The vitamin A content of liver oils of five species of salmon in the genus Oncorhynchus has been determined. The richest samples contained 40 times, and the poorest twice as much vitamin A per gram as a sample of cod liver oil stated to contain 500 A.D.M.A. units per gram. Potencies of samples were in descending order: Skeena spring, Vancouver spring and sockeye, coho, pink and chum salmon. Oil content of the livers averaged 5 per cent and percentage of liver in the fish 2 per cent. The melting point, unsaponifiable matter and iodine value of the oils have been determined.

The liver oil of the Pacific coast Ling cod has been examined for vitamin A by both biological and colorimetric methods. The oil is very rich in vitamin A, the least potent sample containing 20,000 rat units per gram.

Composition of fatty oil in two different varieties of banana peels Mausa Cavendis (sagar kola) and Mausa Sapientum (savrie kola) was determined. Percent fatty oil content was found as 7.5 in savrie and 10 in Sagar peels. Unsaponifiable matter, Iodine value, free fatty acid contents and Saponification value were also determined for both the samples. It was observed that the linoleate content (2.74) in sagar variety is slightly higher than savrie variety (2.41), but the palmitate contents were found as 12.55 and 13.86, stearate contents 2.62 and 4.57 in Sagar and Savrie variety respectively. Vitamin A deficiencies in the diets of albino rats have been overcome by feeding commercial pilchard oil. The effects of graduated doses have been examined and satisfactory growth rates have been obtained by feeding 12 mg. per day per rat, though no emphasis is placed upon absolute evaluation of vitamin potency. In comparison colorimetric assay gave values lower than the feeding experiments indicate.

(1) Further experiments are described, the results of which support the relationship between the presence of vitamin A in the diet of the cow and its presence in milk fat.(2) The typical winter ration of concentrates, roots and hay may be adequate to maintain the vitamin A value of the milk fat for considerable periods provided that at least one of the components supplies adequate amounts of that dietary principle. Well cured green meadow hays are in this respect greatly superior to dry brown seeds hays.(3) The addition of cod liver oil to a winter ration deficient in vitamin A will induce a sharp rise in the vitamin A value of the milk fat of cows. No such effect is seen when oils deficient in this dietary factor (coconut oil, arachis oil) are given.(4) The administration of cod liver oil in doses from 1 to 8 ozs. daily to milking cows caused no “fishy” taint in the milk or butter-fat.(5) The administration of cod liver oil caused no appreciable change in the yield of milk but the higher doses appeared to cause a noticeable drop in the percentage of fat. Further experiments are required to throw more light on this observation.

The total oil in samples of canned British Columbia sockeye (Oncorhynchus nerka) and pink (O. gorbuscha) salmon, each from three different localities, contained respectively 50, 67, 67 and 50, 67, 67 international units of vitamin D per gram, equivalent to average contents of 1700 and 880 international units in the oil per pound of contents for the sockeye and pink samples respectively. The oil in the cans of sockeye salmon from two of the localities contained approximately 2.5 and 2.0 A.D.M.A. units of vitamin A per gram respectively. A composite sample of the oil in all the cans of pink salmon contained no appreciable amount of vitamin A. Several physical and chemical characteristics of the oil samples are given.

Determinations of the Ca, Mg, Na, K, P and Cl content were made and the ratios of calcium, magnesium and phosphorus oxides suggest the presence of calcium and magnesium metaphosphates in the ash of the flesh, calcium metaphosphate in that from the skin and tribasic calcium orthophosphate in that from the bone.

Vitamin A deficiency (VAD) is a public health problem in Ghana. Research on the orange flesh sweet potato root has been given prominence because of its high β - carotene content as a means to enhance the nutritive value and vitamin A content of the traditional diets of Ghanaian children as a long -term intervention towards combating VAD. Two Ghanaian cereal -legume weaning foods: roasted maize- soy blend and fermented maize -soy blend were added to Orange Flesh Sweet potato (O FS) flour from the variety, Beauregard, to develop four weaning food formulations . To each product formulation preparation, 25% and 50% OFS flour was added to the basic cereal - legume meals , and mixed thoroughly. The four weaning formulations were evaluated for chemical composition, sensory characteristics and consumer acceptability. All samples had a range of protein (12.1% - 15%), fat (4.8% - 6.4%), carbohydrate (71.1% – 75.1%), energy (380 - 390 kcal/100g) and minerals (calcium, iron and phosphorus) to ensure good nutrient density, while the moisture content was low (5.3% - 6.1%) for storage stability. The contribution of β -carotene ( 55.18 –115.55 ug/g) by the OFS in the formulations further enhanced the nutritive value of all the blends and is enough to meet the daily β -carotene needs of the children ( 1-6 yrs of 400 -450ug/100g). A higher level of β -carotene was seen in the roasted maize meal weaning foods which make s them a better potential blend for combating VAD. Also, sensory evaluation of the products indicated the highest consumer acceptability score (87%) for the roasted maize meal porridge formulation containing 25% OFS . It is, therefore , concluded that OFS flour has the potential to be used at 25% replacement level in the soy- fortified roasted maize meal formulation, and OFS is a useful ingredient with the potential to improve the β -carotene or vitamin A content of such formulations . This will help alleviate vitamin A deficiency of children in Ghana and other countries with similar problems . It is , therefore, recommended that the orange flesh sweet potato flour be used by mothers as an entry point for enhancing the traditional weaning food preparations .

The physiocochemical properties of Jatropha curcas kernel oils were characterized as potential biodiesel, including oil yield per plant, seed oil content, kernel oil content, acid value, iodine value, saponification value and cetane number. Twenty-five accessions of Jatropha curcas were used for oil content measurement sranging from 21.14 to 40.66 %with a mean value of 32.85% and Kernels oil 48.59 to 60.45 % with a mean value of 56.28 %. The seed index ranged significantly from a seed weight of 45.45 to 64.45 g. Oil yields per plant ranged from 0.44 to 2.85 kg with a mean value of 1.70 kg per plant, respectively. To understand the properties of acid value, iodine value, saponification and cetane number, experimental physio-chemical studies were performed. Since these properties are critical for determining the current oil condition. The current study confirms that accession seeds performed higher than international saponification value, iodine value and cetane number standards may be an important source for meeting potential energy requirements.

Soxhlet extraction of oil from seeds of Vitelleria paradoxa was carried out using n-hexane as the solvent. Standards methods were adopted in the analysis of the physiochemical properties; moisture content, melting point, total ash content, pH, specific gravity, iodine value, saponification value, acid value, free fatty acid value and ester value were all evaluated. The oil recovery rate was good with 32.6% yield, moisture content of 3.1%, melting point of 52oC and pH 5.7. Total ash content was 50.3%, specific gravity of 0.9 g/cm3, iodine value 39 mg/L, saponification value 224.6 mgKOH/g, acid value 59.9 mgKOH/g free fatty acid (FFA) 29.9 mgKOH/L and ester value 164.7 mg/L. The results shows that oil from Vitelleria paradoxa seed holds the potentials for wider applications in foods, cosmetics, pharmaceuticals, lubricants and soap making.
