Ongoing global drive for a healthier diet has led to a rise in demand for convenient and fresh food produce, with high nutritional value and free of additives. Shelf life of pomegranate is lessened beneath 4°C or above 10°C temperatures because of increased parching and rate of rot resulting changes in physiochemical attributes and physiological disorders. Use of edible coating involving aloevera gel and an essential oil in the arils of Pomegranate reduces the respiration rate and exposure to microbial growth due to their ant oxidative and antimicrobial activities. In present study, the coated 0.25% cinnamon oil and 20% aloevera gel pomegranate arils were being packed in different Polymers under cold storage temperature (5oC) and assessed for physiochemical attributes such as physiological loss in weight (PLW), pH, acidity, TSS, hue angle and chroma, enzymatic activity which include L - phenylalanine ammonia lyase assay (PLA), Polyphenol Oxidase (PPO), Superoxide Dismutase (SOD), microbial load and organoleptic attributes to assess the effect of coating in enhancing its shelf life. This study also shows the best combination of edible gel-oil coating and packaging material that would be more suitable for prolonging the shelf life of pomegranate arils. Among the three packaging materials used, LDPE 50, HDPE 30 and HDPE 50, the coated pomegranate when stored in HDPE 30 has shown to be the most desirable results.

ABSTRACT This study demonstrated that fresh food produce, such as berries, sprouts, and green-leafed vegetables, sold at the retail level can contain potentially viable microsporidian spores of human-virulent species, such as Enterocytozoon bieneusi, Encephalitozoon intestinalis, and Encephalitozoon cuniculi, at quantities representing a threat of food-borne infection.

DETECCIÓN Y ENUMERACIÓN DE BACTERIÓFAGOS F+ ESPECÍFICOS COMO INDICADORES DE ENTEROVIRUS EN EL CHORO (Aulacomya ater) Milagros Miranda C. y César Pizardi D DOI: https://doi.org/10.33017/RevECIPeru2004.0014/ RESUMEN El objetivo del presente trabajo fue aplicar el método de la norma ISO 10705 – 1: 1995 para determinar si el choro (Aulacomya ater) es un molusco que está libre de patógenos virales al momento de su venta al público en los terminales pesqueros y algunos mercados de abasto en Lima. Las muestras utilizadas fueron las vísceras y el manto del choro. La metodología empleada fue la recomendada por la norma ISO 10705-1:1995, la cual consistió primero en la preparación de los cultivos madre y de trabajo de la cepa hospedadora Salmonella typhimurium WG49, detección y enumeración de bacteriófagos ARN F+ específicos a la cepa. El bacteriófago fue detectado únicamente en las muestras provenientes del terminal pesquero de Ventanilla, con una mayor concentración en las vísceras (6000 a 10000 uff) que en el manto (800 a 1400 uff). ABSTRACT The purpose of this project was to apply the ISO 10705 – 1: 1995 standard method to determine whether the mussel (Aulacomya ater) is a mollusk that is free of viral pathogens at the time it is sold to the public at the Lima fishing ports and some wholesale fresh food markets. As samples we used the mussel viscera and mantle. The methodology employed was the one recommended by the ISO 10705-1:1995 standard, which consisted in the preparation of the master culture and working culture of the strain hosting the Salmonella typhimurium WG49, the detection and enumeration of the strain F+ specific RNA bacteriophages The bacteriophage was detected only in the samples obtained at the Ventanilla fishing port, showing that the concentration in the viscera (6000 to 10000 pfu) was higher than in the mantle (800 to 1400 pfu).
