Background: The International Union of Nutritional Sciences held its 21st International Congress of Nutrition in October 2017 in Buenos Aires, Argentina under the theme – From Sciences to Nutrition Security. In addition to multiple sessions on food systems and their links to diet, nutrition and health, the Congress closing lecture focused on the need to transform food systems so as to increase their capacity to provide healthy diets, making a call for greater involvement of nutrition scientists. Summary: This article presents the main messages of that lecture, providing (i) an overview of global nutrition trends and their links to diets, food environments and food systems, (ii) a synopsis of the current global momentum for food system transformation and (iii) the need for nutrition scientists to leverage this momentum in terms of increased evidence generation and policy advocacy. Key Messages: Poor quality diets are increasingly leading to the compromising of human health as never before; the prevalence of undernutrition persists and remains acute in vulnerable regions, and hunger is increasing concomitantly with an unprecedented rise in overweight, obesity and nutrition-related non-communicable diseases. Increasing access to healthy diets through faster, stronger implementation of supply and demand-side strategies that address the underlying drivers of today’s faulty food systems is imperative to solve these problems, as well as to address related environmental and economic costs. The global momentum for such action is increasing, but the evidence base needed to galvanize governments and hold stakeholders accountable remains yet a fledgling. To date, inputs from nutrition scientists to this reform agenda have been weak, especially given the unique contributions the field can make in terms of rigorous analysis and technical advice. Strengthened participation will require innovations in metrics and methodologies, combined with new thinking on what constitutes viable evidence and a greater willingness to engage with private sector agri-food actors.

Nigeria is one of the most dynamic economies in Africa. Strong GDP and population growth coupled with urbanization trends place tremendous pressures on natural resources and the food systems that are dependent on them. Understanding the impact of these “mega trends” is important to identify key leverage points for navigating towards improved nutrition and food security in Nigeria. This paper contributes to the Foresight Project of the Food Systems for Healthier Diets which aims to analyse how the food system in Nigeria is expected to transform in the next decades, and to identify the leverage points for making sure that the transformation contributes to balanced consumer diets. For the food systems foresight, a well-established global economy-wide model, MAGNET, is applied that enables to capture the interlinkages among different food industry players in one consistent framework. By linking MAGNET to the GENUS nutritional database, it is further possible to relate the developments occurring on a macro-level with detailed macro and micronutrient consumption. Model projections suggest that a process of intensification of agriculture in combination with land substitution appears critical for the evolution of food and nutrition security, and for shifts towards healthy diets for the population. Intensification results in greater diversity of the production systems, which in turn cascades into positive effects on the diversity in the food supply and better food security outcomes.

Despite South Africa’s celebrated constitutional commitments that have expanded and deepened South Africa’s commitment to realise socio-economic rights, limited progress in implementing right to food policies stands to compromise the country’s developmental path. If not a deliberate policy choice, the persistence of hunger, food insecurity and malnutrition in all its forms is a deep policy failure.  Food system transformation in South Africa requires addressing wider issues of who controls the food supply, thus influencing the food chain and the food choices of the individual and communities. This paper examines three global rights-based paradigms – ‘food justice’, ‘food security’ and ‘food sovereignty’ – that inform activism on the right to food globally and their relevance to food system change in South Africa; for both fulfilling the right to food and addressing all forms of malnutrition. We conclude that the emerging concept of food sovereignty has important yet largely unexplored possibilities for democratically managing food systems for better health outcomes.

Globally, gender inequalities constrain food security, with women often disproportionately affected. Women play a fundamental role in household food and nutrition security. The multiple roles women play in various areas of the food system are not always recognised. This oversight emerges from an overemphasis on one aspect of the food system, without considering how this area might affect or be affected by another aspect. This study aimed to draw on international commitments and treaties using content analysis to enhance the Global Panel on Agriculture and Food Security food systems framework by integrating a gender perspective. The study found that generally, there is a consensus on specific actions that can be taken to advance gender equality at specific stages of the food system. However, governance and social systems constraints that are not necessarily part of the food system, but have a significant bearing on men and women’s capacity to effectively participate in the food system, need to be addressed. While the proposed conceptual framework has some limitations, it offers a foundation on which researchers, policymakers and other stakeholders can begin conceptualising the interconnectedness of gender barriers in the food system.

Steering the EU food system towards a sustainability transformation requires a vast and actionable knowledge base available to a range of public and private actors. Few have captured this complexity by assessing food systems from a multi-dimensional and multi-level perspective, which would include (1) nutrition and diet, environmental and economic outcomes together with social equity dimensions and (2) system interactions across country, EU and global scales. This paper addresses this gap in food systems research and science communication by providing an integrated analytical approach and new ways to communicate this complexity outside science. Based on a transdisciplinary science approach with continuous stakeholder input, the EU Horizon2020 project ‘Metrics, Models and Foresight for European SUStainable Food And Nutrition Security’ (SUSFANS) developed a five-step process: Creating a participatory space; designing a conceptual framework of the EU food system; developing food system performance metrics; designing a modelling toolbox and developing a visualization tool. The Sustainable Food and Nutrition-Visualizer, designed to communicate complex policy change-impacts and trade-off questions, enables an informed debate about trade-offs associated with options for change among food system actors as well as in the policy making arena. The discussion highlights points for further research related to indicator development, reach of assessment models, participatory processes and obstacles in science communication.

<p>Currently, the global food system is the single largest threat to people and planet. Food is the leading cause behind transgressing five of the nine planetary boundaries. It is a major source of carbon emissions, as well as the single largest contributor to global deforestation, overuse of fresh water and eutrophication of our aquatic ecosystems. And while agriculture has been a major engine of poverty reduction, agricultural activities are unable to deliver a decent livelihood for an estimated 80 percent of those living in extreme poverty. The projected increase in frequency and severity of climate extreme events is posing additional threats to the global food system.</p><p>A transformation towards a more inclusive, sustainable and health-promoting food system is urgently needed. This presentation will introduce the newly established Food Systems Economics Commission (FSEC) that provides detailed and robust evidence assessing the implications of the policy and investment decisions needed to foster a food system transformation. It integrates global modelling tools such as integrated assessment modelling and innovative applications of agent-based modelling with political economy considerations.  It investigates the hidden costs of our current food system, explores transitions pathways towards a new food and land use economy and suggests key policy instruments to foster the transformation towards a sustainable, inclusive, healthy and resilient food system.</p>

The rapid expansion of modern food retail encapsulated in the so-called ‘supermarket revolution’ is often portrayed as a pivotal driving force in the modernization of agri-food systems in the Global South. Based on fieldwork conducted on horticulture value chains in West Java and South Sulawesi, this paper explores this phenomenon and the concerted efforts that government and corporate actors undertake with regard to agri-food value chain interventions and market modernization in Indonesia. The paper argues that after more than 15 years of ‘supermarket revolution’ in Indonesia, traditional food retail appears not to be in complete demise, but rather adaptive and resilient to its modern competitors. The analysis of local manifestations of supermarket-led agricultural development suggests that traditional markets can offer certain advantages for farmers over supermarket-driven value chains. The paper further identifies and discusses two areas that have so far been neglected by research and policymaking and which warrant further investigation: (i) the simultaneous transformations in traditional food value chains and their relation to modern markets, and (ii) the social and environmental performances of modern vis-à-vis traditional food value chains.

Since Agenda 21, the local level has become important in terms of facing global challenges through local action. One of these is ensuring the sustainability of the food system. In German politics, this is a relatively new issue even at the local level. Nevertheless, two smaller cities in southern Germany have decided to change their local food systems towards sustainability. Hence, this paper deals with questions of how local actors are framing the food system and what this means for increasing sustainability. The analysis of qualitative interviews and participant observations based on frame analysis provides deeper insights into understandings of local food systems by actors. This paper aims to explore how framings of problems, solutions and motivations provide or restrict opportunities to increase local food system sustainability. Terms like sustainability or awareness are framed differently. Using the same term to mean different things can have negative effects on the acceptance of policymaking referring to food system transformation. Besides, this paper shows that omissions within the framing counteract the development of sustainable local food policy. Hence, it is important to reflect the political implications of absent framings as well to facilitate mutual understanding and consequently, food system change.

Three key transitions leading to a “safe and just” operating space, with a focus on food systems, emerged during the development of a Foresight study promoted by SCAR (Standing Committee on Agricultural Research1): (a) sustainable and healthy diets for all; (b) full circularity in the use of resources; (c) diversity as a key component of stable systems. As consequence of COVID-19, food emerged again as a central element of life, along with health, after decades in which food security was taken for granted, at least in most developed countries. The COVID-19 outbreak offered the opportunity for a reflection on the importance of resilience in emergencies. Sustainable and healthy diets for all, was shown, during the pandemic, to depend much more on social and economic conditions than on technical aspects of food production and processing. Agriculture and the agro-industry have now a potential to absorb, at least temporarily, workers laid out in other sectors; the pandemic could be an opportunity to re-think and re-value labor relationships in the sector as well as local productions and supply chains. A full circularity in food systems also would benefit from stronger links established at the territorial level and increase the attention on the quality of the environment, leading to the adoption of benign practices, regenerating rather than impoverishing natural resources. Diversity is a key component of a resilient system, both in the biophysical sphere and in the social sphere: new business models, new knowledge-sharing networks, new markets. The three transitions would operate in synergy and contribute to the resilience of the whole food system and its preparation for a possible next emergency. Science can support policy making; however, science needs to be better embedded in society, to have a clear direction toward the grand challenges, to address the social, economic, behavioral spheres, to aim clearly at the common good. We need to re-think the conundrum between competition and cooperation in research, devising ways to boost the latter without sacrificing excellence. We need to improve the way knowledge is generated and shared and we need to ensure that information is accessible and unbiased by vested interests.

Food system transformation has been a widely discussed topic in international society over time. For the last few decades, China has made remarkable achievements in food production and has contributed greatly to the reduction in global hunger and poverty. Examining experiences and lessons from China’s food security practices over the years is helpful to promote a national food system transformation for China, as well as other developing countries. This study systematically reviews the literature on Chinese food security studies, with the aim of assessing China’s food security achievements and examining the remaining and emerging issues in the pursuit of food system transformation. The results show that China has continuously promoted food system transformation in land consolidation, agri-food production technologies, management and organization modes, food reserves, trade governance, and food consumption. These transformations ensure not only food availability, timeliness, and nutrition, but also in terms of the ecological, social, and economic sustainability, feasibility, and justice of food security. However, China is also confronting new challenges in food security, for example, malnutrition, environmental unsustainability, and reductions in diversified agri-food. In the future, China is expected to be committed to promoting healthy diets, sustainable agricultural production, climate change mitigation, and the reduction of food waste and loss to enhance its agri-food system’s resilience.

Urban food systems are a key lever for transformative change towards sustainability, and research reporting on the role of urban food initiatives in supporting sustainability is increasing. However, an overview of such initiatives and their transformative potential is lacking, as contextual and disciplinary-fragmented research complicates what insights can be drawn to support larger-scale sustainability transformations. We provide such an overview by synthesizing multidisciplinary research on urban food initiatives and by exploring their transformative potential. We developed a typology for urban food initiatives and present a framework of processes and outcomes that are steppingstones to sustainable food system transformation. We show that different types of urban food initiatives perform distinct roles that support sustainability. Unpacking three areas of concern, we conclude with a future research agenda. This is a first step towards integration of urban food research and of providing urban food governance with the tools to shape more sustainable systems.
