 of FC; (T4) 40 of FC with 5 blocks. Vegetative growth was evaluated by dry matter contents of all part of plants and by root/aerial rate. The essential oil of the leaves was extracted by hydrodistillation, analyzed by GC-FID and GC-MS and in vitro antioxidant potential was evaluated. A significant decrease in the dry matter of leaves and stems accompanied with a decrease in the roots dry matter was observed with an increase in the water stress. Quantitative chemical differences were observed in the chemical composition of the essential oil, according water availability. Total antioxidant activity showed a gradual increase as water stress progressed.
