The aim of this paper was to evaluate the influence of the type of honey, year of collection, and the beekeeper on the main physicochemical quality parameters (hydroxymethylfurfural “HMF,” moisture, and colour), measured on reception of the raw honey. 1593 samples (11 types of honey categorized by means of pollinic analysis), provided by 98 beekeepers, from 2009 to 2013, were analyzed. Colour was the parameter most affected by the type of honey and year, whereas HMF was the least affected in both cases. The clearest honeys were found to have the greatest moisture (orange, rosemary, and lemon) and the darkest had the least moisture (lavender stoechas, eucalyptus, sunflower, honeydew and retama). Lavender, polyfloral, and thyme had intermediate values of these parameters. For moisture, most samples were in accordance with international requirements (less than 20 g/100 g). All values were below the required limit for HMF (40 mg/kg), although a few of them were abnormally high as they were raw honeys (i.e., 2% of the samples had values higher than 20 mg/kg). The fact that all the inadequate samples came from specific beekeepers highlights the importance of their role, suggesting that training in good practices is the key to guarantee honey quality before it reaches the industry.

Romania is known among the main European honey producers, due to the variety of landforms as well as the diversity of the flora. Thirty-four honey samples of the acacia, linden and multifloral types, produced in eastern Romania and collected during 2013–2018, were physico-chemically analyzed using methods provided by the national and EU standards. The results of water-insoluble solids, color and refractive index were found to be 0.023–0.131%, 0.3–76.4 mm Pfund and 1.485–1.499, respectively. The moisture content ranged between 15.20% and 20.77%, solid substances content ranged between 79.23% and 84.80% and total soluble substances content ranged between 77.83 °Brix and 83.26 °Brix. The obtained values of specific gravity were from 1.414 to 1.450 g/cm3, pH ranged from 3.673 to 5.503 and free acidity ranged between 2.4 meq and 50 meq kg−1. The ash content and the electrical conductivity varied between 0.030 and 0.543% and 130 and 679 µS cm−1, respectively. Pearsonʹs correlation analysis showed an intense association of the ash content with electrical conductivity (r = 0.81). Our findings reveal the qualitative level of Romanian honey and the variation in quality parameters due to factors such as geographical region, climatic conditions, botanical origin and handling or storage conditions.

Invertase and glucose oxidase are secreted by the hypopharyngeal glands of honeybees for the hydrolysis of sucrose and the preservation from microbial effects, respectively. It is also prominent to understand how the levels of invertase and glucose oxidase of raw honey samples are being influenced by different conditions because the behavior of these specific enzymes in raw honeys could be a marker for the quality parameters. On the basis of this expectation, three raw honey samples tagged as blossom, pine, and oak were investigated. To reach the desired aim, extraction conditions were diversified by the range of different periods as 0, 1, 3, and 6 h and of different temperatures as 24, 45, and 65°C. The optimal heating condition and the period of extraction for invertase activity of all honey types were 24°C and 1 h because data of this condition were 147.960–178.266 enzyme unit per kilogram (U/kg) and 20.179–24.313 invertase number (IN). Although the variety of glucose oxidase activity was not evaluated as a worthwhile indicator of quality for raw honey due to its abnormal activity behavior, the change of invertase activity should be considered as a quality parameter due to showing the gradual decreasing level from initially a quite high one.

The exposure of tomato fruits to unfavorable environments during the postharvest could result in severe losses along the supply chain. In this research, four tomato cultivars were stored in a controlled chamber under three levels of postharvest conditions to investigate the effects of delayed cooling on selected physicochemical quality parameters of the tomatoes. The tomato cultivars were subjected to three postharvest treatments: Immediate storage (IS) at harvest day; delayed storage (DS), leaving tomatoes without cover for one day; and under cover (DSC), separately in a greenhouse, and then stored in a controlled chamber at a temperature of 10 ± 1 °C and relative humidity of 90% ± 3%. Fresh weight, firmness, total soluble solids (TSS), and hue angle (h°) were examined over 15 days, every 5 days. Among the tomato cultivars, Cherry (7160), treated under DS showed the highest weight loss (13.01%) and firmness loss (42.14%) after 15 days of storage. Dabol (large) tomatoes treated with DS showed higher changes in TSS (°Bx) values (4.79 to 5.76). Low changes in hue angle values were found in IS-treated Cherry (7160) tomatoes at the end of the storage period. Overall quality changes were slower for all tomato cultivars treated with IS than with other treatments throughout the storage period. This study indicated the importance of reducing cooling delays to maintain the quality during the postharvest and prolong storage of harvested tomatoes.
