The relatively high incidence ofListeria monocytogenesin cold smoked salmon (CSS) is of concern as it is a refrigerated processed food of extended durability (REPFED). The objectives of this study were to compare and optimize the antimicrobial effectiveness of films and coatings incorporating nisin (Nis) and sodium lactate (SL), sodium diacetate (SD), potassium sorbate (PS), and/or sodium benzoate (SB) in binary or ternary combinations on CSS. Surface treatments incorporating Nis (25000 IU/mL) in combination with PS (0.3%) and SB (0.1%) had the highest inhibitory activity, reducing the population ofL. monocytogenesby a maximum of 3.3 log CFU/cm2(films) and 2.9 log CFU/cm2(coatings) relative to control samples after 10 days of storage at 21°C. During refrigerated storage, coatings were more effective in inhibiting growth ofL. monocytogenesthan their film counterparts. Cellulose-based coatings incorporating Nis, PS, and SB reduced the population ofL. monocytogenes, and anaerobic and aerobic spoilage flora by a maximum of 4.2, 4.8, and 4.9 log CFU/cm2, respectively, after 4 weeks of refrigerated storage. This study highlights the effectiveness of cellulose-based edible coatings incorporating generally regarded as safe (GRAS) natural and chemical antimicrobials to inhibit the development ofL. monocytogenesand spoilage microflora thus enhancing the safety and quality of CSS.

The in vitro antifungal activity of various generally recognized as safe (GRAS) salts against Colletotrichum gloeosporioides, the causal agent of citrus postharvest anthracnose, was evaluated as mycelial growth reduction on potato dextrose agar (PDA) dishes amended with salt aqueous solutions at different concentrations. The most effective treatments [0.2% ammonium carbonate (AC), 2% potassium sorbate (PS), 0.2% potassium carbonate (PC), 0.1% sodium methylparaben (SMP), 0.1% sodium ethylparaben (SEP), 2% sodium benzoate (SB) and 2% potassium silicate (PSi)] were selected as antifungal ingredients of composite edible coatings formulated with hydroxypropyl methylcellulose (HPMC)-beeswax (BW) matrixes. Stable coatings containing these salts were applied in in vivo curative experiments to “Nadorcott” mandarins and “Valencia” oranges artificially inoculated with C. gloeosporioides and those containing 2% PS, 2% SB and 2% PSi were the most effective to reduce anthracnose severity with respect to control fruit (up to 70% on mandarins). The effect of these selected coatings on the quality of non-inoculated and cold-stored “Valencia” oranges was determined after 28 and 56 days at 5 °C and 90% RH, followed by 7 days of shelf life at 20 °C. None of the coatings significantly reduced weight loss of coated oranges, but they modified their internal atmosphere, increasing the CO2 content. Overall, the coatings did not adversely affect the physicochemical and sensory attributes of the fruit.

To prolong the shelf-life of chilled chicken and to reduce the drip loss in this meat and in prepared chicken products in refrigerated storage, a gelatin-based antimicrobial edible coating was developed that included nisin, EDTA and potassium sorbate. The chilled chicken breast and prepared chicken products were treated with the coating and were stored at 4°C in tray-packaging. The results showed that after treatment with the coating that included the optimal concentrations of the additives, the shelf life of the chilled chicken meat and the prepared chicken products was significant prolonged, the amount of drip loss of was significantly reduced from 4.88~5.90% to 0.67%~0.82%, and the color values were also improved during the early stage of the storage. We conclude that the gelatin-based antimicrobial edible coating with the optimization formula is an effective preservation material that can be applied as an inner packaging for the chicken and prepared chicken products under refrigerated.

A treatment to inhibit browning and maintain quality of fresh-cut `Anjou' and `Bartlett' pears (Pyrus communis L.) was developed. Slices of ŒAnjou, and ŒBartlett, pears with a range of initial firmness values were dipped in mixtures of 4-hexylresorcinol, isoascorbic acid, potassium sorbate, and N-acetylcysteine before refrigerated storage. Browning, as indicated by visual observation and by colorimeter readings, was inhibited for 14 d. Pears receiving the antibrowning treatment maintained firmness as well or better than the control slices.

The study of the pathogenetic features of malignant tumors associated with metabolic syndrome (MS) is relevant because of high incidence of these tumors. Investigations of the mechanisms of involvement of MS in the pathogenesis of cancer reasonably supplemented by the study of transcription and growth factors associated with energy imbalance of the cell and involved in proliferation, apoptosis, angiogenesis, cell motility and inflammation. More research is needed to identify the most promising molecular targets for therapy of malignant tumors associated with MS with a view to increasing the survival and quality of life of these patients.
