This paper considers a food supply chain where multiple suppliers provide completely substitutable food products to two manufacturers. Meanwhile, the suppliers face yield uncertainty and the manufacturers face uncertain production costs that are private information. While the suppliers compete on price, the manufacturers compete on quantity. We build a stylized multistage game theoretic model to analyze the issue of vertical cost-information sharing (VCIS) within the supply chain by considering key parameters, including the level of yield uncertainty, two manufacturers’ cost correlation, the correlated coefficient of suppliers’ yield processes, and the number of suppliers. We study the suppliers’ optimal wholesale price and the manufacturers’ optimal order quantities under different VCIS strategies. Finally, through numerical analyses, we examine how key parameters affect the value of VCIS to each supplier and each manufacturer, respectively. We found that the manufacturers are willing to share cost information with suppliers only when the two manufacturers’ cost correlation is less than a threshold. While a high correlated coefficient of suppliers’ yield processes and a large number of suppliers promote complete information sharing, a high level of yield uncertainty hinders complete information sharing. All these findings have important implications to industry practices.

Traceability is a useful approach to reduce information asymmetry and control food safety risks in agri-food supply chain. However at the present stage where development of traceability system in China is not mature, food processors have to take high investment of traceability and benefits into consideration in economic aspect. The paper builds a game-theoretic model to analyze the economic value and feasibility of traceability in agri-food supply chain. It is found that there may be different situations in which the game equilibrium outcomes between two processors are different. However, if the government intervenes, it is shown that government can take action to guide the game equilibrium to the result that both the processors will implement traceability voluntarily.

The purpose of this study is to investigate the impact of information asymmetry of retailer's greening cost on the performance of both the manufacturer and the retailer. The study considers a dual-channel supply chain comprising of a manufacturer and a retailer committed to green operations. The authors have employed sequential game theoretic model to derive the closed form expressions corresponding to the two cases under consideration, that is: (1) complete information and (2) asymmetric information. They have found that the sharing of greening cost information by the retailer can make both the manufacturer and the retailer better off in terms of profit. They have also found that the greening cost information sharing is all the more important when the greening cost efficiency is weak. The study helps retail managers to make a decision on whether to conceal or reveal the greening cost information with the upstream manufacturer.

Purpose The purpose of this paper is to propose an effective and economical management platform to realize real-time tracking and tracing for prepackaged food supply chain based on Internet of Things (IoT) technologies, and finally ensure a benign and safe food consumption environment. Design/methodology/approach Following service-oriented architecture, a flexible layered architecture of tracking and tracing platform for prepackaged food is developed. Besides, to reduce the implementation cost while realizing fine-grained tracking and tracing, an integrated solution of using both the QR code and radio-frequency identification (RFID) tag is proposed. Furthermore, Extensible Markup Language (XML) is adopted to facilitate the information sharing among applications and stakeholders. Findings The validity of the platform has been evaluated through a case study. First, the proposed platform is proved highly effective on realizing prepackaged food tracking and tracing throughout its supply chain, and can benefit all the stakeholders involved. Second, the integration of the QR code and RFID technologies is proved to be economical and could well ensure the real-time data collection. Third, the XML-based method is efficient to realize information sharing during the whole process. Originality/value The contributions of this paper lie in three aspects. First, the technical architecture of IoT-based tracking and tracing platform is developed. It could realize fine-grained tracking and tracing and could be flexible to adapt in many other areas. Second, the solution of integrating the QR code and RFID technologies is proposed, which could greatly decrease the cost of adopting the platform. Third, this platform enables the information sharing among all the involved stakeholders, which will further facilitate their cooperation on guaranteeing the quality and safety of prepackaged food.

In order to improve green performance and achieve sustainability goals, food companies see the need to adopt green supply chain management. However, ensuring a green supply is a tough task since food companies do not always have full information of their suppliers’ efforts in improving their green performance. This information asymmetry issue will lead the food producers to make poor decisions and cause a profit loss. Therefore, to fill this research gap, this study investigates a two-stage supply chain, which consists of one dominated food producer and a food supplier who has private knowledge of its green food material producing (GFMP) cost. To figure out how green performance is the major parameter that influences the decision-making of supply chain members under information asymmetry, this study first expands demand functions for both a food supplier and a producer, considering their influence on the green degree of the food products and associated consumer acceptance. It is found that under certain conditions, information sharing will improve the supplier’s green performance and increase the food producer’s profit. This study then presents the prerequisite of green cost information sharing by the food supplier. Furthermore, a newly designed menu of contracts, which combine the wholesale price contract and cost sharing contract, is proposed for the asymmetric information case to incentivize the food supplier to disclose the green effort information and improve the environmental and economic performance of the food supply chain. Numerical experiments are conducted through a case analysis to illustrate and validate the proposed models.

One of the biggest challenges facing the food industry is assuring food integrity. Dealing with complex food integrity issues requires a multi-dimensional approach. Preventive actions and early reactive responses are key for the food supply chain. Information sharing could facilitate the detection and prevention of food integrity issues. This study investigates attitudes towards a food integrity information sharing system (FI-ISS) among stakeholders in the European food supply chain. Insights into stakeholders’ interest in participating and their conditions for joining an FI-ISS are assessed. The stakeholder consultation consisted of three rounds. During the first round, a total of 143 food industry stakeholders—covering all major food sectors susceptible to food integrity issues—participated in an online quantitative survey between November 2017 and February 2018. The second round, an online qualitative feedback survey in which the findings were presented, received feedback from 61 stakeholders from the food industry, food safety authorities and the science community. Finally, 37 stakeholders discussed the results in further detail during an interactive workshop in May 2018. Three distinct groups of industry stakeholders were identified based on reported frequency of occurrence and likelihood of detecting food integrity issues. Food industry stakeholders strongly support the concept of an FI-ISS, with an attitude score of 4.49 (standard deviation (S.D.) = 0.57) on a 5-point scale, and their willingness to participate is accordingly high (81%). Consensus exists regarding the advantages an FI-ISS can yield towards detection and prevention. A stakeholder’s perception of the advantages was identified as a predictor of their intention to join an FI-ISS, while their perception of the disadvantages and the perceived risk of food integrity issues were not. Medium-sized companies perceive the current detection of food integrity issues as less likely compared to smaller and large companies. Interestingly, medium-sized companies also have lower intentions to join an FI-ISS. Four key success factors for an FI-ISS are defined, more specifically with regards to (1) the actors to be involved in a system, (2) the information to be shared, (3) the third party to manage the FI-ISS and (4) the role of food safety authorities. Reactions diverged concerning the required level of transparency, the type of data that stakeholders might be willing to share in an FI-ISS and the role authorities can have within an FI-ISS.

In this COVID-19 pandemic, the production, distribution, and demand fulfillment of perishable food products emerged as a foremost challenge for the supply chain due to the unavailability of timely and accurate information sharing. This study aims to test the relationships between the different types of information sharing, cost-saving performance, and supply chain relationships. In doing so, a survey study was carried out involving food supply chain practitioners, and proposed research claims were tested using a structural equation modeling approach. The results confirmed the positive impact of day-to-day information and periodic information on cost-saving performance and supply chain relationships. However, the impact of day-to-day information was significantly higher on cost-saving performance and supply chain relationships than the impact of periodic information. The study findings may support supply chain practitioners in understanding the different types of information that need to be shared in networks and their related impact on the overall profitability of the supply chain.

Purpose This paper aims to develop a coordination mechanism that can be applied to achieve the channel coordination and information sharing simultaneously in the fresh agri-food supply chain with uncertain demand. It seeks to elucidate how the producer can use an option contract to transfer the risk caused by uncertain demand, impel the retailer to share demand information and improve the performance of supply chain. Design/methodology/approach An option contract model based on the basic model of fresh agri-food supply chain is introduced to compare the production, profit, risk and information sharing condition of the supply chain in different cases. In addition, a case study focusing on the sale of autumn peaches produced by a local producer is investigated, which provides evidence of the applicability of the authors’ approach. Findings The optimal option contract can help the supply chain achieve channel coordination and reach Pareto improvement. In the meantime, such a contract will encourage the retailer to share market demand information with producer spontaneously and help maintain the strategic cooperation between two parties. Research limitations/implications This paper considers a single-producer, single-retailer system and both of them are risk neutral. Practical implications Presented results can be used as suggestions for improving the contract design of fresh agri-food supply chain in China and can also provide references for other countries with similar experiences as China in fresh agri-food production. Originality/value This research introduces the option contract into fresh agri-food supply chain and takes information sharing and the risk caused by uncertain demand into consideration.
