Gastronomy is an important part of rural tourism and in all its authenticity is a part of the immaterial cultural heritage of a particular region or a local community. Gastronomic tours are specific tourist products that represent some areas in the international tourist market, for example cheese, wine and olive roads. Among the numerous tourists visiting Herzegovina and the Adriatic coast every year, there are so-called Existential tourists whose aim is to taste and feel the authenticity of the Herzegovinian area and it's gastronomic culture. Tasting food in authentic rural areas is a kind of ritual for getting to know the history and cultural heritage of the local community. Each dish has its own story and origin. Modern rural tourism promotes specific food and wine destinations through the Internet, specialized travel agencies, smartphone applications and the media. Electronic media, like television, play a big role in promoting the gastronomy and the culinary world, through special programs and channels. Herzegovina has preserved numerous traditional meals, primarily by word of mouth, but in reality only a few meals (japra and dolma, pancakes, sour polenta, meals under the sač) are recognizable. The authenticity of the area represents a significant tourist potential by incorporating traditional meals into the restaurants offer, family farms and the opening of food and wine roads, as well as the tourist's active participation in the preparation of food. The article analyzes the existing conditions of gastro tourism in the rural areas of Herzegovina. The survey was conducted at the level of owners of touristic facilities, tourists and local residents. By using the interview method it was attempted to determine if the local population was preserving the tradition of autochthonous food.

The relevance of the problem considered in this article is due to the positive impact of rural tourism on the preservation and development of rural areas, rational use of their resource potential, improving the welfare of the local population, reducing social tension, stimulating the development of farms and personal subsidiary plots, preserving folk crafts, culture and identity. Based on the analysis of the experience of rural tourism development in European countries, it is concluded that there is a high potential of this direction in the Republic of Bashkortostan. Among the municipal districts of the republic, the authors distinguish the Karaidel district, which has unique ecological and economic characteristics. The authors have identified the most promising direction for the development of rural tourism in the area under consideration – the development of a complex of guest houses providing accommodation and catering services for guests, as well as excursions, horseback riding, etc. The attractiveness for tourists in this type of accommodation lies in the possibility of living in peasant estates, as well as acquaintance with the traditions and rituals of the indigenous population of the republic. The article proposes recommendations for improving the efficiency of using the natural resource potential of rural tourism development in the Karaidel region of the Republic of Bashkortostan. The article presents the results of a SWOT analysis of the prospects for the development of rural tourism, offers directions for the development of rural tourism in the context of market segments and measures to promote the territory. The proposed measures for the development of rural tourism in the area: creation of an ecosystem (recreation, impressions, functional food); unification into a cluster (farms, accommodation facilities, recreation centers, local residents, personal subsidiary plots); development of a unique selling proposition; using the method of geoanalytics to analyze the target audience; certification of rural tourism objects, development of a culinary atlas of national dishes. Trends towards individualization of travel, the growing influence of ecology and ethics on the consciousness of the population are favorable factors for the development of rural tourism in the Karaidel region and the Republic of Bashkortostan as a whole.

In recent years, tourism gentrification has made great progress in rural areas and has had significant impacts on these areas’ development, specifically in the domains of the economy, living standards, community, culture, and environment. Tourists play a key role in developing tourism gentrification in rural areas, but research investigating tourism gentrification in rural areas from the tourist perspective is scarce. To fill this gap, we focus on tourism gentrification and develop a measurement scale from the tourist perspective through multiple qualitative and quantitative steps. Our findings confirm that tourism gentrification in rural areas from the tourist perspective comprises eight dimensions: economic growth, enhanced environment, enhanced living standards, individual civilization, improved communication, promoted social environment, cultural appreciation, and improved individual quality. Through development and validation of the scale, we hope to offer a comprehensive referencing index of tourism gentrification in rural areas to policy makers and rural tourism practitioners.

Tansen is renowned for its natural settings, historic buildings and a living cultural heritage that have remained, from medieval period until now. By UNWTO statistics, internationally, cultural tourism comprises 39% of the total tourism arrivals. This reaffirms that offering greater access to the cultural and heritage assets would give Tansen a competitive edge over the other tourist destinations and increase its attractiveness as a top tourist destination in Nepal. This article is related to study of how the heritage sites could be revived to make the cultural heritage tourism sustainable and regain Tansen’s economic vibrancy that has been depleting in the recent times. The purpose of the study is to examine the current state of the cultural heritage management in Tansen, to examine the prospect of revitalizing the cultural heritage assets and; to examine the role of the local communities in these aspects. The methods used in the study were site observations, a key informant interview of experts including the city Mayor, tourism entrepreneurs, site mangers and opinion survey of tourists and the local community resident. The study shows that local population has a positive opinion and initial enthusiasm on the emerging tourist arrivals after the restoration of Rani Mahal, but their role is marginalized in the process. This is the key proposition to start an initiative for the local communities to actively participate in tourism development projects. ‘Revitalizing the Rani Mahal heritage’ launched through the Public Private Partnership with support from UNESCO could build the trust amongst the high end international as well as domestic tourist and attract more investments to conserve, protect and promote the heritage capital stocks for the Tansen tourism development.
