<p>The results of studies of the content of residues of veterinary drugs in food indicate that when growing all types of productive animals, a significant number of antibiotics, sulfonamide and nitrofuran preparations of various spectrum and mechanism of action accumulate in meat, milk, eggs, as well as for preventive and therapeutic purposes and honey.</p><p>We registered that food products of animal origin contain residues of veterinary preparations that do not exceed the MPC. Despite the ban on the use of antibiotics as stimulators of animal productivity, they are more often found in pork and beef, which indicates the use of these antimicrobials in the production of productive animals. Chloramphenicol was most often found in beef and pork, in rabbit meat, goose meat, chicken meat and honey, this antibiotic was present only in sporadic cases, and in milk its presence was not proven during monitoring studies. Nitrofuran preparations were detected mainly in beef, chicken, goose and honey, and in the last reporting year (2016), their presence was not found in these products, except for honey. Studies have shown that food eggs did not contain residues of nitrofuran drugs during the study period. The use of antibacterial drugs and anthelmintics in livestock breeding is confirmed by the fact that about 40% of the samples contain residual amounts of sulfanilamide preparations in the range of 50-70% of the MPC and about 20% of the samples contain residual amounts of anthelmintics. In Ukraine, control of the remnants of veterinary drugs in food products formally is not carried out. Of the group of fluoroquinolones, only enrofloxacin and norfloxacin are monitored, of the B-lactam group, amoxicillin, ampicillin, benzylpencilin from the aminoglycoside group-gentamicin, lincomycin, streptomycin, and dihydrostreptomycin. As for sulfonamide drugs, control is conducted only for 9 seconds with a very large group of these drugs. Particular attention when controlling the content of residues of veterinary drugs in livestock products should be given to methods for identifying these substances and improving existing research methods. We also suggested to extend the indicators mentioned in the "State Monitoring Plan for Residual Amounts of Veterinary Preparations, Pollutants and Toxicants in Products of Animal Origin" for greater control over the animal production and use of antibacterial substances in the farms.</p>

The veterinary drugs are broad-spectrum antibacterial antibiotics; it uses to cure the animal disease. Many countries have banned veterinary drug residues like nitrofurans metabolites, chloramphenicol. However, the people were administrated veterinary drugs to animals as illegal to increase the milk production in animals for economic benefit. The results of illegally use of veterinary drugs remain as a residue in animal product like milk and it is very harmful to whom consume it cause cancer and allergic for human being which has entered the concern among milk consumers. To control illegal use of veterinary drugs, the government of India has restricted its use in animals. For the identification and confirmation of veterinary drug residues in animal products, analytical techniques such as liquid chromatography and mass spectrometry are available. These are very sophisticated equipments which are available nowadays and their methodologies for the analytical method validation are described by European commission 2002/657/EC. The use of veterinary drugs is a big challenge to effectively identify and authorization of their use. There are so many analytical techniques are using very effectively and taking very less time to protect the consumers from their adverse effects. These techniques take very less time to identify more groups of compounds such as tetracycline, sulfonamides, anthelmintic, and macrolides in single multi-residue method. These methods having validation parameters include system precision, calibration curve, accuracy, limit of detection, and quantification. Therefore, improvement in the existing technologies and accessibility of new screening methodologies will give opportunities for automation that helps in obtaining the results in very less time and improved sensitivity and specificity which contribute to better safety assurance, standard, and quality of various food products of animal origin.

Abstract. Currently, the agro-industrial complex and agriculture face new challenges. Achieving an average life expectancy of 75–80 years requires increased attention to improving their quality. In many publications, it is claimed that the quality of food is of primary importance, which according to various data account for 35 to 50 % of the population's longevity potential. The purpose of this study is to provide a basic assessment of existing technologies for the production of livestock products and the prospects for their development. The object of research is organizational and economic processes that characterize the ecological, economic and social assessment of livestock technology. Research methods. In the course of research, methods of comparative analysis and expert evaluation of other methods were used. The experts were specialists from agricultural enterprises, trade workers and buyers. The method of complex analysis was used to evaluate existing production technologies. The article proposes an assessment of existing livestock technologies from economic, ecological and social points of view. Each of the analyzed technologies has its own advantages and disadvantages. At the present stage all of them have opportunities for further development. With the growth of population income, an increase in demand for high quality products is expected. In the system of tasks to increase life expectancy of the population up to 75–80 years it is justified by the need for basic food products and fodder. The production of food products that are safe from an environmental point of view and biologically complete, should be considered as one of the cardinal directions of the development of the agro-industrial complex and agriculture.

Production of high-quality and safe food products in the conditions of technogenic environmental pollution is a problem worldwide, especially in Ukraine. As a result of the disaster at the Chornobyl Atomic Power Plant, radioactive substances, including caesium-137, contaminated the soil not only in Ukraine, but in many other countries. Zhytomyr Oblast is the fifth largest oblast in Ukraine and one of the regions that were the most damaged by the accident. Furthermore, this territory is contaminated by the most toxic heavy metals – lead (Pb) and cadmium (Cd) that actively migrate in the biological system: soil→ plant → animal → production → human, intensely accumulating in the products of plant and animal origin. The complex ecological situation and broad spectrum of biological and toxic actions of 137Cs, Pb, Cd require a number of measures that would prevent transformation of radioactive elements and heavy metals in the organism of animals, increase animals` productivity and safety of the food products made in the conditions of the Ukrainian Polisia. Therefore, we aimed at substantiating the practicability of using silage-concentrate, silage-concentrate-root vegetable and silage-concentrate-hay types of diet for young cattle during fattening and determining the impact of accumulation of 137Сs, Pb and Cd in livestock products. To perform the studies, we formed three groups of young bulls of Ukrainian Black Pied cattle using the method of analogues with creating comfortable maintenance condition and organization of in-detail planned feeding. The diet was composed of fodders prepared in the conditions of radioactive contamination. The laboratory surveys indicated that the main sources of 137Cs ingress in the organism of the animals were roughages and various types of silages, and the sources of heavy metals Pb and Cd were hay of red clover and concentrated fodders. In the experimental studies, we determined absolute and average daily weight gains, expenditures of metabolic energy per 1 kg of weight increment, specific activity of 137Сs and concentrations of the heavy metals (Pb and Cd) in the biological system “fodder-animal-production” during feeding of bulls with various-type diets in the conditions of the III zone of radioactive pollution. It was confirmed that substituting maize silage and carbohydrate fodders increased the average daily gains in the live weight by 2.3–4.6%, decreased specific activity of 137Cs by 8.7–20.1%, the content of Pb by 36.2%, Cd by 34.1–66.7% in the longissimus at silage-concentrate-root vegetable and silage-concentrate-hay types of diet for bulls. Thus, use of silage-concentrate-root vegetable and silage-concentrate-hay types of diets compared with silage-concentrate feeding had a positive effect on their productivity and safety of the food production.

The nutritional quality of animal products is strongly related to their fatty acid content and composition. Nowadays, attention is paid to the possibility of producing healthier foods of animal origin by intervening in animal feed. In this field, the use of condensed tannins as dietary supplements in animal nutrition is becoming popular due to their wide range of biological effects related, among others, to their ability to modulate the rumen biohydrogenation and biofortify, through the improvement of the fatty acids profile, the derivate food products. Unfortunately, tannins are characterized by strong astringency and low bioavailability. These disadvantages could be overcome through the microencapsulation in protective matrices. With this in mind, the optimal conditions for microencapsulation of a polyphenolic extract rich in condensed tannins by spray drying using a blend of maltodextrin (MD) and gum Arabic (GA) as shell material were investigated. For this purpose, after the extract characterization, through spectrophotometer assays and ultra-high-performance liquid chromatography-quadrupole time-of-flight (UHPLC-QTOF) mass spectrometry, a central composite design (CCD) was employed to investigate the combined effects of core:shell and MD:GA ratio on the microencapsulation process. The results obtained were used to develop second-order polynomial regression models on different responses, namely encapsulation yield, encapsulation efficiency, loading capacity, and tannin content. The formulation characterized by a core:shell ratio of 1.5:5 and MD:GA ratio of 4:6 was selected as the optimized one with a loading capacity of 17.67%, encapsulation efficiency of 76.58%, encapsulation yield of 35.69%, and tannin concentration of 14.46 g/100 g. Moreover, in vitro release under varying pH of the optimized formulation was carried out with results that could improve the use of microencapsulated condensed tannins in animal nutrition for the biofortification of derivates.

The detection of antimicrobial residues in food products of animal origin is of utmost importance. Indeed antimicrobial residues could be present in animal derived food products because of animal treatments for curative purposes or from illegal use. The usual screening methods to detect antimicrobial residues in food are microbiological, immunological or physico-chemical methods. The development of biosensors to propose sensitive, cheap and quick alternatives to classical methods is constantly increasing. Aptasensors are one of the major trends proposed in the literature, in parallel with the development of immunosensors based on antibodies. The characteristics of electrochemical sensors (i.e., low cost, miniaturization, and portable instrumentation) make them very good candidates to develop screening methods for antimicrobial residues in food products. This review will focus on the recent advances in the development of electrochemical aptasensors for the detection of antimicrobial residues in food products. The contribution of nanomaterials to improve the performance characteristics of electrochemical aptasensors (e.g., Sensitivity, easiness, stability) in the last ten years, as well as signal amplification techniques will be highlighted.

Полноценное, сбалансированное питание - основной фактор в формировании здоровья детей, когда в организме наиболее интенсивно протекают процессы роста и развития, формируются и созревают многие органы и системы, совершенствуются их функции. В статье приведены основные направления исследований зарубежных и отечественных ученых по лечению генетических заболеваний, таких как фенилкетонурия. Одним из приоритетных направлений в области здорового питания населения России в соответствии со Стратегией научно-технологического развития РФ до 2030 г. является развитие производства пищевых продуктов, обогащенных незаменимыми ингредиентами, специализированных продуктов детского питания, продуктов функционального назначения, диетических пищевых продуктов и биологически активных добавок. По данным ВОЗ от структуры питания на 70 % зависят здоровье и физическое развитие детей и подростков. Фенилкетонурия (ФКУ) - наследственное заболевание, вызывающее нарушение метаболизма аминокислоты фенилаланина у ребенка, одно из первых, рекомендованных ВОЗ для ранней диагностики у новорожденных. Отсутствие лечения вызывают серьезное поражение центральной нервной системы, отставание в умственном и физическом развитии. Особенностью современного этапа развития диетотерапии для детей, страдающих различными заболеваниями, в том числе наследственными, является разработка качественных функциональных продуктов питания, способствующих сохранению и улучшению здоровья ребенка за счет регулирующего и нормализующего воздействия на организм с учетом его физиологического состояния и возраста. Данные продукты можно широко использовать в практике лечебного питания не только в составе гипофенилаланиновой диеты, но и при любых заболеваниях, требующих ее соблюдения. В настоящее время единственным методом лечения ФКУ является диетотерапия, организованная с первых дней жизни с использованием специализированных смесей без фенилаланина. Из питания исключаются высокобелковые продукты растительного и животного происхождения. Целью лечебного воздействия диеты на ребенка является поддержка концентрации фенилаланина (ФА) в крови в пределах 2-12 мг на 100 мл в зависимости от возраста ребенка. Full-fledged balanced nutrition is the main factor in the formation of children's health, when the processes of growth and development are most intense in the body, many organs and systems are formed and mature, and their functions are improved. The article presents the main research areas of foreign and domestic scientists on the treatment of genetic diseases, such as phenylketonuria. One of the priority areas in the field of healthy nutrition of the Russian population in accordance with the Strategy for Scientific and Technological Development of the Russian Federation until 2030 is the development of the production of food products enriched with essential ingredients, specialized children's food products, functional products, dietary food products and biologically active additives. According to WHO, the health and physical development of children and adolescents depends on the nutritional structure by 70%. Phenylketonuria (PKN) - an inherited disease that causes impaired metabolism of the amino acid phenylalanine in a child - is one of the first recommended by WHO for early diagnosis in newborns. Lack of treatment causes serious damage to the central nervous system, a lag in mental and physical development. A feature of the modern stage of development of dietary therapy for children suffering from various diseases, including hereditary ones, is the development of quality functional food products that contribute to the preservation and improvement of the health of the child, due to the regulatory and normalizing effect on the body, taking into account its physiological state and age. These products can be widely used in the practice of therapeutic nutrition not only in the sastava of the hypophenylalanine diet, but also for any diseases requiring its observance. Currently, the only method of treating PKN is diet therapy, organized from the first days of life using specialized mixtures without phenylalanine. High-protein products of vegetable and animal origin are excluded from nutrition. The goal of the therapeutic effect of the diet on the child is to maintain the concentration of phenylalanine (FA) in the blood in the range of 2-12 mg per 100 ml, depending on the age of the child.

Introduction. The article is devoted to the problems of agricultural development as a basis for ensuring food security in Ukraine. Food security is one of the important components of economic security, which creates a basis for further progress and development of the state. Achieving food security is one of the Global Goals for Sustainable Development by 2030, set by the UN to member countries at the Summit on Sustainable Development. The purpose of the article is to reveal the problems and prospects for the development of the agricultural sector in the context of ensuring food security in Ukraine. Results. It has been determined that the contribution of agricultural production to the GDP in Ukraine is quite significant. According to the results of 2018, 89% of agricultural enterprises have received a profit. The consumption of main types of food products by the population of Ukraine is less than the scientifically substantiated norms, namely: the actual consumption of meat is 64% of the norm; milk and dairy products – 52%; eggs – 94.8%; fish – 59%; fruits, berries and grapes – 53%. At the same time, there is a steady increase in the share of agricultural products in the structure of exports (in 2019 – 44.2%). According to the Global Food Security Index, Ukraine does not have the best positions and yields not only to all European countries, but also to those countries to which it exports food. Conclusions. Ukraine occupies the 76th out of 112 positions in the 2019 Global Food Security Index. Problems that pose potential threats to food security are acute, particularly, the lack of balance in the diet of Ukrainians. Due to the products of animal origin, the caloric value of the diet is provided only by 28% at the optimal level of 55%. The share of the population’s expenditures on food products is unacceptably high: more than half of the total aggregate expenditures, which is higher than the similar indicators of the EU countries by 3-5 times. The increase in agricultural production should take place in compliance with environmental norms and international food quality standards.
